These French Dip Roast Beef Sandwiches have a secret ingredient and they are a hit with everybody that tries them. Extremely tender and flavorful.

 

This recipe makes great French Dip sandwiches! I like the fact that the au juice is not as salty as a lot of recipes I’ve tried.

I think one of the reasons it comes out so delicious is the secret ingredient…Beer

This recipe works well cooked in the crockpot. (Gotta love that crockpot!!) The beef is very tender and the au jus is especially flavorful.

Ingredients
  • 3 -4 lbs beef bottom round steaks or 3 -4 lbs rump roast
  • 2 envelopes onion soup mix
  • 3 cans beef broth
  • 1 12 ounce can beer
  • 1 small onion quartered
  • 12 Italian rolls or 12 kaiser rolls
Instructions
  1. Preheat oven to 350 degrees.
  2. Place roast in a large roasting pan.
  3. Combine soup mix, broth and beer in a bowl and stir until the soup mix is dissolved. Pour over roast and place onions around it.
  4. Bake for 2 to 3 hours, basting frequently, or until beef is tender and looks stringy when pulled with a fork. If roast starts getting too crispy, cover pan with foil or lid.
  5. Slice meat thinly and serve on rolls.
  6. Serve juices in individual cups or bowls to dip sandwiches into.

Ingredients
  • 2 1/2-3 lbs boneless beef ribs
  • 16 ounces barbecue sauce I use a bottle of Hunt's Original or Hickory Brown Sugar
Instructions
  1. Place the ribs in an 8-quart stockpot. Add enough water to cover ribs. Mix in about 1 cup barbecue sauce to the water. Cover, and bring to a boil. Reduce heat. Simmer covered for 2 hours, until ribs are tender.
  2. Preheat grill to medium.
  3. Remove ribs from water and place in a large bowl. Drench the ribs in additional barbecue sauce.
  4. Transfer ribs to preheated grill. Close grill lid. Grill for 10 to 20 minutes, basting generously with barbecue sauce & turning often (every 2 minutes). (Note: be careful not to overcook the ribs, as they will dry out).
  5. Note: if you prefer, you may finish the ribs in a 350F oven, instead of the grill.
  6. Serve with additional sauce, if desired. Good with corn bread or buttered rolls, beans and slaw.

Crescent Roll Casserole – Ground Beef Recipe

This Crescent Roll Casserole Recipe is such a nice, simple, easy to put together casserole recipe. One of my favorite recipes with ground beef.

 

Too easy to be so good.

I love most everything with crescent roll dough and this is no exception.

It makes a satisfying weeknight meal. Will definitely be placed on the “make again” list.

If you do not have Italian Seasoning available you can use 1/4 tsp oregano, 1/4 tsp basil, 1/4 tsp thyme, & 1/4 tsp marjoram.

Ingredients
  • 1 lb ground beef
  • 1 15 ounce can tomato sauce or 1 (15 ounce) can low-sodium tomato sauce
  • 1/2 tablespoon olive oil
  • 1 teaspoon italian seasoning
  • 1/2 teaspoon salt
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon sugar
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon garlic powder
  • 2 tablespoons light sour cream I use the Daisy brand
  • 3 tablespoons parmesan cheese
  • 8 slices provolone cheese
  • 1 tablespoon butter melted
  • 1 8 ounce package Pillsbury Refrigerated Crescent Dinner Rolls
  • cooking spray
Instructions
  1. Brown beef until no longer pink then drain excess grease. Add the tomato sauce, olive oil, spices, & 2 tablespoons of Parmesan cheese to the beef. Simmer on medium heat for 5 minutes.
  2. Remove from heat & stir in the sour cream.
  3. Preheat the oven to 375°F Lightly spray an 8x8 baking dish. Pull the crescent rolls apart but leave them in rectangle shape. (There should be 4 rectangles).
  4. Lay 2 of the rectangles in the bottom of the pan, side by side. Gently spread out to fit the bottom of the pan.
  5. Cover the crescent rolls with 4 slices of provolone cheese. (The cheese on the bottom helps keep the crescent rolls from becoming soggy from the sauce).
  6. Next add the beef mixture & then 4 more slices of cheese. Take the remaining 2 rectangles on top of the last layer of cheese.
  7. Lightly brush the melted butter over the crescent rolls & sprinkle the remaining parmesan cheese on top.
  8. Bake for 25 minutes or until lightly brown.

Easy Enchiladas (Beef or Chicken)

WOW!!! These are incredible! Better than the enchiladas at my favorite Mexican restaurant. I absolutely love this. A favorite enchilada recipe of mine.

Because of the many different options, it is also very versatile.

Frying the tortillas gives them texture and develops the flavor better. I will never skip that again, no matter how tempted I am.

Ingredients
  • 1 lb ground beef or 1 lb boneless skinless chicken breast
  • 1/4 cup chopped onion
  • 1 teaspoon garlic powder
  • 1 tablespoon Worcestershire sauce
  • 1 8 ounce can tomato sauce
  • 1 teaspoon paprika
  • 1 teaspoon oregano
  • 2 teaspoons chili powder more or less for your taste
  • 1/2 teaspoon cumin
  • 1/2 teaspoon black pepper
  • 3 cups shredded cheese I like the jack or cheddar combos
  • 1 10 oz can enchilada sauce
  • olive optional
  • 12 corn tortillas
  • oil
Instructions
  1. If using chicken, boil the chicken in water. Then rinse and shred with a fork. Add onion and garlic.
  2. If using ground beef, brown with onion and garlic, drain.
  3. Add the next 7 ingredients (Worcestershire sauce through black pepper).
  4. In another skillet, heat oil. Add tortillas, one at a time, for 10 seconds on each side. Drain on paper towel.
  5. In 10x13 baking pan, pour just enough enchilada sauce in the bottom to coat the bottom of the pan.
  6. Fill each tortilla with a spoonful of meat mixture. Cheese, onions, and/or olives can be put inside each enchilada at this time if desired.
  7. Roll tortilla and place seam side down in a pan. Continue with remaining tortillas.
  8. Pour remaining enchilada sauce over tortillas and top with cheese (additional olives may be added if desired). At this time, pan may be refrigerated for several hours or overnight.
  9. Bake in 350 degree oven for 20 minutes (30 minutes if refrigerated).
  10. Top with sour cream.

WW Texas Steak With BBQ Sauce – 6 Points

Yummy steak! You would never guess that this is WW Texas Steak from the taste. Love the rub and the sauce. It’s simple to make and delicious!!!

 

I think the rub and sauce would be good on pork too.

I put the rub on about an hour before I grilled the steak and it gave a great flavor that was very nice with the sauce.

  1. Combine 2 teaspoons of the brown sugar, the chili powder, cumin, pepper, and salt in a small bowl.
  2. Spray a small saucepan with nonstick spray and heat over medium-low. Add the onion and cook, stirring frequently, until softened, about 4 minutes.
  3. Add 1 tablespoon of the spice mixture, the remaining 1 tsp of brown sugar, the ketchup, water, steak sauce, and Worcestershire sauce; bring to a boil.
  4. Reduce the heat and cook, covered, stirring occasionally, until the flavors are blended, 10 minutes.
  5. Set aside and keep warm.
  6. Spray the grill rack with nonstick spray and heat the grill to medium-high or prepare a medium-hot fire.
  7. Rub the steaks with the remaining spice mixture.
  8. Place on the grill rack and grill until an instant-read thermometer inserted into the side of each steak registers 130 degrees, 3-4 minutes on each side.
  9. Transfer to a platter, cover loosely with foil and let stand 5 minutes (until the temperature increases to 135 degrees for medium-rare).
  10. Serve with the sauce.

Beefy Cabbage Soup — Quick & Easy

This Beefy Cabbage Soup is a very tasty and tummy warming recipe that I’ve used for several years. I’ll admit I don’t always make it the same but I do stick with the basics: ground beef, cabbage and beans!

It’s a great soup and so easy to throw together. Most of the ingredients are staples in my house so I can usually make it on short notice!

Once the ground beef is cooked, this can all get dumped into the crock pot.

Beefy Cabbage Soup -- Quick & Easy
Ingredients
  • 1 lb lean ground beef
  • 1 onion medium chopped
  • 1 minced garlic clove
  • 28 ounces diced tomatoes with juice
  • 3 cups low sodium beef broth
  • 8 ounces tomato sauce
  • 14 ounces great northern beans
  • 1 small cabbage chopped
  • 1/2 - 1 teaspoon dried thyme
  • 1/2 teaspoon chili powder to taste
  • salt to taste
  • pepper to taste
Instructions
  1. In a large pot: Brown ground beef, drain any fat. Add onions and garlic, saute with ground beef until tender.
  2. Note: At this point you place the ground beef mixture and remaining ingredients in the crock pot. Cook on low for 4-6 hours.
  3. Standard stove top cooking: Add remaining ingredients and simmer.
  4. Simmer for 1-2 hours on stove top until cabbage is tender. Stirring occasionally. Check fro additional seasonings.
Recipe Notes

Serve with a crusty bread.

  4. Stir in cheese; continue to stir until cheese is melted then serve. Do not boil.

Spaghetti Meat Sauce – My Family Favorite

This is the Spaghetti Meat Sauce recipe I’ve been using for years. It doesn’t make a lot but is easily doubled. Slow simmering develops the flavor.

 

It’s great served over any pasta or spaghetti shapes I have on hand and I also use this in my lasagnas.

Feel free to add sauteed mushrooms, celery, or a little grated carrot if you wish. I do sometimes, but find we like this simple recipe the best.

This is my favorite Spaghetti Meat Sauce Recipe.

Ingredients
  • 2 tablespoons oil
  • 1 large onion finely diced
  • 2 slices bacon chopped
  • 2 garlic cloves minced
  • 1 1/4 lbs. Ground chuck
  • 2 tablespoons bell peppers finely chopped
  • 1 5 ounce can tomato paste
  • 1/2 cup red wine
  • 1 15 ounce can chopped tomatoes, and their juice
  • 2 cups beef broth
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon dried basil
  • 1/2 teaspoon dried thyme
  • 1 pinch mixed pumpkin spice or 1 pinch freshly ground nutmeg
Instructions
  1. Heat the oil in a large fry pan over a medium heat. Add the onion and bacon and cook until the onion is golden and tender.
  2. Add the minced garlic and cook a couple of minutes more.
  3. Add the ground chuck and cook, breaking up with a fork, until the meat has all changed color.
  4. Add the bell pepper and cook for a minute or two.
  5. Now add the tomato paste and "cook it out" for another minute or two before adding the wine.
  6. Allow the wine to reduce a little, before adding the remaining sauce ingredients.
  7. Simmer until reduced and a deep rich red/ brown.
  8. *You could call this "cooked" in 30 minutes, but I like to let it simmer about 2 hours, stirring regularly to make sure it's not sticking. Add a little more broth or water if it looks like it's doing so.
  9. Serve with pasta of your choice.

These Barbecue Meatballs really are so delicious, folks. I have been looking for the perfect meatball recipe for a while now and have found it here!

 

Sweet and tangy. Great for parties and get-togethers. They are always a hit because they are so good and easy!

No leftovers! But just in case you do they’re delicious warmed up the next day and placed on a toasted sandwich bun with melted mozzarella on top. Yikes.

  4. Bake for 15 minutes or until no longer pink. Drain well.

  5. Meanwhile in a medium bowl combine ketchup, brown sugar, 1/4 cup onion, liquid smoke, and 1/4 teaspoons garlic powder.

  6. Pour over meatballs.

  7. Bake for 10 minutes more or until sauce is heated through.

  8. Stir gently to combine sauce and meatballs.

  9. Serve and enjoy.
