Pasta Fagioli - Perfect For Anytime Of The Year
Ingredients
  • 2 lbs. ground beef
  • 1 onion chopped
  • 3 carrots chopped
  • 4 stalks of celery chopped
  • 2 28 ounce cans diced tomato’s, undrained
  • 1 16 ounce can red kidney beans, drained and rinsed
  • 1 16 ounce can white kidney beans, drained and rinsed
  • 3 10 ounce cans beef stock
  • 3 tsp. oregano
  • 2 tsp. pepper
  • 5 tsp. parsley
  • 1 tsp. tabasco sauce optional
  • 1 20 ounce jar spaghetti sauce
  • 8 ounces of pasta we use elbow pasta …but you can use whatever pasta you care to use
Instructions
  1. Brown the beef and drain the fat……then put into crock pot with all other ingredients except the pasta. Cook on low for 7-8 hours or on High for 4-5 hours. Add the pasta 30 minutes before eating.

Homemade Sloppy Joe With Chicken or Turkey
Ingredients
  • 1 tablespoon canola oil
  • 1/2 cup sweet onion – fine diced
  • 1 tablespoon fresh garlic – minced
  • 1/2 cup red pepper – fine diced
  • 1/2 cup green pepper – fine diced
  • 1 lb 99% lean ground turkey breast
  • 1/4 teaspoon thyme
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 8 oz ketchup – less than 2g sugar per serving
  • 1 tablespoon Dijon mustard
  • 1 teaspoon rice vinegar – sugar-free
  • 1 teaspoon agave nectar
Instructions
  1. 1) Place canola oil in large non-stick sauté pan on medium heat and spread to coat pan bottom.
  2. 2) Add onions and sauté until light golden; add garlic, sauté one minute then add red and green peppers and sauté until peppers are tender.
  3. 3) Add ground turkey, breaking into small pieces and season with thyme, salt and black pepper. Stir turkey frequently with rubber spatula or wooden spoon on medium heat and continue to break into small pieces. When turkey becomes firm and cooked, add ketchup, Dijon mustard, vinegar and agave nectar.
  4. 4) Stir until well mixed and cook for 3-5 minutes until heated through and serve.

Beef Stew & Vegetables
Ingredients
  • 1 lb. top round beef
  • 1 tablespoon paprika
  • 1-1/2 teaspoon oregano
  • 1/2 teaspoon chili powder
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon black pepper
  • 1/8 teaspoon red pepper
  • 1/8 teaspoon dry mustard
  • 8 red-skinned potatoes halved
  • 3 cups finely chopped onion
  • 2 cups beef broth
  • 2 large garlic cloves minced
  • 2 large carrots peeled, cut into very thin 2-1/2-inch strips
  • 2 bunches mustard greens kale, or turnip greens, stems removed, (1/2 lb. each) coarsely torn
  • nonstick spray coating as needed
Instructions
  1. Partially freeze beef. Thinly slice across the grain into long strips 1/8″ thick and 3″ wide.
  2. Combine paprika, oregano, chili powder, garlic powder, black pepper, red pepper, and dry mustard. Coat strips of meat with the spice mixture.
  3. Spray a large heavy skillet with nonstick spray coating. Preheat pan over high heat.
  4. Add meat; cook, stirring for 5 minutes.
  5. Add potatoes, onion, broth, and garlic. Cook covered, over medium heat for 20 minutes.
  6. Stir in carrots, lay greens over top, and cook, covered, until carrots are tender, about 15 minutes.

Ingredients

1 tablespoon olive oil
1 tablespoon minced shallots
1 garlic clove, minced
1 cup balsamic vinegar
1 1/2 teaspoons sugar
1 teaspoon chopped fresh rosemary
1 teaspoon Dijon mustard
Cooking spray
1 (1-pound) pork tenderloin, cut into 12 slices
1/2 teaspoon salt
1/2 teaspoon freshly ground black pepper

Directions

1. Heat oil in a small saucepan over medium-high heat. Add shallots and garlic; sauté 2 minutes. Add vinegar and next 3 ingredients; cook until reduced to 1/2 cup.

2. Heat a large skillet over medium-high heat. Coat pan with cooking spray. Sprinkle pork with salt and pepper. Place pork in pan; cook 2 minutes on each side. Add balsamic reduction; cook 1 minute, turning pork to coat.

  • 2 sticks 1 c. butter, room temperature

  • Half-and-half as needed
Instructions
  1. Preheat the oven to 350-f degrees. In a large bowl, combine the flour, baking powder, baking soda, cinnamon, nutmeg, cloves, almonds, and pine nuts and mix very well.
  2. In another large bowl, combine the olive oil, sugar, butter, brown sugar, eggs, molasses, maple syrup, pineapple, and carrots and mix well. Add them to the dry mixture. Mix very well.
  3. Generously butter three 9-inch cake pans and dust with flour. Divide the cake batter evenly into the cake pans. Use a measuring cup for accuracy.
  4. Bake for 20 to 25 minutes.
  5. Insert a toothpick into the cakes to make sure the are done. The toothpick should come out clean. Cool in pans for 10 minutes. Remove and cool completely.
To make the frosting:
  1. With an electric mixer, mix the cream cheese, butter, and powdered sugar until fluffy, but stiff. Add half-and-half to thin.
  2. Use the frosting to fill and frost the cooked layers.

  • 1 chuck roast 3 pounds
  • Olive oil
  • 1 pound carrots peeled and cut into large chunks
  • 2 pounds potatoes peeled and cut into large chunks

  • 1 cup beef broth
  • 1 tablespoons corn starch
Seasoning Mix
  • 2 tablespoons steak seasoning

Instructions
  1. Combine together seasoning mix in a small bowl. Set aside.
  2. Coat both sides of meat with olive oil. Sprinkle on a third of the seasoning mix onto each side.
  3. Sear both sides of the meat in a large skillet over medium-high heat. Transfer roast to slow cooker.
  4. Place the vegetables in a large bowl. Drizzle on a little olive oil to coat vegetables. Sprinkle on the remaining seasoning mix. Add the vegetables to the same skillet that was used to sear the meat. Sauté for about five minutes – stirring occasionally.
  5. Transfer the vegetables to the top of the roast in the slow cooker. Pour in the beef broth. Cover with lid.
  6. Cook on low for 9 hours or on high for 6 hours.
  7. Using a turkey baster, retrieve most of the cooking juices from the slow cooker. Transfer juices to a small sauce pan and bring to a simmer over medium heat on the stovetop. Whisk together the cornstarch with a little water. Blend into the pan juices while whisking. Bring back to a simmer until thickened. Taste and adjust seasoning as needed.
  8. Transfer the roast and vegetables to a large platter. Ladle the gravy over. Serve immediately.

Ingredients
  • 4 cups broccoli florets or 4 cups Broccolini
  • 1/4 cup red onion minced
  • 2 tablespoons splenda artificial sweetener Granulated
  • 2 tablespoons cider vinegar
  • 2 tablespoons light mayonnaise
  • 2 tablespoons sunflower seeds roasted and salted
  • 3 tablespoons seedless raisins
Instructions
  1. Discard the broccoli stems and finely chop the florets or broccolini. Set aside.
  2. In a medium mixing bowl, whisk the Splenda, vinegar and mayonnaise toghether until it is an even, smooth consistency.
  3. Stir in the broccoli and the remaining ingredients. Toss until well coated.
