Cinnamon Cream Cheese Crescent Rolls
Ingredients
  • 2 tubes 8 ounces each refrigerated crescent rolls
  • 2 packages 8 ounces each cream cheese, softened
  • 1-1/2 cups sugar divided
  • 1 teaspoon vanilla extract
  • 1/4 cup butter melted
  • 1 teaspoon ground cinnamon
Instructions
  1. Unroll one tube of dough and place in a lightly greased 13-in. x 9-in. baking pan.
  2. In a large bowl, beat the cream cheese, 1 cup of sugar and vanilla until smooth.
  3. Spread over dough.
  4. Unroll remaining tube of dough and place over cream cheese mixture, stretching to fit.
  5. Brush butter evenly over top; sprinkle with cinnamon and remaining sugar.
  6. Bake at 350° for 30 minutes or until golden brown.
  7. Cool; cut into squares.

Redneck Casserole – Really Quick and Easy

In spite of the name Redneck Casserole and the fact that there’s only four off the shelf grocery store items in this recipe… It’s delicious!!!

Baked beans, hot dogs, tater tots and cheese. It has to be good.

And quick. This is a perfect weeknight dinner. A very short prep time and about 30 minutes in the oven and dinner is ready.

It’s nice to have a dish that you don’t have to be a master chef to put together.

  • 1 28 ounce can baked beans
  • 6 -8 hot dogs
  • 4 cups tater tots
  • 1 cup sharp cheddar cheese shredded
Instructions
  1. Set your oven to 450.
  2. Dump your can of baked beans into a medium sized casserole dish. Set the dish aside.
  3. Cut up your hot dogs into bite sized pieces and throw those into your casserole dish and mix until dogs are well coated with baked bean sauce.
  4. Cover the bean and dog mixture with tater tots. Use as many as you'd like. Just make sure to cover the mixture completely.
  5. Place the casserole dish in the oven for 1/2 an hour or until tater tots are golden brown. When Redneck Casserole is all cooked up, turn off the oven and sprinkle the top with cheese.
  6. Redneck Casserole is completely done when cheese is melted and you just can't take it anymore -- dig in!

(You can mix pretty much anything with this dish. Sour cream, ketchup, mustard, hot sauce, etc. in this Redneck Casserole).

  • 2 lbs chicken tenders
  • 1 cup grated Parmesan cheese
  • 2 tablespoons dried parsley
  • 1 tablespoon dried oregano
  • 1 tablespoon paprika

  • 1/2 cup butter
Instructions
  1. Preheat oven to 350F and line a shallow pan with foil.

Layer 1
  • 1 1/2 sticks butter melted
  • 1 1/2 cups all-purpose flour
  • 1 cup chopped pecans or walnuts
Layer 2:
  • 8- oz. pkg. cream cheese softened
  • 1 cup powdered sugar
  • 1 cup Cool Whip non-dairy topping from 16-oz. container
Layer 3:
  • 2 3- oz. pkg. Jello instant chocolate pudding

  • remaining Cool Whip non-dairy topping
  • Diced nuts

Instructions
Layer 1
  1. Combine all ingredients and press into the bottom of a 9x13” greased pan. Bake at 300 degrees for 25 minutes. Cool completely!

  1. Blend all of the ingredients until smooth. Spread over cooled crust.

  1. Mix all ingredients together until thick. Spread over 2nd layer.

Oven fried catfish is a great alternative to pan-fried catfish. A combination of seasoned fish coating mix and a variety of spices gives this recipe a savory kick in less than 30 minutes.

Some of my friends have told me they like this “Fried Catfish” better than the traditional Southern pan-fried catfish!

I have a tendency to agree with them. This dish and this technique are hard to beat. The spices used in the breading are right on, and the fish turns out delicious.

Easy Low-Fat Oven Fried Catfish
Ingredients
  • 1 lb catfish fillet
  • 1 cup seasoned fish coating
  • 1/2 cup egg substitute
  • Emeril's Original Essence or other creole seasoning, blend
  • salt (optional)
  • black pepper or cayenne pepper (optional)
  • Lemon Wedge
Instructions
  1. Preheat oven to 450°F.
  2. Heavily spray a large non-stick baking pan with non-stick cooking spray.

  3. Pour egg substitute in large shallow bowl. Sprinkle with some Emeril's essence; also some salt and pepper, if you prefer.

  4. Place fish coating on a large plate. Add some Essence to this also, if you wish.

  5. Rinse fish fillets. Squeeze lemon wedges over fish. Sprinkle with Essence, salt and pepper on both side of fish.

  6. Dip in coating. Dip fish in egg substitute, then again in fish coating, and place on baking sheet.

  7. Bake at 450°F for approximately 10-15 minutes, until bottom of fish starts to brown.

  8. Turn fish, and bake about 5-8 minutes more, until fish is browned and crisp.

Jalapeno Cheddar Cornmeal Biscuits

Jalapeno cheddar cornmeal biscuits! I love a jalapeno-cheddar combo and the cornmeal and biscuits combo so these little guys just made sense to me.

 

So today here you go, a cheesy, crusty, fatty biscuit!

You can scale the cheddar and jalapeno up or down to your liking, but you get the taste of jalapenos in this recipe without the heat, so if you’re not a spicy type of person these biscuits should still be okay.

You can use these guys to build delicious breakfast sandwiches or use them to dunk into hot (or cold) soup or eat them the way I like them slightly warmed with a drizzle of honey.

Jalapeno Cheddar Cornmeal Biscuits
Ingredients
  • 1 1/4 cups all purpose flour
  • 3/4 cup yellow cornmeal
  • 2 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 2 tsps superfine sugar
  • 1 1/2 tsps salt
  • 1/2 tsp cracked black pepper
  • 1/2 cup cold unsalted butter cut into small cubes
  • 1 cup grated cheddar cheese
  • 1 large jalapeno seeded and diced
  • 3/4 cup buttermilk
  • 1/4 cup unsalted butter melted
Instructions
  1. Preheat oven to 400F.
  2. Place flour, cornmeal, baking powder, baking soda, sugar, salt, and pepper into a large mixing bowl and whisk together.

  3. Cut in butter with a pastry knife or using your fingers until a fine grainy texture forms.

  4. Fold in cheddar, jalapeno and buttermilk until a dough forms.

  5. Scoop 1/4 cup sized balls of dough and drop onto a parchment lined baking sheet, about 1 inch apart.

  6. Bake biscuits for 15 minutes. Remove from oven and brush tops with melted butter. Place back into oven and bake for an additional 5 to 10 minutes.

  7. Remove from oven and allow to cool slightly. Once cool enough to handle, serve.

Crock Pot Sesame Chicken
Ingredients
  • 1 1/2 pound boneless/skinless chicken breasts
  • 1/2 cup honey
  • 1/4 cup soy sauce
  • 2 tablespoons dried onion
  • 2 tablespoons ketchup
  • 1 tablespoon oil
  • 1/2 teaspoon garlic powder
  • 2 teaspoons cornstarch dissolved in 3 Tablespoons water
  • Sesame seeds
Instructions
  1. Put chicken into crock pot.
  2. Combine honey, soy sauce, onion, ketchup, oil, and garlic. Pour over chicken.
  3. Cook on low for 3-4 hours or on high 1 1/2 – 2 1/2 hours, or just until chicken is cooked through.
  4. Remove chicken from crock pot, leave sauce.
  5. Dissolve 2 teaspoons of cornstarch in 3 tablespoons of water and pour into crock pot. Stir to combine with sauce. Replace lid and cook sauce on high for ten more minutes or until slightly thickened.
  6. Cut chicken into bite size pieces and return to crock pot - can leave chicken in and simmer on low or serve.
  7. Sprinkle with sesame seeds and serve over rice.

EggLess Breakfast Bake – Breakfast With No Eggs

If you don’t eat eggs for whatever reason here’s an Eggless Breakfast Bake casserole that will still be enjoyed by people who do eat eggs.

 

It’s delicious.

An easy concoction with potatoes, peppers, onion, sausage, sour cream, and French onion dip. Full of flavors and really, really good.

It’s really easy to make too. Just saute the ingredients, layer in a casserole lasagna style, and bake for about 45 minutes.

Serve it up by cutting slices or spooning onto the plate.

Leftovers are delicious. I sometimes make this eggless breakfast bake on the weekend and eat the leftovers the following week!

Pork Loin Chops With Taters and Stuffing is a complete meal in one dish! Prep time is minimal. This is also a very economical dish.

 

Especially if you keep your eyes open for pork loin sales!

My grocery on a regular basis has whole pork loins on sale for less than $2 a pound. I always buy one and cut it into chops and vacuum seal for the freezer.

I usually get 12 or 13 chops per loin so one will last me a minimum of two months!

Pork loin chops are a staple at my house. I have them at least 3 times a month and sometimes as many as 5. Today’s pork is an excellent protein that’s low in fat.

  • 1/2 tsp soy sauce
  • 1/2 teaspoon each garlic powder, onion powder, and black pepper

  • 1/4 cup shredded cheddar cheese
Instructions
  1. Lightly spray a 9x13 casserole dish with cooking spray.

  2. Place the potatoes in a single layer over the bottom of the dish, top with the onions.

  3. Heat oil in a skillet, season the pork chops with some of the garlic powder, onion powder, and black pepper. Place the chops in the pan and cook to brown on both sides, 1-2 minutes per side. Remove the pork chops and place them across the top of the potatoes.

  4. Using the same skillet, make the stuffing according to directions (halving the recipe of course). Top each chop with some of the stuffing.

  5. In a bowl combine the soup, water and soy sauce. Pour over the entire dish.
  6. Cover with foil and bake for 50 minutes at 350 degrees. Remove the foil, sprinkle the cheese across the top, and return to the oven for 10 minutes.
