Smothered Burritos – Tex/Mex Finest Comfort Food

I love Tex/Mex food! I got this Smothered Burritos recipe from a good friend of mine several years ago. It’s very easy to make and soooo good! Super creamy and yummy with just the right amount of kick!

Smothered Burritos

I’m sharing one of my family’s favorite dinner recipes: Smother Burritos with cheese and rotel.

I like to serve it with some red rice. Definitely worthy of adding to the regular rotation!

This is my idea of what New Mexico comfort food is!

Smothered Burritos
These burritos are filled with a delicious ground beef and refried beans mixture then topped with tangy cheese and rotel tomato sauce.
Ingredients
  • 2 lbs ground beef
  • 16 ounces refried beans
  • 1 green pepper chopped
  • 1 onion chopped
  • 10 ounces Rotel tomatoes & chilies undrained
  • 1 taco seasoning mix
  • 2 lbs Velveeta cheese I use low fat
  • 20 flour tortillas may use less depending on how much filling you put in
Instructions
  1. Cook the beef, onion, and green pepper until the beef is browned and the onion is translucent. Drain.
  2. Add the taco seasoning and water as directed on the back of the mix. Cook for amount directed.
  3. Stir in the refried beans.
  4. Cube the Velveeta and put in microwavable bowl. Microwave for a minute or two, add the rotel, stir, and microwave again until melted stirring every minute or so.
  5. Put 1-1/2 cup cheese mixture into the beef. Set other cheese aside for end.
  6. Warm the tortillas in the microwave.
  7. Put 1/2 cup or more of the cheese/beef mixture into each tortilla. Roll and place in greased 13x9 pan. (You will probably need 2 pans for this.)
  8. Put the rest of the cheese on top.
  9. Bake at 350 for 10 to 15 minutes.

Poor Man’s Dinner Party – Cheap & Delicious

This Poor Man’s Dinner Party is a very economical dish, but it is soooo very tasty! Very comforting dish! The flavors blend together very nicely.

 

Super easy, super economical, and super yummy.

Served with some bread and possibly a salad and you have yourself a “poor man’s dinner party”!

Perfect dinner for those weeknights when you have to run here, there and everywhere.

Ingredients
  • 1 lb ground beef
  • 2 tablespoons shortening
  • 1 medium onion chopped
  • 2 cups canned tomatoes
  • 1 tablespoon catsup
  • 1 tablespoon steak sauce
  • 1/4 cup green pepper chopped
  • 2 tablespoons parsley chopped
  • 1 5 ounce package elbow macaroni
  • 1 10 1/2 ounce can cream of mushroom soup
  • 1 1/2 cups shredded cheddar cheese
  • salt and pepper
Instructions
  1. Brown the ground beef in shortening until all red color disappears. Drain all but 1 1/2 tsp grease from the skillet.

  2. Add the onion, tomatoes, catsup, steak sauce, green pepper, and parsley. Simmer for 30 minutes.

  3. Meanwhile, cook the macaroni according to the package directions.

  4. Combine the macaroni and ground beef mixture in a 2-quart baking dish. Season with salt and pepper to taste, keeping in mind that you will be adding cream of soup.

  5. Gently spoon the mushroom soup into the mixture. Mix lightly, lifting from the bottom. Sprinkle 1/2 cup cheese into the mix and stir. Add the other 1 cup of cheese on the top.

  6. Bake at 350°F for 30 minutes, or until the top is bubbly and browned.

Easy Beef Pasta – Delicious and Inexpensive

This Easy Beef Pasta is a quick, inexpensive dinner made mostly with what you have on hand. Pasta, canned tomatoes, and garlic cloves.

 

Ingredients that work wonders as a recipe base — and only get better when you add ground beef and Parmesan cheese to the mix.

I usually always have these ingredients in my freezer or in my pantry. I love this because it doesn’t keep me in the kitchen all night during the week.

Ingredients
  • 1 lb lean ground beef
  • 1 15 ounce can diced tomatoes
  • 1/2 cup onion chopped
  • 2 garlic cloves minced
  • 8 ounces tomato sauce 1/2 can
  • 3/4 cup Parmesan cheese more if you like cheese like we do
  • 2 1/2 cups elbow macaroni dried
Instructions
  1. Sauté the onion & garlic on medium heat for 5 minutes. Turn the heat up to medium-high & add the beef. Cook until no pink remains.

  2. Add the tomatoes, tomato sauce, & Parmesan cheese and lower the heat and simmer for 20 minutes.

  3. Cook the macaroni while the beef mixture is simmering. Drain and combine the macaroni & beef mixture together. Let sit for a few minutes.

 

Serve with crusty bread and a salad.

Brings Back Memories Tuna Casserole
Ingredients
  • 1 12 ounce bag egg noodles
  • 1 can condensed cream of mushroom soup not diluted
  • 1/2 cup milk
  • 1 7 ounce can tuna, drained well
  • 1 cup cooked frozen peas or 1 cup canned peas drained
  • 1 cup crushed potato chips
Instructions
  1. Prepare the egg noodles as directed on the package; drain and rinse.
  2. Preheat oven to 375 degrees.
  3. Combine the soup and milk and mix well.
  4. In a large bowl, combine the cooked noodles, soup mixture, tuna and peas and stir gently until well coated.
  5. Turn into a buttered casserole or baking dish and sprinkle evenly with crushed potato chips.
  6. Bake for 25 minutes or until bubbly.

Spanish Chicken Rice Bake – Awesome

This Spanish Chicken Rice Bake is perfectly awesome and so fast and easy to put together. A throw-it-together and pop it in the oven supper.

 

This is one of the best one-dish meals I have had in a very long time. The mixture of the rice and soup comes out so creamy, and the salsa gives it a nice kick.

The aroma towards the end of baking will have everybody coming to the kitchen to ask what you’re cooking.

  • 1 cup salsa

  • 1/2 cup shredded cheddar cheese

  1. Mix the soup, salsa, water, corn, and beans (optional) and rice in a 2-quart shallow baking dish. Top with the chicken (seasoned with salt and pepper) and sprinkle with chili powder.

  2. Cover tightly with casserole lid or foil.

  3. Bake at 375°F for 45 minutes or so.

  4. Sprinkle with cheese.

This is a really quick to make casserole dish with a Southwestern flair.

Ingredients
  • 2 cans hormel chili hot or mild, with or without beans
  • 1 small diced onion optional
  • sliced jalapeno optional
  • diced green chili optional
  • 1 bag Fritos corn chips
  • 3 cups shredded cheese
Instructions
  1. Pre-heat oven to 350 degrees Heat the canned chili and any optional ingredients on the stove.
  2. Spread a thin layer of Fritos along the bottom of an 8x8 or 9x9 baking dish. Pour about half of the heated chili evenly over the bottom layer of Fritos.
  3. Completely cover the chili layer with a thicker layer of Fritos.
  4. Sprinkle about half the shredded cheese atop the Fritos.
  5. Pour the remainder of the chili atop the Frito/cheese layer.
  6. Completely cover the top chili layer with another thick layer of Fritos, then sprinkle on the remaining cheese.
  7. Bake in 350 oven for about 25-30 minutes, or until bubbly around edges and top cheese is melted.
  8. Allow to cool for about 5 minutes before serving.

Ingredients
  • 1 lb lean ground beef
  • 1/2 cup onion chopped
  • 1/2 cup green pepper chopped
  • 1 15 ounce jar pizza sauce
  • 1 11 ounce can cheddar cheese soup (Campbells)
  • 1 cup water
  • 1/2 cup pepperoni diced
  • 2 cups mafalda pasta mini lasagna noodles
  • 2 ounces mozzarella cheese or 2 ounces cheddar cheese
Instructions
  1. In a 12 1/2 inch cast iron skillet, brown the ground beef, onion and bell pepper, drain. Stir in the pizza sauce and soup, blend well.
  2. Stir in the water and pepperoni. Bring to a boil; stir in uncooked noodles.
  3. Cover and cook over medium heat for 10 to 15 minutes or until the pasta is tender, stirring frequently.
  4. Remove from the heat; sprinkle with cheese. Cover and let stand for 5 minutes.

  3. Reduce heat to medium.
  4. Cover; cook 5 minutes or until meatballs are thawed.

  5. Add the uncooked noodles; mix well.

  6. Cover; cook about 10 minutes or until noodles are tender and meatballs are thoroughly heated, stirring occasionally.

  7. Remove from heat. Stir in sour cream until well blended.

  8. Sprinkle with parsley.

  4. Garnish with chopped fresh parsley, if desired.
