Italian Style Lasagna – Cheesy & Delicious

This Italian Style Lasagna may not be true Italian but it is definitely a GREAT lasagna!! Not just another lasagna recipe, this one really is special.

 

An extra cheesy delicious lasagna recipe definitely added to the binder of my favorite recipes!

Don’t second guess the cream cheese cubes–they’re wonderful!

You can freeze this dish either prior to or after baking.

Ingredients
  • 2 lbs lean ground beef
  • 1 lb Italian sausage casing removed and crumbled
  • 2 onions chopped
  • 2 stalks celery finely chopped
  • 4 garlic cloves minced
  • 2 15 ounce cans tomatoes (diced or crushed)
  • 1 6 ounce can tomato paste
  • 1 8 ounce can tomato sauce
  • 3 teaspoons salt approximately
  • 1 teaspoon pepper
  • 2 tablespoons sugar
  • 2 tablespoons dried Italian seasoning
  • 2 bay leaves
  • 1/4 cup parsley minced
  • 4 ounces cream cheese diced
  • 3 -4 cups shredded cheddar cheese divided
  • 1 -2 cup shredded mozzarella cheese divided
  • 1/2-1 cup Parmesan cheese grated
  • 1 lb lasagna noodles prepared according to package directions and drained
Instructions
  1. Fry together the ground beef and Italian sausage until no longer pink; drain. Add the onion, celery, and garlic; cook about 5 minutes.
  2. Add to the meat mixture the remaining 8 ingredients; cook covered for 30-45 minutes, adding small amounts of water if necessary and stirring frequently. The mixture should be relatively thick. Remove from heat and stir in minced parsley.
  3. Preheat oven 350 degrees. Grease lasagna baking pan.
  4. Layer a small amount of meat sauce in the bottom of baking pan (about 1 cup), topping with about 5 noodles, overlapping slightly. Top lasagna noodles with more sauce, several pieces of cream cheese and the 3 cheeses all equally divided between remaining layers. Repeat until sauce, noodles, and cheese are used up.
  5. Cover the baking pan with foil (can grease underside of foil, too) and bake 40 minutes; remove foil from pan and return to oven, baking an additional 10 minutes or until bubbly.
  6. Let stand 10 minutes before cutting.

Perfect Slow Cooker Pot Roast

This is a quick and easy, but perfect slow cooker pot roast recipe. It’s incredibly good and yet so simple to prepare. It’s the vegetable soup mix!

 

I don’t think I’ve ever enjoyed the taste of potatoes in a pot roast recipe as much as I did with this one.

Thicken the pan juices with cornstarch to make a tasty gravy. The gravy is heavenly. Not too heavy or salty, yet very flavorful.

  • 2 lbs beef roast
  • 4 potatoes peeled and cut into 1-inch cubes
  • 1 1/2 cups baby carrots
  • 1 large onion quartered and pulled apart
  • 1 1/2 cups beef broth
  • 1 1 1/2 oz envelope dry vegetable soup mix (I use Knorr)
Instructions
  1. Place roast into the crockpot and surround with vegetables.

  2. Combine the beef broth and vegetable soup mix and add to the crockpot.

  3. Cover and cook on LOW 6-8 hours or HIGH 3-4 hours.

Slow-Cooker Spaghetti Sauce

This is an excellent, rich, and thick homemade Slow-Cooker Spaghetti Sauce. You can alter the ground meat as you please. All beef or a combo.

 

Sometimes I use all ground beef when I find a good sale but half beef/half pork is pretty tasty.

I love this homemade sauce over spaghetti with crusty bread and a romaine salad. I also use it to make lasagna.

Taco Tuesday Tacos Ole

Here is my FAVORITE recipe for tacos! Taco Tuesday Tacos Ole! It’s a nice change from the same old tacos I am always making. So simple and yet soooo tasty!

Tacos Ole

These are probably the best tacos I have ever made!

Sometimes I make the meat mixture ahead of time and add the cheese when I it’s taco time!

Make these easy tacos once and you WILL be having them again.

Taco Tuesday Tacos Ole
Ingredients
  • 1 lb 80% lean ground beef at least 80% lean
  • 1 1 1/4 ounce packet taco seasoning mix
  • 1 10 ounce can Rotel tomatoes & chilies
  • 2 jalapeno peppers sliced, and chopped fine
  • 1 8 ounce package Mexican blend cheese
  • 1 4 1/2 ounce package taco shells
  • 1/4 head lettuce chopped fine
  • 1 tomatoe chopped
  • 1 8 ounce container sour cream
  • 1 16 ounce jar pace salsa, I like hot
Instructions
  1. Fry the ground beef, until cooked through and crumbly. Drain any fat.
  2. Add the taco seasoning pkt., and the Rotel tomatoes. Mix well. Add the jalapeno peppers.
  3. Let cook for a few minutes until some of the liquid from the tomatoes evaporates.
  4. Add the 1/2 the package of cheese, and mix well. Let cook the until cheese is completely melted.
  5. Spoon into taco shells and top with the rest of the cheese, lettuce, tomatoes, sour cream, and salsa.

If you like Mexican food you’ll love this Hot Tamale Casserole recipe! It’s a little extra work but well worth it. Make it as hot or as mild as you like.

Hot Tamale Casserole
Ingredients
  • 10 ounces thawed frozen whole kernel corn
  • 3 tablespoons tomato paste
  • 1 14 ounce can chopped tomatoes
  • 3 jalapeno peppers chopped (optional)
  • 1 cup green pepper chopped
  • 1 cup onion chopped
  • 1 1/4 pounds lean ground beef
  • 2 tablespoons lite olive oil
  • 1 cup sliced green olives
  • 1 tablespoon ground cumin
  • 1 1/2 teaspoon salt
  • 1/2 teaspoon allspice
  • 2 teaspoons chili powder
  • 1/2 teaspoon hot pepper sauce
  • 1 tablespoon yellow cornmeal
Tamale Topping
  • 1 cup all-purpose flour
  • 1 cup yellow cornmeal
  • 3 tablespoons sugar
  • 2 teaspoons baking powder
  • 3 tablespoons butter or 3 tablespoons margarine melted
  • 3/4 cup 2% low-fat milk
  • 1 large egg lightly beaten
  • 1/2 cup sharp cheddar cheese grated
  • 1 jalapeno pepper finely chopped
Instructions
  1. Heat oil in a large skillet. Add the onion and green pepper; saute until tender. Add the beef and cook until crumbly.
  2. Add the tomatoes (if the tomatoes are very juicy take off some juice, keep it you can add it if needed), tomato paste, corn, olives, cumin, salt, all spice, chili powder, pepper sauce and cornmeal.
  3. Simmer stirring frequently for 30 minutes.
  4. Preheat oven to 450°F.
  5. Spoon mixture into a 2 1/2 qt casserole.
Make The Tamale Topping
  1. In a large bowl mix the flour, cornmeal, sugar and baking powder. Add the melted butter, milk, and egg. Stir only until dry ingredients are just moistened.
  2. Quickly stir in the jalapeno pepper and cheese.
Back To The Casserole
  1. Spoon the topping in large spoonfuls around on top of the casserole.
  2. Bake in 450°F uncovered for 25-30 minutes or until cornmeal topping is cooked through and lightly browned.

No need to heat up the kitchen with this tasty Slow-Cooker Beef Tips dish. The flavor is very savory and robust. This recipe stands out

 

I have had a variety of these recipes — this one stands out for its quality gravy (for the noodles) and the tenderness of the beef. Awesome!

  • salt and pepper
  • 1/3 cup flour
  • 1 lb bottom sirloin beef caps cubed
  • 1/2 cup shallot chopped
  • 1 lb mushroom sliced
  • 1 10 1/2 ounce can condensed beef broth
  • 2 teaspoons tomato paste or 2 teaspoons tomato sauce
  • 1 teaspoon Worcestershire sauce
  • 1/4 cup red wine
  • 4 -6 cups hot buttered egg noodles
Instructions
  1. Add salt and pepper to the flour. Dredge the beef in flour mixture.

  2. Place the meat in the slow-cooker. Cover with the shallots and mushrooms.

  3. Mix the beef broth, tomato paste, Worcestershire sauce, and red wine; pour over the meat and vegetables.

  4. Cook on low setting for 8 hours.

  5. Mix 3 Tablespoons flour into 1/3 cup water, making a smooth paste. Add to the slow-cooker and cook another 45 minutes.

Recipe Notes

Serve over hot buttered noodles.

Country Fried Steak – A Southern Specialty

Over the years I’ve made a lot of country fried steak. But this recipe is by far the best one I’ve ever used. The cube steaks turn out crispy and so tender!

 

Delicious! What’s best is this meal is so cheap… yet so very satisfying.

What’s The Difference In Country Fried And Chicken Fried?

The difference in country-fried and chicken fried steak is negligible, to say the least. They are both seasoned and fried with a crispy coating.

When I was a little fella’ my family lived in a tiny German settlement in Texas for a while. The Germans are given credit for frying things that aren’t chicken as if it was chicken!

Chicken Fried Steak is very similar to the German Wienerschnitzel and is an excellent cooking method for tougher cuts of meat.

Country fried is almost identical. If there is a difference it’s in the coating. Some say that only chicken fried steak uses eggs in the coating whereas country-fried only uses a flour base.

The gravy is also said to be different. Country fried is served with brown gravy and onions. Chicken fried is served with cream gravy.

So What’s the Difference? 

Now, to me, that’s getting a little picky about naming a dish. They are both crispy fried pieces of beef served with gravy.

So in my kitchen, the difference is that there isn’t any difference.

Country Fried Steak is one of the least expensive beef dishes you can serve.

Ingredients
  • 1 1/2 pounds cube steaks
  • 1 cup all-purpose flour plus
  • 3 tablespoons all-purpose flour divided
  • 1 1/2 teaspoons salt divided
  • 1 1/4 teaspoons pepper divided
  • 1 teaspoon paprika
  • 2 1/2 cups milk divided
  • 3 eggs beaten
  • 4 tablespoons oil
  • butter
Instructions
  1. Place 1 cup flour, 1/2 cup milk, and eggs in 3 separate shallow bowls in the working area. Mix 1 tsp salt, 1 tsp pepper, and the paprika into the flour and mix well.
  2. Season both sides of cube steaks with additional salt and pepper, if desired.
  3. Dip the cube steaks in the milk and then dredge in seasoned flour. Dip the floured steaks in the egg wash, then again in the seasoned flour.
  4. Heat 2 tbsp oil in a large skillet on medium heat and do half the cube steaks at a time, or work with two skillets, if you desire.
  5. Brown the cube steaks on each side, about 8-10 minutes total cooking time; remove from the heat and set the steaks aside.
  6. Drain all but 1 tbsp oil (if any- I don't usually have any, but the steaks are less greasy with less oil) from the pans. Add enough butter to the pan to equal 3 tbsp along with the oil.
  7. Melt the butter and add 3 tbsp flour and stir with a whisk to make a roux, deglazing the bottom of the pan, and cook for a few minutes on LOW heat; do not burn.
  8. Slowly add the remaining 2 cups of milk, and stir or whisk constantly until mixture comes to a boil and thickens; cook for another minute or so and remove from heat.
Recipe Notes

Serve Country Fried Steaks with plenty of gravy on top, and mashed potatoes on the side (double gravy recipe if you use a LOT of gravy on your potatoes, etc).

 

What Goes Good With Country Fried Steak?

The gravy is a given. You just got to have gravy with this.

Now, when you have gravy, at least in my house, you’ve got to have mashed potatoes! So you could say mashed potatoes are a given also.

My Mom always insisted on a green veggie with most meals. Sticking with that rule I go with Southern-fried okra!

That’s the meal. Steak and gravy with mashed potatoes and fried okra. You can throw in a salad if you like. I don’t most of the time.

Quick and Easy Hamburger Ramen Skillet Supper
Ingredients
  • 1 lb ground beef
  • 1 3 ounce package ramen noodles (I prefer beef flavor)
  • 2 cups water
  • 2 cups vegetables frozen mixed veggies, thawed; peas and corn work perfect!
Instructions
  1. In a skillet, cook the ground beef until it's no longer pink; drain. Add the noodles with contents of seasoning packet and the water.
  2. Bring to a boil; cook for 3 minutes or until noodles are tender.
  3. Add the veggies and cook until tender, about 3 minutes as well.
Recipe Notes

Makes about 4 servings.

Minnesota Tater Tot Hot Dish

Minnesota Tater Tot Hot Dish is filling, cheap to make, and delicious. A definite kid pleaser. This is my friends mom’s recipe, the same one that she used to make for her, she says, when she was little.

Minnesota Tater Tot Hot Dish

This is a great and simple recipe. If Minnesota is famous for one thing, it’s hot dish. You might know it better as casserole, or something like that, but in Minnesota, it’s hot dish.

Minnesota Tater Tot Hot Dish
Ingredients
  • 1 lb ground beef
  • 1 1 lb package tater tots
  • 2 10 ounce cans condensed cream of mushroom soup
  • 1 14 ounce can vegetables (or 2 cans, whatever kind you like, I like sweet corn, my mom uses green beans)
Instructions
  1. Preheat oven to 350 degrees.
  2. While the oven is preheating, brown the ground beef (seasoning to taste as you cook) and drain off the grease.
  3. Spread the beef in the bottom of a 2 1/2 quart baking dish. Drain the liquid off the vegetables and spread them over the meat.
  4. Using a rubber spatula, spread the cans of soup over the top of the vegetables and meat. Use the soup as is, straight from the can. Do NOT mix it with anything.
  5. Arrange a layer of tater tots over the top of that.
  6. Bake, uncovered, at 350 degrees for 50 minutes. Top with your favorite variety of shredded cheese as you serve.
