Mexican Fire Rice – Spicy Rice & Sausage

I love this Mexican Fire Rice dish. It’s a really filling slightly spicy rice and sausage dish that is baked with Picante sauce, sour cream, and cheese.

 

All of the ingredients are things that I regularly have on hand.

Tastes like a tamale kinda… or an enchilada, totally love this.

So easy and so good. You can use mild Picante sauce if you are a spicy wimp!

Ingredients
  • 2 2/3 cups water
  • 1 1/3 cups long grain white rice uncooked
  • 1 lb ground pork breakfast sausage
  • 1 16 ounce jar picante sauce
  • 1 8 ounce container sour cream
  • 8 ounces cheddar cheese shredded
Instructions
  1. Preheat oven to 350 degrees F.
  2. Bring water to boil in a medium saucepan. Stir in the rice, reduce heat, cover, and simmer for approximately 20 minutes.
  3. In a large skillet over medium heat brown sausage until no longer pink.
  4. In a medium mixing bowl add cooked rice, cooked sausage, picante sauce, and sour cream. Mix well, place in casserole dish, and top with cheddar cheese.
  5. Bake approximately 20 minutes or until cheese is bubbly. Serve with sides of extra picante sauce and sour cream.

These Skillet Pork Chops are so good. I thought they were going to be too spicy, but they were just right. Prepare to suit your taste.

 

If you prefer a milder dish, use regular chili powder; if fiery is more your style, use hot chili powder.

Ingredients
  • 1 1/2 cups frozen whole kernel corn loose-packed
  • 1 10 oz can tomatoes and green chilies
  • 1/2 teaspoon ground cumin
  • 1/4 teaspoon bottled hot pepper sauce
  • 2 garlic cloves minced
  • 4 boneless pork loin chops cut 3/4 inch thick
  • 1/2 teaspoon chili powder
  • 2 teaspoons cooking oil
  • 1 medium onion cut into thin wedges
  • 1 tablespoon fresh cilantro chopped
Instructions
  1. In a medium bowl combine corn, undrained tomatoes, cumin, hot pepper sauce, and garlic; set aside.
  2. Trim fat from chops. Sprinkle both sides of each chop with chili powder. In a 12-inch nonstick skillet heat oil over medium-high heat. Add chops; cook chops about 4 minutes or until browned, turning once. Remove chops from skillet, reserving drippings.
  3. Reduce heat to medium. Add onion to skillet. Cook and stir for 3 minutes. Stir corn mixture into onion mixture in skillet.
  4. Place chops on corn mixture. Bring to boiling; reduce heat. Simmer, covered, for 10 to 12 minutes or until pork juices run clear or meat thermometer inserted into chops registers 160 degrees).
  5. To serve, remove chops from skillet. Stir chopped cilantro into corn mixture in skillet; serve corn mixture with chops.
  6. If desired, garnish with cilantro leaves.

  • 6 tablespoons water
  • 1/4 teaspoon saffron threads or turmeric
  • 1 lemon for zest
  • 1/2 cup plain low-fat Greek yogurt
  • 1 tablespoon chunky garlic paste
  • 4 3/4-inch-thick boneless pork chops (1 1/2 lb)
  • Large zip-top bag
  • 1/2 cup flour
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1 teaspoon kosher salt
  • 1/2 teaspoon pepper
  • 1/4 cup olive oil
Instructions
  1. Place water in microwave-safe cup; microwave on HIGH 1–2 minutes or until hot. Add saffron and let stand 1 minute. Zest/grate lemon peel (no white; 1 teaspoon). Place pork in bag.
  2. Combine in medium bowl: yogurt, garlic, zest, and saffron mixture; whisk until blended (reserve 1/2 cup for later use). Transfer remaining mixture to bag with pork; knead bag to coat pork. Let stand 30 minutes to marinate (or marinate overnight in refrigerator).
  3. Preheat large, nonstick sauté pan on medium-high 2–3 minutes. Combine remaining ingredients (except oil) in shallow bowl. Place oil in pan.
  4. Remove pork chops, one at a time, from bag; dip pork into flour mixture (coating both sides) and press with fingertips to evenly coat.
  5. Place pork chops in pan; cook 3–5 minutes on each side until browned and pork is 145°F.
  6. Drain pork chops on paper towels. Serve with reserved sauce on the side.

Ingredients
  • 2 pork chops
  • 1/2 medium onion diced
  • 1 -2 slice bacon
  • 2 tablespoons butter
  • 2 tablespoons cornstarch
  • 3/4 cup water
  • salt & pepper
Instructions
  1. In 12" skillet, cook bacon on med hi heat. Remove bacon from skillet, but leave bacon drippings.
  2. Add 1 TBSP butter and diced onion. When transparent, remove from skillet.
  3. Reduce heat to medium, lightly salt and pepper both sides of pork chops and place in skillet. Brown both sides (approx 2-4 minutes each).
  4. Chop up bacon, and add both bacon and cooked onion to skillet.
  5. Add 3/4 cup water (add more if you want more gravy), 1 TBSP butter, cover and simmer until cooked (5-10 minutes - but can simmer for up to 45 minutes easily).
  6. Just before serving, mix 2 TBSP cornstarch with cool tap water (approx 1/4 cup).
  7. Place pork chops on plates, add corn starch/water mixture to gravy/drippings in skillet and bring to quick boil stirring frequently to form thick gravy.

These Smothered Pork Chops are pure comfort food. Melt in your mouth tender chops with a delicious sauce! The mushrooms are especially good.

 

We enjoyed the sweetness very much, it was not too much even with the extra rub.

I serve this with mashed potatoes to use all the gravy and a green vegetable. If you want it thicker, you can add some cornstarch mixed with water to the sauce to thicken.

This Glazed Ham with Chipotle Peppers recipe is the most wonderful recipe EVER!!  Sweet, Smokey, Spicy, and delicious.

 

I love it. Kids love it. Families love it. This glaze would taste great on an old shoe… lol.

Seriously I think this glaze would be great on chicken, pork.. but I think I’m going to try it on some baby back ribs.. just the right spice and “stickiness”

  1. Mix cornstarch with a little cold water to dissolve.
  2. Place all ingredients except for ham in a blender and blend smooth, in a small saucepan over medium heat bring to a boil then simmer till thickened.
  3. Preheat oven to 375 ° F.
  4. Place ham, cut end down, in a large baking pan and score skin. Bake ham for 15 minutes.
  5. Brush glaze over ham and bake for another hour or until internal temperature reads 140 °F.
  6. Baste halfway through baking.

This Ham in Coca Cola comes from Nigella Lawson’s book Nigella Bites and I can’t even say how EASY this is to make. It’s a wonderful way to make ham! Her recipes rarely fail!

Ham in Coca Cola

I had a smoked pork shoulder, 5 1/2 pounds. Gave it 3 hours in the pot with the cola. It only takes 10 minutes in the oven, how easy is that?

The ham is juicy, tender, and delicious! I don’t think I’ll want ham cooked any other way now.

Ham in Coca Cola
Ingredients
  • 4 to 5 pound mild-cure ham
  • 1 onion peeled and cut in half
  • 1 2 liter bottle Coca-Cola
For the glaze
  • 1 tablespoon molasses
  • 2 teaspoons mustard powder
  • 2 tablespoons brown sugar
Instructions
  1. Put ham in a pan, add onion and pour over the Coke. Bring to the boil, reduce to a simmer, put the lid on and cook for around 2 1/2 hours.
  2. Preheat oven to 475 degrees F.
  3. When ham is cooked, take it out of pan and let cool. Remove skin, leaving a thin layer of fat.
  4. Use a sharp knife to make large diamond shapes in the fat. Put a clove in each diamond and spread with molasses all over. Pat mustard and sugar onto the sticky fat.
  5. Bake in a foil-lined pan for around 10 minutes, or until crispy and bubbly.

Gingersnaps as a crust for ham? Absolutely! This Gingersnap Crusted Ham totally works. This ham is delicious beyond belief.

 

The gingersnaps add lovely spicy sweetness to the ham and it’s not overpowering at all.

I’m not usually a mustard lover, but again it totally worked with this ham! Fantastic!

With this hams amazing flavor and beautiful crust, I may have to add it to my holiday menu!

Ham
  • 1 8 lb ham, half
  • 2 tablespoons apricot preserves
  • 2 tablespoons Dijon mustard
  • 1/2 cup brown sugar
  • 1/2 cup gingersnap crumbs about 9 cookies, finely crushed
Sauce
  • 1 1/2 cups apricot preserves
  • 1/2 cup dry marsala wine
  • 3 tablespoons Dijon mustard
  • 1/2 teaspoon ground allspice
Instructions
  1. Preheat oven to 325°.
  2. To prepare ham, line a broiler pan with foil. Trim fat and rind from ham. Score outside of ham in a diamond pattern. Place ham on prepared pan. Bake at 325° for 1 hour. Remove the ham from the oven, and cool slightly. Increase oven temperature to 375°.

  3. Combine 2 tablespoons preserves and 2 tablespoons mustard, stirring with a whisk. Combine the sugar and crumbs. Brush preserves mixture over ham.

  4. Carefully press crumb mixture onto preserves mixture (some crumb mixture will fall onto the pan). Bake at 375° for 45 minutes or until a thermometer registers 145°.

  5. Place ham on a platter; let stand 15 minutes before slicing.

  6. To prepare sauce, combine 1 1/2 cups preserves and remaining ingredients in a small saucepan. Bring to a boil; cook 5 minutes. Serve sauce with ham.

I was looking for a new way to cook pork loin… this Honey Roasted Pork Loin is it! The pork is succulent and the sauce is outstanding.

 

A very simple dish with common ingredients.

I served the pork with rice – great with the sauce. Very yummy!

My family prefers this over pork chops and it makes it’s way into my menu at least once or twice a month.

  4. Bake until internal temperature reaches 150 (45-60 minutes). Baste frequently.

  5. Strain the pan juices into a saucepan. Reduce until slightly thickened.

  6. Serve over the sliced pork.
