Tarragon Chicken Casserole

This is a great-tasting Tarragon Chicken Casserole recipe, and it’s so easy to put together! Tarragon and chicken is one of my favorite combinations.

Super fast, super simple, yet highly tasty meal made from things I always have in the house!

This is so easy, and so good. No browning, just put the chicken in and pour the sauce on, and bake!! The tarragon makes it an elegant entree.

Tarragon Chicken Casserole
Ingredients
  • 2 lbs boneless skinless chicken breasts
  • 1 medium onion sliced in rings
  • 1 1/2 teaspoons tarragon
  • 1/4 teaspoon poultry seasoning
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 10 1/2 ounce can cream of chicken soup
  • 1/4 cup milk
  • 1/4 cup slivered almonds optional
Instructions
  1. In 13 X 9 inch baking pan, place chicken pieces. Do not overlap. Place onion rings over top.
  2. Mix the seasonings with the cream of chicken soup and milk and spoon over the chicken.
  3. Bake, uncovered, in 375 degree oven for 40 minutes. Sprinkle chicken with almonds, if desired.
  4. Bake 10 minutes more or until chicken is tender.

Applebee’s Chicken Wings Copycat Recipe

Applebee’s Chicken Wings are great for get-togethers! They are spicy but when served with the Blue Cheese dressing – the heat is cut nicely.

 

These really are restaurant quality (if not better).

Baking the sauce on at the end really gets it to stick to the wings.

Ingredients
  • 3 dozen chicken wings
  • 12 fluid ounces Louisiana hot sauce
  • 6 tablespoons unsalted butter
  • 3 tablespoons white vinegar
  • 1 tablespoon Worcestershire sauce
  • 1 1/4 teaspoons cayenne pepper
  • 1/4 teaspoon garlic powder
  • 1 1/2 tablespoon flour
Instructions
  1. Remove the tips from the wings if you like! Bake or deep-fry until they are done.

  2. Mix all the sauce ingredients except the flour in a saucepan. Cook over medium-low heat. When warm, add the flour to thicken the sauce; stir frequently.

  3. When the sauce is thick, cover the bottom of a 9 x 13-inch baking dish with sauce.

  4. Mix the rest of the sauce with the wings and place in the baking dish. Bake at 300°F for about 20 minutes or until warm.

  5. Serve with celery sticks and blue cheese dressing.

These are great reheated, but be warned that they get hotter each time!

Wiener Schnitzel Recipe – Grandma’s Secret!

Grandma kept her Wiener Schnitzel Recipe a closely guarded secret. But, it’s not that hard to figure out. Comfort food for all of us, German or otherwise.

 

A really easy and delicious way to prepare chicken or turkey breasts, or even the traditional veal. It’s also very, very good with pork medallions.

If the meat is pounded quite thin and the oil is quite hot then it browns quickly without overcooking the meat. The lemon gives it a lovely flavor.

  • 1 lb turkey cutlets or 1 lb boneless chicken breasts or 1 lb veal if you're feeling fancy
  • 1 cup breadcrumbs
  • 2 teaspoons lemon juice
  • 1 tablespoon parsley flakes
  • 1 egg
  • cooking oil
Instructions
  1. Pound meat until it is less than 1/4 inch thick.

  2. Into a large skillet, pour oil approximately 1/4-inch deep; heat until oil bubbles when you drop in a pinch of breadcrumbs.

  3. Beat egg, add 1 teaspoon lemon juice.

  4. Add parsley to breadcrumbs.

  5. Dredge meat in egg, then breadcrumb mixture; fry until golden brown on each side.

  6. Sprinkle with remaining lemon juice.

This is one of the best one-dish meals I have had in a very long time. The mixture of the rice and soup comes out so creamy, and the salsa gives it a nice kick.

  • 1/3 cup flour

  7. Turn the wings over and bake for 15 more minutes or until crispy and done.

These Southern Fried Chicken Gizzards are not tough! If you’ve tried fried chicken gizzards before and found them tough you really need to try this method!

 

The initial stewing makes these gizzards melt-in-your-mouth tender and yields a very flavorful chicken stock for other uses.

Once they’re stewed nice and tender they are fried up nice and crispy.

Ingredients
  • 1 lb chicken gizzards
  • 3 garlic cloves
  • 1 small onion halved
  • 1 small carrot
  • 1 bay leaf
  • herbs of your choice such as thyme and majoram
  • 1 cup all-purpose flour
  • 2 teaspoons salt to taste
  • 1 teaspoon cayenne pepper to taste
  • 1 teaspoon Old Bay Seasoning or 1 teaspoon Lawry's Seasoned Salt or 1 teaspoon onion powder
  • 1 egg beaten
Instructions
  1. In a pot, combine the gizzards with the garlic, onion, carrot, bay leaf and herbs. Add enough water to cover and bring to a boil. Reduce to a simmer and cook 40-60 minutes, until gizzards are fork tender.
  2. Drain the gizzards and cool to room temperature. Reserve the broth for another use.
  3. Cut the gizzards into 1/2" chunks, working around any gristle or tendons.
  4. Combine the flour with the salt, cayenne and seasoning. Beat egg in a small bowl.
  5. In a large cast iron skillet, heat 1 1/2 to 2 quarts of vegetable oil to 350°F.
  6. Dip each piece of gizzard in egg, then in flour. Be sure to coat them well or the coating will not be crisp.
  7. Place the coated gizzard pieces into the oil and cook 2-3 minutes until golden brown and crisp. Drain on a rack. Serve immediately.

Ingredients
  • 1 large chicken cut into serving pieces
  • 1 cup packed brown sugar
  • 2/3 cup vinegar
  • 1/4 cup Sprite or 7-Up soda
  • 2 -3 tablespoons minced garlic
  • 2 tablespoons soy sauce
  • 1 teaspoon pepper regular black or cayenne
Instructions
  1. Place the chicken in the crock pot. Mix all the remaining ingredients and pour over the chicken.
  2. Cook on low for 6-8 hours.
  3. Serve over rice or noodles.
  4. You can thicken the juices after cooking with a little cornstarch.

  6. Remove the toothpicks and transfer the breasts to a warm platter.

  7. Blend the cornstarch with the cream and whisk slowly into the skillet. Cook, stirring until thickened and pour over the chicken.

This is delicious! Real comfort food. Emerils’ Skillet Parmesan Chicken is a favorite of mine. It’s nice to have a stove-top chicken Parmesan recipe.

 

These chicken breasts are fall-apart tender!

If you can, buy fresh mozzarella. You won’t believe the difference and it’s worth it. The texture isn’t rubbery like the typical mozzarella.

  • 4 boneless skinless chicken breast halves
  • salt and pepper
  • 1/2 cup flour
  • 1/2 cup Italian seasoned breadcrumbs
  • 1/4 cup Parmesan cheese

  • 1 tablespoon butter
  • 2 tablespoons olive oil
  • more Parmesan cheese for sprinkling on top
  • 4 ounces sliced mozzarella cheese if you can get it, the soft fresh kind is best, it melts sooooo creamy
  • your favorite marinara sauce or store bought spaghetti sauce
Instructions
  1. Pound the chicken breasts between two slices of plastic wrap until about 1/4" thick. Season with salt and pepper.
  2. Dredge the chicken in flour and shake off excess. Dip in the egg milk mixture, then in breadcrumb Parmesan mixture.
  3. Heat the butter and olive oil in a 12 1/2 inch cast iron skillet. Brown the chicken breasts over medium heat until golden on each side (about 2-3 min per side).
  4. Remove to a plate and keep warm.
  5. Add the marinara sauce to the skillet. Heat to boiling and simmer 10 minutes. Add the chicken breasts to the sauce and sprinkle Parmesan over them. Place a slice of mozzarella on each piece of chicken.
  6. Cover and simmer about 8- 10 minutes or until the cheese has melted and the chicken is tender.
  7. Serve with your favorite pasta- we like linguine.

Cilantro Chicken
Ingredients
  • 4 boneless chicken breasts
  • 2 tablespoons butter
  • 1/2 cup sliced onion
  • 2 cloves fresh garlic crushed
  • 1 cup chopped fresh cilantro
  • 1 1/2 cups salsa verde or 1 1⁄2 cups green tomatillo sauce
  • 3/4 cup chicken broth
  • 1/2 cup fresh tomato chopped
  • 1/2 cup green onion thinly sliced
Instructions
  1. Heat the butter in a saucepan over medium heat. Add the onion and garlic and saute until soft.
  2. Add the chicken breasts and saute until golden brown.
  3. Add the salsa verde, chicken broth and cilantro. Reduce the heat to low and simmer for 3 to 5 minutes.
  4. Serve over rice or couscous and sprinkle with the chopped fresh tomatoes and green onion.
