These Tex-Mex Pork Chops are excellent! My youngest daughter said they were the best chops she’s ever had.

This will be a regular at my table because it’s so easy.

Not only are they very easy to make but they are also very flavorful.

I usually like really spicy food and these were not so spicy, but still so tasty. (Can always throw some cayenne in there next time!)

  1. In a small bowl, mix the brown sugar, cumin, chili powder and salt. Add the oil and mix well. Rub the pork chops with the mixture. (You can do this step and keep them in the fridge until the next day).
  2. Preheat the bbq to medium heat. Lightly oil the grill. Put the pork chops on the grill. Close the cover of the bbq. Cook 5 to 7 minutes or until that the pork is a little bit pink inside. (turn the pork chops at mid cooking).

Grilled Garlic Pork Tenderloin

People, this Grilled Garlic Pork Tenderloin is exceptional!! This is the best recipe I’ve ever tried for pork tenderloin. The flavor is so magnificent you MUST try this without changing a thing.

The fresh ginger really stands out in the dish. The marinating could be done for a shorter time, but I love the flavor it gets after sitting that long.

If you can’t grill it for some reason bake it for 40 minutes at 350 and broil it for 5 minutes longer to brown well. Excellent.

  4. Cook over prepared grill turning every 5 minutes until it registers 160 on a meat thermometer (about 15-20 minutes).
  5. Let stand 5 minutes before slicing.

The pork chops are perfect and moist!

The recipe is also very versatile. You can use different seasonings to suit your family’s taste. It’s the cooking method itself that yields a beautiful moist pork chop.

Try some mushrooms. I think they would be delicious with the sauce.

Be sure to follow the important steps of letting the chops rest with the salt and seasoning before cooking, then browning each side slowly, followed by a covered “rest”.

  2. Place oil in a large cast-iron skillet (or heavy stainless steel skillet and heat until medium-hot.

  3. Place chops in the pan, placing them so they don't touch each other. Cook each side slowly (lower heat if necessary) until nice and golden brown on each side. This will take about 4 minutes per side.

  4. Cover the pan with a tight-fitting lid.

  5. Turn off the heat, and let the chops sit for about 8- 10 minutes, depending on the thickness of the chops.

  6. After removing chops, you can de-glaze the pan with a little water, wine or broth and a touch of butter and serve as a sauce.

Excellent Marinated Pork Tenderloin recipe. Easy to prepare and the finished dish is awesome! The most fantastic recipe for pork tenderloin I’ve tried.

Moist and tender and the flavor is outstanding.

I let the pork marinate for 2 1/2 days and broiled it in the oven for weekend guests. The marinade formed a tasty crust.

Needless to say I didn’t have any leftovers.

  1. Preheat oven to 300°F (150°C).
  2. Cut each full rack of ribs in half, so that you have 4 half racks. Sprinkle salt and pepper (more pepper than salt), and 1 tablespoon chili pepper over meat. Wrap each half rack in aluminum foil. Bake for 2 1/2 hours.
  3. Meanwhile, heat oil in a medium saucepan over medium heat.
  4. Cook and stir the onions in oil for 5 minutes. Stir in water, tomato paste, vinegar, brown sugar, honey, and Worcestershire sauce. Season with 2 teaspoons salt, 1/4 teaspoon black pepper, liquid smoke, whiskey, garlic powder, paprika, onion powder, dark molasses, and 1/2 tablespoon ground chili pepper.
  5. Bring mixture to a boil, then reduce heat. Simmer for 1 1/4 hours, uncovered, or until sauce thickens.
  6. Remove from heat, and set sauce aside.
  7. Preheat an outdoor grill for high heat.
  8. Remove the ribs from the oven, and let stand 10 minutes.
  9. Remove the racks from the foil, and place on the grill. Grill the ribs for 3 to 4 minutes on each side.
  10. Brush sauce on the ribs while they're grilling, just before you serve them (adding it too early will burn it).

Ham and Cheese Breakfast Casserole

I made this Ham and Cheese Breakfast Casserole for brunch and what a hit! I used sharp cheddar cheese to give it more flavor.

 

So good with the chunks of ham. Great for leftover ham but worth buying ham for!

A wonderful way to have a relaxing brunch for friends or family. I like to serve this casserole with grits and fresh fruit.

You can also vary the ingredients to suit your family’s taste. Next time, I think I will add some onions to the ham or sausage as well as some green chili.

You can fry bacon the night before and drain and refrigerate for morning.

This Perfect Pork Tenderloin uses an unusual cooking technique, but it works!

  • 1 lb boneless pork tenderloin
  • salt and pepper
  • dry seasoning of your choice (thyme, savory, rosemary, garlic powder, onion powder, Italian seasoning, or a mixture)

  1. Note: The success of this cooking method will depend upon how accurate the temperature of your oven is and how well your oven retains heat. Adjust cooking time +/- according to your individual oven.
  2. Determine the EXACT weight of roast from the meat wrapper. Weight will determine how long to cook the roast.
  3. Preheat oven to 500 degrees. Remove tenderloin from refrigerator. Season meat as desired. Place seasoned meat in an uncovered roasting pan on a shelf in the bottom 1/3 of your oven.
  4. Bake EXACTLY 5 1/2 minutes PER POUND Adjust +/- according to your oven's accuracy and heat retention.

  5. If you have an oven probe or thermometer that has a wire that goes through the side of the oven door, by all means use it and set the temperature alarm for 140 degrees. remove meat from oven when alarm alert goes off (probably before an hour has expired).
  6. Turn oven OFF and DO NOT open oven door for 45 to 1 hour, OR sooner IF you are using a probe thermometer and it alerts that internal meat temp is at 140 degrees. Remove pork from oven, lightly cover with foil, and let rest 5-10 minutes to redistribute internal juices. Roast should be done, very slightly pink in the center, and very moist.
  7. After resting 10 minutes, the roast should reach a safe 145-150 degrees.

 

Note: For anyone questioning this method of cooking, it really does reach the proper internal temperature on a thermometer. According to Sara Moulton on FoodTV, trichinosis is killed at 138 degrees, and 145 is a safe temperature for pork, although the USDA recommends 160 degrees (meat will be much drier). If the center of the meat is not a little pink, it is overcooked!

Variation: To make Roasted Veggies along with the tenderloin, peel carrots and potatoes, and cut into about 1-inch cubes. Season as desired and drizzle with a little oil. Add vegetables to pan around (but NOT touching) pork tenderloin.

Cook tenderloin as instructed above.

The roasted potatoes and carrots should be done when the roast is done. You may need to adjust the size of the potatoes and carrots depending upon the weight of your tenderloin and how long you cook it.

  3. Cook over medium-high heat 2 minutes, occasionally lifting edge with spatula and tilting skillet to allow uncooked egg to flow underneath. (Do not stir.).
  4. Reduce heat to medium-low; cover. Cook 14-17 minutes or until eggs are set.
  5. Top with tomato and onions. Cut into 8 wedges to serve.
