The gravy has an intense chicken flavor and is great served over rice. If I closed my eyes I could swear I was eating my mothers cooking!

Slow-Cooker Chicken and Gravy
Ingredients
  • 4 large boneless skinless chicken breasts
  • 2 tablespoons olive oil
  • 1 2/3 ounce package Good Seasonings Italian salad dressing mix
  • 1/2 teaspoon onion powder
  • 1/8 teaspoon garlic powder
  • 1/2 teaspoon chicken bouillon
  • 1 10 3/4 ounce can cream of chicken soup (I use 98 percent Fat Free)
  • 1 7/8 ounce package chicken gravy mix
Instructions
  1. Spray the crock pot with Pam Cooking Spray. Add the 2 tablespoons of olive oil to crock pot. Put the chicken breast in crock pot. Sprinkle the Italian Dressing mix, onion powder, garlic powder over the chicken breast.
  2. Cook on low for 4 hours.
  3. (At the 4 hour mark, IF NEEDED, you may add a little water to make more gravy in the end, don't add too much water if you do.).
  4. Sprinkle the 1/2 teaspoon bouillon in the liquid in crock pot. Pour the cream of chicken soup over the breast. Turn the crock pot to high and cook 1 more hour.
  5. Remove the chicken, scraping the soup off the breast and back into the crock pot. Add the gravy mix to to 1/4 cup cold water and mix well, add to crock pot and mix well.

Chicken With Mushrooms & Mustard
Ingredients
  • 4 boneless skinless chicken breast halves
  • 2 tablespoons flour with salt and pepper added
  • 2 tablespoons vegetable oil
  • 1 tablespoon butter
  • 1 small onion chopped
  • 1 cup mushroom thickly sliced
  • 1/2 cup light cream
  • 1 tablespoon fresh parsley chopped (or use cilantro)
  • 1 tablespoon Dijon mustard
  • 1 tablespoon lemon juice
Instructions
  1. Pound the breasts until 1/4" thick. Dredge in the flour mixture.
  2. Heat the oil over medium heat. Add the chicken and saute about 7 minutes, turning once. Remove and keep warm.
  3. Add the butter to the fry pan and increase the heat to high. Add the onion and mushrooms. Saute about 5 minutes. Reduce the heat to low. Add the cream, parsley, mustard and lemon juice. Bring to a boil stirring constantly. Add juices from chicken into cream mixture.
  4. Pour the sauce over the chicken and serve.

Ingredients
  • 4 boneless skinless chicken breasts
Marinade
  • 1/2 cup lemonade concentrate thawed
  • 2 garlic cloves chopped
  • 3 tablespoons grated fresh ginger
  • 1/2 cup chicken broth
  • salt and pepper
  • 1/4 cup chopped of fresh mint optional
Instructions
  1. In a bowl, mix the lemonade concentrate, garlic, and ginger. Add the chicken and stir to coat. Cover and refrigerate for 3 to 4 hours.

  2. Preheat the gas grill, setting the burners to high. Oil the grate.

  3. Remove the chicken from the marinade. Set the marinade aside. Grill the chicken until no longer pink inside, about 6 minutes per side.

  4. In a saucepan over high heat, bring the marinade and broth to a boil. Boil for 3 to 4 minutes. Season lightly with salt and pepper.

Recipe Notes

To serve, slice the chicken breasts on the diagonal. Drizzle with the sauce and garnish with fresh mint, if desired.

Diet Cola Chicken

Diet Cola Chicken is very simple to prepare but sooo good! You won’t believe how easy this is. Yet it’s elegant and tasty enough to serve to company.

I like to serve it with plain boiled rice and steamed broccoli. Great meal.

Sounds unusual and I guess it is. But it’s just so darned good!

Diet Cola Chicken

Ingredients

4 chicken breasts
nonstick cooking spray
1 cup ketchup
1 (12 ounce) can diet cola (I hear diet orange soda works well also)

Directions

Spray your pan with cooking spray. Place chicken breasts in pan. Brown lightly on each side.

Mix Ketchup and Diet Cola together. Pour over chicken.

Cook for about 45 minutes or until chicken is tender.

Cajun Chicken Strips are gosh darn good! Recipes like this make cooking really rewarding and worth it all. Very easy and quick for an on the go family.

These are really good and tender but fairly mild as far as the heat goes. Next time I will increase the spices to bump up the heat. Just my personal tastes.

Ingredients
  • 1 tablespoon all-purpose flour
  • 1 teaspoon poultry seasoning
  • 3/4 teaspoon garlic salt
  • 1/2 teaspoon paprika
  • 1/4 teaspoon pepper
  • 1/4 teaspoon cayenne pepper
  • 1/4 teaspoon cajun seasoning
  • 1 1/2 pounds boneless skinless chicken breasts cut into 1/2 inch strips
  • 2 tablespoons margarine or 2 tablespoons butter
Instructions
  1. In a large resealable plastic bag, combine the first seven ingredients. Add the chicken half at a time, and shake to coat.
  2. In a large skillet, cook the chicken in butter for 8 to 10 minutes or until the juices run clear.
  3. Garnish with parsley and peppers if desired.

This Carrabba’s Chicken Marsala is a DELICIOUS, easy, and quick meal. It’s just fancy enough that I feel like we’re eating something really special.

 

Something special without spending hours in the kitchen or a ton of money!

The little splash of lemon juice really knocks this baby up a few notches to unbelievable mouth-watering levels.

  • 4 tablespoons butter
  • 4 boneless skinless chicken breast halves
  • 4 shallots chopped fine
  • 1/2 lb mushrooms sliced
  • 1/4 cup dry marsala
  • 1/2 cup heavy cream
  • 1 teaspoon lemon juice
Instructions
  1. Pound the chicken breasts to even out thickness and lightly salt and pepper.

  2. In a large skillet, saute the chicken in 2 T melted butter until lightly browned, about 2 minutes per side. Remove from the pan and set aside.
  3. Melt the remaining butter in the pan and add the shallots and mushrooms. Cook until the mushrooms are lightly browned.
  4. Add the Marsala and bring to a boil, scraping browned bits from the bottom of the pan. Add the cream and lemon juice and return to a boil. Season with salt and pepper.
  5. Return the chicken to the pan for about 3 minutes to reheat and finish cooking.
  6. Serve with buttered fettuccine.

  1. Melt the butter in a saucepan and add the flour stirring constantly. When the mixture thickens, add the chicken broth, half and half, sour cream, Parmesan cheese, wine, garlic, lemon juice, dry mustard and salt and pepper.
  2. Stir over medium heat until the mixture again starts to thicken. Add the chicken and spaghetti noodles and stir well.
  3. Place in a baking dish and sprinkle with paprika and extra Parmesan cheese. Bake for 30 minutes at 350°.
  4. Sprinkle with parsley and serve.

This recipe is by Jeff Smith and was published in his book “The Frugal Gourmet”. I love chicken piccata and this is a great recipe for it! Adding the onion and garlic really ups the flavor in the sauce.

Frugal Gourmet’s Chicken Piccata

Ingredients

1 small yellow onion, chopped
2 garlic cloves, crushed
4 scallions, chopped
2 tablespoons olive oil
4 boneless, skinless chicken breasts
1⁄2 cup flour
salt and pepper
2 tablespoons butter
2 tablespoons dry sherry
2 tablespoons lemon juice
1 tablespoon capers, chopped
2 tablespoons chicken stock (optional)

Directions

Saute the onions, garlic and scallions in olive oil until tender. Remove from the pan and set aside.

Pound the chicken breasts flat.

Mix the flour, salt and pepper and place in a flat bowl.

Dip the chicken pieces into flour and lightly brown them in butter, 2-3 minutes per side. Add the sauteed onions and garlic.

Over high heat, add the sherry, lemon juice and capers. This should thicken to make a nice gravy for the chicken. If the gravy becomes too thick, add some chicken stock.

  • 2 cups vegetable oil
  • 1 cup chicken broth
  • 1/3 cup sugar
  • 1 tablespoon cornstarch
  • 1 tablespoon lemon juice
  • 1 teaspoon salt
  • 2 tablespoons vegetable oil
  • 1 lemon sliced
Instructions
  1. Combine the first 3 ingredients in a large zip-lock bag. Add the chicken, and seal the bag. Marinate for 15 minutes in the refrigerator.

  2. Combine the eggs, 1/4 cup cornstarch, and baking powder in a large bowl; stir well. Dip the chicken into the batter, coating well.
  3. Pour 2 cups oil into a large heavy skillet. Fry the chicken in hot oil over medium-high heat until golden, turning occasionally. Drain on paper towels. Cut the chicken into 1 1/2 inch X 1 inch pieces. Arrange on a serving platter.
  4. Combine the chicken broth and the next 4 ingredients; set aside. Place 2 tbsp oil in a large non-stick skillet; place over medium-high heat until hot. Add the lemon slices, and stir fry 30 seconds. Add the broth mixture, and stir fry 3 additional minutes or until sauce is thickened and clear. Pour over chicken.
  5. Serve immediately.

  • 1 bottle Kikkoman Sweet & Sour Sauce {12 oz.}
  • 1 can Dole Pineapple Chunks {20 oz.}
  • 1 medium White Onion chopped in ½″ – 1″ pieces
  • 2 green Bell Peppers chopped in ½″ – 1″ pieces
Instructions
  1. Pour Pineapple Juice only from can into crockpot, then add chicken. Set drained Pineapple Chunks aside.
  2. Cook chicken in crockpot on High for 3 hours {covered}
  3. After 3 hours, drain juices from crockpot. Remove chicken, and cut into cubes, then transfer chicken back to crockpot.
  4. Mix together Sweet & Sour Sauce, drained Pineapple Chunks, Chopped Onions & Chopped Peppers, stir well.
  5. Pour mixture over chicken, stir all together in crockpot, and cook on High for 30 more minutes {covered}
