Ham and Cheese Breakfast Casserole

I made this Ham and Cheese Breakfast Casserole for brunch and what a hit! I used sharp cheddar cheese to give it more flavor.

 

So good with the chunks of ham. Great for leftover ham but worth buying ham for!

A wonderful way to have a relaxing brunch for friends or family. I like to serve this casserole with grits and fresh fruit.

You can also vary the ingredients to suit your family’s taste. Next time, I think I will add some onions to the ham or sausage as well as some green chili.

Ingredients
  • 8 slices bread cubed
  • 1/2 cup butter melted
  • 2 cups milk
  • 1/2 teaspoon salt
  • 1/2 teaspoon dry mustard
  • 5 eggs
  • 1/2 lb cheddar cheese grated
  • 2 cups diced ham or 2 cups cooked sausage
  • 4 ounces mushrooms
Instructions
  1. Grease 9 x 13 glass pan.
  2. Mix bread with melted butter. Add cheese, ham or sausage, and mushrooms. Place in baking dish.
  3. Mix and beat eggs. Add milk and seasonings.
  4. Pour over mixture in pan.
  5. Cover with foil. Refrigerate overnight.
  6. Bake 1 hour @ 325° with foil removed. Remove from oven. Let stand for 10 minutes. Do not over bake.

These Giada De Laurentiis Mini Frittatas are very easy to make — and even easier to eat! Even toddlers gobble them up.

 

It tastes and looks fantastic! It’s like a gourmet mini quiche without the guilt.

This recipe is not only amazing but also very versatile. I have used peppered bacon and also roasted veggies as an emergency sub. Most anything works out great.

This Quick and Easy Basic Quiche is a wonderful recipe. The frozen pie crusts make it so easy and they are inexpensive.

Plus, since the pie crust comes with its own pie pan, there’s no dish to wash.

When I am “cleaning out the fridge” I will often make several and freeze them for quick dinners or bring out several for an easy night of entertaining.

I always have one on hand to take to friends or family that are under the weather.

  • 1 9-inch frozen deep dish pie shell

  3. Place quiche on cookie sheet and bake on the middle oven rack for 45-50 minutes, or until top is browned and a knife inserted in center comes out clean.
  4. Serve with a crisp green salad or maybe some fresh fruit on the side.

Ingredients
  • 1 1/2 lbs fresh french beans ends trimmed (green beans)
  • 4 tablespoons butter divided
  • 2 tablespoons vidalia onions finely chopped
  • 4 ounces baby portabella mushrooms cleaned and finely chopped (about 2 tablespoons)
  • 2 tablespoons all-purpose flour
  • 1 cup sour cream
  • fresh ground black pepper
  • 1 1/2 cups corn flakes cereal recommended ( Corn Flakes
  • 1/2 lb mozzarella cheese grated
Instructions
  1. Preheat the oven to 400 degrees F.
  2. Bring a large pot of salted water to a boil over medium heat then add the beans and cook until just tender (but still firm), about 5 to 7 minutes. Remove the beans from the water to a large bowl of ice water to preserve color and stop the cooking then drain the beans and set aside.
  3. Melt 2 tablespoons of the butter in a large skillet over medium-high heat; Add the onions and saute until translucent.
  4. Stir in the mushrooms, season with salt and pepper to taste, saute about 3 to 5 minutes.
  5. Add the flour and stir for another minute, to cook out the raw flour taste, and then whisk in the sour cream.
  6. Simmer for just a couple of minutes to bring the flavors together and taste for seasoning.
  7. Cut the green beans into 2-inch pieces.
  8. Melt the remaining 2 tablespoons of butter in a small pan. Crush the cereal flakes in a resealable plastic bag and add them to the pan with the butter, tossing to coat.
  9. Spread the green beans over the bottom of a 9-inch casserole dish and pour all of the mushroom sauce mixture over the beans topping with the grated cheese.
  10. Sprinkle with the buttered cereal flakes and bake in the preheated 400 degree F oven, until light golden brown and bubbly, approximately 20 minutes.
  11. Remove from the oven and serve.

Oh my goodness this Sausage Frittata is SO good! I served it with a fresh salad and it went down a storm.

 

I don’t know why I don’t make frittata’s more often because we love them!

Leftovers also made a great lunch the next day!

You can also bake this frittata in the oven at 350° for 1/2 hour; uniformly cooked and moist throughout.

  • 1 9 5/8 oz package pork sausage, crumbles
  • 2 cups red potatoes cubed and cooked
  • 8 eggs

Instructions

  2. Beat eggs, cheese, salt and pepper in large bowl with wire whisk. Pour over sausage mixture.
  3. Cook over medium-high heat 2 minutes, occasionally lifting edge with spatula and tilting skillet to allow uncooked egg to flow underneath. (Do not stir.).
  4. Reduce heat to medium-low; cover. Cook 14-17 minutes or until eggs are set.
  5. Top with tomato and onions. Cut into 8 wedges to serve.

  5. Uncover and continue to bake for 1 hour.
  6. Let stand for 10 minutes before serving.

This killer Chicken Taco Casserole recipe definitely definitely deserves a pat on the back for whoever came up with it! The whole family loves it.

Ingredients
  • 2 cups cooked rice
  • 2 cups cooked chicken shredded (turkey is good too)
  • 1 14 1/2 oz can tomato sauce
  • 1 1 1/4 oz envelope taco seasoning
  • 1 15 - 30 oz can refried beans
  • 1 cup cheese grated (reserve in it's own baggie)
  • 1 cup tomatoes chopped (optional)
  • 1 cup guacamole optional
  • 1/2 cup sour cream optional
  • 5 cups tortilla chips optional
Instructions
  1. Mix taco seasoning and tomato sauce. Add shredded chicken and coat it well with tomato mixture. Place cooked rice in the bottom of a 13 X 9 X 2 or disposable baking pan. Top with chicken mixture.
  2. (You may want to flash freeze at this point before going on to the next step. Freeze in the disposable pan or pop out and put in freezer bag.)
  3. Top with 1-2 cans of refried beans so you have a nice even coating. Top with grated cheese.
  4. Bake uncovered for 30 to 45 minutes at 350F or until hot all the way through and the cheese is nice and bubbly.
  5. Top with your favorite toppings or dip with tortilla chips!

Great at potlucks and bring-a-dish gatherings.

  • 3 garlic cloves pressed

  1. Brown ground beef. When it is about half done press garlic into pan and add onion. Cook till ground beef is done onions should be clear drain grease.
  2. While cooking ground beef cook macaroni according to box. Drain macaroni.
  3. dd diced tomatoes and tomato sauce to the ground beef. Stir. Add chili powder and cumin Stir. Add macaroni Stir. Add salt. Season to taste. Stir.
  4. Serve and top with cheddar cheese.

This Creamy Spaghetti Pie is absolutely great. I was amazed at the flavor from such a simple recipe. The texture and ratios of everything are just right.

 

Don’t tinker with it anymore. I think this is my new go-to for “quick lasagna”!

  • 8 ounces thin spaghetti broken in half, cooked and drained (about 4 cups)
  • 1/4 cup green onions with top finely chopped
  • 1/4 cup chopped fresh parsley
  • 2 garlic cloves minced
  • 3 ounces fresh parmesan cheese grated, divided (3/4 cup)
  • 1 15 oz container part-skim ricotta cheese
  • 1 egg lightly beaten
  • 3 tablespoons butter optional
  • 3/4 teaspoon salt
  • 1/2 teaspoon Italian seasoning
  • 1 cup shredded mozzarella cheese divided (4 oz.)
  • 1 26 oz jar spaghetti sauce
  • 1 14 1/2 oz can diced tomatoes, drained
  • parsley chopped to garnish
Instructions
  1. Save out 1/4 cup of the Parmesan cheese and 1/4 cup shredded mozzarella cheese. Set aside.

  2. Mix together green onions, garlic, chopped parsley, 1/2 cup Parmesan cheese, ricotta cheese, egg, butter(if using), salt, Italian seasoning, and 3/4 cup mozzarella cheese.

  3. Mix cheese/egg mixture with cooked spaghetti and place it on the bottom of a shallow casserole dish.

  4. In a bowl, mix spaghetti sauce with tomatoes. Pour over spaghetti mixture.

  5. Sprinkle with remaining 1/4 cup Parmesan cheese and 1/4 cup mozzarella cheese that was set aside.

  6. Bake about 30 minutes at 350 degrees. After pulling out of the oven, garnish the pie with chopped parsley. The pie will feel firm to the touch.

Serve and enjoy this Creamy Spaghetti Pie!
