New Year’s Hopping John – Traditional

This New Year’s Hopping John is a tried and true traditional recipe for New Year’s Day in the South. This recipe is tops!

 

Now there are a lot of recipes for hopping John. So before you holler that this ain’t traditional just think about it. Maybe it’s not your traditional but it’s somebody’s!

It wasn’t mine until I gave it a trial run.

I normally use smoked hog jowls. But my fatty pork days are over and I was looking for a substitute and came across this recipe.

This is the one for my New Years tradition from now on!!!

I serve it over rice liberally sprinkled with Tabasco sauce. I like it spicy. A great meal with some greens and cornbread!

Some would say this is not true Southern New Year's Hopping John but to me it is.

Ingredients
  • 1 cup sliced celery
  • 1 medium onion
  • 2 cloves garlic minced
  • 1 tablespoon oil bacon drippings or 1 tablespoon butter
  • 4 cups water
  • 2 10 1/2 oz cans chicken broth (or 2 1/2 cups)
  • 16 ounces black-eyed peas fresh or frozen, thawed
  • 1/2 lb cooked ham cubed
  • 1/4 teaspoon dry crushed red pepper
  • 3 bay leaves
  • 3 cups cooked long-grain rice
Instructions
  1. Saute the first three ingredients in a large Dutch oven in hot oil, bacon drippings, or butter until tender.
  2. Add the water and the next five ingredients.
  3. Bring to a boil; cover, reduce heat, and simmer 40 minutes or until the peas are tender.
  4. Remove and discard the bay leaf.
  5. Serve over rice.

Ramen Noodle Casserole – So Easy But Delicious!

This Ramen Noodle Casserole is a very easy casserole that’s fairly cheap and very quick to make. This recipe can easily be increased for a last minute get together. Just add more noodles!

This is a also a great base recipe to really add different ingredients and make something new each time. Use diced chicken and chicken flavored ramen!

Just add a salad and you have a great dinner.

  • 1 lb ground chuck
  • 1 medium onion Diced
  • 1 14 1/2 ounce can diced rotel tomatoes
  • 3 3 ounce packages beef-flavor ramen noodles
  • 3 cups water
  • Velveeta cheese
Instructions
  1. Brown the hamburger and onion and then add the flavoring packets from the ramen noodles. Cook and stir for about 4 minutes.
  2. Add the water and the tomatoes and bring to a boil. Add the ramen noodles and cook for about 4 minutes more.
  3. Pour into a casserole dish and cover with sliced Velveeta cheese.
  4. Bake for 15 minutes at 350° or until cheese is melted.

If you’ve never made Crock Pot Beef Short Ribs before – you probably don’t know what to expect and might be a little apprehensive – no need to be!

These ribs are sooo delicious, so moist, the meat falls off the bones and the sauce is fabulous!

You won’t believe how good these ribs are until you taste them!!! Served over rice, it is a totally wonderful meal.

Beef short Ribs are browned and then slow cooked for 9 hours with a brown sugar/vinegar sauce until tender. Delicious served over rice!

  • 1/3 cup flour
  • 1 teaspoon salt
  • 1/4 teaspoon pepper
  • 2 1/2 lbs boneless beef short ribs
  • 1/4 cup butter
  • 1 cup chopped onion
  • 1 cup beef broth
  • 3/4 cup red wine vinegar
  • 3/4 cup brown sugar
  • 1/4 cup chili sauce
  • 2 tablespoons catsup
  • 2 tablespoons Worcestershire sauce
  • 2 tablespoons minced garlic
  • 1 teaspoon chili powder
Instructions
  1. Put the flour, salt and pepper in a bag. Add the ribs and shake to coat. Brown the ribs in butter in a large skillet.
  2. Place the ribs in a slow cooker.
  3. In the same skillet, combine the remaining ingredients. Bring to a boil, stirring.
  4. Pour over the ribs.
  5. Cover and cook on low for 9 hours.

This Hot Fudge Pudding Cake is light, spongy and extremely flavorful. The sauce is smooth and silky and sooo chocolately. It’s also really quick and really easy to make. A definite candidate to go into the keeper box.

Hot Fudge Pudding Cake
Ingredients
  • 1 1/4 cups granulated sugar divided
  • 1 cup all-purpose flour
  • 7 tablespoons cocoa divided
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1/2 cup milk
  • 1/3 cup butter or 1/3 cup margarine melted
  • 1 1/2 teaspoons vanilla extract
  • 1/2 cup light brown sugar packed
  • 1 1/4 cups water hot
  • whipped topping
Instructions
  1. Heat oven to 350'F.
  2. In medium bowl stir together 3/4 cup granulated sugar, flour, 3 Tablespoons cocoa, baking powder and salt. Blend in the milk, butter and vanilla and beat until smooth.
  3. Pour the batter into 8- or 9-inch square baking pan.
  4. In a separate bowl, stir together the remaining 1/2 cup granulated sugar, brown sugar and remaining 4 tablespoons cocoa. Sprinkle the mixture evenly over the batter.
  5. Pour hot water over the top; do not stir.
  6. Bake 35 to 40 minutes or until the center is almost set.
  7. Let stand 15 minutes; spoon into dessert dishes, spooning sauce from bottom of pan over the top.

Serve with with a scoop of vanilla ice cream.

French toast with a twist!

  • 1/2 cup butter or margarine
  • 12 slices white bread
  • 1 cup brown sugar
  • 1 teaspoon cinnamon
  • 5 -6 eggs
  • 1 1/2 cups milk
Instructions
  1. Melt the butter in a 9 x 13 baking pan. Put 6 slices of bread in the bottom of the pan.

  2. In a bowl mix 1 cup brown sugar with 1 tsp cinnamon.

  3. Sprinkle 1/2 of this sugar mixture over bread. Add another layer of 6 slices of bread.

  4. In a bowl, whisk eggs with milk until well blended. Pour over the bread layers.

  5. Sprinkle with the remaining sugar mixture.

  6. Cover and refrigerate overnight.

  7. Bake covered at 350F 30 minutes. Uncover and continue baking 15 minutes or until set and browned.

Christmas Nuts N’ Bolts Snack

Christmas-Nuts-N'-Bolts-Sna

This snack is standard issue at a lot of households during the holidays but it’s not just for Christmas. This is great party fare regardless of the occasion. I’m thinking couchgatin’ for football games!

It is great during the holiday season though. You can take it to holiday parties or even make up a nice presentation and give it for gifts.

The sauce is is what makes the dish in my opinion. Almost any combination of other ingredients will work just fine. Two I don’t leave out, however, are the peanuts and pretzels.

This is definitely a keeper and a must try. Make up a batch with the kiddies. They’ll enjoy eating their own creations!

Christmas Nuts N’ Bolts Snack

Ingredients

For the Sauce

1 cup butter
3 tablespoons Worcestershire sauce
1 teaspoon celery salt
1 teaspoon garlic powder
2 teaspoons garlic salt
2 teaspoons seasoning salt
1 teaspoon onion powder

For the Snacks

1 (10 ounce) box Cheerios toasted oat cereal
10 ounces shreddies cereal
1 large bag pretzel sticks
8 ounces Bugles original flavor snacks
5 cups original Ritz Bits miniature crackers
4 cups salted nuts

Directions

In a large glass bowl, melt the butter in the microwave. Stir in the worcestershire and all the spices, whisk until well blended.

Pour the snack ingredients into a large turkey roaster and pour the sauce over the top.

Mix well and bake uncovered at 225 degrees for one hour, stirring every 10 minutes.

Store in tins, makes a great hostess gift.

Texas Breakfast Casserole – Easy Peasy

This Texas Breakfast Casserole is something you should think of on those occasions when you know preparing the morning meal will be a hassle

 

All the prep work is done the night before and on that particular morning, you just pop it in the oven.

It’s great for Sunday mornings or holiday mornings. Especially Christmas when the kiddies are opening gifts. You can shoot video while breakfast cooks and you haven’t done a thing!

What I really like about this dish is its versatility. The recipe as listed is just a jumping-off place. You could add onions, crumbled cooked bacon, ham, green and red peppers, etc. to this dish to make it even tastier.

  • 1 12 ounce can crescent rolls
  • 1 lb sausage cooked and drained

Are you a bit skeptical? Well, this recipe really doesn’t contain potatoes! It gets it’s name from the look of the candy. I was a bit skeptical at first, but the fact is these turn out so cute and tasty!

They’re sweet and rich and I definitely could only eat a few of them at a time. But I always go back later for more.

Irish Potatoes Candy

Ingredients

1/4 cup softened butter
4 ounces cream cheese, softened (Not whipped or reduced fat!
1 teaspoon vanilla extract
1 (16 ounce) package confectioners’ sugar
7 ounces sweetened flaked coconut (2 1/2 cups)
1 tablespoon ground cinnamon

Directions

In a large bowl, cream together the butter and cream cheese. Add the vanilla and confectioners’ sugar. Beat until the mixture forms a ball. Stir in coconut with a spoon.

Roll the mixture between your hands to form small potato-shaped candies or roll into small balls.

Place the cinnamon in a shallow dish and roll the balls in it. Place the balls on a cookie sheet and chill for about 1 hour or until firm.

If you prefer “dirtier potatoes” roll the candy a second time after they have chilled.

To me this really is The World’s Most Awesome Baked Ham. I love this recipe because it’s so easy and it calls for hardly any ingredients.

I always have these ingredients in my pantry. People who ordinarily aren’t too fond of ham because it’s dry and tasteless rave over this one.

Give this recipe a try and you will NEVER bake a ham any other way from now on! It’s so moist and juicy, and just deeeeeeeeeelicious!

  • 15 lbs whole bone-in ham I prefer Cooks SuperTrim brand
  • 1 lb brown sugar
  • 1/2 cup yellow mustard
  • aluminum foil
Instructions
  1. In a medium size mixing bowl, mix the yellow mustard and brown sugar until you have a thick"paste".
  2. Take all wrappers off of ham and trim away excess fat.
  3. Line a baking pan (I spray with Pam in case some of the brown sugar mixture escapes, clean up is easier) with Aluminum foil.
  4. Place ham on foil and spread brown sugar/mustard paste on top. Fold and seal foil. Do not open again until ham is done.
  5. Bake at 350° for 4 hours. Let the ham set for about 1 hr then carve.

  6. Pour the gravy over the patties and simmer covered for about 10 minutes.
