This is a great low-carb meatloaf for anybody that’s trying to lose weight. I found this recipe when I went on a lo-carb diet.

But it’s not just for weight loss. It’s really a great meatloaf.

The fact that it substitutes pork rinds for the bread crumbs is what gives it it’s low-carb qualities!

If you’re trying to lose weight the low-carb way then this should become your official meatloaf recipe.

Low-Carb Meatloaf

Ingredients

1 1⁄2 lbs ground beef (Or half ground beef & half ground pork)
1 cup pork rind, crumbs
1 egg
1⁄3 cup tomato sauce
1⁄2 teaspoon salt
1⁄2 teaspoon pepper
2 tablespoons parsley
1⁄2 cup grated Parmesan cheese
1⁄4 cup chopped onion
1⁄2 teaspoon garlic powder

Directions

Preheat oven to 350 degrees.

Mix the meat and all the other ingredients. Shape into a firm oval loaf in a shallow baking pan and bake for 1 hour.

Makes 6 servings.

Total 11 carbs.

This is really good – very moist.

When you remove this meat loaf from the oven the baking pan will be full of fat. If you allow it to sit for a while it will soak most of it back up!

If you like your meatloaf a little drier drain off the fat right away.

Both ways are very good.

Delicious and very easy to prepare. This is a great recipe. Your family will love it. The cornbread bakes up beautifully and has a nice moist texture to it.

Even if you’re not on WW, but are trying to keep your caloric intake low, this is a perfect cornbread recipe to cure your carb craving!

Weight Watchers Cornbread

Ingredients

1 cup yellow cornmeal
1 teaspoon baking powder
1⁄2 teaspoon baking soda
1⁄2 teaspoon salt
1⁄3 cup Splenda granular
2⁄3 cup fat free sugar free yogurt
1⁄3 cup nonfat sour cream
1 egg

Directions

Mix the dry ingredients in a medium bowl.

Mix the liquid ingredients in a small bowl.

Gently fold the wet into the dry. Pour into a round cake pan, sprayed with Pam. Bake at 375 degrees for 15-20 minutes or until the edges are a golden brown and a toothpick inserted in center comes out clean.

Cut into 6 wedges.

Ingredients
  • 1/2 cup almond butter
  • 1/2 cup unrefined coconut oil
  • 3 tablespoons cocoa powder
  • 3 tablespoons heavy whipping cream
  • 2 tablespoons Truvia sugar substitute
  • 1/2 teaspoon vanilla
  • 1 pinch salt to taste
Instructions
  1. In a small sauce pan, add the nut butter and coconut oil. On a very low heat, melt these together.
  2. Add the cocoa powder, heaving whipping cream, sugar substitute (to taste) and vanilla.
  3. Take off heat and put into a pouring container.
  4. Line a cupcake tin with cupcake liners, or use a silicone mold. Pour out in 12 equal portions. If you want smaller fat bombs, just use what you like. You can even pour into a small flat pan, freeze and then cut to the size you want.
  5. Place into the freezer for about 15 minutes to harden.
  6. Store in fridge or freezer in a tightly sealed container.

Chicken and Baby Dumpling Soup
Ingredients
  • 4 skinless chicken breast halves or 4 chicken thighs
  • 1 1/4 cups all-purpose flour
  • 3 cups chicken stock
  • 1/2 cup coarsely chopped onion
  • 1 cup sliced carrot
  • 1 cup sliced leek in a pinch, I have used a white onion and it works fine too
  • 1 1/2 cup quartered mushrooms
  • 2 teaspoons baking powder
  • 1/4 cup finely chopped fresh parsley
  • 1/2 teaspoon poultry seasoning
  • 1/2 cup nonfat milk
Instructions
  1. This recipe calls for poached chicken breasts, but I like to put 3 cups of water on the stove to simmer, and add my chicken to cook while I mix and chop everything else. Add salt, pepper, and anything else you like if you would like to use this simmering liquid as your chicken stock later. Otherwise, quickly poach the chicken and use the canned stock.
  2. While the chicken is cooking (and don't overdo it -- it's better to leave it slightly undercooked rather than overcooked at this stage). Prepare all of your veggies. chopping, quartering, etc.
  3. By the time the chopping is done, the chicken should be ready to come out of the pot (15 minutes or so -- I am a slow chopper though). Take it out and let it cool while proceed to the next step.
  4. Mix 1/4 cup flour with 1/2 cup chicken stock. Add the liquid slowly to avoid lumps.
  5. Heat 2-1/2 cups chicken stock, if it isn't hot already. Add all your chopped veggies and cover. Keep on medium heat.
  6. While the veggies are cooking a bit, start pulling your chicken breasts apart. It should be in chunky shreds when you are done with it. Discard any bones.
  7. Stir in the flour/stock mixture to the pot of broth and veggies. It will start to thicken.
  8. In a medium bowl, combine 1 cup flour with baking powder, parsley, poultry seasoning, and milk. Stir just enough to moisten.(Keep in mind, you can do this step at any point in the recipe. I do what ever it takes to save time).
  9. Add the chicken shreds to the stock.
  10. Use a wet teaspoon and scoop up little bits of the dough you made in step 9. Drop them gently into the simmering broth. Reduce heat, cover tightly, and let simmer for an additional 15 minutes. The little dough balls will puff up significantly during cooking.
Recipe Notes

Right before I serve this, I like to sprinkle generously with black pepper, but the original recipe doesn't call for this.

I got this recipe from someone who says she got it at a Weight Watchers meeting. I don’t know where the original recipe came from.

I do know that it’s very low points and can be eaten every day without getting tired of it.

This recipe freezes and refrigerates well. Just make a large recipe at the beginning of the week and use it to snack on when you’re in danger of breaking your diet.

You can have a large bowl and some crusty bread with it and still be under 5 points.

Weight Watchers Broccoli Cheese Soup
Ingredients
  • 3 14 1/2 ounce cans chicken broth
  • 2 1 lb bags frozen broccoli
  • 1 10 1/2 ounce can rotel brand tomatoes and green chilies
  • 10 ounces Velveeta reduced fat cheese product
Instructions
  1. Mix the chicken broth, frozen broccoli and tomatoes and chilies together. Simmer for 25 minutes or until  the veggies are tender.
  2. Cube the Velveeta and put into the soup pot. Simmer just until the cheese is melted.

Low Calorie Low Fat Broccoli Salad
Ingredients
  • 4 cups broccoli florets or 4 cups Broccolini
  • 1/4 cup red onion minced
  • 2 tablespoons splenda artificial sweetener Granulated
  • 2 tablespoons cider vinegar
  • 2 tablespoons light mayonnaise
  • 2 tablespoons sunflower seeds roasted and salted
  • 3 tablespoons seedless raisins
Instructions
  1. Discard the broccoli stems and finely chop the florets or broccolini. Set aside.
  2. In a medium mixing bowl, whisk the Splenda, vinegar and mayonnaise toghether until it is an even, smooth consistency.
  3. Stir in the broccoli and the remaining ingredients. Toss until well coated.
  4. Chill until ready to serve.

  • 2 1/2 tablespoons olive oil
  • 2 1/2 teaspoons garlic powder
  • 2 tablespoons balsamic vinegar
  • pepper to season
Instructions
  1. Drain the cooked green beans and cool to room temperature.
  2. Add all the other ingredients together and mix with the green beans thoroughly. Put in the refrigerator to chill for at least 2 hours.
  3. Don't saturate the green beans in the liquid, add just enough to moisten and for flavor.

  • 2 cups chicken tenders (one small package) cut into bite sized pieces

  • 1/2 cup sharp cheddar cheese
  • 1/2 cup crushed taco chips
Instructions
  1. Saute the grated cauliflower in an un-greased non stick pan for 5 minutes over medium high until just beginning to go toasty and golden.
  2. Add the black beans, corn, cilantro, green onion, and fresh lime juice. Set aside.
  3. Sprinkle the chicken tenders with creole spice and saute with the onion, red pepper and jalapeno pepper in a non stick pan treated lightly with oil over medium high heat. When the chicken is cooked through and the vegetables are soft and translucent, add the minced garlic and saute another 30 seconds.
  4. Add the tomatoes, salsa, cumin, and continue to stir. Cover and remove from the heat. Let rest 10 minutes.
  5. Add a little sauce at a time to the yogurt, stirring well in order to temper it. Gently stir the tempered yogurt into the chicken and tomatoes.
  6. Gradually re-heat the chicken and sauce and re-heat the "rice" so that everything is nice and hot.
  7. Place the cauliflower rice mixture in a 9x13 casserole treated lightly with cooking spray or oil. Cover with the chicken mixture.
  8. Sprinkle the top with the cheese and the taco chips. Place under a preheated broiler until the cheese is melted and the casserole is bubbly.
  9. Let rest 5-10 minutes before serving. Enjoy!
