  • 8 slices sourdough or white bread
  • 1/4 cup mayonnaise
  • 1 1/2 cups grated mozzarella
  • 1 1/2 cups grated Gruyère
  • 1/2 cup grated aged goat cheese such as Midnight Moon from Cypress Grove Chevre
  • 3/4 cup Bread-and-Butter Pickles
  • 3 ounces thinly sliced prosciutto
  • 6 tablespoons (3/4 sticunsalted butter
Instructions
  1. Smear both sides of bread slices with mayonnaise. Combine cheeses in a bowl. Sprinkle 4 slices bread with half of cheese mixture, dividing equally. Top each with 3-4 pickles. Divide prosciutto among sandwiches; top with remaining cheese. Cover with remaining bread.
  2. Melt 2 tablespoons butter in each of 2 large heavy skillets over medium-low heat. Add 2 sandwiches to each skillet and cook until bread is golden, 9-10 minutes. Add 1 tablespoons butter to each skillet, flip sandwiches, and cook until bread is golden and cheese is melted, 9-10 minutes longer.

Crockpot Red Beans & Rice – Crescent City Style

Crockpot Red Beans & Rice is Great Stuff! The family can’t get enough of this and I can’t get over just how easy it is!

 

Just the right dish for easy overnight and morning prep, long slow cooking while we were at work/school, and simple finishes before dinner.

Mom and Pop restaurants in New Orleans always serve Red Beans & Rice on Monday. Always!

This is a take on the restaurant version changed a bit to reflect the fact that I use my crockpot now. I hope you enjoy these yummy beans as much as I do.

Serve over hot, fluffy white rice and a warm piece of buttered and grilled French bread with a side salad or bowl of coleslaw.

Sweet iced tea rounds this awesome southern dish off quite nicely.

  • 1 lb dried kidney beans I prefer the pink ones to the dark red ones
  • 1 ham hock optional
  • 4 garlic cloves chopped
  • 1 teaspoon black pepper fresh ground
  • 1 tablespoon chicken stock powdered
  • 1 teaspoon garlic salt
  • 1 teaspoon dried chipotle powder I use one Knorr mini cube (optional)
  • 1 teaspoon liquid smoke optional
  • 2 -3 bay leaves
  • 1 onion chopped
  • 1 bell pepper chopped
  • 1 tablespoon butter
  • 1 -2 tablespoon salt according to your taste
  • 1 -2 teaspoon Cajun seasoning Tony Cacheres and Zatarains brand are both very good
  • 1 ⁄4 cup butter
  • 1 teaspoon Tabasco sauce Chipotle flavored is really nice
  • 2 tablespoons cornstarch or 2 tablespoons cornflour
  • 1 lb smoked sausage

  1. These directions are long because I am covering the method quite thoroughly for new-comers.
  2. SOAK BEANS: On Sunday night (or the night before you want to eat these yummy beans), check beans to be sure there are no stones then place beans in a large bowl and fill almost to the top with water. It's better to have too much water than not enough. The beans will more than double in size overnight. In the morning, I drain beans in a colander and rinse well.
  3. A FEW PERSONAL TRICKS: One of the first things I do in the morning is fill my Crockpot with hot tap water just to bring it up to temperature much faster. This saves on cooking time and electricity. I also fill and boil my electric jug (or kettl- this is the water I will use to cook my beans.
  4. PLACE IN CROCKPOT: Beans, ham hock, black pepper, chicken stock powder, chopped garlic, garlic salt, bay leaves, and optional Chipotle powder and liquid smoke. Note: Save adding salt until the end of cook time.
  5. COVER WITH HOT WATER: Cover beans with hot water from your jug or kettle just until fully covered. Then add an extra inch of water on top of that. This will give your beans a chance to swell even more during cooking. Cover Crockpot with lid.
  6. QUICKLY: Sauté onions and bell-pepper just until they begin to cook. Add these to the beans and stir.
  7. COOK: If you are going to be gone all day, cook beans on low setting for 6 to 8 hours. If you will be around to stir, etc., I recommend cooking them on high until they are almost fully cooked (about 4 or 5 hours). Then turn them down to low for the last bit of cooking.
  8. ONCE COOKED: When beans are fully cooked, remove bay leaves (if you can find them aladd butter and stir. To thicken beans, add 2 tablespoons corn flour mixed with just enough cold water to dissolve it. Add this to beans and stir for a minute. Beans should thicken a bit in fairly short order. Repeat until you get the desired consistency.
  9. ADD: Add salt by half-teaspoon until you reach the level of your liking. It may not take much for you. Also add a bit more fresh ground pepper.
  10. NOW: Put your rice on to cook. Slice smoked sausage and cook in a medium-hot cast iron skillet until nicely brown and starting to emit those nice juices. Take skillet off heat but leave sausages where they are. Don't cover.
  11. RINSE your rice with hot water. Once drained, place about half a cup of hot fluffy rice in a wide, shallow bowl.
  12. COVER rice with a generous amount of red beans. Top with a good amount of hot smoked sausage slices.
  13. SPRINKLE with hot sauce and/or more Tony's if you want it spicy like I do.
  14. SERVE with hot buttered, grilled slices of French bread, salad or coleslaw, and a big glass of iced tea.

  2. Grill, covered with grill lid, over medium hot coals (350-400°F) 5 minutes on each side until fish flakes easy with a fork. Garnish with lemon, if desired.

Southern Okra Skillet – With A Twist

This Southern Okra Skillet is a twist on okra and tomatoes. I’m from the South so I could eat a whole tub of this! I put in favorite spices.

 

In addition to the spices, I also put kielbasa sausage in it just for a change.

Please try to use fire-roasted tomatoes. I think they really make a difference in the taste!

  4. After the 5 minutes; stir in sugar, pepper, coriander, Lawry's, and allspice.
  5. Cook 10 more minutes, stirring occasionally then serve!

I have been using Grandma’s Special Classic Macaroni & Cheese for Mac and Cheese since the beginning of time! Truly a classic and a staple.

  • 2 tablespoons butter
  • 1/4 cup flour
  • 1 teaspoon salt

  • 8 ounces dry elbow macaroni cooked according to package directions
Instructions
  1. Melt butter in medium saucepan. Stir in flour, salt, mustard and pepper until smooth. Remove from heat and gradually stir in milk until smooth.
  2. Stirring constantly, cook over medium heat until thickened (about 10 minutes). Remove from heat.
  3. Stir in 1 1/2 cups cheese until melted.
  4. Combine cheese mixture with macaroni in greased 2 quart casserole. Sprinkle remaining cheese on top.
  5. Bake in 375 degree oven for 25 minutes or until lightly browned.
  6. Makes 6 servings.

  • 1 large green bell pepper chopped

  • 1 cup uncooked converted rice

  • 1 lb frozen tailless cooked large shrimp defrosted
  • snipped fresh parsley to garnish
  • hot sauce to serve
Instructions
  1. Place all the ingredients except the shrimp into the crock pot; stir well to combine.
  2. Cover and cook on LOW heat for 4-5 hours, until rice is done and vegetables are tender. (If you have an older model crockpot as I do, cook on HIGH for same amount of time).
  3. Stir in the shrimp, cover, and cook for 20-30 minutes until heated through.
  4. Garnish with snipped parsley and serve with hot sauce at the table.

However, you can saute them in whatever you prefer!

I have always loved fried chicken livers. Even as a child!

Ingredients
  • 1 lb chicken liver rinsed and drained well, but not dried
  • 1/2 cup flour
  • 3/4 teaspoon salt
  • 1/4 teaspoon smoked paprika
  • 1/4 teaspoon cayenne pepper
  • 1/2 teaspoon freshly ground black pepper
  • 1/2 teaspoon dried thyme leaves or 1 teaspoon fresh
  • bacon grease about 1/2-inch deep in your pan (for sauteing, or substitute whatever fat you prefer)
Instructions
  1. Rinse chicken livers and drain well.
  2. Combine flour, salt, paprika, cayenne, black pepper, and thyme in a zip lock bag ~ add drained chicken livers and toss about gently until livers are covered with flour mixture.
  3. Heat bacon grease (or other fat) over medium-high heat, in a large iron skillet, until HOT.
  4. Gently add livers to hot grease and saute for 3-4 minutes, then turn and saute the other side for about the same time.
  5. DO NOT OVERCOOK LIVERS ~ they should be pink inside, but not oozing blood.
  6. Remove livers from pan and drain on paper towels.
  7. The pan drippings make great milk gravy!
  8. Don't forget the biscuits!

Ham Hopping John is one of my favorite New Years Day dishes. This is a fabulous version of it. Very good down Home Comfort food. Full of flavor.

 

Some that I have had in the past have been pretty bland…. NOT this one!

It definitely has that Down Home Comfort food quality. So Full of flavor. Sooooo tasty. Very addictive. And oh the smell as it cooks!!!

Ingredients
  • 2 cups black-eyed peas drained, rinsed
  • 8 cups water
  • 3/4 lb ham 1/2 inch cubed
  • 1/4 lb bacon 1/2 inch strip
  • 1 cup onion diced
  • 1 teaspoon garlic roasted
  • 1 cup long-grain white rice
  • 1/2 teaspoon dried thyme
  • 1 teaspoon red pepper flakes or to taste
  • 1/2 teaspoon sea salt
  • 1/4 teaspoon black pepper fresh ground
Instructions
  1. Put peas in a deep pan cover with 8 cups of water. Bring to a boil on high heat. Lower heat to simmer, cover the pot, cook for 45 minutes. (until peas are tender but not mushy)
  2. Place ham and bacon in frying pan over medium heat and fry for 5- 7 minutes, drain on a paper towel and set aside.
  3. Keep 1 tsp bacon fat, add the onions to the pan and sauté, stirring often until soft, (4 min) set aside.
  4. When beans are ready, drain and save 2 1/2 cups of cooking liquid.
  5. Add rice, ham, bacon, onions, roasted garlic, thyme, red pepper flakes, salt and pepper to beans and reserved cooking liquid. Stir well. Return to high heat and bring to a boil. Lower heat and cover.
  6. Cook 25 minutes (until rice is done and all liquid has evaporated).
  7. Turn off the stove and let sit covered for about 15 minutes.

Perfect Southern Greens (Collards, Turnip or Mustard)

This recipe yields Perfect Southern Greens. The best tasting greens I have ever eaten! I have yet to have a batch of bitter greens when cooked this way.

 

This recipe has the potential to change the minds of greens-haters and may even bring about a cute southern accent.

Blanching the greens before adding to the slow cooker helps remove the natural bitterness. I usually make it with collard greens but other greens work as well.

  • 1 bunch greens collards, mustard, turnip
  • 1 large onion sliced
  • 1 tablespoon olive oil
  • 2 garlic cloves minced
  • 2 jalapeno peppers minced (discard seeds for less heat)
  • 1/2 teaspoon crushed red pepper flakes
  • 1/4 cup cubed ham I used prepackage mini cubes
  • 3 slices bacon
  • 2 1/2 cups water more if needed
  • salt and pepper
  • balsamic vinegar optional
Instructions
  1. Tear greens into large pieces and discard the thick vein. Add greens to a pot of boiling salted water (I use kosher salt). Let boil for about 6 minutes. Drain and Rinse.
  2. While the greens are boiling, preheat a heavy skillet with olive oil, add onion and garlic; saute until onions are lightly brown, add minced jalapeno peppers and cook for an additional minute or two.
  3. Put the sauteed onions in the slow cooker then add the drained greens, ham, bacon, crushed red pepper, and water.
  4. Cook on high for 4 hours or until the greens are tender.
  5. Serve with balsamic vinegar.

Southern-style grits are usually breakfast fare. But Paula Deen’s Baked Garlic Cheese Grits are a perfect side for almost any meat main course!

 

These grits are excellent. Cheesy and full of flavor. If you’ve had grits before and just thought meh, you must try this recipe.

Absolutely delicious!!!

I love to serve it alongside Cajun Shrimp! Makes a great dinner.

  4. Add the cubed Cheddar and milk and stir. Gradually stir in the eggs and butter, stirring until all are combined.
  5. Pour the mixture into the prepared casserole dish. Sprinkle with the white Cheddar and bake for 35 to 40 minutes or until set.
