This delightful corn salsa is a perfect salsa for dipping and can be used to boost flavor or garnish a southwestern meal.

My family loves the fresh taste of this easy to make salsa.

  • 1 15 oz can whole kernel corn drained
  • 1/2 cup green pepper chopped
  • 1/2 cup red bell pepper chopped
  • 1/2 cup red onion chopped
  • 2 tomatoes chopped
  • 1/4 cup ripe olives sliced
  • 2 tablespoons pickled jalapeno peppers drained and chopped
  • 1 teaspoon pickled jalapeno pepper juice
  • 2 tablespoons cider or 2 tablespoons red wine vinegar
  • 1/2 teaspoon garlic salt
  • 1/2 teaspoon pepper
Instructions
  1. Combine all ingredients in a large bowl.
  2. Cover and chill for several hours.

This Cherry Tomato & Corn Salad is sooo good. It’s quick, easy, and delicious. It is from Taste of Homes, Weeknight Cooking Made Easy.

 

I used frozen sweet white corn. Perfect summer flavors!

The dish works fine with frozen corn but it’s such a wonderful way to use fresh summer produce.

Spicy Sausage Stuffed Mushrooms

These Spicy Sausage Stuffed Mushrooms are simply great! Perfect for a backyard BBQ appetizer or a holiday get together.

 

Make them ahead and line a Tupperware with paper towels and put them in it. Then they are ready to bake just before the event.

You can also vary the recipe to suit family taste. Try using baby Bella mushrooms (without stems) and Pecorino Romano cheese.

Ingredients
  • 24 medium mushroom caps
  • 1 16 oz package hot ground pork breakfast sausage
  • 8 ounces cream cheese
  • 2 ounces Monterrey jack cheese
  • 1 tablespoon crushed red pepper flakes less for less heat
  • 2 tablespoons Parmesan cheese shredded
Instructions
  1. Wash the mushrooms and pat dry with paper towels. Remove the stems and set aside (they can be minced and added to the sausage mixture later is desired).
  2. Preheat oven to 350.
  3. Cook and crumble the sausage in a large skillet until done, drain, and place in a mixing bowl. Add the cream cheese, jack cheese, crushed red pepper flakes and minced stems if desired. Mix well.
  4. Place 1 heaping teaspoon of the mixture into each mushroom cap.
  5. Place the stuffed mushroom caps on a rimmed baking pan, sprinkle with Parmesan, and bake for 20 minutes.
  6. Remove from oven and let cool for 5 minutes.
  7. Serve stuffed mushrooms on a decorative serving platter.

On Your Own:

This dish can be a little on the hot side for some people’s tastes. You can tone it down some by using regular sausage instead of hot and going a little easy on the hot pepper flakes!

If you use white button mushrooms try to pick out a package with some larger sized ones.

Bacon Jam – Wickedly Delicious!

Bacon Jam is incredible, salty, sweet, decadent, wicked, sinful… I’m not sure there are enough superlatives for this yummy goodness!

I saw this dish being served on one of the episodes of Eat St. on Food Network. So off I went in search of a recipe and found this one by Not Quite Nigella.

It has been adjusted slightly.

Ingredients
  • 1 lb smoked bacon sliced into small pieces (or use regular bacon and liquid smoke)
  • 4 garlic cloves chopped
  • 1 medium brown onion sliced
  • 3 tablespoons brown sugar
  • Tabasco sauce according to taste and optional
  • 1 cup brewed coffee
  • 1/4 cup apple cider vinegar
  • 1/4 cup maple syrup
  • black pepper
  • extra water
Instructions
  1. In a non stick pan, fry the bacon in batches until lightly browned and beginning to crisp. Fry the onion and garlic in the rendered bacon fat on medium heat until translucent.
  2. Transfer the bacon, onion and garlic into a heavy based cast iron pot and add the rest of the ingredients except for the water.
  3. Simmer for 2 hours adding 1/4 of a cup of water every 25-30 minutes or so and stirring.
  4. When ready, cool for about 15-20 minutes and then place in a food processor. Pulse for 2-3 seconds so that you leave some texture to the “jam” or of course you could keep whizzing and make it a smoother and more paste like.

Serve on your favorite burger, grilled cheese or as an appetizer on crusty bread.

The possibilities are endless.

Cheese Crisps – Roasted Cheesy Snacks

These Roasted Cheese Crisps are very versatile….sprinkle them into a green salad, use with hors d’oeuvres, serve with cocktails, or just snack on them!

 

They’re also great as a garnish on macaroni and cheese.

Lots of different cheeses can be used too. Just make sure you use a hard cheese….if it’s too soft it will just melt and spread to form a uniform sheet of cheese in your pan.

You can also play around with the flavorings… I’ve just added the red pepper but you can use sweet or hot chile powder or add some cumin, fennel or coriander seeds, lightly crushed. Herbs like rosemary or thyme can be added as well.

  • 12 ounces sharp cheddar cheese
  • 2 tablespoons flour
  • 1/2 teaspoon ground red pepper
Instructions
  1. Heat the oven to 375°.
  2. Shred the block of cheese lengthwise (longer shreds work better) using a box grater with holes about 1/4-inch wide.
  3. Place in a medium bowl. Sprinkle with the flour; toss gently with a fork to coat the cheese. Sprinkle with the red pepper, toss again.
  4. Place a silicone baking mat or a sheet of parchment paper on a 16 1/2-by-11 1/2-inch sheet pan.
  5. Scatter half of the cheese evenly over the mat. Shake the pan gently to even the cheese out. Or, you can spread the cheese mixture into circles, any size you wish, from 3 inches to 10 inches in diameter.
  6. Bake until the cheese is molten and golden brown, about 14-15 minutes. Remove from the oven; cool.
  7. Blot up any grease with paper towels. Break the crisp into large pieces; arrange on a platter.
  8. Wipe off the baking mat and repeating with the remaining cheese.

I can’t remember where I got this Cheese Cookies recipe but it is very good. The touch of cayenne with the cheddar gives a nice zip.

 

They freeze really well and they’re handy to have them in the freezer.

You can, of course, also serve them right out of the oven after they rest for 10 minutes

My family just loves them and they are just so easy to put together. They are the perfect cheesy cookie to serve at parties or get-togethers.

Paula Deen’s Crabbies Appetizer is a great make-ahead appetizer that freezes well. Another easy to make great recipe from Paula Deen.

They taste like I remember them from family Christmas parties past.

When ready to serve frozen just take them out of the freezer, put them on a pan, added a little salt, and broil them. No thawing necessary. They turn out great.

You really have to watch them under the broiler, though. They can easily burn if you get distracted.

These Easy Pizza Muffins are the quickest and easiest pizza to make and oh so good. Even the kids can make them.

 

My favorite snack as a kid and one of my favorite snacks today!

They also make a nice lunch with a side salad.

The toppings are a matter of choice. Pepperoni is more traditional but the ham and pineapple are nice. For a crisper crust toast the English muffins before topping.
