There are a lot of pot roast recipes out there but this Crock Pot Yankee Pot Roast With Vegetables is my favorite. I’ve been enjoying it for years and I make it often because it’s the best!

The meat is so tender and the veggies are awesome in the juices.

Thicken the gravy to serve over the beef and vegetables, and add a side of horseradish, if desired.

Ingredients
  • 3 -4 lbs rump roast top round roast or 3 -4 lbs beef brisket
  • salt and pepper
  • 3 medium potatoes pared and quartered
  • 2 medium onions peeled and cut into 1-inch chunks
  • 4 carrots pared and sliced
  • 2 stalks celery sliced (with leaves)
  • 1 bay leaf
  • 1/2 teaspoon dried marjoram
  • 1/2 cup apple cider beef consomme or 1⁄2 cup red wine
Instructions
  1. Place the vegetables into the bottom of the crock-pot.
  2. Season the beef generously with salt and pepper, then place in pot.
  3. Add the liquid, bay leaf, and dried marjoram.
  4. Cover and cook on LOW heat 10 to 12 hours (or HIGH heat 5 to 6 hours).
  5. Remove the meat and vegetables with a slotted spoon and thicken drippings for gravy if desired.

Ingredients
For the burger:
  • 1 egg
  • 1 teaspoon mustard regular or Dijon
  • 1 teaspoon Worcestershire sauce
  • 1 small onion finely grated
  • 1 clove garlic minced
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 lb medium ground beef
Flavor Perk Stir-Ins:
  • 1 tablespoon creamy caesar salad dressing or 1 tablespoon Greek salad dressing
  • 1 tablespoon chopped sun-dried tomato
  • 1 tablespoon sour cream or 1 tablespoon yogurt
  • 1 tablespoon grated fresh lemon rind or 1 tablespoon lime rind
  • 1 tablespoon grated ginger root
  • 1 tablespoon ketchup or 1 tablespoon barbecue sauce
  • 1 teaspoon lemon pepper
  • 1 teaspoon curry powder
  • 1 teaspoon dried oregano or 1 teaspoon dried thyme or 1 teaspoon dried rosemary
  • 1 tablespoon fresh herb
  • 2 teaspoons Cajun seasoning
  • 1 teaspoon sesame oil
  • 1 teaspoon teriyaki sauce or 1 teaspoon hoisin sauce
  • 1 fresh jalapeno or 1 pickled jalapeno pepper chopped
Instructions
  1. Lightly oil grill and heat to medium.
  2. Whisk the egg in a bowl and add the next 6 ingredients. Add any of the “stir-ins” that appeal to you.
  3. Crumble in the beef and using your hands or a fork, gently mix together. Handle the meat as little as possible – the more you work it, the tougher it gets.
  4. Gently shape (don’t firmly press) the mixture into burgers about ¾ inch thick. Using your thumb, make a shallow depression in the center of each burger to prevent puffing up during cooking.
  5. Place the burgers on the grill, close the lid, and BBQ until NO LONGER PINK INSIDE, turning once, about 6 – 8 minutes per side. An instant-read thermometer should read 160F.
  6. Don't abuse your burgers by pressing with a spatula, pricking with a fork, or turning frequently as precious juices will be lost!
  7. Tuck into a warm crusty bun and add your favorite toppings.

Lemon Butter
  • 4 tablespoons butter softened
  • 1 tablespoon chopped fresh parsley
  • 1 tablespoon fresh lemon juice
  • 1/4 teaspoon garlic powder
Steak
  • 4 sirloin steaks
  • 1/4 cup ground black pepper
  • 1 1/2 teaspoons white pepper
  • 1/2 teaspoon red pepper flakes
  • 1 teaspoon ground coriander
  • 1/4 cup sugar
  • 1 tablespoon salt
  • 1 teaspoon garlic powder
Instructions
  1. Mix together the butter, parsley, lemon juice, and 1/4 teaspoon garlic powder. Place the butter mixture in plastic wrap and roll it into a log shape. Chill until firm.

  2. Combine the black pepper, white pepper, red pepper flakes, coriander, sugar, salt, and garlic powder.
  3. Rub the spice mix into both sides of steaks. Shake off excess.
  4. Place the steaks on a hot grill and cook for 2 minutes. Turn and cook for 2 additional minutes.
  5. Move the steak to a cooler section of the grill and continue to cook until the desired doneness.
  6. Serve each steak with a slice of the lemon butter.

Baked Ziti with Fire Roasted Tomatoes
Ingredients
  • 1/2 pound extra lean ground beef
  • 1 cup chopped sweet onion
  • 2 garlic cloves finely chopped
  • 1 medium zucchini cut in half lengthwise, sliced 1/4 inch thick
  • 1 15 ounce can tomato sauce
  • 1 14 1/2 ounce can fire roasted diced tomatoes, drained
  • 2 teaspoons chopped fresh oregano leaves
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 8 ounces ziti pasta cooked and drained
  • 3/4 cup shredded reduced-fat mozzarella cheese
  • cooking spray
Instructions
  1. Heat oven to 375.
  2. Spray a 2 quart rectangular glass baking dish with cooking spray.
  3. In a 10 inch non stick skillet, cook the beef, onion and garlic over medium heat, stirring frequently,until cooked. Add the zucchini, cook 2 minutes.
  4. Stir in the tomato sauce, diced tomatoes, oregano, salt and pepper. Heat to boiling.
  5. Toss the sauce with the pasta. Spread in the baking dish. Cover with foil; bake 20 minutes. Sprinkle with the cheese. Bake uncovered, about 5 minutes more or until the cheese is melted.

These Beef Enchiladas are so good and so easy! My whole family enjoys this recipe. It’s quick to make and tastes like enchiladas that take all day.

Easiest Beef Enchiladas Ever
Ingredients
  • 1 lb ground beef
  • 1/2 cup chopped onion
  • 2 cups shredded cheddar cheese
  • 1 20 ounce can enchilada sauce
  • 8 flour tortillas
Instructions
  1. Brown the meat and onions in large skillet. Add 1 cup enchilada sauce and 1 cup cheese. Mix well.
  2. Put the filling along center of each tortilla. Roll up and place seam side down in a 9x13 pan. Pour the remaining sauce over.
  3. Sprinkle remaining cheese over.
  4. Bake at 350F degrees for about 30 minutes till cheese is bubbly.

Cheap and Easy Cabbage Beef Bake
Ingredients
  • 1 small cabbage shredded
  • 1 1/2 pounds lean ground beef can use lean ground turkey
  • 1 large onion chopped
  • 1/2 cup chopped red bell pepper
  • 1 15 ounce can diced tomatoes, undrained
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/2 teaspoon sugar
  • 1 teaspoon caraway seed
  • 1 8 ounce can tomato sauce
  • 1 cup reduced-fat sour cream
  • 1 cup shredded swiss cheese can use mozzarella, cheddar, etc
Instructions
  1. Preheat oven to 350. Lightly grease/spray a deep 13 x 9 baking dish.
  2. Place the shredded cabbage in the bottom of the baking dish; set aside.
  3. Brown and crumble the ground beef (or turkey) with the onion and red bell pepper; drain and return to the skillet.
  4. To the drained beef mixture, add the diced tomatoes (undrained), salt, pepper, sugar and caraway seeds. Stir together well and spread this mixture over the cabbage in the baking dish.
  5. In a small bowl, stir together the tomato sauce and sour cream, blending well. Spread this mixture over the beef mixture in the baking dish.
  6. Cover and bake for 1 hour.
  7. Uncover, evenly sprinkle with the 1 cup of shredded Swiss cheese and bake (uncovered) for an additional 15-20 minutes.

  • 1/4 cup dry breadcrumbs
  • 1 1 1/4 ounce envelope brown gravy mix, divided
  • 1 teaspoon dried onion flakes
  • 1/2 pound lean ground beef
  • 1/2 cup water
  • 1 tablespoon prepared mustard
Instructions
  1. In a bowl, whisk the egg and milk. Add the bread crumbs, 1 tablespoon of the gravy mix and the onion flakes. Crumble the beef over the mixture and mix well.
  2. Shape into two patties, about 3/4 inches thick.
  3. Broil 3-4 inches from the heat for 6-7 minutes on each side or until meat is no longer pink and a meat thermometer reads 160°.
  4. Place the remaining gravy mix in a small saucepan; stir in the water and mustard. Bring to a boil; cook and stir until thickened. Serve over the patties.

  • 1 lb ground chuck
  • 1/2 cup fine soft bread crumbs
  • 1/2 cup skim milk
  • 2 eggs slightly beaten
  • 1/2 cup onion chopped
  • 2 tablespoons green peppers chopped
  • 1/2 cup reduced-fat cheddar cheese grated
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
Instructions
  1. Cook the macaroni according to directions on package.
  2. Mix together the pasta, hamburger, bread crumbs, milk, eggs, onion, green pepper, cheese, salt and pepper. Shape into loaf.
  3. Bake at 350 degrees F for 1 hour.

Ingredients
  • 1 8 ounce bag of elbow pasta, boiled and drained
  • 1 lb good quality ground beef
  • 1 large onion chopped
  • 1 8 ounce jar Cheese Whiz (or smaller)
  • 1 8 ounce can diced tomatoes
  • V8 vegetable juice to get desired consistency
  • paprika
  • salt and pepper optional
Instructions
  1. Saute the beef and onions in large frying pan, drain well.
  2. Add the cheese whiz and stir to creamy consistency. Add the canned tomatoes and V8 juice.
  3. Season with the paprika, salt and pepper.
  4. Allow to cook down a bit without a cover.

Ground Beef Fried Rice
Ingredients
  • 1 lb ground beef
  • 5 -6 large garlic cloves chopped
  • 1/4 teaspoon ginger powder or 1 teaspoon minced fresh ginger
  • 2 tablespoons oil
  • 1 red bell pepper cut into about 1/2-inch pieces
  • 1 1/2 cups small broccoli florets
  • 3 cups cold cooked white rice
  • 3 -4 tablespoons soy sauce
  • 2 teaspoons dark sesame oil
  • 4 green onions chopped
  • salt and pepper optional
Instructions
  1. In a wok or a large skillet brown the ground beef with garlic and ginger over medium heat (about 10 minutes) breaking up into small pieces; drain the fat, then transfer to a bowl.
  2. Heat 2 tablespoons oil in the same skillet over medium-high eat until hot.
  3. Add in bell pepper and pea pods; cook for 3 minutes or until bell pepper is crisp-tender, stirring occasionally.
  4. Stir in the cold cooked rice, soy sauce and sesame oil.
  5. Return the cooked ground beef back to the skillet; toss to combine and heat though, then stir in the chopped green onions.
  6. Season with salt and pepper and more soy sauce if desired.
