Empress Chicken Recipe – Easy and Delicious

A little sweet, a little sour, this Empress Chicken recipe is an easy and delicious Chinese-American stir fry that only takes 20 minutes to make!

 

It was my favorite thing to order at the local Chinese restaurant. They switched over to “fast food” Chinese, and this dish got lost in the translation until this recipe!

The sauce worked perfectly for me — I used just three peppers. There was a hint of heat, but not too much. A perfect treat for my weekend meal.

This recipe is very close to my beloved dish! Great over rice.

Ingredients
  • 1 1/2 cups chicken broth
  • 3/4 cup sugar
  • 1/4 cup cornstarch
  • 1/3 cup soy sauce
  • 1/2 cup white vinegar
  • 3 -4 garlic cloves minced
  • 1 1/2 teaspoons fresh ginger chopped
  • 3 lbs boneless skinless chicken breasts cubed
  • 1/4 cup dark soy sauce tamari
  • 1 large egg beaten
  • 1/2 cup cornstarch
  • 2 cups green onions minced (one bunch)
  • 8 small hot peppers diced (I used jalapenos)
Instructions
  1. Combine the first 7 ingredients in a jar and shake vigorously. Store in the fridge until ready.
  2. Mix chicken with 1/4 cup dark soy sauce. Stir in egg. Add cornstarch and mix chicken until coated.
  3. Deep fry in hot oil until golden brown. Drain on paper towels.
  4. Place a small amount of oil in wok and heat to very hot. Add onions and peppers and stir fry 30 seconds. Stir in sauce mixture (shake again first). Cook until thick. If it gets too thick, add some water until desired consistency.
  5. Add chicken and cook until hot and bubbly.
  6. Serve over hot rice.

Easiest Chicken Dinner Ever – So Easy!

Very simple and fast and everybody loves it. This Easiest Chicken Dinner Ever is just dump and cook! Prep time is less than 5 minutes.

 

Plus there’s only one pan to clean!

You need to use Rotel which is tomatoes and green chilis. If serving to kiddies get the mild Rotel. If you just use regular canned tomatoes it will be bland.

You really need to use the tenders NOT chicken breasts for it to be the best. You could also add some onion but I omit because the less prep the better.

  • 1 lb chicken tenders raw
  • 1 16 ounce can chicken broth
  • 1 10 ounce can Rotel tomatoes
  • 1 cup white rice uncooked
  • 1 cup shredded cheddar cheese
  • garlic powder

Instructions
  1. Using a large, deep skillet with a cover pour a can of chicken broth and can of Rotel into the skillet. Stir in the cup of rice.

  2. Lay chicken tenders on top of rice and sprinkle with garlic, salt, and pepper. Go easy on the pepper if you don't like it too hot because the Rotel has a little kick to it.

  3. Cover and cook over medium-high heat for 20 minutes or until chicken is opaque.

  4. Remove from heat and sprinkle with the cheese. Stir lightly until cheese melts slightly.

Serve with a nice salad.

This Chicken Dinner Pot Pie is so good! This recipe is a definite keeper! The whole family enjoyed this pot pie, including the kids.

 

I will NEVER buy frozen pot pie again!

I used evaporated milk & a bag of frozen mixed veggies and refrigerated pie crusts. So easy!

I have a horrible time making chicken gravy and I have found that the gravy for this recipe is perfect on its own over potatoes!

  • pastry for a double-crust 9-inch pie
  • 2 tablespoons butter
  • 2 tablespoons flour
  • 1 teaspoon salt
  • 1/8 teaspoon pepper
  • 1/8 teaspoon ground thyme
  • 1/2 cup chicken broth
  • 3/4 cup light cream or 3⁄4 cup heavy cream
  • 2 cups cubed cooked chicken
  • 1 10 ounce package frozen peas and carrots, cooked and drained (I have started using about 1/2 a package)
Instructions
  1. Heat oven to 425 degrees.
  2. Prepare pastry, cut top into lattice strips. (I use just a regular pie top with slits cut in it. It's quicker).
  3. Melt butter in large skillet over low heat; stir in flour, salt, pepper and thyme. Cook, stirring until mixture is smooth and bubbly. Remove from heat.
  4. Stir in chicken broth and cream. Heat to boiling, stirring constantly. Boil and stir for one minute. Stir in chicken and vegetables. Pour into pastry lined pie pan. Cover with lattice top.
  5. Cover edge with 2-3 inch strips of foil to prevent excessive browning.
  6. Remove foil for the last 15 minutes of baking.
  7. Bake for 35 to 40 or until crust is brown.

Chicken Pepper Skillet is an excellent recipe! Yummy enough that being healthy is just a nice bonus. The oregano, cumin, and lemon all blend wonderfully.

They each maintain their own distinctive flavors but they blend beautifully!

I really enjoy stir-fries and this one is really good. Using rotisserie chicken breasts cuts down on time.

Ingredients
  • 2 pork chops
  • 1/2 medium onion diced
  • 1 -2 slice bacon
  • 2 tablespoons butter
  • 2 tablespoons cornstarch
  • 3/4 cup water

Instructions
  1. In 12" skillet, cook bacon on med hi heat. Remove bacon from skillet, but leave bacon drippings.
  2. Add 1 TBSP butter and diced onion. When transparent, remove from skillet.
  3. Reduce heat to medium, lightly salt and pepper both sides of pork chops and place in skillet. Brown both sides (approx 2-4 minutes each).
  4. Chop up bacon, and add both bacon and cooked onion to skillet.
  5. Add 3/4 cup water (add more if you want more gravy), 1 TBSP butter, cover and simmer until cooked (5-10 minutes - but can simmer for up to 45 minutes easily).
  6. Just before serving, mix 2 TBSP cornstarch with cool tap water (approx 1/4 cup).
  7. Place pork chops on plates, add corn starch/water mixture to gravy/drippings in skillet and bring to quick boil stirring frequently to form thick gravy.

  • 2 boneless skinless chicken breasts
  • 1 cup water chestnut
  • 2/3 cup mushrooms

  • 4 -5 leaves iceberg lettuce
Special Sauce
  • 1/4 cup sugar
  • 1/2 cup water
  • 2 tablespoons soy sauce
  • 2 tablespoons of rice wine vinegar
  • 2 tablespoons ketchup
  • 1 tablespoon lemon juice
  • 1/8 teaspoon sesame oil
  • 1 tablespoon hot mustard
  • 2 teaspoons water
  • 1 -2 teaspoon garlic and red chile paste
Stir Fry Sauce
  • 2 tablespoons soy sauce
  • 2 tablespoons brown sugar
  • 1/2 teaspoon rice wine vinegar
Instructions
  1. Make the special sauce by dissolving the sugar in water in a small bowl. Add soy sauce, rice wine vinegar, ketchup, lemon juice, and sesame oil. Mix well and refrigerate this sauce until you're ready to serve.
  2. Combine the hot water with the hot mustard and set this aside as well. Eventually, add your desired measurement of mustard and garlic chili sauce to the special sauce mixture to pour over the wraps.
  3. Bring oil to high heat in a wok or large frying pan. Saute chicken breasts for 4 to 5 minutes per side or done. Remove chicken from the pan and cool.
  4. Keep oil in the pan, keep hot.
  5. As chicken cools mince water chestnuts and mushrooms to about the size of small peas. Prepare the stir fry sauce by mixing the soy sauce, brown sugar, and rice vinegar together in a small bowl.
  6. When chicken is cool, mince it as the mushrooms and water chestnuts are. With the pan still on high heat, add another Tbsp of vegetable oil. Add chicken, garlic, onions, water chestnuts and mushrooms to pan.
  7. Add stir fry sauce to the pan, saute mixture a couple of minutes then serve in lettuce leaves.

Fab-u-lous! Wow, this Olive Garden Alfredo Sauce Copycat is a winner. There were no leftovers in my house with this meal. Everyone loved it!

 

I added a bit of fresh nutmeg … perfection!

The best Alfredo sauce ever. This is actually several recipes combined into one. You can also add your choice of meat (chicken, shrimp or even crab).

There’s an OLIVE GARDEN just a few minutes away from me but I’ll never go there for Alfredo sauce again. I promise this is the best sauce ever. Definitely a dish you would want to impress your guest with.

Ham Hopping John is one of my favorite New Years Day dishes. This is a fabulous version of it. Very good down Home Comfort food. Full of flavor.

It definitely has that Down Home Comfort food quality. So Full of flavor. Sooooo tasty. Very addictive. And oh the smell as it cooks!!!

  • 2 cups black-eyed peas drained, rinsed
  • 8 cups water
  • 3/4 lb ham 1/2 inch cubed
  • 1/4 lb bacon 1/2 inch strip
  • 1 cup onion diced
  • 1 teaspoon garlic roasted
  • 1 cup long-grain white rice
  • 1/2 teaspoon dried thyme
  • 1 teaspoon red pepper flakes or to taste
  • 1/2 teaspoon sea salt
  • 1/4 teaspoon black pepper fresh ground
Instructions
  1. Put peas in a deep pan cover with 8 cups of water. Bring to a boil on high heat. Lower heat to simmer, cover the pot, cook for 45 minutes. (until peas are tender but not mushy)
  2. Place ham and bacon in frying pan over medium heat and fry for 5- 7 minutes, drain on a paper towel and set aside.
  3. Keep 1 tsp bacon fat, add the onions to the pan and sauté, stirring often until soft, (4 min) set aside.
  4. When beans are ready, drain and save 2 1/2 cups of cooking liquid.
  5. Add rice, ham, bacon, onions, roasted garlic, thyme, red pepper flakes, salt and pepper to beans and reserved cooking liquid. Stir well. Return to high heat and bring to a boil. Lower heat and cover.
  6. Cook 25 minutes (until rice is done and all liquid has evaporated).
  7. Turn off the stove and let sit covered for about 15 minutes.

Pasta With Cajun Cream Sauce

You can’t go wrong with this Pasta With Cajun Cream Sauce recipe. Excellent, we loved it. This is not for the diet conscious!

 

You can sub chicken broth for the wine and bouillon if desired.

I used linguini but a short pasta, penne or similar, would be a good choice also. You could add shrimp or bacon or … lots of stuff — great!

  • 1 lb dry pasta I like rigatoni
  • 2 tablespoons olive oil
  • 1/2 cup onion chopped
  • 2 tablespoons garlic minced
  • 1 teaspoon chicken bouillon granule
  • 1 cup white wine
  • 1 tablespoon cajun seasoning or creole-use your favorite
  • 1 tablespoon sweet smoked paprika
  • salt to taste
  • fresh ground pepper to taste
  • 2 tablespoons tomato paste
  • 1 pint heavy cream
  • 2 tablespoons fresh parsley chopped
  • 1/2 cup Parmesan cheese shredded
Instructions
  1. In a large stockpot, boil water for pasta.

  2. In a large sauté pan, heat olive oil over medium heat. Add onions and saute for 2 minutes. Add garlic, saute an additional 1 minute.

  3. Stir chicken bouillon into white wine and add to the pan.

  4. Using a wooden spoon, scrape any brown bits off the bottom of the pan. Let the wine reduce to half – about 3 minutes.

  5. In the meantime, cook your pasta to the al dente stage.

  6. Add cajun seasoning, paprika, salt, pepper, and tomato paste to the sauce. Stir.

  7. Add heavy cream. When the cream mixture is almost bubbling, turn heat to low. Let the crème mixture reduce to half – about 5 minutes.

  8. Drain the pasta very well – add pasta to the crème sauce.

  9. Toss with freshly chopped parsley and Parmesan.

  10. Serve.
