Melt in Your Mouth Chicken Breast

Ingredients

4 boneless chicken breast, halves
1 cup plain greek yogurt (calls for mayo but I always sub yogurt)…
1/2 cup parmesan cheese, freshly grated
1 1/2 tsp seasoning salt (I add a dash of pink himalayan)
1/2 tsp black pepper, ground
1 tsp garlic powder

Directions

Mix yogurt, cheese and seasonings.

Spread mixture over chicken breast and place in baking dish.

Bake at 375°F for 45 minutes. Serve with fresh steamed veggies.

Ingredients
Crust
  • 1 cup butter
  • 1 8 oz. pkg. cream cheese softened
  • 1 3/4 cups all-purpose flour
  • 1/4 cup finely chopped pecans
Filling
  • 1 21 oz. can cherry pie filling
  • 24 Pecan halves
Instructions
  1. Combine crust ingredients in a large bowl. Beat at medium-high speed until the mixture is creamy (1-2 minutes). Wrap dough in plastic wrap and refrigerate for 1 hour.
  2. Form 1-in. balls of dough and place in mini muffin tins. Using your fingers dusted with flour press dough into the bottom and sides of tins.
  3. Fill each mini pie with about 1 tbsp of the cherry pie filling.
  4. Bake uncovered for 18-20 minutes or until lightly browned.
  5. Cool completely before serving. Top each mini pie with a pecan half just before serving.

Crock Pot Pork Tenderloin – The Best

Crock Pot Pork Tenderloin is one of my favorite ways to cook tenderloin because it makes it pull apart so easily and melt in your mouth.

 

Crockpots have many functions, not only do they help cook for us while we are busy at work or running errands, but they also make the house smell so wonderful.

This amazing kitchen tool makes meats very juicy and tender from slow cooking all day.

Pork can easily overcook and dry out so I love this method for a foolproof way to get the juiciest meat every time.

This is my favorite way to cook pork tenderloin!

Ingredients
  • 2 pounds pork tenderloin I use two small tenderloins
  • 1/4 cup soy sauce
  • 1 1/2 Tbsp yellow mustard
  • 2 Tbsp of olive oil
  • 3 Tbsp of maple syrup
  • 1 shallot chopped
  • 1 tsp. onion powder
  • 1 1/2 tsp. garlic powder
Instructions
  1. Put crockpot on low. Add marinade ingredients together and mix. Place tenderloin in the crockpot and pour the marinade over the meat.
  2. Cook on low for about 5 hours. I turned the meat over a few times while it was cooking so it got more of the flavor from the marinade. But if you just leave it, that is great too.

 

The sauce that is left after cooking is great over the meat and over the rice if you serve rice.

I served mine with rice and asparagus.

Ingredients
  • 2 cups + 2 tablespoons all-purpose flour
  • dash cayenne
  • 1/4 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 teaspoons baking powder
  • 7 tablespoons butter cold
  • 2 scallions finely chopped
  • 3 oz. grated Parmesan cheese
  • 3/4 cup buttermilk
  • Kosher salt for topping optional
Instructions
  1. Preheat the oven to 425°F. In a large bowl whisk together the flour, cayenne, black pepper, baking powder, and salt. Set aside.
  2. Dice the butter into small pieces. If they get too warm then place them in a bowl and put it in the freezer for about 10 minutes before continuing.
  3. Toss the diced butter with the flour mixture until well coated. Add the scallions and cheese and toss until well coated.
  4. Add the buttermilk and mix with your hands until it just comes together. You may find you need an extra dribble of buttermilk, if so then go right ahead but do so judiciously. Do not over-knead.
  5. Roll the dough out onto a lightly floured surface. Knead once or twice; no more. Form into an 8x8-inch square and cut into 2x2-inch squares and top with a bit of high-quality salt if using.
  6. Bake for 12-16 minutes or until golden.

  3. Combine soy sauce, vinegar, ketchup, sugar, garlic, ginger, and pepper flakes in small bowl; pour over chicken.
  4. Cook on LOW for 3 to 4 hours. Add cashews and stir. Serve over rice.

 

Good To Know

If you want to have some extra sauce to pour over the chicken and the rice, double the sauce ingredients.

This is such an easy recipe. You don’t even have to roll out any dough or use biscuit cutters.  And y’all know I’m all about easy during those busy weeknights.

Ingredients
  • 1 stick (1/2 cup) unsalted butter
  • 2 1/2 cups all-purpose flour
  • 4 tsp. granulated sugar
  • 4 tsp. baking powder
  • 2 tsp. kosher salt
  • 1 3/4 cup buttermilk
Instructions
  1. Preheat oven to 450F degrees. Spray an 8-inch square baking dish with nonstick cooking spray. In a microwave-safe bowl (or you can use the baking dish that you'll be baking these in), melt stick of butter in the microwave.

  2. In a medium bowl, mix together the flour, sugar, baking powder, and salt. Pour in the buttermilk.
  3. Stir until a loose dough forms. The batter will be a bit sticky.
  4. Press biscuit dough into a baking dish (right on top of the melted butter).
  5. It is easiest to spread it out with your hands. You won't get it perfectly even, but hey, that's okay, these are homemade, remember? Some of the butter will run over the top of the dough, that's perfectly okay.
  6. Take a sharp knife and cut the biscuit dough into 9 squares before baking. Bake for about 20-25 minutes, rotating dish once during baking.

 

Good To Know:

If you notice that some of the butter that is coming up to the top is getting brown, just take a paper towel and dab around the edges a bit.

Oven times do vary since different ovens have different hot spots, but basically biscuits should be golden brown on top and spring back to the touch.

Sausage, eggs, hash browns – Sounds like a good breakfast right. Well it is. But this breakfast is all in the crock pot that is ready when you get up in the morning. With cheese!

Whether you’re hosting a brunch crowd or just feeding yourself in the a.m., breakfast has never been so easy. Set the slow-cooker overnight, and when you wake up, guess what? The work is done for you.

Breakfast In A Crock Pot

Ingredients:

1 bag 26 oz. frozen hash browns
12 eggs
1 cup milk
1 tablespoon ground mustard
1 16 oz. roll sausage
maple, sage or regular sausage.
Salt and pepper
16 oz. bag shredded cheddar cheese

Directions:

Spray crock pot and evenly spread hash browns at the bottom.

Crack 12 eggs in a large bowl.

Mix well (and slowly) using a whisk.

Add the milk.

Go ahead and sprinkle in the ground mustard. This might sound like a weird ingredient, but I’ve come to love (and use) this in most of my recipes.

Add plenty of salt….
…and lots of fresh pepper. Mix well and set aside.

Cook the sausage on high heat, drain and set aside.

Add sausage on top of hash browns.

Is this enough cheese? Maybe? Probably. Throw the whole big bag in there.

Mix it up well. Or good, depending on where you’re from.

Pour the egg mixture over everything in the crock pot. Using a wood spoon, even everything out so it’s spread evenly.

Turn the crock pot on low for 6-8 hours.

It’s true breakfast is the most important meal of the day. But if your house is like mine it’s pretty hectic in the mornings. This Crock Pot breakfast saves a lot of time.

Serve this Breakfast Pizza and you won’t have to worry about the kiddies refusing breakfast! Frozen pizza dough makes it really easy.

Ingredients
  • Frozen pizza dough
  • 2 -3 eggs depending on your taste
  • 1/4 cup milk
  • 6 ounces shredded yellow cheddar cheese
  • 6 ounces shredded mozzarella cheese
  • 3 ounces deli ham sliced into 2 inch strips
  • 3 ounces cooked bacon crumbled
  • 5 breakfast sausage links chunked
  • 1/4 minced onion optional
  • chopped chives for garnish
Instructions
  1. This recipe is a lot quicker if you precook your Bacon and Sausage the night before and store them in your refrigerator -- the prep time will be based on this.
  2. Preheat your oven to 400°F
  3. For the Pizza Dough, if you can find it frozen, uncooked, and preshaped it's a huge time saver. If not, just prepare it as you would normally on a large pizza pan (I make the crust about 1/4 thick). Excluding the 1 1/2 of the outer crust, make little indentations with your fingertips in the dough. This helps the egg settle and cook more evenly.
  4. Beat the eggs with the milk, and pour over the center of the crust. Use your fingers, or a pastry brush to evenly disperse the egg.
  5. Evenly cover the egg with the strips of ham.
  6. Scatter the sausages, and if you want to have them, add the onion. Salt and pepper it lightly.
  7. Add a blanket of the Mozzarella cheese, then the Cheddar.
  8. Sprinkle the crumbled bacon.
  9. Put the pie in the oven on the center rack and check it after 15 minutes. It's hard for me to give an approximate cooking time as I used a ride through oven for 7 minutes at 475°F at my work. If it looks done, then it is. The egg layer is thin enough to cook in 10 minutes or so, so it's really just about the crust and how you like it.
  10. Once you've deemed it to be done, take it out of your oven and garnish it with some chopped chives.

 

Slice, and enjoy! Breakfast Pizza is great on the go and is wonderful hot or cold.

  • 1/2 teaspoon Italian seasonings
  • 1/4 teaspoon garlic powder

Instructions
  1. Preheat oven to 350 degrees.
  2. Take each triangle of crescent roll dough and place about 6 pepperoni on the bottom of the triangle. Place half of a cheese stick on top and roll up. Place seam side down on a cookie sheet and bake for 10-14 minutes or until golden brown.
  3. While rolls are cooking, combine the melted butter, Italian seasonings, garlic powder and Parmesan cheese in a small bowl.
  4. When rolls are done remove from the oven and brush with the garlic butter glaze.
  5. Serve with marinara or ranch for dipping.
