One of the easiest, if not the easiest pasta recipes I’ve ever made.

I love the simplicity and one-pan factor with this dish.

I like to serve the pasta with a salad and crusty bread. Makes for a great weeknight meal.

Ingredients
  • 1 tablespoon olive oil
  • 6 garlic cloves minced
  • 1/4 teaspoon red pepper flakes
  • salt & fresh ground pepper
  • 1 28 ounce can crushed tomatoes
  • 3 cups water
  • 12 ounces ziti pasta 3 3/4 cups
  • 1/2 cup heavy cream
  • 1/2 cup Parmesan cheese grated
  • 1/4 cup fresh basil leaf minced
  • 1 cup mozzarella cheese shredded
Instructions
  1. Adjust oven rack to middle position and preheat oven to 475.

  2. Combine oil, garlic, pepper flakes, and 1/2 teaspoon salt in 12-inch oven-safe nonstick skillet and saute over medium-high heat until fragrant, about 1 minute. (If your skillet is not oven-safe, transfer the pasta mixture into a shallow 2-quart casserole dish before sprinkling with the cheese and baking).

  3. Add crushed tomatoes, water, ziti, and 1/2 teaspoon salt.

  4. Cover and cook, stirring often and adjusting heat as needed to maintain a vigorous simmer until ziti is almost tender 15-18 minutes.

  5. Stir in cream, Parmesan, and basil. Season with salt and pepper to taste.

  6. Sprinkle mozzarella evenly over ziti. Transfer skillet to oven and bake until cheese has melted and browned, about 10 minutes. Serve.

This Easy Stove Top Macaroni Cheese is pure mac and cheese heaven! An easy way to do macaroni and cheese when there is little time until dinner.

 

No baking required.

This is a classic recipe and not to be confused with a boxed mix or that made with Velveeta. Velveeta isn’t even classified as real cheese (and I still love it!).

So good, and so much better than boxed.

The key to this recipe, as with any sauce or gravy, is to stay with it- no walking away from the stove.

  1. Cook macaroni according to package directions.
  2. In medium saucepan, melt butter over medium heat; stir in flour, and cook for 3-5 minutes to form a roux; add salt and pepper; slowly add milk, stirring well after each addition.
  3. Cook and stir until bubbly.
  4. Stir in cheese a small amount at a time until fully melted.
  5. Drain macaroni; add to cheese sauce; stir to coat.

Oven Baked White Rice, Perfect Every Time!

This Oven Baked White Rice recipe makes perfect rice every time, simply because the temptation to stir isn’t there. Goes well with any main dish.

This foolproof rice is perfect with roasted chicken or broiled fish or whatever you’d like to serve it with. I love it with gravy!

I sometimes like to add a 1/2 cup of shredded carrots in addition to the onion to give it a flash of color.

For plain rice just leave out the onion. You can also use plain water instead of the stock!

  1. In a medium stovetop-to-oven pot melt butter or olive oil over medium heat. Add chopped onions and cook 3 to 5 minutes, stirring until softened. Add rice and stir until well coated.
  2. Add chicken or vegetable stock, salt and pepper to taste. Bring to a boil.
  3. Cover and bake until the rice is tender and the stock is absorbed, about 20 to 25 minutes.
  4. Let stand, covered for 5 minutes before serving.

  1. In a soup kettle add all vegetables and the 3 cups water and chicken bouillon. Simmer 20 minutes or until vegetables are tender.
  2. In a large saucepan melt butter. Stir in flour and cook for 2-3 minutes until nice and bubbly. Whisk in milk; bring to a boil. Add this to the vegetable-water mixture in soup kettle.
  3. Bring all to a simmer and add ham and shredded cheese. Bring to a simmer again and cook until cheese is melted and all is heated through.
  4. Serve and ENJOY!

Creamy, Cheesy And Absolutely Decadent Scalloped Potatoes

This is one of the best Scalloped Potatoes recipe I have found. A recipe that’s so easy and absolutely delicious. The taste is a combo of crispy topping with a creamy, cheesy center.

The leftovers are just as good, maybe even better, the next day.

This has become my standard recipe for scalloped potatoes. It’s so easy to prepare, goes together in minutes and can be cooking in the oven while getting the rest of the meal ready.

Scalloped Potatoes
Ingredients
  • 4 cups thinly sliced potatoes
  • 3 tablespoons butter
  • 3 tablespoons flour
  • 1 1/2 cups milk
  • 1 teaspoon salt
  • 1 dash cayenne pepper
  • 1 cup grated sharp cheddar cheese
  • 1/2 cup grated cheese to sprinkle on top
  • paprika
Instructions
  1. In a small sauce pan, melt butter and blend in flour. Let sit for a minute. Add all of cold milk, stirring with a whisk. Season with salt and cayenne.
  2. Cook sauce on low until smooth and boiling, stirring occasionally with a whisk. Reduce heat and stir in cheese.
  3. Place a half of the sliced potatoes in a lightly greased one quart casserole dish. Pour half of cheese sauce over potatoes. Repeat with second layer of potatoes and cheese sauce. Sprinkle the remaining cheese on top.
  4. Top with some paprika for color.
  5. Bake uncovered for about 1 hour at 350°F.

This Beefy Cabbage Soup is a very tasty and tummy warming recipe that I’ve used for several years. I’ll admit I don’t always make it the same but I do stick with the basics: ground beef, cabbage and beans!

It’s a great soup and so easy to throw together. Most of the ingredients are staples in my house so I can usually make it on short notice!

Once the ground beef is cooked, this can all get dumped into the crock pot.

Beefy Cabbage Soup -- Quick & Easy
Ingredients
  • 1 lb lean ground beef
  • 1 onion medium chopped
  • 1 minced garlic clove
  • 28 ounces diced tomatoes with juice
  • 3 cups low sodium beef broth
  • 8 ounces tomato sauce
  • 14 ounces great northern beans
  • 1 small cabbage chopped
  • 1/2 - 1 teaspoon dried thyme
  • 1/2 teaspoon chili powder to taste
  • salt to taste
  • pepper to taste
Instructions
  1. In a large pot: Brown ground beef, drain any fat. Add onions and garlic, saute with ground beef until tender.
  2. Note: At this point you place the ground beef mixture and remaining ingredients in the crock pot. Cook on low for 4-6 hours.
  3. Standard stove top cooking: Add remaining ingredients and simmer.
  4. Simmer for 1-2 hours on stove top until cabbage is tender. Stirring occasionally. Check fro additional seasonings.
Recipe Notes

Serve with a crusty bread.

  3. Gradually add milk mixture to the soup, stirring constantly. Bring to a boil and reduce heat to simmer.

  4. Stir in cheese; continue to stir until cheese is melted then serve. Do not boil.

This Coconut Custard Pie is a family recipe I’ve made for years for dozens of people. The coconut floats to the top and crisps, while the pie makes its own very good crust. It could not be any easier!

  • 1 cup flaked/shredded sweet coconut
  • 3 eggs
  • 1/2 cup flour

  1. Melt butter then add all ingredients into mixing bowl. Mix well.
  2. Pour into greased 10" pie plate.

  • 2 1/2 cups dark brown sugar packed
  • 1/2 cup oil or unsalted butter melted
  • 4 eggs

  • 2 teaspoons baking powder
  • 3/8 teaspoon salt
  • 3 1/4 cups flour
  • 1 cup Coca-Cola
  • 1 cup mini chocolate chips optional
  • 1 cup chopped walnuts optional
Instructions
  1. Set oven to 300 degrees.
  2. Grease two 9 x 5-in loaf pans, or mini loaf pans.
  3. Puree the bananas; set aside.
  4. Mix together the sugars, oil, eggs and vanilla.
  5. Sift all dry ingredients (except the chocolate chips and nuts).
  6. Mix together, the dry ingredients with the sugar/oil mixture, adding the banana puree and the 1 cup cola.
  7. Add the chips and the nuts, if using.
  8. Spoon batter into prepared pans.
  9. Set pans on a baking sheet.
  10. Bake for 1 hour and 20 mins, or until cakes test done.
