This Beef Corn Noodle Casserole is very tasty and so easy to make! You wouldn’t think the ingredients would go together, but they really do.

 

In fact, they go together very well. The contrast of the sweet corn and salty olives is very nice!

This is an extremely easy meal to make, almost a homemade hamburger helper, and it’s so good.

Ingredients
  • 3 tablespoons  butter
  • 1 lb ground beef
  • 1 large onion chopped
  • 2 1/2 cups uncooked noodles
  • 1 14 1/4 ounce can corn
  • 1/2 cup chopped ripe olives
  • 2 cups canned tomatoes
  • 1 cup grated cheese
Instructions
  1. Brown beef in butter in an iron skillet and add the onion. Brown slightly & pour off some of the grease.

  2. Add tomatoes and noodles.

  3. Cook until noodles are tender, adding some water if necessary.

  4. Add corn & olives.

  5. Turn into a 13x9-inch greased casserole.

  6. Sprinkle with cheese.
  7. Bake at 350 degrees, 40 minutes.

Yummy, Quick & Easy Beans 'n' Wieners Chili
Ingredients
  • 1 small onion chopped
  • 1 small green bell pepper roughly chopped
  • 1/4 cup celery thinly sliced (2 stalks)
  • 2 tablespoons vegetable oil or 2 tablespoons butter
  • 4 -6 beef hot dogs sliced
  • 1 15 ounce can chili without beans (hot or mild, such as Hormel)
  • 1 15 ounce can diced tomatoes with green pepper celery and onion
  • 2 15 ounce cans kidney beans, drained
  • 2 teaspoons chili powder
  • 1 ⁄4 teaspoon garlic powder
  • 1/8 teaspoon cumin powder scant
  • salt and pepper to taste
Toppings
  • grated cheese
  • sour cream
  • chopped onion
  • sweet pickle relish
Instructions
  1. In medium or large pot (depending on amount you are making), saute first three ingredients in butter or oil over medium heat until slightly softened.
  2. Add sliced hot dogs and cook until hot dogs are lightly browned, about five minutes.
  3. At this point, transfer over to crock pot if using.
  4. Add remaining ingredients, stir well.
  5. Heat through until hot and bubbly.
  6. Ladle into bowls and top with grated cheese, sour cream, chopped onion, and pickle relish.

Good with biscuits or cornbread. ENJOY!

Note: Recipe is easily doubled or tripled etc. to feed a crowd.

I love Indian Tacos on Fry Bread for a change from regular tacos or burritos. It’s the fry bread that makes them special! I enjoy having them often.

 

Indian tacos, made with Indian fry bread, are popular attractions at most outdoor summer events in the southwest, including fairs, festivals, and most anything else where people gather.

They primarily consist of beans or ground beef, chopped lettuce, sliced tomato, shredded Cheddar cheese, and optional ingredients such as green chiles.

You can also top with salsa if desired.

It’s all served atop large rounds of crispy Indian fry bread. It’s the perfect fair fare! Just fill the taco, roll it up, and eat it!

People line up to wait their turn to buy freshly made Indian tacos. With this recipe, you can make your own. No need to wait in line!

  • 1 lb fried hamburger
  • 2 15 ounce cans diced tomatoes
  • 1 large green pepper
  • 1 large onion
  • 1/2 cup cooked rice
  • 1 15 ounce can red kidney beans
  • 3 teaspoons diced mild green chilies
  • 1 teaspoon chili powder
  • 1 teaspoon ground cumin
  • Tabasco sauce to taste
  • 1 16 ounce can refried beans, heated
Separate Toppings if desired
  • shredded cheddar cheese
  • shredded lettuce
  • diced tomato
  • sour cream
  • guacamole
  • sliced black olives
  • salsa
Fry Bread
  • 2 cups flour
  • 3 teaspoons baking powder
  • 1 teaspoon salt
  • 1 cup milk
  • hot oil for frying
Instructions
  1. Mix the first 10 ingredients in a large saucepan or skillet. Simmer on low heat for about 30 minutes or until fry bread is done. While this is simmering make fry bread.

Fry Bread:.
  1. Sift dry ingredients. Lightly stir in milk. Add more flour as necessary to make a dough you can handle.

  2. Knead and work the dough on a floured board with floured hands until smooth.

  3. Pinch off fist-sized lumps and shape into a flat disk shape.

  4. Fry in fat (about 375°) until golden and done on both sides, about 5 minutes. Drain on paper towels.

  5. Place hot fry bread on a plate. Spread a layer of refried beans. Top with meat sauce and shredded cheese.

  6. Add lettuce, tomatoes, salsa, etc. if desired.

This dish is a hit with everyone that tries it. It can be spiced up or kept simple – depends on your taste buds.

  • 1 lb ground beef
  • 1 28 ounce can tomatoes, crushed
  • 1 8 ounce package egg noodles
  • 1 fresh jalapeno optional
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 teaspoon garlic powder optional
  • 1/4 teaspoon red pepper flakes optional
  • 1/4 teaspoon ground basil
  • 1 teaspoon italian seasoning
  • 1 8 ounce box frozen corn kernels (or peas or green beans)
Instructions
  1. Place the ground beef in a pot that is large enough to hold all the ingredients and to cook the noodles with the other ingredients. Lightly cover the ground beef with salt, pepper, garlic, red pepper flakes, basil and Italian spice mix.

  2. Brown the ground beef.
  3. Cut the jalapeno length wise, remove seeds and white ribs. Mince the jalapeno - so no one gets a big chunk of jalapeno when they bite into the meal.

  4. After the meat is browned, add the jalapeno, tomato and 1 can of water to rinse out tomato can. Stir well. (Make sure the liquid is adequate to cook the noodles.) Cook this mixture for about 15 minutes to get the spices well mixed with the tomatoes.

  5. Add the frozen vegetable - bring up to boil. Then add the egg noodles - cook until tender, about 7 or 8 minutes after the mixture comes to boil after adding the noodles.

  6. When the noodles are cooked, cover and remove from heat. Allow the meal to sit for 5 - 10 minutes, covered and off heat.

These Classic Beef Tacos are wonderful for Taco Tuesday. This is the best ground beef taco recipe! A step back to the traditional taco.

 

No fish or pineapple in these tacos. Just good ground beef and seasonings.

The meat has a good tex/mex flavor. I like the way the spices go together. They blend well.

The mixture is a little dry when the tomato paste and spices are added but that’s intentional. When the taco is assembled everything is perfect!

It should be just a little bigger than the taco shells in diameter, and have straight sides so the minimum amount of oil can be used. It's easier to handle the shells if the pan is fairly shallow - no more than 3 inches deep.).
  2. In a separate pan, brown the onion with the meat and drain the grease.
  3. Add the tomato paste and spices. Continue to simmer meat while frying shells.
  4. Fry each tortilla quickly, less than a minute each, folding in the middle while frying. Drain on paper towels. Add more oil if needed. Shells should still be fairly soft.
  5. Fill the taco shells with ground beef mixture and serve.
  6. Cheese, lettuce, tomato, sour cream and taco sauce should be served with the tacos so that everyone can fix their own.

  4. Pour the meat/rice mixture into the prepared 9x13-inch baking dish. Cover the baking dish, and bake in a 375º oven for 30 minutes, or until the rice is cooked and soft.

I’ve never had an Outback Steakhouse Steak; so I cannot truly tell you if this recipe is close to it, but what I can say.. who would want to go out for steak when you can have this delicious recipe right at home…

You gotta try this rub… its very good!! The combination of spices is unique and delicious..

Once you have the spices out, make a double batch — you’ll be glad you did! I keep it on the shelf and also use it on pork chops and chicken.

  3. In a large bowl, combine the beef, eggs, cheese, vegetables, herbs & seasonings.
  4. Place the meat mixture on a wax paper-lined jellyroll pan or counter. Form the meat into a 10x8-inch flat rectangle.
  5. Place the prosciutto slices on the meatloaf mixture. Place the provolone slices on top. Starting with the short side, roll the meatloaf up (may need to use the wax paper to help). Seal the ends and place, seam side down, into a loaf pan.
  6. Spread tomato sauce topping on the meatloaf, completely covering the top.
  7. Bake for 75 minutes (1 hour 15 minutes).
  8. Drain the fat and let rest 10 minutes before serving.

This is a great low-carb meatloaf for anybody that’s trying to lose weight. I found this recipe when I went on a lo-carb diet.

But it’s not just for weight loss. It’s really a great meatloaf.

The fact that it substitutes pork rinds for the bread crumbs is what gives it it’s low-carb qualities!

If you’re trying to lose weight the low-carb way then this should become your official meatloaf recipe.

Low-Carb Meatloaf

Ingredients

1 1⁄2 lbs ground beef (Or half ground beef & half ground pork)
1 cup pork rind, crumbs
1 egg
1⁄3 cup tomato sauce
1⁄2 teaspoon salt
1⁄2 teaspoon pepper
2 tablespoons parsley
1⁄2 cup grated Parmesan cheese
1⁄4 cup chopped onion
1⁄2 teaspoon garlic powder

Directions

Preheat oven to 350 degrees.

Mix the meat and all the other ingredients. Shape into a firm oval loaf in a shallow baking pan and bake for 1 hour.

Makes 6 servings.

Total 11 carbs.

This is really good – very moist.

When you remove this meat loaf from the oven the baking pan will be full of fat. If you allow it to sit for a while it will soak most of it back up!

If you like your meatloaf a little drier drain off the fat right away.

Taco Tuesday Taco Soup – Easy and Delicious

This Taco Tuesday Taco Soup is absolutely fabulous! A taco in a bowl. It’s also a versatile recipe. You can add veggies and not affect the overall taste.

 

You can also use shredded chicken rather than ground beef.

I’ve made it both ways and the chicken seems to get an edge from friends but I prefer the ground beef.

I make a big batch and freeze it in single servings for those nights when other plans fall through. It heats up well in the microwave.
