Classic Southern Buttermilk Cornbread

This cornbread is the classic southern buttermilk cornbread you’ll find throughout the South. There’s generally no sugar added to Southern cornbread.

 

If you prefer sweeter cornbread, add a few tablespoons of sugar.

This is an excellent cornbread to serve freshly baked in wedges with beans or greens or a big bowl of chili. It makes great stuffing, too!

For a little extra flavor, add some bacon drippings to the skillet if you have it.

Slow Cooker Bread – Couldn’t Be Easier

Hey, guess what? With this Couldn’t Be Easier Slow Cooker Bread Recipe you can bake bread in a slow cooker! And darn good bread, too.

This recipe is awesome! Almost too easy. The bread rises nicely and doesn’t crumble when cut.

It is wonderful toasted with butter. This method seems like a natural for Boston Brown Bread.

Next time, I am considering replacing the honey with dark molasses and adding some raisins —

I used a round Pyrex baking dish that I suspended above the water with a canning jar ring. Wonderful for sandwiches!

  • 1/4 cup warm water

  • 1/4 cup wheat germ
  • 2 3/4 cups whole wheat flour

  1. Directions
  2. Grease a deep metal or glass bowl or 1 lb coffee can (we use a glass 18 cm Pyrex soufflé dish); turn slow-cooker on high to preheat.
  3. Dissolve yeast in water; combine with milk, oats, salt, oil, honey, egg, and wheat germ.
  4. Add flour and knead until smooth and elastic, about 5 minutes.
  5. Turn dough immediately into bowl or can; cover LOOSELY with foil.
  6. In bottom of slow-cooker, place 1/2 cup of water and a trivet or some crumpled foil.
  7. Place can or bowl on this; cover and bake on High for 3 hours.
  8. Make sure to lightly cover the top of the bread with foil or parchment paper. Otherwise, the moisture that collects on the underside of the lid will drip onto the top of the bread and cause it to be soggy.
  9. Note: sides of bread brown and crisp beautifully, top will slightly brown and be soft to touch.
  10. Yield: 1 medium sized loaf of bread.

  1. Preheat oven to 425 degrees. Butter the insides and the top of a regular muffin pan (1/3 cup).
  2. In large bowl thoroughly combine the flour, cornmeal, baking powder, salt and sugar.
  3. In medium bowl, beat the egg. Beat in the milk and the melted butter. Combine with the dry ingredients until just evenly moistened. Do not overmix.
  4. Stir in 1 cup of cheese.
  5. Immediately spoon the batter into the muffin pan. Evenly sprinkle the remaining cheese on top of the muffins.
  6. Bake 17 minutes or until a knife inserted in the center of the muffin comes out clean.
  7. Best served warm.

Cheese Toasts – Much Better Than Garlic Bread

These Cheese Toasts are much better than garlic bread! Looks great on a buffet table and goes with anything. Wonderful cheese toasted bread!

 

Can be prepared the day before if wrapped in foil, if they get a little saturated overnight, it’s ok, makes them even better!

Freshly grated Parmesan cheese is best, of course, but in a pinch, I’ve used the jarred stuff from the grocery and it worked out OK.

The mayo and the cayenne pepper add the uniqueness to this dish. Don’t leave it out!

  • 1 1/2 cups warm water
  • 2 tablespoons butter softened
  • 1/2 cup honey
  • 2 cups bread flour
  • 1 2/3 cups wheat flour
  • 1 tablespoon cocoa
  • 1 tablespoon granulated sugar
  • 2 teaspoons instant coffee
  • 1 teaspoon salt
  • 2 1/4 teaspoons yeast
Coloring
  • 1/4 cup water
  • 75 drops red food coloring
  • 45 drops blue food coloring
  • 30 drops yellow food coloring
  • cornmeal for dusting
Instructions
  1. Combine the flours, cocoa, sugar, coffee and salt in a large bowl. Make a depression or"well" in the middle of the dry mixture. Pour the warm water into this"well," then add the butter, honey and yeast.
  2. Combine the food coloring drops with ¼ cup of water and add that to the"well".
  3. Slowly mix the ingredients with a spoon, drawing the dry ingredients into the wet.
  4. When you can handle the dough, begin to combine it by hand, kneading the dough thoroughly for at least ten minutes, until it is very smooth and has a consistent color.
  5. Set the dough into a covered bowl in a warm place for an hour, to allow it to rise.
  6. When the dough has risen to about double in size, punch it down and divide it into 8 even portions.
  7. Form the portions into tubular shaped loaves about 8" long and 2" wide.
  8. Sprinkle the entire surface of the loaves with cornmeal and place them on a cookie sheet, or two.
  9. Cover the cookie sheet (s) with plastic wrap and let the dough rise once more for another hour in a warm location.
  10. Preheat the oven to 350° degrees F.
  11. Uncover the dough and bake it for 20-24 minutes in the hot oven. Loaves should begin to darken slightly on top when done.
  12. Serve warm with a sharp bread knife and butter on the side.
  13. If you want whipped butter, as you get at the restaurant, just use an electric mixer on high speed to whip some butter until it's fluffy.

  2. Filling: Beat cream cheese until soft. Add egg, vanilla and brown sugar. Beat until smooth. Set aside.
  3. Streusel Topping: Mix flour, sugar, cinnamon, and pecans. Add butter and cut it in with a fork until crumbly. Set aside.
  4. Muffin Batter: In a large bowl, sift together flour, sugar, baking powder, cinnamon, and salt.
  5. Make a well in the center of the flour mixture and gradually incorporate eggs, pumpkin, olive oil and vanilla. Beat together until smooth.
  6. Fill cups with pumpkin mixture until they're about 1/2 full. Carefully add one tbsp of the cream cheese mixture right in the middle of the batter.
  7. If you're using paper cups, try to keep cream cheese from touching the paper.
  8. Sprinkle on the streusel topping.
  9. Bake at 375 degrees for 20 to 25 minutes.

Provolone Garlic Bread – Delicious

This Provolone Garlic Bread is such a wonderful bread. The fresh garlic, butter, and Provolone make this bread a real test of my self-control.

 

I could make an entire meal out of it.

I like to use the sliced cheese, as opposed to shredded, because of the even & full coverage it gives.

It’s very easy to put together and can be prepared ahead of time, wrapped in foil and refrigerated until ready to bake.

Worcestershire is a very nice addition. A nice buttery garlic bread — with that wonderful cheese on top.

  10. Bake for 1 hour and 20 mins, or until cakes test done.
