  • 16 chicken thighs skin on and bone in
  • Kosher salt and ground black pepper
  • 2 containers 6 ounces each plain yogurt, regular or reduced fat
  • 2 tablespoons fresh ginger grated or finely minced
  • 3 large cloves garlic minced
  • 4 teaspoons paprika
  • 2 teaspoons ground cumin
  • 2 teaspoons ground cinnamon
  • 2 teaspoons ground coriander
  • 1/2 teaspoon ground cloves

Instructions
  1. Whisk together the plain yogurt, grated ginger, garlic, paprika, cumin, cinnamon, coriander and cloves.
  2. Put the chicken thighs in a large dish and season them with the kosher salt and black pepper. Pour the yogurt mixture over them and turn to coat them evenly.
  3. Cover the dish with plastic wrap and refrigerate the chicken for at least 8 hours - overnight is best.
  4. Light a charcoal barbeque or heat a gas grill for medium heat. Arrange the grill for indirect heat and lightly oil the grate.
  5. Remove the thighs from the marinade and lightly wipe off the excess yogurt mixture with paper towels.
  6. Spray the skin side of the thighs with the cooking spray.
  7. Working in batches, place the thighs, skin side down, over the high heat area of the grill. Grill for approximately 3 minutes. Turn them over and cook on the other side for about 2 minutes.
  8. Move the thighs away from the direct heat, close the cover and grill the chicken for 35 to 40 minutes, or until they reach an internal temperature of 180F.

Good To Know – This recipe can also be oven baked with great success.

Line the thighs up on a sheet pan and bake at 400F for 35 to 45 minutes, or until the meat is no longer showing pink by the bones.

Food For Thought – You can grill this chicken without the skin – it’s best to remove it before marinating it.

The yogurt makes the chicken look rather unappetizing when you first remove it – make sure you wipe off as much of the yogurt as possible so that the chicken can be evenly coated with the cooking spray.

Instructions
  1. Season the chicken breasts with the kosher salt and black pepper. Put them in a resealable plastic bag and pour in the Hawaiian-style marinade. Seal the bag and refrigerate for at least 4 hours or overnight.
  2. Light a charcoal barbeque or heat a gas grill for medium-high heat. Lightly oil the grate.
  3. Shake any excess marinade off the chicken and grill them, turning once or twice until they are cooked through and no longer pink in the center.
  4. About 5 minutes before the chicken has finished cooking, put the pineapple rings on the grill. Cook them, turning once until they are heated through.
  5. Put the grilled pineapple on the chicken breast, then put 1 slice of the provolone cheese on each ring. Close the cover to the grill and let the cheese just slightly start to melt.
  6. Put the chicken with the pineapple and cheese on a toasted onion roll and add the lettuce and tomato. Spread the top of the buns with the 1000 island dressing and put it on top of the sandwich. You may need toothpicks to hold the top on.

Food For Thought – This type of sandwich is open to a lot of adaptations to suit your individual taste.

It is well suited to getting spiced up just a bit with pepper jack cheese in place of the provolone, chipotle mayo instead of the 1000 island and hot barbecue sauce, such as KC Masterpiece Hot’n Spicy replacing the Hawaiian-style marinade.

  3. Pour half of the pureed mango grilled chicken marinade into a baggie or covered container with the chicken breasts.
  4. Refrigerate them at least 4 hours or overnight. Reserve the remaining half of the puree for basting.
  5. Light a charcoal barbecue or gas grill. Shake off excess marinade from the chicken breasts and discard it.
  6. Grill the chicken breasts, turning them once, until they are cooked through - there should be no pink in the center of the breasts. Start basting the breasts with the remaining puree about 5 minutes before they are done.
  7. Remove the grilled chicken breasts to a warmed platter and serve warm.

Food For Thought – As with most grilled chicken breast recipes, any other part of the chicken would do just as well with this mango Riesling marinade – just remove the skin before marinating.

Pieces with bones, such as thighs and drumsticks, will take a little longer to grill but will be just as tender and flavorful.

Good To Know – The sauce will gain strength the longer is kept.

If you want to double the recipe to use for other dishes, consider cutting back on the garlic, so that the garlic flavor doesn’t become overwhelming.

Most Grilled Chicken Marinades will last a week if kept covered in the refrigerator.

For the Marinade:
  • 2 tablespoons peanut butter creamy or crunchy
  • 1 tablespoon brown sugar

  • 2 cloves garlic minced
  • 1/2 teaspoon cayenne pepper
Peanut Sauce:
  • 1 cup peanut butter creamy or crunchy
  • 1 cup unsweetened coconut milk
  • 1/2 cup chicken broth
  • 1/2 cup whipping cream
  • 1/4 cup fresh lime juice
  • 2 cloves garlic minced 2 teaspoons fresh gingerroot, finely minced
  • 1/4 cup soy sauce
  • 1/4 cup brown sugar
  • 1/4 teaspoon cayenne pepper
  • 3 green onions chopped - for garnish
Instructions
  1. Make the peanut sauce ahead of time so it has time for all the flavors to blend. The sauce needs to be cooked for a few minutes, and then cooled before it gets refrigerated.
  2. Whisk together the peanut butter and the coconut milk. When they are well combined, add the lime juice, minced garlic and minced ginger, and finally the soy sauce, brown sugar and cayenne pepper. Bring the ingredients to a simmer in a medium saucepan, stirring frequently for about 15 minutes, or until the sauce is thickened.
  3. Whisk in the chicken stock and whipping cream. Continue stirring until all the ingredients have blended, about 1 or 2 minutes. Set the sauce aside to cool and then refrigerate, covered, overnight.
  4. To make the marinade, combine the peanut butter with the soy sauce and fresh lime juice. When those ingredients are well blended, add the olive oil, minced garlic, cayenne pepper and salt.
  5. Combine the marinade with the chicken breasts in a large baggie or covered container and marinate for at least 4 hours.
  6. The chicken can also be marinated overnight - the fresh lime juice will act as a tenderizer, keeping the chicken moist. It will also lightly pickle the chicken, so don't be alarmed by a change in color.
  7. Light a charcoal barbecue or gas grill.
  8. Grill the marinated chicken breasts, turning once, until they are cooked through, to an internal temperature of 180F.
  9. Remove the chicken breasts to a warm platter and pour some of the peanut sauce over each one. Garnish with the chopped green onions.

Food For Thought – One of my favorite alternates to this recipe is a Thai noodle and chicken dish.

Just marinate and cook the chicken breasts as described above, and when they are cool enough to handle, cut them into bit sized pieces.

Toss cooked spaghetti or angel hair pasta with the peanut sauce and add the grilled chicken breasts.

Sprinkle the chopped green onions over the top.

This is great served at room temperature, so it is a natural for a buffet or picnic.

Good To Know – You can ramp the Thai flavors by adding 1 tablespoon of chili garlic paste in place of the cayenne in both the marinade and the peanut sauce, and substitute 1 teaspoon of sesame oil in place of the olive oil in the marinade.

Add a little minced ginger to the marinade and some chopped cilantro to both of the mixtures. Look for fresh purple or Thai basil for an authentic and pretty garnish.

  2. Melt the butter in a small saucepan, then add the remaining bottle of beer and the remaining seasoned salt, steak sauce and pepper. Simmer over a low flame until the mixture is reduced by half, then set it aside.
  3. Light a charcoal barbecue or a gas grill. Take the chicken breasts out of the marinade and discard the marinade. Grill the chicken breast, turning once, until they are cooked through and no longer pink inside. Baste them regularly with the beer and butter sauce.
  4. Remove the cooked chicken breasts to a warm platter. Swirl the thinly sliced green bell peppers in the remaining beer and butter sauce, then lay them on the hot grill for just a few moments - they should remain crunchy. Layer the lightly grilled bell peppers over the chicken breasts and serve warm.

Food For Thought – This is such a fun recipe to play around with. Try to stump guests by adding unusual spices to the marinade and basting sauce. You can spice it up with cayenne or Tabasco, or add ground cumin and chili powder. No one will guess that this isn’t a pricey item from your local gourmet shop.

  5. Refrigerate the relish in a covered container for about 1 hour - this will give the flavors time to blend.
  6. Light a charcoal barbecue or a gas grill. Cook the chicken breasts, turning once, until they are cooked through, about 8 minutes per side.
  7. Hint: If you would like the chicken to cook a little faster, pound them between two sheets of plastic before marinating them - they should cook in about half the time.
  8. When the chicken is finished, garnish each breast with a couple of tablespoons of the cucumber relish spooned over the top. Any extra can be served on the side.

  • 6 boneless skinless chicken breasts
  • Kosher salt and ground black pepper
  • 1/2 cup margarita mix
  • 1/4 cup fresh lime juice
  • 1/4 cup fresh orange juice
  • 1/4 cup tequila
  • 1/4 cup triple sec
  • 2 tablespoons honey
  • 1 tablespoon coarsely ground black pepper
  • 2 teaspoons granulated garlic
  • 2 teaspoons onion powder
  • 1/2 cup olive oil
  • 1/2 cup cilantro chopped
Instructions
  1. Season the chicken breasts with the kosher salt and black pepper.
  2. Combine the margarita mix, lime and orange juices, tequila, triple sec and honey in a blender.
  3. Add the cilantro, coarsely ground black pepper, garlic and onion powder. Process on high speed until the mixture is smooth, then reduce the speed and add the olive oil.
  4. Put the seasoned chicken breasts in a baking dish or container. Pour the blended mixture over the chicken, turning it once so that both sides are coated.
  5. Cover the dish and refrigerate for at least 6 hours - overnight is best.
  6. Light a charcoal barbeque or heat a gas grill for medium high heat. Lightly oil the grate.
  7. Shake any excess marinade off the chicken breasts and discard the marinade.
  8. Grill them for about 7 minutes per side. The internal temperature of the breasts should reach 180F.

A whole, cut up chicken, marinated and grilled truly has something for everybody.

You can also use a family pack size of almost any chicken part – thighs are especially juicy done this way.

Good To Know – It’s quite unorthodox, but 1 teaspoon of liquid smoke adds a rustic dimension to this recipe.

Combined with the caramelized honey on the edges of the chicken, the smoke imparts a flavor that is unusual with the citrus ingredients, but you just have to try it to taste the complex balancing act that the smoke can add to this exotic mix.
