This Olive Garden Chicken Scampi copycat recipe is perfect! Just as good as Olive Garden. If anything it might be just a little bit better.

 

If you were to pick up some chicken scampi from Olive Garden to do a side-by-side comparison you would see there’s no difference!

This is a major hit with my family and friends.

  • 1 tablespoon butter
  • 2 tablespoons flour
  • 3 ⁄4 cup milk hot
  • Scampi Sauce
  • 3 tablespoons butter
  • 2 tablespoons garlic crushed
  • 1 ⁄2 teaspoon crushed red pepper flakes
  • 1 tablespoon dried cilantro optional
  • 2 teaspoons Italian seasoning
  • black pepper
  • 3 ⁄4 cup white wine
  • 1 cup chicken broth
  • Remaining Ingredients
  • 1 ⁄2 lb angel hair pasta cooked and drained
  • 2 bell peppers thinly sliced
  • 1 red onion thinly sliced
  • 10 garlic cloves roasted
  • 2 chicken breasts sliced
  • olive oil

  1. Directions
  2. For white sauce: Heat 1 tablespoons butter in sauce pan, add 2 tablespoons flour and cook for 2 minutes on med. heat. heat stirring constantly. slowly add 3/4 cup hot milk (hot so it won't get lumpy). Set aside. (Make sure that the white sauce is hot when adding to the scampi sauce).
  3. For scampi sauce: Heat butter over low heat. add the garlic, Italian seasoning, crushed red pepper and black pepper. cook for about 2 minutes on low heat. add the wine and chicken broth. stir until combined. (I usually cook mine for about 30-40 minutes). add 1/4 cup white sauce and cook till slightly thickened.
  4. Flatten tenders, coat w Wondra flour & brown In a large skillet, in a little olive till nearly done. add the peppers and onions, saute till chicken is done. add the sauce. saute until everything is warmed. add roasted garlic cloves. serve over pasta.
  5. Roasted Garlic: Separate head of garlic into individual cloves still in 'paper'. toss in olive oil and wrap tightly in aluminum foil or a small pint sized dish with a lid. bake in 350* oven for 30 minute when the garlic has cooled to the touch you should be able to squeeze it out of the 'paper' shell of the individual cloves.

  • 4 ounces uncooked angel hair pasta
  • 1 1/2 tablespoons fresh lemon juice
  • 1 tablespoon olive oil

  1. Cook pasta according to package, drain.
  2. In a medium bowl, combine squash, tomatoes, oil, garlic, salt, basil, and pepper. Set aside.
  3. Heat up grill (medium-high heat if you have temperature control, mine has just the one temperature setting).
  4. Grill the vegetables 3-5 minutes per side until they are slightly softened and browned (it takes more like 20 minutes total in my grill, so you may really need to experiment with cooking times).
  5. Remove from grill and allow to cool enough for you to handle.
  6. Cut the veggies into bite-sized pieces.
  7. Toss pasta and vegetables together in a large serving bowl.
  8. Top with cheese.

Macaroni Salad – Super Easy and Delicious

This is a nice, basic, super Easy Macaroni Salad. I used mayonnaise and added some sugar and vinegar to add some tanginess. Red onions add crunch!

 

The diced red onions are nice for crunch as well as flavor.

This is a great summer salad! Perfect for that backyard BBQ!

  • Salt and pepper to taste

  3. In a separate bowl mix miracle whip and mustard. (If it is too tangy my mom would put a little sugar in it about a tsp.).
  4. Mix it all together and chill or serve immediately.

  5. Bake in 375 degree oven for 25 minutes or until lightly browned.
  6. Makes 6 servings.

  3. dd diced tomatoes and tomato sauce to the ground beef. Stir. Add chili powder and cumin Stir. Add macaroni Stir. Add salt. Season to taste. Stir.
  4. Serve and top with cheddar cheese.

This Creamy Spaghetti Pie is absolutely great. I was amazed at the flavor from such a simple recipe. The texture and ratios of everything are just right.

  • 8 ounces thin spaghetti broken in half, cooked and drained (about 4 cups)
  • 1/4 cup green onions with top finely chopped
  • 1/4 cup chopped fresh parsley
  • 2 garlic cloves minced
  • 3 ounces fresh parmesan cheese grated, divided (3/4 cup)
  • 1 15 oz container part-skim ricotta cheese
  • 1 egg lightly beaten
  • 3 tablespoons butter optional
  • 3/4 teaspoon salt
  • 1/2 teaspoon Italian seasoning
  • 1 cup shredded mozzarella cheese divided (4 oz.)
  • 1 26 oz jar spaghetti sauce
  • 1 14 1/2 oz can diced tomatoes, drained
  • parsley chopped to garnish
Instructions
  1. Save out 1/4 cup of the Parmesan cheese and 1/4 cup shredded mozzarella cheese. Set aside.

  2. Mix together green onions, garlic, chopped parsley, 1/2 cup Parmesan cheese, ricotta cheese, egg, butter(if using), salt, Italian seasoning, and 3/4 cup mozzarella cheese.

  3. Mix cheese/egg mixture with cooked spaghetti and place it on the bottom of a shallow casserole dish.

  4. In a bowl, mix spaghetti sauce with tomatoes. Pour over spaghetti mixture.

  5. Sprinkle with remaining 1/4 cup Parmesan cheese and 1/4 cup mozzarella cheese that was set aside.

  6. Bake about 30 minutes at 350 degrees. After pulling out of the oven, garnish the pie with chopped parsley. The pie will feel firm to the touch.

Serve and enjoy this Creamy Spaghetti Pie!

Baked Fettuccine Alfredo is an unusual but delicious twist on the traditional dish. It has the same sauce but baking changes it in a delightful way!

 

Fettuccine Alfredo is one of our family’s very favorite pasta recipes. It’s creamy and cheesy and never fails to impress…but it was recently upstaged.

We whipped up cheesy Alfredo-inspired sauce that we tossed our fettuccine in – then we put it in the oven and baked it to perfection.

The difference in flavor is subtle (but delicious, since all the ingredients cook together), but it’s the change in texture that’s our favorite part; the sauce thickens, and the crispy, cheesy top layer steals the show.

I got this recipe from a friend. I always get asked the recipe when I take it to potlucks.

  • 1 pint half-and-half cream
Instructions
  1. Cook fettuccine according to package directions and drain.
  2. Place in a buttered 2-quart casserole. Add the rest of the ingredients in the order given, stirring each time after adding each ingredient.
  3. Note: You could also use just one of the cheeses, either 1 cup Romano or 1 cup Parmesan, depending on what you have on hand.
  4. Bake, uncovered, at 350°F for 30-45 minutes, stirring occasionally.

These Homemade Egg Noodles are one of our family’s best recipes ever! Definitely a timeless, classic, method for making delicious noodles.

 

Just like my Mother and Grandmothers used to make.

I love it, my family loves it, and we hope you do too! Very simple. Light, and tasty! Great recipe!

I do use a pizza cutter when I make them, just because it’s easier. I also use the yellow food color because folks seem to think they’re twice as good.

Ingredients
  • 2 cups flour
  • 3 egg yolks
  • 1 egg
  • 2 teaspoons salt
  • 1/4 - 1/2 cup water
Instructions
  1. Measure flour into bowl; make a well in the center and add egg yolks, whole egg and salt. With hands, thoroughly mix egg into flour.

  2. Add water, 1 tablespoon at a time, mixing thoroughly after each addition. (Add only enough water to form dough into a ball.).
  3. Turn dough onto a well-floured board; knead until smooth and elastic, about 10 minutes. Cover; let rest 10 minutes.

  4. Divide dough into 4 equal parts.

  5. Roll dough, 1 part at a time, into paper-thin rectangle, keeping remaining dough covered.

  6. Roll rectangle around rolling pin; slip out rolling pin.

  7. Cut dough cross-wise into 1/8-inch strips for narrow noodles and 1/4-inch for wide noodles.

  8. Shake out strips and place on towel to dry, about 2 hours.

  9. When dry, break dry strips into smaller pieces.

  10. Cook in 3 quarts boiling salted water (1 tablespoon salt) (We use chicken broth.) 12 to 15 minutes or until tender.

  11. Drain thoroughly.
