Homemade Goldfish Crackers

These Homemade Goldfish Crackers are VERY addictive. So good! I can’t stop eating them. You just have to eat more and more!

 

I love my cheddar blasted goldfish crackers but I will be eating these instead from now on.

I don’t even try to imitate the goldfish shape. But when rolled out very thin and cut into round coins with a cookie-cutter they bake up nice and crispy.

Roll thicker (1/4 inch) and they puff up nicely and are kinda’ hollow inside, easy to be filled with your favorite spread.

Ingredients
  • 1 cup all-purpose flour
  • 4 tablespoons cold unsalted butter cut into small pieces
  • 8 ounces cheddar cheese
  • 1/2 teaspoon salt
  • 1/2 teaspoon fresh ground black pepper
Instructions
  1. Pulse the flour, butter, cheese, salt, and pepper together using a food processor until the mixture resembles a coarse meal.

  2. Pulse in 3 to 4 tablespoons of water, one tablespoon at a time, and only enough so that the dough forms a ball and rides the blade.
  3. Remove, wrap in plastic, and chill for 20 minutes or up to 24 hours.
  4. Roll the dough out on a cookie sheet to 1/8-inch thickness. (If you roll it thicker, it will still work, but the crackers won't be quite as crunchy.).
  5. Using a pizza cutter slice dough into 1-inch squares or using a cookie cutter cut out as many crackers as possible.
  6. Bake at 350 F until golden and crisp - 15 to 20 minutes.

Ingredients
  • 3 lbs chicken wings
  • 1/2 cup frank hot sauce or 1⁄2 cup Crystal hot sauce
  • 1 cup flour
  • salt
  • pepper
  • cajun seasoning
  • oil for deep frying
  • 1/4 cup franks hot sauce or 1⁄2 cup Crystal hot sauce
  • 1/2 cup butter
  • ranch dressing or blue cheese dressing
  • celery rib
Instructions
  1. Cut wings into pieces discarding tips. Wash and pat dry with paper towels. Place pieces into a dish or a large baggie, add ½ Cup hot sauce and seal. Marinate at least 30 minutes or overnight is good too.

  2. Heat oil in deep-fryer to 350°.
  3. Place flour, salt, pepper and cajun seasoning in a large baggie.
  4. Drain wings but do not pat dry. Add wings a few at a time to baggie, shaking to cover, then remove.
  5. Continue until all pieces are well coated with the flour mixture. Make up more if you need it. Discard the bag.
  6. Slowly add 1/2 of the wing pieces to hot oil. Fry until golden brown. Remove and drain on paper towels.
  7. Cook remaining wings and drain.
  8. In the meantime, melt butter in microwave. Add remaining ½ C hot sauce.
  9. Toss fried wings in sauce mixture and serve with your choice of Ranch or Blue Cheese dressing and celery sticks.

This recipe yields Perfect Southern Greens. The best tasting greens I have ever eaten! I have yet to have a batch of bitter greens when cooked this way.

  • 1 bunch kale
  • 1 bunch greens collards, mustard, turnip
  • 1 large onion sliced
  • 1 tablespoon olive oil
  • 2 garlic cloves minced
  • 2 jalapeno peppers minced (discard seeds for less heat)
  • 1/2 teaspoon crushed red pepper flakes
  • 1/4 cup cubed ham I used prepackage mini cubes
  • 3 slices bacon
  • 2 1/2 cups water more if needed
  • salt and pepper
  • balsamic vinegar optional
Instructions
  1. Tear greens into large pieces and discard the thick vein. Add greens to a pot of boiling salted water (I use kosher salt). Let boil for about 6 minutes. Drain and Rinse.
  2. While the greens are boiling, preheat a heavy skillet with olive oil, add onion and garlic; saute until onions are lightly brown, add minced jalapeno peppers and cook for an additional minute or two.
  3. Put the sauteed onions in the slow cooker then add the drained greens, ham, bacon, crushed red pepper, and water.
  4. Cook on high for 4 hours or until the greens are tender.
  5. Serve with balsamic vinegar.

Pecan Pie Bread Pudding – Not Moms Recipe

My mom never made Pecan Pie Bread Pudding. She made bread pudding and she made pecan pie. But she never made this variation of the two!

 

It comes out semi-firm, firm enough to cut into squares when cooled but not dry and really solid. The pecans are a great flavor addition and I like the contrast in texture that they add as well.

  • 2 cups half-and-half
  • 1 1/2 cups brown sugar divided
  • 3 eggs

  • 4 cups bread cubes any kind of firm bread

Instructions
  1. Grease an 8" x 8" baking pan with 1 tablespoon of butter.
  2. In a large mixing bowl, beat the eggs and add the half and half, and 1 cup of the brown sugar. Stir in the salt and nutmeg. Add the bread cubes and 1/2 cup of the pecans, and allow to sit for 20-30 minutes until the bread is completely soaked with the custard.

  3. Pour into the baking pan, sprinkle with the remaining pecans and brown sugar. Dot the top with 3 tablespoons butter broken into small pieces.
  4. Bake in a pre-heated 350 F oven for 30-40 minutes, or until set and golden brown on top.

 

This is great served warm with ice cream or a custard sauce. I like it cold for breakfast too!

Of all the impossible pies I’ve made I think this Impossible Cherry Pie is my favorite! This one is sooo easy to make and I’ll be making it repeatedly in the future!

The cherries sink, but the batter rises to the top and bakes, which is how impossible pies are supposed to be!

If you have trouble making a pie crust that is edible you’ll love this. It’s sooo very good and easy to make. Really liked the pie being topped with the streusel instead of a pie crust.

Great with whipped cream or ice cream.

  2. Beat all ingredients, except pie filling and streusel, until smooth - 15 seconds in blender on high or 1 minute with hand beater. Pour into pie plate. Spoon pie filling evenly over top. Bake for 25 minutes.
  3. Meanwhile, make streusel: Cut 2 Tablespoons firm margarine or butter into 1/2 cup Bisquick baking mix, 1/2 cup packed brown sugar and 1/2 teaspoons ground cinnamon until crumbly.
  4. Top pie with streusel.
  5. Bake about 10 minutes longer until streusel is brown; cool.

These Smothered Pork Chops are pure comfort food. Melt in your mouth tender chops with a delicious sauce! The mushrooms are especially good.

 

We enjoyed the sweetness very much, it was not too much even with the extra rub.

I serve this with mashed potatoes to use all the gravy and a green vegetable. If you want it thicker, you can add some cornstarch mixed with water to the sauce to thicken.

A friend of mine showed me these Tortilla Crisps. Delicious!!! Not only that, but they’re also easy to make and quite a different use of tortillas.

 

A super nice appetizer or snack. They are good “as is” or you can serve them with salsa or hummus.

The sesame seeds are a must – they get all brown and toasty in the oven and add so much flavor.

  1. In a large bowl, toss the potatoes with oil and dressing mixes. Place into 2 ungreased 13x9x2 inch baking pans. Bake, uncovered at 400 for 45 minutes or until tender. Cool.

  2. Transfer to a large bowl, add peppers, onions, eggs, and bacon. Toss gently.

  3. Combine the remaining ingredients in a small bowl. Mix well.

  4. Pour over salad and mix gently.

  5. Cover and refrigerate for at least 1 hour.
