Leftover Turkey Chili – White Chili Recipe

I used this Leftover Turkey Chili recipe tonight for our leftover Thanksgiving turkey. It tastes great and is so easy to make.

This is a white chili, using leftover cooked turkey or chicken, with a nice spicy kick.

This turns out really good! I serve it with Cornbread. The family was surprised to see a “white” chili and were pleasantly surprised by the taste. They enjoyed the “kick” aspect.

This is strictly a white chili, no tomatoes, red beans, or chili powder of any kind.

Ingredients
  • 1 tablespoon vegetable oil
  • 1 onion chopped
  • 3 cloves garlic crushed
  • 1 4 ounce can diced jalapeno peppers
  • 1 4 ounce can chopped green chili peppers
  • 2 teaspoons ground cumin
  • 1 teaspoon dried oregano
  • 1 teaspoon ground cayenne pepper
  • 2 14 1/2 ounce cans chicken broth
  • 2 cups chopped cooked turkey breast or 2 cups cooked chicken breasts
  • 2 15 ounce cans white beans (cannellini, chickpea, great northern, etc)
  • 1 cup shredded Monterrey jack cheese
Instructions
  1. Heat the oil in a large saucepan over medium-low heat.
  2. Slowly cook and stir the onion until tender.
  3. Mix in the garlic, jalapeno, green chile peppers, cumin, oregano and cayenne.
  4. Continue to cook and stir the mixture until tender, about 3 minutes.
  5. Mix in the chicken broth, turkey or chicken and white beans.
  6. Simmer 15 minutes, stirring occasionally.
  7. Remove the mixture from heat; slowly stir in the cheese until melted.

  • 3 eggs
  • 1 1/4 cups vegetable oil

  5. For Frosting: Bring brown sugar, butter and milk to a boil. Boil only 2 1/2 minutes. Cool and spread on cake.

You really can do these Dinner Rolls in One Hour from beginning to end.  I use the food processor and hasten the rising by using rapid-rise yeast.

 

This yeast is so finely milled that it dissolves right in the flour mixture, and it can stand a higher temperature, giving the dough a boost for the single necessary rising.

The dough is very easy to work with. This dinner roll is definitely on my shortlist of something to make for holidays.

  • 2 1/2 cups all-purpose flour
  • 2 3/4 teaspoons fast rise yeast 1 package
  • 5 tablespoons instant nonfat dry milk powder
  • 2 tablespoons sugar
  • 1/2 teaspoon salt
  • 3/4 cup water very warm, about 130 degrees F
  • 2 tablespoons extra virgin olive oil
  • 3 tablespoons unsalted butter melted
Instructions
  1. In either a food processor or mixing bowl, mix the flour, yeast, milk, sugar, and salt.
  2. Add the water and oil and stir or process until a thick, sticky dough forms. Let stand for 5 minutes.
  3. Butter an 8-inch round cake pan.
  4. Place the dough on a lightly floured board. Gather the dough together gently. Using a floured knife or dough scraper, cut the dough into quarters. Cut each quarter into quarters, and shape each into balls, adding flour, if necessary, to prevent stickiness.
  5. Place the dough pieces close together in the prepared pan. Cover, and let rise in a warm place for 20 to 25 minutes or until the rolls are puffy.
  6. Meanwhile, preheat oven to 400 degrees F.
  7. Drizzle the melted butter over the rolls.
  8. Bake for 20 minutes or until golden.

The taste of this Old Fashioned Raisin Pie is simply delicious. It’s a very simple recipe, as well. This had to be the recipe my Mom used.

Ingredients
  • Double crust pastry for a 9 inch pie
  • 15 ounces raisins 1 pkg, 3 cups
  • 3/4 cup brown sugar
  • 2 tablespoons cornstarch
  • 2 tablespoons instant Tang orange drink Any type of Instant Orange Breakfast Drink will do
  • 1 1/4 cups water
  • 2 tablespoons lemon juice
  • 1 cup walnuts coarsely chopped
  • 2 tablespoons butter or 2 tablespoons margarine
Instructions
  1. Divide the pastry almost in half and roll out the larger half, on a lightly floured surface, to a 13-inch circle. Line a 9-inch pie plate with the pastry and trim the pastry 1/2 inch beyond the rim of the pie plate.

  2. Combine the raisins, brown sugar, corn starch, and drink mix in a 3-quart saucepan.

  3. Stir in the water and lemon juice. Cook over medium heat, stirring constantly until the mixture boils and thickens.

  4. Remove from the heat and stir in the walnuts.

  5. Turn the mixture into the pastry-lined pie plate and dot with the butter.

  6. Roll out the remaining pastry to an 11-inch circle. Place the top crust over filling and trim the edge to 1-inch beyond the rim.

  7. Fold the top crust under the bottom crust and form a ridge. Flute the edge and cut steam vents in the top crust.

  8. Bake in a preheated 400 degree F. oven for 30 minutes or until the crust is a golden brown and the filling is bubbly.

  9. Cool on a wire rack.

Vanilla Cranberry Sauce

Now THIS is worth writing home about. A great sauce and a definite keeper of a recipe! I love cranberries, so this was a no-brainer and in combination with the intense vanilla flavor, outstanding!

Finally a cranberry sauce people will eat! Enough of the citrus, no shallots for making compote… vanilla!

We loved this! The vanilla adds such a nice mellow flavor! Vanilla and cranberries are a perfect marriage.

Vanilla Cranberry Sauce

Ingredients

1 lb fresh cranberries
1 cup water
1 cup vanilla sugar
1 vanilla bean, old, dried out ones work well here

Directions

Put all ingredients in a medium saucepan & bring to a boil.

Simmer about 10 minutes, stirring occasionally. Pull out the vanilla bean, slice open & scrape the seeds into the sauce. Add the bean back to the sauce & continue simmering & stirring occasionally until cranberries have popped.

Cool & serve or refrigerate. Remove bean just before serving.

Grandma’s Cranberry Sauce – Best Ever

My Grandma’s Cranberry Sauce is the only cranberry sauce that I have found that I like. This is the original recipe with the exception of the sugar amount.

Grandma used 3 cups!

With more natural pectin (it’s in the apples), this jells faster than plain jellied cranberry sauce.

The apples also add sweetness, so it takes less sugar.

  2. Push cranberry/apple mixture through a fine sieve into a bowl to capture the skins of cranberries and apples.
  3. Add sugar to the bowl and then put it back to boil. Cook for 5 minutes. Pour into a bowl.
  4. Let Cool before putting saran wrap on and putting in the fridge.
