Perfect Prime Rib – Trademark Christmas Eve Dinner

This is a perfect prime rib recipe and from now on will be my only prime rib recipe! The salt crust gives it a wonderful savory flavor and made everyone’s mouth waters while it was cooking. The perfect prime rib recipe!

Perfect Prime Rib

This is my “trademark” Christmas Eve Dinner.

It’s a super easy recipe, great for dinner parties, but DO NOT alter cooking times or directions. And DO NOT carve until just before serving.

Here NEEDS a clarification!!!

The salt is only intended to produce a shell to keep the moisture in. It’s not intended to be consumed unless of course you like extremely salty foods.

AFTER the roast has rested for 15 minutes. Lightly scrape the salt away but not so much that you remove all the seasonings.

Perfect Prime Rib
Ingredients
  • 1 prime rib roast size doesn't matter
  • 1/2 cup kosher salt
  • 1/4 cup rosemary
  • 1/4 cup horseradish powder
  • 1/4 cup garlic powder
  • 1/8 cup cracked black pepper
Instructions
  1. Combine seasonings, and rub into roast. Let sit while oven preheats to 375.
  2. Place roast in broiling pan, fat side up or bone side up. Bake for 45 minutes.
  3. Turn oven off, DO NOT OPEN OVEN.
  4. One hour before serving, turn oven back on 45 minutes. Take rib out, LET STAND FOR 15 MINUTES. This is VERY important, it allows the juices to distribute.
  5. Do not carve "ahead of time", either. Scrape off the salt "shell." The meat directly underneath that will be very salty, but that's usually the fatty part that no one eats, anyways. The rest of it will be fine, I PROMISE!
  6. Serve with au jus and horseradish sauce.

Company Steak with Bearnaise Butter
Ingredients
  • 3 tablespoons unsalted butter softened
  • 2 teaspoons finely chopped fresh tarragon leaves or 1 t dried
  • 2 teaspoons minced shallots or 1 t minced garlic and 1 t minced onion as a substitute for shallot
  • 1/2 teaspoon fresh lemon juice to taste
  • 1/8 teaspoon salt
  • 4 steaks of your choice (especially good on rib eye, sirloin, and even rich filet mignon)
Instructions
  1. Using a fork, combine softened butter, tarragon, shallot (or you can use minced garlic and a bit of minced onion to substitute if you don't have shallots on hand), lemon juice, and salt.
  2. Mix well.
  3. Using a sheet of wax paper, shape into a log, twist ends tightly and chill for about an hour, until firm.
  4. Season steaks with pepper and a bit of oil and grill or broil.
  5. Top hot steaks with a generous slice of butter and serve.
  6. Leftover butter can be stored in the fridge for about a week, tightly wrapped.

I admit I was skeptical. But I tried these with a butter pecan cake mix and pressed them down with a half pecan piece.

Ingredients
  • 1 18 ounce box cake mix (any flavor but angel food)
  • 2 eggs
  • 1/2 - 3/4 cup Crisco
Instructions
  1. Toss all the ingredients into a bowl, using enough Crisco to form a stiff dough. (I found it to take less time than pulling my mixer out, so I mix by hand).
  2. Form into little balls, place on a baking sheet 2 inches apart, gently flatten the balls, and bake at 350°F for 8-10 minutes, till puffy, and just barely golden around the edges. (They do spread a little while baking).
  3. Remove from the heat, cool 5 minutes before removing to a rack to cool. (Okay, I didn't use a rack the second time, they still turned out great!) They will shrink down a little in height and form a perfect cookie!

This recipe done as directed with yield cookies that will spread thin and have a crispy texture. For a soft, chewy cookie with only the edges crispy refrigerate the dough prior to scooping and baking.

Candied Almonds – A Delicious Treat

These Candied Almonds are deadly, can’t keep my hands off them!! Easy, pretty, and delicious. Glazed almonds are a lovely addition to Christmas baskets or for a hostess gift.

 

I’ve always bought candied almonds at the mall around Christmas time (who can resist that heavenly smell?!) But now I can have them year-round.

There goes my diet!!!

Candied almonds are delicious on their own as a sweet snack, but even better when you use them as an ingredient for other goodies!

You can dip glazed almonds in chocolate for a really good treat. Or chop them up and add them to your favorite chocolate fudge recipe.

You can also use them in almost any type of homemade candy bars. I love mixing them in with bar cookies!

Need something crunchy to top a salad, sundae, or waffle? Candied almonds to the rescue!

One hint that makes cleanup so much easier…use parchment paper to line the baking pan.

When you’re bringing the water, sugar, and cinnamon to a boil you can mix up the flavor for your almonds by also adding any of the following:

1 teaspoon vanilla or almond extract
1/4 teaspoon nutmeg or allspice
1/4 teaspoon ground ginger
1/4 teaspoon lemon or orange zest or juice.

Bisquick Coffee Cake With Sour Cream

This Bisquick Coffee Cake is one of my favorite recipes. I’ve been making it for years and everyone loves it. It used to be on the back of the Bisquick box but they replaced it a few years ago.

 

I love the simplicity of the recipe! Perfect for when I need a quick homemade breakfast cake to serve.

There’s never any leftover and it makes the house smell SO good. Best when served right away, but still good with a tall glass of milk later in the day.

Bisquick Coffee Cake
A delicious, quick to make coffee cake made with Bisquick and featuring sour cream. The Bisquick/brown sugar struesel topping is not essential but adds so much to the overall cake it would be a shame to leave it off!

Ingredients
Dough
  • 2 cups Bisquick
  • 2/3 cup water or 2⁄3 cup milk
  • 1 egg
  • 2 tablespoons sugar
  • 2 tablespoons melted butter
  • 2 tablespoons sour cream
  • 1 1/2 teaspoons vanilla
Topping
  • 2/3 cup Bisquick
  • 2/3 cup brown sugar
  • 2 tablespoons white sugar
  • 1/2 teaspoon ground cinnamon
  • 4 tablespoons butter
Instructions
  1. Preheat oven to 400 degrees.
  2. Grease a deep pie plate, 8"x8" square pan, or 9"x9" square pan.
  3. Mix dough ingredients and put in baking dish.
  4. Mix topping ingredients with a fork or pastry mixer until crumbly.
  5. Spread topping mix over dough and drag a butter knife across like you were making a tic-tac-toe board several times.
  6. Bake for 25 minutes.

Instructions
Cheese Sauce:
  1. In a small saucepan, melt butter and whisk in flour, then slowly add the milk and half & half cream.

  2. Season with mustard, salt, pepper, and Herbs de Provence.

  3. Cook the sauce on medium heat, stirring until smooth and boiling.

  4. Lower the heat and add the cheese, mix until melted, then remove from heat and set aside until required.

  5. Preheat the oven to 350 degrees.

Assembly:
  1. In a lightly greased dish, layer half the potato slices, then scatter the onion and peas on top.

  2. Next layer all the ham slices over the top of the potatoes.

  3. Pour half of the cheese sauce over the ham and potato mixture.

  4. Layer the remaining potatoes on top then pour the rest of the cheese sauce, garnished with the rest of the cheese and herbs.

  5. Bake in a preheated 350-degree oven, uncovered for 50 - 60 minutes, or until the potatoes are tender. I start checking after 40 minutes.

This slow cooker split pea & ham chowder is absolutely delicious. It makes me wonder how something so easy could be sooo good!

 

I had never had corn in split pea soup before, but it gives a nice flavor in addition to the other veggies. Good stuff!

A nice chowder for a cool day. Great spices along with the vegetables.

I’m sold on adding the corn! It adds a nice contrast of texture and taste.
