This Slow-Cooker Hoisin Beef Stew is really easy and so delicious! Really different for a beef stew. Serve it over jasmine rice.

 

I like to garnish it with sliced green onions.

Sometimes I like to add mushrooms or bamboo shoots and possibly bean sprouts.

With an overnight marinade and all day cooking, this warm and hearty stew is an aromatic welcome after a long day.

A side of steamed edamame or sauteed snow peas is a nice addition to the meal.

Ingredients
  • 1/2 cup beef broth
  • 1 8 ounce bottle hoisin sauce
  • 1 teaspoon hot sauce
  • 3 fresh garlic cloves minced
  • 1 tablespoon fresh ginger grated
  • 1 1/2 pounds beef round steak cubed or 1 1⁄2 lbs beef chuck stew meat
  • 2 yellow onions cut in large dice
  • 1 cup baby carrots
  • 2 celery ribs cut into 3/4-inch chunks
Instructions
  1. The night before, whisk together the broth, hoisin, hot sauce, garlic and ginger.
  2. Add the beef, onions, carrots and celery. Toss to coat well.
  3. Cover and refrigerate overnight.
  4. In the morning, transfer meat mixture into the slow cooker.
  5. Cover and cook on a low setting 6-8 hours (or on high setting 3 hours).

  • 8 ounces angel hair pasta uncooked
  • 2 teaspoons cornstarch
  • 2 teaspoons oil
  • 1 lb frozen shrimp peeled & uncooked
  • 3 cups frozen stir fry vegetables
  • 1 1/2 tablespoons ginger root grated
  • 1/4 cup Italian dressing
  • 2 tablespoons hoisin sauce
Instructions
  1. Cook the pasta as directed on packaging & do not rinse.

  2. Meanwhile, toss the shrimp with cornstarch in a large bowl & let stand 10 mins.

  3. Place the veggies in strainer; rinse under hot water for 30 seconds or until thawed. Drain.

  4. Heat oil in a large nonstick skillet & add the shrimp and ginger; stir fry 8 minutes or until the shrimp turns pink.

  5. Add the vegetables, dressing & hoisin sauce; cook 2 minutes to heat through, stirring frequently.

  6. Add the drained pasta and shrimp mixture to mixing bowl & mix lightly.

This Easy Beef Pasta is a quick, inexpensive dinner made mostly with what you have on hand. Pasta, canned tomatoes, and garlic cloves.

Instructions
  1. Sauté the onion & garlic on medium heat for 5 minutes. Turn the heat up to medium-high & add the beef. Cook until no pink remains.

  2. Add the tomatoes, tomato sauce, & Parmesan cheese and lower the heat and simmer for 20 minutes.

  3. Cook the macaroni while the beef mixture is simmering. Drain and combine the macaroni & beef mixture together. Let sit for a few minutes.

 

Serve with crusty bread and a salad.

Weight Watchers Cornbread

Ingredients

1 cup yellow cornmeal
1 teaspoon baking powder
1⁄2 teaspoon baking soda
1⁄2 teaspoon salt
1⁄3 cup Splenda granular
2⁄3 cup fat free sugar free yogurt
1⁄3 cup nonfat sour cream
1 egg

Directions

Mix the dry ingredients in a medium bowl.

Mix the liquid ingredients in a small bowl.

Gently fold the wet into the dry. Pour into a round cake pan, sprayed with Pam. Bake at 375 degrees for 15-20 minutes or until the edges are a golden brown and a toothpick inserted in center comes out clean.

Cut into 6 wedges.

Ingredients
  • 1 12 ounce bag egg noodles
  • 1 can condensed cream of mushroom soup not diluted
  • 1/2 cup milk
  • 1 7 ounce can tuna, drained well
  • 1 cup cooked frozen peas or 1 cup canned peas drained
  • 1 cup crushed potato chips
Instructions
  1. Prepare the egg noodles as directed on the package; drain and rinse.
  2. Preheat oven to 375 degrees.
  3. Combine the soup and milk and mix well.
  4. In a large bowl, combine the cooked noodles, soup mixture, tuna and peas and stir gently until well coated.
  5. Turn into a buttered casserole or baking dish and sprinkle evenly with crushed potato chips.
  6. Bake for 25 minutes or until bubbly.

  • 1/3 cup extra virgin olive oil
  • 3 garlic cloves crushed
  • 1 pinch red pepper flakes
  • 1 lb shrimp shelled and deveined

  • 3 tablespoons butter
  • chopped flat-leaf parsley for garnish
Instructions
  1. Put the olive oil and garlic in a large skillet over medium heat and cook slowly to infuse the oil with the garlic, but do not burn the garlic.

  2. Add the red pepper flakes. Raise the heat to medium-high. Add the shrimp and season with a little salt.

  3. Cook until shrimp is almost done.

  4. Add the wine and cook until the alcohol is burned off. About 1 minute. Add the lemon juice and butter to finish.

  5. Garnish with parsley.

Alton Brown’s Perfect Pot Stickers

I started making Alton Brown’s Perfect Pot Stickers after I saw Alton’s show and they are incredible! Not difficult to make and a wonderful taste!

 

Pot stickers are so much easier to make than I thought they would be.

I have also prepared the filling and stuffed the wontons, then flash froze them on a cookie sheet, and bag them when frozen. Just take them out 30 minutes before planning to cook them, and they are great.

  • 1/2 pound ground pork
  • 1/4 cup finely chopped scallion
  • 2 tablespoons finely chopped red bell peppers

  • 2 teaspoons Worcestershire sauce
  • 1 teaspoon light brown sugar
  • 1 1/2 teaspoons kosher salt
  • 1/2 teaspoon fresh ground black pepper
  • 1/4 teaspoon cayenne pepper
  • 35 -40 small wonton wrappers
  • water for sealing wontons
  • 3 -4 tablespoons vegetable oil for frying
  • 1 1/3 cups chicken stock divided
Instructions
  1. Preheat oven to 200 degrees F.
  2. Combine the first 11 ingredients in a medium-size mixing bowl (pork through cayenne). Set aside.
  3. To form the dumplings, remove 1 wonton wrapper from the package, covering the others with a damp cloth. Brush 2 of the edges of the wrapper lightly with water. Place 1/2 rounded teaspoon of the pork mixture in the center of the wrapper. Fold over, seal edges, and shape as desired. Set on a sheet pan and cover with a damp cloth. Repeat procedure until all of the filling is gone.
  4. Heat a 12-inch saute pan over medium heat. Brush with vegetable oil once hot. Add 8 to 10 potstickers at a time to the pan and cook for 2 minutes, without touching. Once the 2 minutes are up, gently add 1/3 cup chicken stock to the pan, turn the heat down to low, cover, and cook for another 2 minutes.
  5. Remove wontons to a heatproof platter and place in the warm oven. Clean the pan in between batches by pouring in water and allowing the pan to deglaze.
  6. Repeat until all the wontons are cooked. Serve immediately.

This Spanish Chicken Rice Bake is perfectly awesome and so fast and easy to put together. A throw-it-together and pop it in the oven supper.
