Cheesy Beef Pasta
Ingredients
  • 1 lb lean ground beef
  • 1 onion chopped
  • 1 garlic clove minced
  • 1 green bell pepper chopped
  • 1 teaspoon dried basil
  • 1/2 teaspoon dried thyme
  • 1 28 ounce can crushed tomatoes
  • 1 cup water
  • 3 cups rotini pasta
  • 1/4 teaspoon salt
  • 1/4 teaspoon granulated sugar
  • 1 pinch ground black pepper
  • 1 cup mozzarella cheese shredded
Instructions
  1. In a large nonstick skillet, cook the beef over high heat, stirring, for 3 to 5 minutes or until no longer pink. Pour off all but 1 tablespoons of fat.
  2. Add the onion, garlic, green pepper, basil and thyme and cook, stirring, for 2 minutes. Stir in the tomatoes and water and bring to a boil.
  3. Add the pasta and reduce the heat to simmer.

Pasta Fagioli – Perfect For Anytime Of The Year

This is a great Pasta Fagioli dish that you can make in the crock pot anytime of the year. It’s a favorite because it tastes great in the summer and warms you up in the winter.

If you do not have a large crock pot, cut the recipe in half.

Pasta Fagioli - Perfect For Anytime Of The Year
Ingredients
  • 2 lbs. ground beef
  • 1 onion chopped
  • 3 carrots chopped
  • 4 stalks of celery chopped
  • 2 28 ounce cans diced tomato’s, undrained
  • 1 16 ounce can red kidney beans, drained and rinsed
  • 1 16 ounce can white kidney beans, drained and rinsed
  • 3 10 ounce cans beef stock
  • 3 tsp. oregano
  • 2 tsp. pepper
  • 5 tsp. parsley
  • 1 tsp. tabasco sauce optional
  • 1 20 ounce jar spaghetti sauce
  • 8 ounces of pasta we use elbow pasta …but you can use whatever pasta you care to use
Instructions
  1. Brown the beef and drain the fat……then put into crock pot with all other ingredients except the pasta. Cook on low for 7-8 hours or on High for 4-5 hours. Add the pasta 30 minutes before eating.

Ingredients
  • 2 lbs Stew Meat
  • 1 Packet Brown Gravy
  • 1 Packet Beefy Onion Soup
  • 1 Can Cream Of Mushroom
  • 3 Cups Of Beef Broth or Water
  • Few Sprinkles of Worcestershire Sauce
  • Few Sprinkles of Soy Sauce
Instructions
  1. Place meat at the bottom of cooker and then layer with ingredients. Stir all ingredients in the crock pot and place on desired temperature.
  2. Time on High: 3-4 Hours (or just set on low while you are at work)
  3. Time on Low: 8 Hours

Beef Stew & Vegetables – Great Cold Weather Dish

There are a lot of beef stew recipes out there but this Beef Stew & Vegetables recipe calls for a variety of vegetables and has great seasoning.

If there are other vegetables you like, just add to the recipe but I like it just as it is and have it several times over the winter months.

Beef Stew & Vegetables
Ingredients
  • 1 lb. top round beef
  • 1 tablespoon paprika
  • 1-1/2 teaspoon oregano
  • 1/2 teaspoon chili powder
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon black pepper
  • 1/8 teaspoon red pepper
  • 1/8 teaspoon dry mustard
  • 8 red-skinned potatoes halved
  • 3 cups finely chopped onion
  • 2 cups beef broth
  • 2 large garlic cloves minced
  • 2 large carrots peeled, cut into very thin 2-1/2-inch strips
  • 2 bunches mustard greens kale, or turnip greens, stems removed, (1/2 lb. each) coarsely torn
  • nonstick spray coating as needed
Instructions
  1. Partially freeze beef. Thinly slice across the grain into long strips 1/8″ thick and 3″ wide.
  2. Combine paprika, oregano, chili powder, garlic powder, black pepper, red pepper, and dry mustard. Coat strips of meat with the spice mixture.
  3. Spray a large heavy skillet with nonstick spray coating. Preheat pan over high heat.
  4. Add meat; cook, stirring for 5 minutes.
  5. Add potatoes, onion, broth, and garlic. Cook covered, over medium heat for 20 minutes.
  6. Stir in carrots, lay greens over top, and cook, covered, until carrots are tender, about 15 minutes.

Serve in large serving bowl, with crusty bread for dunking.

  • 1 package corn bread/muffin mix

Ingredients
  • 1 chuck roast 3 pounds
  • Olive oil
  • 1 pound carrots peeled and cut into large chunks
  • 2 pounds potatoes peeled and cut into large chunks
  • 1 onion peeled and cut into large chunks
  • 2 stalks celery cut into large chunks (optional)
  • 1 cup beef broth
  • 1 tablespoons corn starch
Seasoning Mix
  • 2 tablespoons steak seasoning
  • 1 tablespoon kosher salt
  • 1 tablespoon dried thyme
  • 1 tablespoon dried rosemary
Instructions
  1. Combine together seasoning mix in a small bowl. Set aside.
  2. Coat both sides of meat with olive oil. Sprinkle on a third of the seasoning mix onto each side.
  3. Sear both sides of the meat in a large skillet over medium-high heat. Transfer roast to slow cooker.
  4. Place the vegetables in a large bowl. Drizzle on a little olive oil to coat vegetables. Sprinkle on the remaining seasoning mix. Add the vegetables to the same skillet that was used to sear the meat. Sauté for about five minutes – stirring occasionally.
  5. Transfer the vegetables to the top of the roast in the slow cooker. Pour in the beef broth. Cover with lid.
  6. Cook on low for 9 hours or on high for 6 hours.
  7. Using a turkey baster, retrieve most of the cooking juices from the slow cooker. Transfer juices to a small sauce pan and bring to a simmer over medium heat on the stovetop. Whisk together the cornstarch with a little water. Blend into the pan juices while whisking. Bring back to a simmer until thickened. Taste and adjust seasoning as needed.
  8. Transfer the roast and vegetables to a large platter. Ladle the gravy over. Serve immediately.

Absolutely Scrumptious Salisbury Steak
Ingredients
  • 1 10 1/2 ounce can condensed golden mushroom soup, undiluted
  • 1 1/2 pounds ground round
  • 1/2 cup dry breadcrumbs
  • 1 large egg beaten
  • 1/2 cup chopped onion
  • salt and pepper
  • garlic salt or garlic powder
  • 1/2 cup water
Instructions
  1. Combine 1/4 cup of the soup with the ground beef, bread crumbs, egg, onion, salt, pepper, and garlic salt; mix well. Shape into 6 patties. Place in shallow baking dish.
  2. Bake at 350 degrees for 40 minutes.
  3. Drain off fat.
  4. Combine remaining soup and water; pour over patties. Bake an additional 10 minutes or until thoroughly heated.

Serve with veggies of your choice and delicious make ahead potato rolls. You can make these rolls 24 hours in advance and just throw in the oven for dinner time.

A quick and easy way to dress up a pound of ground beef after a hard days work and you probably have all the ingredients on hand!

Hamburger Steak with Onions and Gravy

Ingredients

1 pound ground beef
1 egg
1/4 cup bread crumbs
1/8 teaspoon ground black pepper
1/2 teaspoon seasoned salt
1/2 teaspoon onion powder
1/2 teaspoon garlic powder
1 teaspoon Worcestershire sauce
1 tablespoon vegetable oil
1 cup thinly sliced onion
2 tablespoons all-purpose flour
1 cup beef broth
1 tablespoon cooking sherry
1/2 teaspoon seasoned salt

Directions

In a large bowl, mix together the ground beef, egg, bread crumbs, pepper, salt, onion powder, garlic powder, and Worcestershire sauce. Form into 8 balls, and flatten into patties.

Heat the oil in a large skillet over medium heat. Fry the patties and onion in the oil until patties are nicely browned, about 4 minutes per side. Remove the beef patties to a plate, and keep warm.

Sprinkle flour over the onions and drippings in the skillet. Stir in flour with a fork, scraping bits of beef off of the bottom as you stir. Gradually mix in the beef broth and sherry. Season with seasoned salt.

Simmer and stir over medium-low heat for about 5 minutes, until the gravy thickens. Turn heat to low, return patties to the gravy, cover, and simmer for another 15 minutes.

  • 2 celery ribs chopped

Instructions
  1. In a Dutch oven, brown the ground beef and drain. Add the all remaining ingredients except the parsley.
  2. Bring to a boil. Reduce the heat and simmer, covered, for 1 hour.
  3. Garnish with parsley.

Spicy Beef Szechuan Noodles

Sometimes the same old ground beef dishes get a little boring so I throw in something different like Spicy Beef Szechuan Noodles.

 

An easy recipe that’s also delicious! It doesn’t get any better than that!

Ground beef is relatively economical as far as beef is concerned. I eat a lot of it.

I double up the sauce sometimes because I like it saucy. Hoisin is very sweet so if you try the recipe I recommend adding a little and working your way up.

  • 2 tablespoons cornstarch
  • 3/4 cup beef broth
  • 1/2 cup hoisin sauce
  • 2 tablespoons soy sauce
  • 8 ounces vermicelli cooked
  • 1/2 cup sliced green onion
Instructions
  1. Brown the ground beef in a large skillet, stirring until it crumbles; drain and keep warm.
  2. Pour the sesame oil in pan and heat till hot. Saute the onion and the next 4 ingredients hot in the sesame oil until tender.
  3. Combine the cornstarch and beef broth, whisking until smooth. Stir the broth mixture, hoisin sauce, and soy sauce into onion mixture. Bring to a boil, stirring constantly; boil, stirring constantly, 1 minute.
  4. Stir in the ground beef.
  5. Toss with the hot cooked pasta, and sprinkle with sliced green onions.
