Easy Lasagna Rolls – Microwave Dinner

I’m not one to cook meals in the microwave, but these Easy Lasagna Rolls may have changed my mind. These are very good, and they cook up so fast.

 

Great recipe for hot summer days!

Even though this is a microwave recipe it can be done in the oven. Just pop in the oven and bake at 350 for 20 minutes.

These Easy Lasagna Rolls make a great Italian weeknight dinner.

Ingredients
  • 12 lasagna noodles cooked, drained
  • 2 cups cottage cheese or ricotta cheese
  • 1 1/2 cups mozzarella cheese shredded
  • 1/2 cup Parmesan cheese
  • 2 eggs
  • 2 tablespoons parsley chopped
  • 1 32 oz jar spaghetti sauce
  • 1 -2 cup mozzarella cheese shredded, for topping
Instructions
  1. Mix the cottage cheese, 1-1/2 cup mozzarella and Parmesan cheese with eggs and parsley.
  2. Place one lasagna noodle on the work surface. Spread 1/3 cup cheese mixture on the noodle evenly. Roll up tightly like a pinwheel. Place seam side down in a microwave-safe baking pan, that has 2 cups of spaghetti sauce in the bottom.
  3. Continue with the remaining ingredients.
  4. Cover the rolls with the remaining sauce and sprinkle with additional mozzarella cheese.
  5. Cover with microwave-safe wrap and microwave on high 10-20 minutes, until the cheese is melted.

Ingredients
  • 1 lb ground beef or use half ground beef and ground pork
  • 5 -6 large garlic cloves chopped (not minced the more garlic, the better!)
  • 1/4 teaspoon ginger powder or 1 teaspoon minced fresh ginger
  • 2 tablespoons oil not olive oil
  • 1 red bell pepper cut into about 1/2-inch pieces
  • 1 1/4 cups small broccoli florets
  • 3 cups cold cooked white rice
  • 3 -4 tablespoons soy sauce
  • 2 teaspoons dark sesame oil
  • 4 green onions chopped
  • salt and pepper optional
Instructions
  1. In a wok or a large skillet brown the ground beef with garlic and ginger over medium heat (about 10 minutes) breaking up into small pieces; drain the fat, then transfer to a bowl.
  2. Heat 2 tablespoons oil in the same skillet over medium-high heat until hot.
  3. Add in bell pepper and pea pods; cook for 3 minutes or until bell pepper is crisp-tender, stirring occasionally.
  4. Stir in the cold cooked rice, soy sauce, and sesame oil.
  5. Return the cooked ground beef back to the skillet; toss to combine and heat through, then stir in the chopped green onions.
  6. Season with salt and pepper and more soy sauce if desired.

Ingredients
Bread Ingredients
  • 1 cup unbleached flour
  • 1/2 teaspoon salt
  • 1 teaspoon powdered milk
  • 1 teaspoon baking powder
  • 1/2 cup water
  • vegetable oil for frying
Taco Ingredients
  • 1 lb ground beef
  • 1 cup diced onion
  • salt and pepper
  • 1 head lettuce shredded
  • 3 to matoes diced
  • 2 cups cheddar cheese shredded
  • 1 3 oz can diced green chilies, drained
  • sour cream optional
Instructions
Make the bread:
  1. Sift together the flour, salt, powdered milk, and baking powder into a large bowl. Pour the water over the flour mixture all at once and stir the dough with a fork until it starts to form one big clump.
  2. Flour your hands. Using your hands, begin to mix the dough, trying to get all the flour into the mixture to form a ball.
  3. NOTE: You want to mix this well, but you do NOT want to knead it. Kneading it will make for a heavy Fry Bread when cooked. The inside of the dough ball should still be sticky after it is formed, while the outside will be well floured.
  4. Cut the dough into four (4) pieces. Using your floured hands, shape, stretch, pat, and form a disk of about 5 to 7 inches in diameter.
  5. Use a large dutch oven and heat about 1 inch of vegetable oil to 350°F (If you don't have a thermometer you can tell if the oil is ready for each batch when a un-popped popcorn kernel is dropped in and pops immediately!).
  6. Take the formed dough and gently place it into the oil, being careful not to splatter the hot oil. Press down on the dough as it fries so the top is submersed into the hot oil. Fry until brown, and then flip to fry the other side. Each side will take about 3 to 4 minutes.
  7. The bread can be kept warm in a 200°F oven for up to 1 hour. They refrigerate well and can be reheated in a 350°F oven for 10 to 15 minutes before serving.
Make the Tacos:
  1. In a large frying pan over medium-high heat, brown ground meat and onions until cooked; add salt and pepper to taste. Remove from heat.
  2. Place Fry Bread, cupped side up, on separate plates. Layer ground meat, lettuce, tomatoes, Cheddar cheese, and green chiles onto top of each Fry Bread. Top with sour cream, if desired.

This Italian Pepper and Sausage Dinner is a restaurant quality meal that's easy to make at home.

Ingredients
  • 2 tablespoons extra virgin olive oil
  • 1 lb Italian sausage sweet and taken out of the casing
  • 1 red bell pepper sliced thinly
  • 1 yellow bell pepper sliced thinly
  • 1 large yellow onion sliced
  • 3 garlic cloves finely minced
  • 2 1/2 cups stewed tomatoes
  • 2 tablespoons fresh basil chopped
  • salt
  • fresh ground pepper
  • 2 tablespoons Romano cheese
  • grated Parmigiana-Reggiano cheese
  • top with a few fresh basil leaf
  • 1 lb rotini noodles cooked al dente
Instructions
  1. In a large skillet brown the sausage until it is cooked through. Drain the fat and drain the sausage on paper towels.
  2. In the same pan heat the olive oil and add and sauté the peppers, and onions, until the onion is translucent and then add the garlic and sauté gently but do not brown. The vegetables should be tender.
  3. Stir in the tomatoes, spices, Romano cheese and sausage. Cover the pan and simmer all over medium-low heat for 8-10 minutes. If your mixture seems too thick you can add a little water or red wine.
  4. While the meat mixture is cooking, the pasta can be prepared as per directions. You do not want to overcook the pasta. You want a little firmness to the noodles.
  5. When you are ready to serve use a large platter. The noodles first, then spoon the meat mixture over.
  6. Mix slightly. Sprinkle with the Parmigiano-Reggiano and place fresh basil leaves atop.
  7. This goes well with a green salad with Italian oil and vinegar dressing, and most of all a good hard-crusted peasant bread.

  • 8 ounces egg noodles
  • 1 lb ground beef
  • 1 15 oz can tomato sauce
  • 1 8 oz package cream cheese

  • 2 tablespoons chopped green peppers
  • 2 tablespoons melted butter
Instructions
  1. Cook the noodles; drain and set aside.
  2. Brown the meat; drain. Add the tomato sauce to the beef; remove from heat.
  3. In a separate bowl, mix the cream cheese, cottage cheese, sour cream, onions, and peppers.
  4. Butter a casserole dish and spread 1/2 the noodles in the bottom.
  5. Cover the noodles with 1/2 of the cheese mixture, then 1/2 of the meat mixture, then 1 more layer of noodles, then cheese mixture and then meat mixture.
  6. Pour 2 tablespoons of butter over the top; press down slightly.
  7. Bake at 375° for 1 hour to 1 hour 15 minutes.
  8. If drier casserole is desired, cook 15 minutes longer.

  • 1 1 1/4 ounce envelope dried Italian salad dressing mix

  • 1 4 ounce can mushroom stems and pieces, drained

  1. Place the chicken breast halves in the crockpot.

  2. Combine the Italian dressing mix and water until smooth; pour over top of the chicken.
  3. Cover and cook on low for 3 hours.
  4. Combine the cream cheese and soup until smooth and blended. Stir in the mushroom pieces.
  5. Pour the soup mixture over the chicken. Cook 1 hour more or until the chicken is cooked through.

I have been making Chicken Breasts Diane for years and it’s one of the most requested recipes I have! The parsley and chives add great flavor and wonderful color.

Ingredients
  • 4 large boneless skinless chicken breast halves
  • 1/2 teaspoon salt
  • 1/2 teaspoon fresh coarse ground black pepper
  • 2 tablespoons olive oil
  • 2 tablespoons butter
  • 3 tablespoons chopped chives
  • 1/2 lime juice of
  • 2 tablespoons brandy
  • 3 tablespoons chopped fresh parsley
  • 2 teaspoons Dijon mustard
  • 1/4 cup chicken broth
Instructions
  1. Place the chicken breast halves between wax paper and pound slightly with mallet. Sprinkle with salt and pepper.
  2. Heat 1 Tbsp each oil and butter in large skillet. Cook the chicken over high heat 4 minutes each side.
  3. Do not cook longer or they will be dry. Transfer to a warm serving platter.
  4. Add the chives, lime, brandy, parsley, and mustard to the pan, whisking constantly for 15 seconds. Whisk in the broth. Stir until sauce is smooth. Whisk in the remaining butter and oil.
  5. Pour the sauce over the chicken and serve immediately.

  • 1/4 cup butter melted
  • 1 -2 teaspoon Season-All salt I use McCormick's

  1. Preheat oven to 400°F. Spray a shallow baking dish with non-stick cooking spray.

  2. Rinse the chicken breasts under cool running water. Pat chicken dry with paper towels. Place the chicken in dish.

  3. Brush the melted butter over the chicken, using all the butter. Sprinkle with seasoned salt.

  4. Bake for 50-60 minutes or until cooked through.

  5. Chicken takes only 50 minutes in my oven. Don't over cook, as they might turn out tough.

So quick and easy! This Linguine With Garlic Shrimp & Tomatoes is fresh, tasty and with a pleasant bite, it makes a marvelous weeknight supper when you want something that’s little bit special, but you don’t really feel like hours of cooking!

I like to have it with an Almond Orange salad.

Linguine With Garlic Shrimp & Tomatoes
Ingredients
  • 6 ounces linguine
  • 2 tablespoons unsalted butter
  • 1 lb large shrimp peeled and deveined
  • 1/2 teaspoon salt
  • 6 garlic cloves minced
  • 1/8 teaspoon crushed red pepper flakes
  • 4 plum tomatoes chopped
  • 3 tablespoons parsley chopped
  • 1 tablespoon lemon juice
Instructions
  1. Cook the linguine as per directions, drain.
  2. Meanwhile, melt 2 tsp butter in large skillet over med-high heat. Sprinkle the shrimp with 1/4 tsp of salt and add to skillet.
  3. Cook until pink and opaque, 1 1/2 -2 min each side. Transfer to a plate.
  4. Melt the remaining butter in the same skillet over med-high heat. Add the garlic and crushed red pepper, soak stirring until fragrant about 30 seconds. Add the tomatoes and remaining salt, cook striirring occasionally, until the tomatoes just begin to wilt, 1-2 minutes.
  5. Add the shrinp and cook until heated through, about 1 min longer. Add the cooked linguini, parsley, and lemon juice, cook, tossing until combined.
