This Mexican Cheese Corn Dip has been a really big hit at my house. It’s easy to make and everyone will ask you for the recipe when you take it to parties or have one of you own.

 

I can’t ever escape a party without someone stopping me and asking how to make that “awesome” corn dish.

Great for a picnic or backyard BBQ too!!

This Mexican Cheese Corn Dip is perfect for when friends drop by. Easy to make and delicious!

Ingredients
  • 3 11 oz cans mexicorn whole kernel corn drained
  • 2 cups shredded cheddar cheese
  • 1 7 oz can diced green chilies
  • 2/3 cup green onion chopped
  • 3/4 teaspoon ground cumin
  • 1/2 teaspoon black pepper
  • 3/4 cup mayonnaise
  • 1 8 oz container sour cream
Instructions
  1. In a medium to a large bowl, combine sour cream, mayonnaise, and cumin. Stir well.

  2. Add corn, cheese, chiles, black pepper, and onions to the sour cream mixture. Stir with a wooden spoon (are whatever you have) until all is combined.

  3. Cover and chill for 2 hours or overnight. (overnight is what I do, the seasonings are blended in better)

  4. Serve with warm tortilla chips.

This Cherry Tomato & Corn Salad is sooo good. It’s quick, easy, and delicious. It is from Taste of Homes, Weeknight Cooking Made Easy.

 

I used frozen sweet white corn. Perfect summer flavors!

The dish works fine with frozen corn but it’s such a wonderful way to use fresh summer produce.

Chicken and Asparagus Salad – Strawberry Dressing

I’m pretty picky with salads, but this Chicken and Asparagus Salad is a huge hit! Love all the flavors; the strawberries add the perfect sweetness.

Incredible salad — a perfect lunch on a warm spring day.

The only change I made was to add a tiny bit more vinegar to the dressing. Other than that I made it exactly as stated and it was fabulous!

  • 1 cup cut fresh asparagus 1 inch pieces,steamed until crisp-tender
  • 1 medium ripe avocado peeled and sliced
  • 2 tablespoons lemon juice
  • 4 cups european blend salad greens
  • 1 cucumber thinly sliced
  • 1 1/2 cups sliced strawberries
  • 2 boneless skinless chicken breast halves cooked and sliced crosswise
  • salt and pepper
  • 1/4 cup coarsely chopped and toasted walnuts
  • Dressing
  • 5 fresh strawberries halved lengthwise
  • 1 tablespoon orange juice
  • 2 tablespoons vegetable oil
  • 1 teaspoon balsamic vinegar
  • 1/2 teaspoon pepper
  • 1/2 teaspoon sugar
Instructions
  1. Add lemon juice to a small bowl; dip avocado slices in lemon juice and set the avocado aside.
  2. In a big salad bowl, add salad greens, asparagus, cucumber, avocado, 1 1/2 cup strawberries, and chicken; toss to combine. Season with salt and pepper to taste. Sprinkle with nuts.
  3. For dressing: add strawberries and orange juice to a blender or food processor; cover and process until smooth; pour puree into a bowl.
  4. Add remaining dressing ingredients; stir to combine.
  5. Pour dressing over salad; toss to coat.
  6. Serve immediately.

This is a nice, basic, super Easy Macaroni Salad. I used mayonnaise and added some sugar and vinegar to add some tanginess. Red onions add crunch!

 

The diced red onions are nice for crunch as well as flavor.

This Macaroni salad really is super easy. If you can cook pasta and dice you can make this salad!

  • 2 cups macaroni I use whatever is in my cupboard
  • 1/2 cup cubed cheese I prefer cheddar or co-jack
  • 1/2 cup cubed ham
  • 1/4 cup diced red onions
  • 1/2 cup Miracle Whip can sub mayo your choice
  • 1 tablespoon mustard
  • Salt and pepper to taste
Instructions
  1. Cook, drain and rinse macaroni and put in fridge while you dice up cheese and ham.
  2. Mix together cold macaroni, cheese, onions and ham in a bowl.
  3. In a separate bowl mix miracle whip and mustard. (If it is too tangy my mom would put a little sugar in it about a tsp.).
  4. Mix it all together and chill or serve immediately.

  1. Place the cucumber, peppers, tomatoes and red onion in a large bowl.
  2. For the vinaigrette, whisk together the garlic, oregano, mustard, vinegar, salt and pepper in a small bowl. Still whisking, slowly add the olive oil to make an emulsion.
  3. Pour the vinaigrette over the vegetables. Add the feta and olives and toss lightly.
  4. Set aside for 30 minutes to allow the flavors to blend. Serve at room temperature.
