Tyler Florence Oven-Roasted Corn on the Cob steams and cooks in it’s own husk without any pre-soaking or anything. Flavor is intensified right in the husk!

Tyler Florence said, “Once you try this, you’ll never have corn on the cob any other way.” We agree wholeheartedly!

After removal from the oven, just pull back the husk and use it for a handle. The silk comes off with the husk!

  • 1 32 oz can pork and beans
  • 1 cup ketchup
  • 1 tablespoon yellow mustard
  • 1/4 cup sweet pickle relish
  • 1/3 cup brown sugar or molasses
  • 1 beef bouillon cube dissolved in
  • 1 tablespoon hot water
  • 1 large yellow onion chopped
  • 1/4 cup green pepper chopped
  • fresh ground black pepper
  • Tabasco sauce
  • 3 slices bacon
Instructions
  1. Preheat oven to 325 degrees F.
  2. Spray casserole dish lightly with cooking oil.
  3. In mixing bowl, combine beans, 1/2 cup ketchup, mustard, bouillon, relish, onion, green pepper and brown sugar/molasses. Mix well.
  4. Add black pepper and Tabasco sauce to taste. Pour into casserole and top with remaining ketchup and bacon slices.
  5. Cover and bake for 50 minutes to 1 hour.
  6. Remove foil and increase oven to 350 degrees F. Bake an additional 30 minutes.

  4. Drop batter by 1/4 cupfuls into skillet. Cook for 2 minutes on each side or until golden brown.

New Potatoes, Green Beans & Ham

I serve New Potatoes, Green Beans & Ham as a side dish with fried chicken, but it would be a fantastic main dish as well. Great with Southern cornbread!

I cook this in a crockpot all day, but it can be cooked in a dutch oven on the stove, also.

I’ve also made this by mixing Lipton’s Garlic and Herb soup (1 packet) and 4 cups of water and it was wonderful. The soup really added richness to the broth.

This Oven Baked White Rice recipe makes perfect rice every time, simply because the temptation to stir isn’t there. Goes well with any main dish.

This foolproof rice is perfect with roasted chicken or broiled fish or whatever you’d like to serve it with. I love it with gravy!

I sometimes like to add a 1/2 cup of shredded carrots in addition to the onion to give it a flash of color.

For plain rice just leave out the onion. You can also use plain water instead of the stock!

This is one of the best Scalloped Potatoes recipe I have found. A recipe that’s so easy and absolutely delicious. The taste is a combo of crispy topping with a creamy, cheesy center.

This has become my standard recipe for scalloped potatoes. It’s so easy to prepare, goes together in minutes and can be cooking in the oven while getting the rest of the meal ready.

Scalloped Potatoes
Ingredients
  • 4 cups thinly sliced potatoes
  • 3 tablespoons butter
  • 3 tablespoons flour
  • 1 1/2 cups milk
  • 1 teaspoon salt
  • 1 dash cayenne pepper
  • 1 cup grated sharp cheddar cheese
  • 1/2 cup grated cheese to sprinkle on top
  • paprika
Instructions
  1. In a small sauce pan, melt butter and blend in flour. Let sit for a minute. Add all of cold milk, stirring with a whisk. Season with salt and cayenne.
  2. Cook sauce on low until smooth and boiling, stirring occasionally with a whisk. Reduce heat and stir in cheese.
  3. Place a half of the sliced potatoes in a lightly greased one quart casserole dish. Pour half of cheese sauce over potatoes. Repeat with second layer of potatoes and cheese sauce. Sprinkle the remaining cheese on top.
  4. Top with some paprika for color.
  5. Bake uncovered for about 1 hour at 350°F.

As fast as you can heat Green Beans from a Can you can have this special side ready to serve! It’s amazing what a difference two ingredients can make.

 

It’s a super quick and easy fix for canned beans. The thyme is the addition to change the flavor to be better. Good recipe.

Using the shredded Parmesan makes it even better.

Adding fresh diced garlic is a great idea too!

  • 1 bunch kale
  • 1 bunch greens collards, mustard, turnip
  • 1 large onion sliced

  • 2 garlic cloves minced
  • 2 jalapeno peppers minced (discard seeds for less heat)
  • 1/2 teaspoon crushed red pepper flakes
  • 1/4 cup cubed ham I used prepackage mini cubes
  • 3 slices bacon
  • 2 1/2 cups water more if needed
  • salt and pepper
  • balsamic vinegar optional
Instructions
  1. Tear greens into large pieces and discard the thick vein. Add greens to a pot of boiling salted water (I use kosher salt). Let boil for about 6 minutes. Drain and Rinse.
  2. While the greens are boiling, preheat a heavy skillet with olive oil, add onion and garlic; saute until onions are lightly brown, add minced jalapeno peppers and cook for an additional minute or two.
  3. Put the sauteed onions in the slow cooker then add the drained greens, ham, bacon, crushed red pepper, and water.
  4. Cook on high for 4 hours or until the greens are tender.
  5. Serve with balsamic vinegar.
