Ramen Noodle Casserole – So Easy But Delicious!

This Ramen Noodle Casserole is a very easy casserole that’s fairly cheap and very quick to make. This recipe can easily be increased for a last minute get together. Just add more noodles!

This is a also a great base recipe to really add different ingredients and make something new each time. Use diced chicken and chicken flavored ramen!

Just add a salad and you have a great dinner.

Ingredients
  • 1 lb ground chuck
  • 1 medium onion Diced
  • 1 14 1/2 ounce can diced rotel tomatoes
  • 3 3 ounce packages beef-flavor ramen noodles
  • 3 cups water
  • Velveeta cheese
Instructions
  1. Brown the hamburger and onion and then add the flavoring packets from the ramen noodles. Cook and stir for about 4 minutes.
  2. Add the water and the tomatoes and bring to a boil. Add the ramen noodles and cook for about 4 minutes more.
  3. Pour into a casserole dish and cover with sliced Velveeta cheese.
  4. Bake for 15 minutes at 350° or until cheese is melted.

Beef short Ribs are browned and then slow cooked for 9 hours with a brown sugar/vinegar sauce until tender. Delicious served over rice!

  • 1/3 cup flour
  • 1 teaspoon salt
  • 1/4 teaspoon pepper
  • 2 1/2 lbs boneless beef short ribs
  • 1/4 cup butter
  • 1 cup chopped onion
  • 1 cup beef broth
  • 3/4 cup red wine vinegar
  • 3/4 cup brown sugar
  • 1/4 cup chili sauce
  • 2 tablespoons catsup
  • 2 tablespoons Worcestershire sauce
  • 2 tablespoons minced garlic
  • 1 teaspoon chili powder
Instructions
  1. Put the flour, salt and pepper in a bag. Add the ribs and shake to coat. Brown the ribs in butter in a large skillet.
  2. Place the ribs in a slow cooker.
  3. In the same skillet, combine the remaining ingredients. Bring to a boil, stirring.
  4. Pour over the ribs.
  5. Cover and cook on low for 9 hours.

  3. Using a wooden spoon handle and make a hole in the center of the patty. Fry the patties over medium-high heat until well done.
  4. Drain grease.
  5. In a separate pan heat cream of mushroom soup, water and package of brown gravy until smooth.
  6. Pour the gravy over the patties and simmer covered for about 10 minutes.

  • 1 10 1/2 ounce can Campbell's French onion soup
  • 1 1/2 lbs ground beef
  • 1/2 cup dry breadcrumbs
  • 1 egg
  • 1/4 teaspoon salt

  • 1 tablespoon all-purpose flour
  • 2 Tablespoons ketchup
  • 1 -3 teaspoon Worcestershire sauce to taste

Instructions
  1. In a large bowl, mix together 1/3 cup condensed French onion soup with the ground beef, bread crumbs, egg, salt and black pepper. Shape into 6 oval patties.
  2. In a large skillet over medium-high heat, brown both sides of the patties. Pour off excess fat.
  3. In a small bowl, blend the flour and the remaining soup until smooth. Mix in the ketchup, water, Worcestershire sauce and mustard powder.
  4. Pour over the meat in the skillet.
  5. Cover, and cook for 20 minutes, stirring occasionally.

Tips and Tidbits

You can also bake these in a 350 degree oven for 60 minutes, pouring the gravy over the last 5-10 minutes.

You can use an 80/20 ground turkey/ground beef mix for less fat and it’s still delicious!

Mom’s Homemade Italian Hamburger Helper

My mother never heard of hamburger helper I’m sure. But she made Homemade Italian Hamburger Helper often and us kids just loved it.

 

I don’t think she even had a name for it. I’m sure she just had quick and easy on her mind but we thought it was great.

Hers was healthier too. It didn’t have all the unhealthy additives like partially hydrogenated oils. And when it comes to taste the box mixes lag way behind Moms.

This is not her dish exactly because it uses jarred sauce but the taste is very familiar.

  • 1 1/2 cups leftover mashed potatoes
  • 1 large onion chopped
  • 3 garlic cloves minced

  • 2/2 cup seasoned dry bread crumb

Instructions
  1. Preheat your oven to 375°F.
  2. Place the potatoes in a large bowl and set aside.
  3. In a heavy skillet over medium heat, sauté the onion and garlic in olive oil until tender, about 5 minutes. Add the parsley and oregano.
  4. Add to the potatoes along with the eggs, bread crumbs, 1/3 cup of the ketchup, salt and pepper and mix well until thoroughly combined. Add ground beef and mix gently just until combined.
  5. Place in a casserole pan and shape the mixture into an 8 x 4-inch loaf. Spread the remaining 1/3 cup ketchup over top of the loaf.
  6. Bake at 375°F for 70-75 minutes or until the center is no longer pink and an instant-read thermometer reads 160°F when inserted in the center of the loaf.
  7. Let stand, covered, 15 minutes before slicing.

  • 1 ⁄4 cup prepared Italian salad dressing
  • 1 1 ⁄2 cups Italian bread crumbs
  • 2 tablespoons fresh parsley minced
  • 2 garlic cloves minced
  • 1 ⁄2 teaspoon dried oregano
  • 1 ⁄2 teaspoon pepper
  • 1 ⁄4 teaspoon salt
  • 1 ⁄2 lb ground pork
  • 1 ⁄2 lb ground sirloin
  • 3 ounces fresh mozzarella cheese
  • 2 tablespoons vegetable oil
  • 1 26 ounce jar marinara sauce
  • hot cooked pasta
Instructions
  1. In a large bowl, combine the first eight ingredients. Crumble the pork and beef over the mixture and mix well.
  2. Cut the mozzarella into 18 1/2-inch cubes. Divide the meat mixture into 18 portions; shape each around a cheese cube.
  3. In a large skillet, cook the meatballs in oil in batches until no pink remains; drain.
  4. In a large saucepan, heat the marinara sauce; add the meatballs and heat through.
  5. Serve over pasta or as meatball sandwiches.

Beef and Ramen Noodle Stir Fry
Ingredients
  • 1/2 lb beef cut into strips
  • 1/2 cup red bell pepper cut into strips
  • 1/2 cup green bell pepper cut into strips
  • 2 3 ounce packages ramen noodles (1 beef, 1 oriental flavor)
  • 1/2 cup snow peas
  • 1/2 cup broccoli
  • 1 tablespoon teriyaki sauce
  • 1 tablespoon vegetable oil
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon ginger powder
Instructions
  1. Fill a large saucepan 2/3 full of water. Bring to a boil. When the water boils, add the ramen noodles and cook 3 minutes. Drain.
  2. Meanwhile, in a wok or large frying pan, heat the oil on high heat. Add the beef, vegetables, teriyaki sauce, garlic, ginger, and seasoning packets from ramen noodles.
  3. Stir fry until the beef is cooked through. Add the noodles and toss to combine.

Tips and Tidbits

This is a very versatile recipe and can be made with chicken, pork and even shrimp. You can also change the veggies around to suit your tastes.

You might want to use only one of the Ramen flavoring packets to cut down on the sodium.

Crock Pot Pepper Steak
Ingredients
  • 2 lbs boneless beef chuck steaks
  • 1 tablespoon olive oil
  • salt and pepper
  • 1 teaspoon minced garlic
  • 3 tablespoons flour
  • 1 cup beef broth
  • 1/2 cup teriyaki sauce
  • 4 tablespoons Worcestershire sauce
  • 1/8 teaspoon red pepper flakes
  • 1 yellow onion sliced in rings
  • 1 green pepper julienned
  • 1 red pepper julienned
  • 1 fresh tomato diced
  • 1 teaspoon brown sugar
Instructions
  1. Cut the chuck steak into julienned strips, sprinkle lightly with salt and pepper and saute with the chopped garlic and pepper flakes in the tablespoon of olive oil until lightly browned.
  2. Transfer the chuck steak to a large crock pot.
  3. Mix the 3 tablespoons of flour with the beef broth and pour on top of meat.
  4. Add the Teriyaki sauce, Worcestershire sauce, tomato and brown sugar.
  5. Stir well and cook on high for two hours.
  6. After two hours of cooking on high, add the onion and peppers, turn the heat down to low and cook for an additional 1 1/2 hours.

Serve over rice or buttered egg noodles.

These Italian Melt-In-Your-Mouth Meatballs are absolutely perfect Italian meatballs. Now I know there will be arguments about that!

 

Most Italian families have their own meatball recipe that they swear is the only authentic meatball!

Meatballs are comfort food and when we think comfort food it’s usually what we grew up with. The food that Mama fixed. That’s my perception.

But there’s no way I’ll ever make meatballs any other way now. These are just so juicy and delicious.

  • 1 1/2 lbs ground beef
  • 1 large egg slightly beaten
  • 1/2 cup grated Parmesan cheese
  • 1/3 cup breadcrumbs
  • 2 tablespoon fresh minced garlic
  • 2 teaspoon salt
  • 1 teaspoon fresh ground black pepper
  • 1/3 cup milk
  • 1/2 teaspoon dried oregano
  • 2 tablespoons dried parsley
Instructions
  1. Mix all ingredients together in a large bowl.
  2. Shape into small meatballs (at this point you can place on a jelly-roll/baking sheet and freeze to use later, or cover with plastic wrap refrigerate up to 24 hours before using).
  3. Drop the meatballs into simmering pasta sauce, do not stir for at least 20 minutes or you will risk breaking the meatballs.
  4. Continue cooking in the simmering sauce for another 20 minutes (depending on how fast your sauce is simmering 40 minutes total should fully cook the meatballs).
  5. After the 40 minutes cooking time continue cooking your sauce with the meatballs in for as long as desired.
Recipe Notes

you may also bake the meatballs at 350 degrees F for 25 minutes or until cooked through.
