Ingredients
  • 1 lb lean ground beef
  • 1/2 onion chopped
  • 1 celery chopped
  • 15 ounces canned tomatoes diced
  • 1/2 green pepper chopped
  • 1/2 cup uncooked rice
  • 1 teaspoon minced garlic
  • 1/2 teaspoon chili powder
  • 2 teaspoons salt
  • 1/4 teaspoon pepper
  • 1 1/2 teaspoons parsley
Instructions
  1. Lightly spray a 9x13-inch baking dish with a cooking spray (Pam, or similar); set aside. Preheat oven to 375º.
  2. Sauté the beef, onion and celery in a large skillet over medium heat until no pink remains in the beef and the onions are clear. Place the meat mixture in a colander to let the excess grease drain.
  3. Return the meat mixture to the skillet. Add the tomatoes, green pepper, rice, garlic and all remaining ingredients (spices/herbs) to the skillet. Stir well.
  4. Pour the meat/rice mixture into the prepared 9x13-inch baking dish. Cover the baking dish, and bake in a 375º oven for 30 minutes, or until the rice is cooked and soft.

Ingredients
  • 4 boneless skinless chicken breasts
  • 3 tablespoons all-purpose flour
  • 1 1/2 tablespoons extra virgin olive oil
  • 1/4 cup finely chopped green onion
  • 2 minced garlic cloves
  • 1/2 cup chicken broth
  • 1/4 cup dry white wine
  • 2 tablespoons fresh lemon juice
  • 2 tablespoons chopped fresh parsley plus more to garnish
  • 1 tablespoon grated lemon zest
  • salt
  • pepper
Instructions
  1. Pound chicken to 1/4 inch thickness. Season chicken with salt and pepper.
  2. Heat 1 teaspoon of the oil over high heat.
  3. Lightly coat chicken with flour shaking off excess. Cook in skillet until brown and nearly cooked through. Remove chicken and reserve on the side.
  4. Add 1/2 tsp oil to the skillet reducing heat to low. Saute green onions and garlic until tender. Deglaze the pan with broth and wine (scraping browned bits from pan).
  5. Add lemon juice and parsley. Bring mixture to a boil over high heat (3 min). Add lemon peel and salt and pepper to taste.
  6. Return chicken to skillet and coat with sauce. Cover skillet for 5 minutes over medium-low heat turning chicken once.
  7. Plate the chicken and top with sauce and parsley for garnish.

Balsamic Chicken Mushrooms Recipe
Ingredients
  • 2 teaspoons vegetable oil
  • 3 tablespoons balsamic vinegar
  • 2 teaspoons Dijon mustard
  • 1 clove garlic minced (or more!)
  • 4 4 ounce boneless skinless chicken breasts, pounded to 1/4 inch thickness
  • 2 cups small mushrooms halved,or quartered if using larger mushrooms
  • 1/3 cup chicken broth or 1⁄3 cup white wine
  • 1/4 teaspoon dried thyme leaves crumbled
Instructions
  1. In a nonstick skillet, heat 1 teaspoon of the oil.
  2. In a bowl, mix 2 tablespoons of the vinegar, the mustard and garlic. Add the chicken and coat both sides with the mixture.
  3. Transfer the chicken and mixture to the skillet; saute until cooked through, about 3 minutes per side.
  4. Transfer to a plate and keep warm.
  5. In the skillet, heat the remaining teaspoon of oil. Saute the mushrooms about a minute; add the broth/wine, thyme and remaining tablespoon of vinegar. Cook stirring until the mushrooms are deep brown, about 2 minutes longer.
  6. Serve the chicken, topped with the mushrooms.

Delicious Low-Carb Pizza
Ingredients
Crust
  • 4 ounces cream cheese softened
  • 4 eggs
  • 1/3 cup heavy cream
  • 1/4 cup grated Parmesan cheese
  • 1 teaspoon chives
  • 1/2 teaspoon Italian seasoning or 1⁄2 teaspoon pizza seasoning
  • 1/2 teaspoon wet garlic or 1⁄4 teaspoon garlic powder
  • 2 cups mozzarella cheese
Toppings
  • 1/2 cup pizza sauce the lowest carb you can find or 1⁄2 cup tomato sauce (the lowest carb you can find)
  • 1 cup mozzarella cheese
  • pizza toppings of choice
Instructions
  1. Preheat oven to 375 degrees F.
  2. Beat together the cream cheese and eggs until smooth. Add the cream, Parmesan, chives, Italian seasoning and garlic.
  3. Spray a 9X13 pan with cooking spray or oil.
  4. Place 2 cups mozzarella cheese in the bottom of the pan. Pour the egg mixture over the cheese. Bake for 30 minutes.
  5. Remove from the oven and spread sauce over the baked mixture. Add toppings of choice. Cover with the remaining mozzarella cheese.
  6. Bake until bubbly and brown.
  7. Let stand for 5 minutes.
  8. Slice and enjoy!

  • 1 6 ounce can tomato paste

  • 2 lbs ground beef
  • 2 eggs
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup diced onion
  • 1/2 cup red bell pepper diced (roasted or fresh)
  • 2 tablespoons chopped fresh parsley leaves
  • 2 garlic cloves minced
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon dried basil
  • 1 teaspoon kosher salt
  • 1/2 teaspoon ground black pepper
  • 1/4 lb prosciutto thinly sliced (optional)
  • 1/2 lb provolone cheese sliced
Instructions
  1. Preheat oven to 350°F.
  2. In a small bowl, combine the tomato sauce topping ingredients and set aside. Add water to the sauce to thin, as needed.
  3. In a large bowl, combine the beef, eggs, cheese, vegetables, herbs & seasonings.
  4. Place the meat mixture on a wax paper-lined jellyroll pan or counter. Form the meat into a 10x8-inch flat rectangle.
  5. Place the prosciutto slices on the meatloaf mixture. Place the provolone slices on top. Starting with the short side, roll the meatloaf up (may need to use the wax paper to help). Seal the ends and place, seam side down, into a loaf pan.
  6. Spread tomato sauce topping on the meatloaf, completely covering the top.
  7. Bake for 75 minutes (1 hour 15 minutes).
  8. Drain the fat and let rest 10 minutes before serving.

Cajun Shrimp is an extremely good recipe for shrimp lovers! Everything in the recipe is in perfect balance. Serve over toasted garlic bread slices with a tossed green salad with your favorite dressing!

Ingredients
  • 2 lbs large shrimp raw and unpeeled (See Note Below)
  • 2 tablespoons butter
  • 1/2 sweet onion diced
  • 1 tsp. dried basil
  • 1 tsp. dried oregano
  • 1 bay leaf
  • 1/2 teaspoon salt
  • 1/4 - 1/2 teaspoon ground red pepper
  • 1 garlic clove chopped
Instructions
  1. Melt the butter in a large cast iron skillet over medium-high heat; add the onion and the next 5 ingredients, and sauté 5 minutes or until onion is tender. Stir in garlic, and sauté 1 more minute.
  2. Stir in the shrimp, and cook, stirring occasionally, 6 minutes or just until shrimp turn pink. Remove and discard bay leaf.
Recipe Notes

2 lb. frozen peeled, large raw shrimp, thawed according to package directions, may be substituted.

This is without doubt my Mom's Country Fried Pork Chops With Cream Gravy recipe.

Ingredients
  • 6 pork chops
  • 1 cup flour
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 4 tablespoons oil
  • 2 cups milk
  • Kitchen Bouquet
Instructions
  1. Mix the flour, salt and pepper in a plate or shallow dish. Dredge the pork chops in the seasoned flour (reserve unused flour).
  2. Heat 4 tablespoons of oil in a large cast iron skillet. When hot, add the flour coated pork chops and brown on medium-high. Turn and brown on the other side. Add 1/4 cup water.
  3. Reduce the heat, cover the pan and simmer for 30 minutes or until pork chops are done. Remove the cover, increase the heat and recrisp the chops.
  4. Remove the chops to a paper towel lined plate.
  5. Stir up any flour "crispies" in the skillet to loosen. Add more oil if needed to make about 3 tablespoons.
  6. Add 3 to 4 tablespoons of the reserved seasoned flour to the hot oil, stirring constantly with a whisk until lightly browned.
  7. Add 2 cups of milk all at once and continue stirring until thickened and bubbly. If the gravy is too thick, add some water.
  8. Add a couple of drops of gravy coloring (Kitchen Bouqueif needed to give the gravy a rich color.
  9. Season with salt and pepper.
  10. Serve the pork chops with cream gravy.

That ingredient is buttermilk and that makes it quite different. Who would think to use buttermilk for a sauce? But it totally works!!

  • 4 pork chops
  • 1/8 teaspoon sea salt
  • 1/4 teaspoon cracked black pepper
  • 1 cup flour
  • 2 tablespoons onion powder
  • 1 tablespoon garlic powder
  • 1 teaspoon cayenne pepper
  • 2 teaspoons smoked paprika
  • 1/4 cup peanut oil
  • 1 medium onion diced
  • 2 cups chicken broth
  • 3/4 cup buttermilk
  • 3 teaspoons hot sauce
Instructions
  1. Pat the pork chops dry with a paper towel and season with salt and pepper.
  2. Combine the flour, onion powder, garlic powder, cayenne and paprika. Dredge the chops in the flour mixture on both sides until lightly coated.
  3. Heat a cast iron skillet over medium heat and coat with the peanut oil.
  4. When the oil is hot, slip in the chops and fry on each side, about five minutes per side, until golden brown. Remove the chops from the pan and set aside.
  5. Add the onions to the pan and saute until fragrant, about a minute. Add three tablespoons of the seasoned flour left over from dredging the chops to the skillet and stir with a wooden spoon until it makes a paste.
  6. Slowly whisk in the chicken broth, making sure there are no lumps. Turn up the heat and allow the chicken broth to reduce and thicken occasionally stirring.
  7. Once the sauce coats the back of your wooden spoon, pour in the buttermilk.
  8. Add the hot sauce and stir to combine.
  9. Return the chops to the skillet and simmer for 15 more minutes until the chops are cooked through.

Wiener Schnitzel Recipe – Grandma’s Secret!

Grandma kept her Wiener Schnitzel Recipe a closely guarded secret. But, it’s not that hard to figure out. Comfort food for all of us, German or otherwise.

 

A really easy and delicious way to prepare chicken or turkey breasts, or even the traditional veal. It’s also very, very good with pork medallions.

If the meat is pounded quite thin and the oil is quite hot then it browns quickly without overcooking the meat. The lemon gives it a lovely flavor.

  • cooking oil
Instructions
  1. Pound meat until it is less than 1/4 inch thick.

  2. Into a large skillet, pour oil approximately 1/4-inch deep; heat until oil bubbles when you drop in a pinch of breadcrumbs.

  3. Beat egg, add 1 teaspoon lemon juice.

  4. Add parsley to breadcrumbs.

  5. Dredge meat in egg, then breadcrumb mixture; fry until golden brown on each side.

  6. Sprinkle with remaining lemon juice.

Easy Slow Cooker Potato Corn Chowder
Ingredients
  • 1 16 ounce bag frozen hash brown potatoes, thawed
  • 1 15 1/4 ounce can whole kernel corn, undrained
  • 1 14 3/4 ounce can cream-style corn
  • 1 12 ounce can evaporated milk
  • 1 1/2 cups chicken broth
  • 1 medium onion chopped
  • 8 slices bacon cooked and crumbled
  • 1/2 teaspoon salt
  • 1/2 teaspoon Worcestershire sauce
  • 1/4 teaspoon pepper
Instructions
  1. Mix all ingredients together in the crock pot and cook for 6-8 hours on low.
Recipe Notes

Serving Suggestion: Top bowls of chowder with a little extra crumbled bacon and a little shredded cheese. Yum!
