Tex-Mex Pork Chops – Delicious and Easy!

These Tex-Mex Pork Chops are excellent! My youngest daughter said they were the best chops she’s ever had.

This will be a regular at my table because it’s so easy.

Not only are they very easy to make but they are also very flavorful.

I usually like really spicy food and these were not so spicy, but still so tasty. (Can always throw some cayenne in there next time!)

Definitely a keeper, and I repeat; so easy to make.

Grilled Garlic Pork Tenderloin

People, this Grilled Garlic Pork Tenderloin is exceptional!! This is the best recipe I’ve ever tried for pork tenderloin. The flavor is so magnificent you MUST try this without changing a thing.

The fresh ginger really stands out in the dish. The marinating could be done for a shorter time, but I love the flavor it gets after sitting that long.

If you can’t grill it for some reason bake it for 40 minutes at 350 and broil it for 5 minutes longer to brown well. Excellent.

Wow oh wow oh wow!!!! Thai Grilled Chicken Thighs might be one of the top grilled chicken recipes of my life! It is very easy and very yummy!!

 

The kids love it too.

  5. Alternate skewering meat and veggies until all ingredients are used up.
  6. Place kabobs on grill, turning every two minutes to desired doneness.

FYI – the peppers and onions will remain crisp tender. If you leave the kabobs on until the veggies are soft, your meat will be way overdone! If you prefer softer grilled veggies, make separate kabobs for meat and veggies so the veggies can cook longer.

Also, if you want your beef medium rare, make separate kabobs for the beef and the chicken. Be creative!

  8. Thinly slice the steak across the grain.

Spicy Grilled Catfish Filets – Really Tasty

Mmmm, yummy, and Spicy Grilled Catfish Filets! I have a hard time getting my family to eat fish, but they loved this one!

 

This is a really tasty, economical, and different way to enjoy fish!

Lots of flavor from the marinade and easy cleanup! Winners in my book.

This is best marinated for at least an hour but no more than 2 hours. In a pinch, just let it marinate while the grill is heating.

I am sure this would work very well on any firm, mild fish.

When I made this I was a little crunched in the time department so I only got to marinate it for 1 hour and it was delicious. Plan ahead!

You can use a cast-iron skillet instead of your grill on a rainy day.

  2. Place fish in a zipper seal bag and pour liquid mixture over it. Seal and marinate in the refrigerate for about 1 to 2 hours.
  3. Oil grill grate or fish basket really well and preheat grill to medium high. Grill fish for 4 minutes on each side. Flip the fish only once and brush with reserved marinade when flipped.
Recipe Notes

NOTE: Fish is completely cooked when the color turns from translucent to opaque (white) or has reached a 150 degree F internal temperature. Resist the temptation to over-cook fish until it "flakes," which indicates the fish is becoming dry.

  1. Preheat oven to 300°F (150°C).
  2. Cut each full rack of ribs in half, so that you have 4 half racks. Sprinkle salt and pepper (more pepper than salt), and 1 tablespoon chili pepper over meat. Wrap each half rack in aluminum foil. Bake for 2 1/2 hours.
  3. Meanwhile, heat oil in a medium saucepan over medium heat.
  4. Cook and stir the onions in oil for 5 minutes. Stir in water, tomato paste, vinegar, brown sugar, honey, and Worcestershire sauce. Season with 2 teaspoons salt, 1/4 teaspoon black pepper, liquid smoke, whiskey, garlic powder, paprika, onion powder, dark molasses, and 1/2 tablespoon ground chili pepper.
  5. Bring mixture to a boil, then reduce heat. Simmer for 1 1/4 hours, uncovered, or until sauce thickens.
  6. Remove from heat, and set sauce aside.
  7. Preheat an outdoor grill for high heat.
  8. Remove the ribs from the oven, and let stand 10 minutes.
  9. Remove the racks from the foil, and place on the grill. Grill the ribs for 3 to 4 minutes on each side.
  10. Brush sauce on the ribs while they're grilling, just before you serve them (adding it too early will burn it).
