  • 1 lb boneless skinless chicken breast
  • 1 large onion sliced
  • 2 large bell peppers sliced
  • 2 tablespoons olive oil
  • 2 tablespoons lime juice
  • 2 garlic cloves minced
  • 3/4 cup salsa
  • 8 flour tortillas
Instructions
  1. Cut the chicken breast into strips.
  2. Mix onions, peppers, olive oil, lime juice, garlic, and salsa. Add chicken and marinate 2-12 hours.
  3. Broil or pan fry all together until chicken is done.
  4. Divide among tortillas.
  5. Top with extra salsa, shredded cheese, lettuce -- however you like.

Australian Sausage Rolls – Great Appetizer

Australian Sausage Rolls are an appetizer/snack that’s very popular in Australia. We are slightly obsessed with sausage rolls in my house.

 

Especially homemade ones, so these were a total treat!

I know you will be tempted to jazz these up with herbs or onion, well go right ahead! Sometimes simple is better, though.

FYI – I tried to make these with pie dough. Stick with the puff pastry, it is easy, quick, and tasty. It doesn’t get better than that!

Australian Sausage Rolls are really easy to make and are an outstanding appetizer.

  • 1 sheet puff pastry
  • 8 ounces bulk sausage
  • flour for dusting
  • milk for glazing
Instructions
  1. Preheat oven to 400 degrees F.
  2. Roll the pastry out into a thin rectangle; cut lengthwise into 2 long strips.
  3. Divide sausage into 2 portions, dust with flour, and form long rolls about the same length as the pastry.
  4. Place sausage in the middle of the pastry strips; brush pastry edges with milk, then seal the long edge.
  5. Brush the two pastries with milk, then slice into 1 to 2 inch rounds.
  6. Place rounds on a baking sheet and bake for 15 minutes at 400 degrees F; reduce heat to 350 degrees F and bake until puffed and golden, about an additional 10 to 15 minutes.

  • 2 tablespoons butter melted and cooled
  • 1/4 cup brown sugar packed
  • 1 teaspoon lemon juice

  • 6 medium apples peeled, cored and chopped into bite-size chunks
  • 1 14 ounce package refrigerated sugar cookie dough, broken into chunks

  1. Heat the oven to 375 degrees.
  2. Coat a 9-by-9-inch casserole or deep baking dish with cooking spray.
  3. In a large bowl, combine the butter, sugar, lemon juice, cinnamon, allspice, nutmeg, and salt. Add the apples and toss to coat. Transfer the apples, using a rubber spatula to scrape the sides of the bowl, to the casserole dish. Set aside.
  4. In a food processor, combine the cookie dough and oats. Pulse several times, or until the mixture resembles coarse, wet sand. Use your hands to sprinkle the mixture over the apples.
  5. Bake for 20 to 25 minutes, or until the topping is lightly browned and the apples are bubbly.
  6. Let cool slightly before serving.

  1. Butter the bread like you would to make a normal grilled cheese.
  2. Put a piece of cheese on the butter side down piece of bread. Put a generous amount of spaghetti sauce on the piece of cheese.
  3. Add whatever pizza toppings you like-remember, you have to flip this so too many toppings will make this difficult.
  4. Add another piece of cheese on top of the toppings.
  5. Butter the other piece of bread and put it butter side up on top.
  6. Cook until golden brown on each side. Enjoy!

  1. Place the cucumber, peppers, tomatoes and red onion in a large bowl.
  2. For the vinaigrette, whisk together the garlic, oregano, mustard, vinegar, salt and pepper in a small bowl. Still whisking, slowly add the olive oil to make an emulsion.
  3. Pour the vinaigrette over the vegetables. Add the feta and olives and toss lightly.
  4. Set aside for 30 minutes to allow the flavors to blend. Serve at room temperature.

Justin Wilson’s Fried Catfish batter is great on any fish. My favorite is catfish but tilapia is just as good. An absolutely wonderful recipe!

 

The batter gives a nice crispy crunch!

Sometimes I like to kick up the spices quite a bit. Old Bay is good!

Very good and very easy. After frying, I season with coarse salt, lemon, and parsley.

Nebraska Runza Copycat Recipe

If you’ve never had runza you have to try this Nebraska Runza Copycat Recipe!!! Of course, anyone from Nebraska should know this recipe.

 

If you don’t know what a Runza is, I suggest you either get on the next plane to Nebraska or make this recipe!

Comfort food at it’s best!

I just discovered them a few years ago and they are wonderful! Great comfort food.

This is the same recipe I use (lately I’ve been using Pillsbury hot roll mix for the bread).

One extra tip, to give it the nice crispy top. Beat an egg and brush it on top of each one before baking!

  • 1/2 head cabbage chopped
  • 1/2 medium onion chopped

  2. While dough thaws, make the filling.
  3. Brown the hamburger and drain, then return to pan. Add cabbage and onion and cook down. Salt and pepper to taste (1 tsp pepper recommended).
  4. Let dough rise, then punch down and roll a portion to 1/4" thickness. Cut into 4" x 8" pieces and add about 1/2 cup meat mixture to each.

  6. Let rise 20-30 minutes, then bake in a preheated 375-degree oven for 20 minutes or until brown.
  7. Call Nebraska natives not in attendance and gloat (taunting not advised).

This Quickie Pepperoni Pizza for One comes in so handy. Perfect for a quick lunch! Easy to make because it is made with ingredients I normally have on hand.

 

I like to add a few strips of red or yellow bell peppers for color and extra flavor!

When I make the sauce, I usually quadruple it and keep the leftover sauce in the refrigerator to be used in subsequent days.

You can use turkey pepperoni, part-skim mozzarella and no-salt-added tomato sauce if you want.
