This is a really good pork chops casserole. Even with lean pork chops. The potato and soup add some texture and a little fat to the dish.

 

Pork chops were a special treat in my family when I was growing up. Mostly we had chicken on Sundays and during the week it was pinto beans, potatoes, and cornbread.

Well, I can afford pork chops now and they’ve bred all the fat out of today’s hogs! Darn. I can’t win for losing.

However, this casserole is really good and not hard at all. In fact, it’s fall down easy!

Crock Pot Pork Tenderloin – The Best

Crock Pot Pork Tenderloin is one of my favorite ways to cook tenderloin because it makes it pull apart so easily and melt in your mouth.

 

Crockpots have many functions, not only do they help cook for us while we are busy at work or running errands, but they also make the house smell so wonderful.

This amazing kitchen tool makes meats very juicy and tender from slow cooking all day.

Pork can easily overcook and dry out so I love this method for a foolproof way to get the juiciest meat every time.

This is my favorite way to cook pork tenderloin!

Ingredients
  • 2 pounds pork tenderloin I use two small tenderloins
  • 1/4 cup soy sauce
  • 1 1/2 Tbsp yellow mustard
  • 2 Tbsp of olive oil
  • 3 Tbsp of maple syrup
  • 1 shallot chopped
  • 1 tsp. onion powder
  • 1 1/2 tsp. garlic powder
Instructions
  1. Put crockpot on low. Add marinade ingredients together and mix. Place tenderloin in the crockpot and pour the marinade over the meat.
  2. Cook on low for about 5 hours. I turned the meat over a few times while it was cooking so it got more of the flavor from the marinade. But if you just leave it, that is great too.

 

The sauce that is left after cooking is great over the meat and over the rice if you serve rice.

I served mine with rice and asparagus.

These are Really Easy Oven Baked Sausage Balls. Just a pound of breakfast sausage and some Bisquick along with some seasonings and you have party fare.

 

Very easy to make and delicious!

Good Sunday Football fare!

People LOVE these. I think they are fine but everyone gobbles them up and raves so all I can do is continue making them.

I love that they can be made a day ahead – reheated. Great hot, warm, room temp, cold – doesn’t matter so they are very versatile.

Really Easy Oven Baked Sausage Balls
Ingredients
  • 1 lb. breakfast sausage not the hot this time.
  • 2 cup Bisquick baking mix
  • 1 8 oz. package extra sharp cheddar cheese shredded
  • 1/4 cup finely diced onion
  • 1/4 cup finely diced celery
  • 1/2 tsp. garlic powder
Instructions
  1. Combine all the above ingredients very well by hand until it has all come together. Roll into 1" balls and place on a lightly greased cookie sheet. Bake at 350 degrees for 12-15 minutes.
  2. Serve with a side of mustard.

 

Here’s a recipe for green chile dip that I like to serve with these sausage balls.

Easy Green Chile Dip

Ingredients

1 8-ounce container sour cream
1/2 cup Stubb’s Green Chile Marinade
A pinch each of salt and pepper

Directions

Mix together the dip by combining the sour cream and marinade in a medium bowl, stirring to combine.

Season to taste with salt and pepper.

  • ½ cup brown sugar
  • ½ cup unsweetened apple juice

  1. Light a charcoal barbeque or heat a gas grill. Lightly oil the grate.
  2. Combine the brown sugar, apple juice, soy sauce, olive oil and ground ginger in a small saucepan and bring it to a boil. Make a paste of the cornstarch and water and whisk it into the mixture. Stir until the sauce is thickened. Remove it from the heat and let it cool.
  3. Season the chops with the kosher salt and black pepper. Grill the chops 10 to 12 minutes per side, depending on their thickness. Just before you remove the chops from the grill, brush them with some of the sauce. Serve the remaining sauce on the side.

Good To Know – This is another one of those flexible recipes that can be amended to suit your needs.

No grill? No problem. Preheat the oven broiler and line the broiler pan with aluminum foil. Season the pork chops with kosher salt and ground black pepper and spoon some of the sauce over the top of each.

Broil the chops, as far from the heat source as possible, for about 7 minutes per side. Turn them over, spoon more sauce and continue to broil until they are done to your liking. The sauce will develop a lovely burnt-sugar topping, turning the sweet to savory.

Food For Thought – Try making a few amendments to the sauce once you have the technique down.

Other fruit juices, such as pineapple, orange or mango will blend well with the brown sugar. Although apples are a classic pairing with pork, a puree of mango, pineapple or orange will easily take the place of apple juice. Even apple cider will provide an extra bit of zip.

Whatever you end up with as your favorite, make extra to use with chicken, ribs and ham.

  • 6 center-cut pork chops at least 3/4-inch thick
  • 1/3 cup soy sauce
  • ¼ cup rice wine vinegar
  • Kosher salt and ground black pepper
Salsa
  • ½ cup pineapple chopped
  • 1 large clove garlic minced
  • ½ cup golden brown sugar
  • 1 mango peeled, seeded and chopped
  • ¼ cup rice wine vinegar
  • 1 medium jalapeno pepper seeded and minced
  • 1 ½ cups unsweetened applesauce
  • 1 teaspoon chili powder
  • 1 teaspoon cardamom seeds ground
  • ½ teaspoon coriander seeds ground
  • 1 tablespoon olive oil
  • ½ teaspoon kosher salt
  • ¼ teaspoon ground white pepper
  • 1 tablespoon lemon juice
Instructions
  1. Combine the garlic, chili powder, cardamom seeds and coriander seeds in a food processor or blender and grind to a paste.
  2. Heat the olive oil in a medium saucepan over medium heat. Stir in the ground paste and let it cook for less than a minute. Whisk in the vinegar and simmer the mixture for 2 minutes.
  3. Stir in the brown sugar, mango, salt, lemon juice and jalapeno. Let the mixture simmer over low heat for 20 minutes.
  4. Whisk in the applesauce and the chopped pineapple. Let the sauce simmer another 10 minutes. Season the mixture with kosher salt and a little ground white pepper is desired. Let the mixture cool.
  5. To marinate the pork chops, mix 2/3 cup of the sauce with the soy sauce and rice wine vinegar. Put the pork chops into a resealable plastic bag and pour the marinade over them, covering them equally. Seal the bag and refrigerate them for an hour.
  6. Light a charcoal barbecue or heat a gas grill for medium high heat. Lightly oil the grate.
  7. Remove the chops from the marinade and shake them to eliminate any excess. Drain the marinade from the plastic bag into a small saucepan and bring it to a boil.
  8. Grill the pork chops, basting frequently with the boiled marinade, about 10 minutes per side, or until they have reached your preferred doneness. Turn the chops once and baste the other side.
  9. Heat the reserved salsa in a small saucepan and pour over the cooked pork chops.

The sauce on these Tropical Grilled Pork Chops would also work with other meats. Try chicken!

Italian Sausage Pie – Very Easy Plus Delicious!

I made this Italian Sausage Pie last night for dinner because I had the sausage and the pie crust that I didn’t have any plans for. I’m soooo glad I did.

 

This was AH-MAZING! So good!

It’s a cheesy blend of eggs, sausage, and other staple ingredients that’s great for either dinner or breakfast!

I frequently make frittatas which is just a crustless egg pie. But this was my first time using a crust. Adding the crunch of the crust makes a big difference in the texture of the dish.

I’ll be making more pies with different ingredients in the near future.

  • 1 pound Bulk Italian Sausage
  • 3 teaspoons Minced Garlic
  • 1 diced bell pepper
  • 1 small onion diced
  • 2 1/2 cups Shredded Monterey Jack Cheese Divided

  • 3 whole Eggs
  • 3/4 cups self rising flour
  • 1/4 teaspoons black Pepper
  • 1 9 inch deep dish pie crust
Instructions
  1. In a large skillet, cook the sausage over medium heat until meat is no longer pink. Add garlic, bell pepper and onion; cook a few minutes longer. Drain. Stir in 2 cups of the cheese. Transfer to a 9-inch deep-dish pie crust.
  2. In a small bowl, combine the milk, eggs, flour and black pepper. Pour over sausage mixture.
  3. Bake at 400°F for 20-25 minutes or until a knife inserted near the center comes out clean.
  4. Sprinkle with remaining cheese; bake 1-2 minutes longer or until cheese is melted.
  5. Let stand for 10 minutes before cutting.

Tips and Tidbits About Italian Sausage Pie

One big tip, LET IT REST when it’s done, it will firm up! I would say at least 15 min. to 1/2 hour.

Also, this would be even better (if possible) with a side of spaghetti or pizza sauce.

You can make this frittata style in a deep-dish pie plate. Just up the eggs to 8.

Crock Pot Pork BBQ Baby Back Ribs

Perfect for those times you want to impress guests but conditions are not right for a backyard BBQ!

Ingredients
  • 2.5 to 3 lb. pork back ribs
  • 3 T. my all purpose seasoning recipe below
  • your favorite BBQ sauce
All Purpose Seasoning:
  • 2 T. smoked paprika
  • 1 T. brown sugar
  • 1 T. salt
  • 1 T. adobo found in the spanish section of the grocery store
  • 1 tsp. black pepper
Instructions
  1. Mix the seasoning ingredients together and store in an airtight container.

For the ribs:
  1. Cut the ribs in half and rub them all over with the all purpose seasoning. Place them in a Ziploc bag and put in the fridge overnight.
  2. When ready to cook, place the ribs on their sides in the crock pot with the meaty side facing the outer part of the crock pot (I used a 4 quart crock pot for mine). Pour in any juice left in the Ziploc bag.
  3. Pour 3/4 C. of BBQ sauce over the top of the ribs. Cover and cook on low for 6 hours, spooning the sauce over the ribs every so often as they cook.
  4. When you are ready to serve them, cover a baking sheet with tinfoil, turn the broiler on high and carefully remove the ribs to the baking sheet. Brush with a little more BBQ sauce and pop under the broiler to 2-3 minutes to add more color to the ribs.
  5. This is really optional, I do not always do it unless we have company coming for supper.

The obvious solution is to make them yourself. Its a very easy process that produces excellent, highly portable results.

To start, you need to spend about 30 minutes of your time making a batch of burritos. Then just prepare them for freezing and freeze ’em up.

When you are ready to eat the burritos. Pull one out of the freezer the night before, or just put it into the microwave frozen in the morning. Heat until it reaches the desired temperature.

It is super easy to transport to work or school and it has some great health benefits. Benefit number one is just making sure you have breakfast!

  • 12 eggs
  • 1 tbsp extra virgin olive oil
  • 1 lb turkey sausage removed from casings, cooked and drained
  • 1/2 cup each diced green pepper red pepper, onion
  • 2 cups frozen hash brown potatoes
  • 1 tbsp taco seasoning mix
  • 1 heaping tbsp green chilis
  • 1/2 cup chunky salsa
  • 2 cups shredded old Cheddar cheese
  • 24 flour tortillas
Instructions
  1. Saute the peppers, and onion over medium high heat in the olive oil until beginning to soften. Add the hash browns, taco seasoning, green chilis  and continue to saute until golden and cooked through.
  2. Add to the cooked sausage, add the salsa and mix everything together well.
  3. Whisk the eggs together and begin to scramble in a non stick pan treated with cooking spray or oil over medium high heat.. When the eggs are still somewhat soft, add the sausage mixture and continue to scramble together. Remove from heat when eggs appear to be almost done.

  4. Place 1/2 cup of the egg mixture onto each burrito and top with cheese.
  5. Roll up each tortilla to make burritos, folding in the ends and rolling up. Place on parchment paper lined cookie sheets and freeze until solid. Then wrap individually and package in zip-lock freezer bags.
