These Ham and Cheddar Muffins are so yummy! Great for breakfast or a savory snack at any time of the day. I make these every time I have leftover ham.

 

The flavor and texture of these muffins are so enjoyable.

Sometimes I saute a little garlic and finely chopped bell peppers with the onions to add even more flavor.

Very good! Perfect to reheat for breakfast.

Ingredients
  • 1/4 cup butter
  • 1/2 cup onion Minced
  • 2 cups flour
  • 1 tablespoon baking powder
  • 1 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/2 teaspoon garlic powder
  • 2 eggs
  • 1 cup milk
  • 1 teaspoon Dijon mustard
  • 1 cup ham Diced
  • 1 cup sharp cheddar cheese shredded or diced
Instructions
  1. Preheat oven to 375° and lightly grease 12 muffin cups.
  2. Sauté onion in butter until soft.
  3. In a bowl, combine flour, baking powder, salt, pepper, and garlic powder.
  4. In another bowl, combine eggs, milk, and mustard. Add the sautéed onion, ham and cheese.
  5. Stir the wet mixture into the dry mixture just until moistened, don’t over stir!
  6. Spoon batter into prepared muffin pans and bake in preheated oven for 25-30 minutes.

Dinner Rolls in One Hour – Really Quick

You really can do these Dinner Rolls in One Hour from beginning to end.  I use the food processor and hasten the rising by using rapid-rise yeast.

 

This yeast is so finely milled that it dissolves right in the flour mixture, and it can stand a higher temperature, giving the dough a boost for the single necessary rising.

The dough is very easy to work with. This dinner roll is definitely on my shortlist of something to make for holidays.

  • 2 1/2 cups all-purpose flour
  • 2 3/4 teaspoons fast rise yeast 1 package
  • 5 tablespoons instant nonfat dry milk powder
  • 2 tablespoons sugar
  • 1/2 teaspoon salt
  • 3/4 cup water very warm, about 130 degrees F
  • 2 tablespoons extra virgin olive oil
  • 3 tablespoons unsalted butter melted
Instructions
  1. In either a food processor or mixing bowl, mix the flour, yeast, milk, sugar, and salt.
  2. Add the water and oil and stir or process until a thick, sticky dough forms. Let stand for 5 minutes.
  3. Butter an 8-inch round cake pan.
  4. Place the dough on a lightly floured board. Gather the dough together gently. Using a floured knife or dough scraper, cut the dough into quarters. Cut each quarter into quarters, and shape each into balls, adding flour, if necessary, to prevent stickiness.
  5. Place the dough pieces close together in the prepared pan. Cover, and let rise in a warm place for 20 to 25 minutes or until the rolls are puffy.
  6. Meanwhile, preheat oven to 400 degrees F.
  7. Drizzle the melted butter over the rolls.
  8. Bake for 20 minutes or until golden.

I don’t think I’ve had any homemade bread machine yeast rolls this delicious, and I have been baking with a bread machine for a long time. This recipe is a keeper!

 

These are the absolute best dinner rolls. They are light and fluffy and buttery. The dough can also be shaped in many other ways, so use your imagination.

Makes awesome cinnamon rolls too!

You just can't beat homemade yeast rolls and the bread machine makes it so easy!

  • 1/2 cup water
  • 1/2 cup warm milk
  • 1 egg
  • 1/3 cup butter or margarine softened
  • 1/3 cup sugar

  • 1 package dry yeast 2 1/4 tsp
  • 1/4 cup butter or margarine
Instructions
  1. Place all ingredients except the 1/4 cup butter into the bread machine in the order recommended by the manufacturer. Select the dough cycle and start the machine.

  2. Shape the dough into 20 to 24 balls and place in buttered pan (s).

  3. Melt the 1/4 cup butter and brush it over the tops of rolls, saving the excess for brushing on after baking.

  4. Cover and let rise in a warm place for about 1 hour, or until double in bulk.

  5. Bake at 375 degrees F for 15 to 18 minutes.

  6. Brush baked rolls with remaining butter.

Tips And Tidbits About Buttery Bread Machine Yeast Rolls

This dough can also be divided into two portions and each rolled into a 12-inch circle; spread each circle with softened butter, cut into 8 wedges and roll up starting with the wide end, to make crescents OR use this dough for cinnamon rolls or sticky buns.

  5. Cover and let rise for 1 hour or until doubled in size.

  6. Heat oven to 375 F.
  7. Bake until golden brown, about 17 minutes.

Tips And Tidbits About Easy Homemade Dinner Rolls

These rolls can be reheated and “freshened” really easily!  Put them in a moistened paper bag and then place the bag in an oven on low heat.

You can also just pop them in the microwave. Not as good as the oven method but it works!

Weight Watchers Cornbread

Ingredients

1 cup yellow cornmeal
1 teaspoon baking powder
1⁄2 teaspoon baking soda
1⁄2 teaspoon salt
1⁄3 cup Splenda granular
2⁄3 cup fat free sugar free yogurt
1⁄3 cup nonfat sour cream
1 egg

Directions

Mix the dry ingredients in a medium bowl.

Mix the liquid ingredients in a small bowl.

Gently fold the wet into the dry. Pour into a round cake pan, sprayed with Pam. Bake at 375 degrees for 15-20 minutes or until the edges are a golden brown and a toothpick inserted in center comes out clean.

Cut into 6 wedges.

There are so many variations of cornbread, and this Jalapeno and Cheddar Cornbread is yet another wonderful one! It’s really flavorful with the chiles.

American Indian Fry Bread – It’s Authentic

Incredible! This American Indian Fry Bread is the real thing and is very easy to make. It’s about as authentic as you can get from your own kitchen!

 

I have a friend that used to work at an American Indian restaurant and she says this recipe makes fry bread just like theirs!

If you would like to make a Taco Bell Chalupa this is the bread to use! No more overpriced Baja Beef Chalupas with very little meat!!

This American Indian Fry Bread is about as authentic as you can get.

Southern Style Fried Cornbread

This Southern Style Fried Cornbread is southern for sure! Just like my grandmother used to make except she added in diced hot peppers!

 

She called ’em “pepper patties”. Delicious.

I still remember as a child eating the crunchy bits and trying to avoid the hot pepper bits!!!

Fried cornbread goes well with any boiled leafy greens, cabbage, lima beans, black-eyed peas, fried fish, or pork chops. You just can’t beat fried cornbread!

This Southern Style Fried Cornbread reminds me of my childhood!

Ingredients
  • 1 cup White Lily self-rising cornmeal mix
  • 2/3 cup water
  • 1 cup vegetable oil for frying
Instructions
  1. Mix the first two ingredients to make a batter --- add more or less water depending on how thick or thin you want your cornbread patties. The best way would be to mix in small amounts of water at a time to get the consistency you want.
  2. In a skillet or frying pan bring the oil up to medium heat and test 1/2 teaspoon drop of batter, You do not want it to fry too fast. I normally cook mine on #6 and then turn down to #5 on my stove.
  3. Drop the batter by tablespoons full and pat out with the back of a spoon to make a pattie. Turn over when the bottom is light brown.

 

Serve and enjoy this tasty bread!
