Nice ‘n Easy Egg Rolls

These easy egg rolls are baked and are lower in fat with the same taste as the fried ones. Your family will not be able to tell the difference between the baked ones and the fried ones!

These are very easy and taste wonderful. The seasonings are perfect.

Serve these egg rolls along side this Easy Fried Rice for a complete Oriental meal!

Nice 'n Easy Egg Rolls
Ingredients
  • 1 16 ounce package egg roll wraps
  • 1/2 cup dried mushroom
  • 1 large boneless skinless chicken breast
  • 1 garlic clove minced
  • 1 tablespoon cooking oil
  • 16 ounces fresh bean sprouts
  • 2 cups cabbage shredded
  • 1/2 cup green onion thinly sliced
  • 1/2 cup bamboo shoot sliced
  • 2 tablespoons soy sauce
  • 2 teaspoons cornstarch
  • 1 teaspoon ginger grated
  • 1/2 teaspoon artificial sweetener
  • 1/2 teaspoon salt
Instructions
  1. Soak the mushrooms in warm water for 30 minutes. Drain, chop, discard stems.
  2. Chop the chicken.
  3. Stir fry the chicken and garlic quickly in heated cooking oil for 2 minutes. Add the vegetables; stir fry for 3 minutes more.
  4. Blend the soy sauce into the cornstarch, ginger, sugar, and salt. Stir into the chicken mixture and cook until thickened.
  5. Cool.
  6. Wrap 2 Tbsp filling in wrapper burrito style. Bake on cookie sheet at 350° for 20 minutes. For extra brown rolls, brush with egg white mixed with a little water, before baking.

Serve as a side to Easy Fried Rice.

Tips and Tidbits For Nice ‘n Easy Egg Rolls

I saw a great tip on the Rachael Ray Show on how to “bake fry” foods.

Preheat about 1/4 cup of oil on the cooking sheet you will be baking the egg rolls in. When you are ready to bake the egg rolls take hot sheet pan out of the oven: roll them through the hot oil and bake as directed.

(The oil should sizzle when the egg roll is dredged through.) BE CAREFUL!!! REMEMBER PAN WILL BE HOT!!!! The egg rolls come out crispy and delicious!

If you use cooking spray instead of oil to stir fry the ingredients, it tastes better and really cuts down on calories.

Use the packaged coleslaw mix instead of regular cabbage and then make the rest as stated. Much less prep work.

Great as a side to Easy Fried Rice.

This Creamy Jalapeno Dip is the perfect dip for a party, get together, or a football game. It reminds me of jalapeno poppers. A great dip on almost any chip.

 

Serve up this creamy, cheesy Mexican flavored dip and then listen to your friends’ compliments.

  • 2 8 ounce packages cream cheese, room temperature
  • 1 cup mayonnaise

Instructions
  1. Combine the first 6 ingredients in a mixer or food processor and blend until smooth.

  2. No need to drain the cans of chilies or jalapenos, it is a personal option. Spread the dip into a greased casserole dish.

  3. In a bowl, combine the panko breadcrumbs, the additional 1/2 c Parmesan cheese, and melted butter. Sprinkle crumb mixture evenly over the dip and bake in a preheated 375-degree oven for about 20 minutes until the top is browned and its bubbling around the edges.

Very quick & easy spicy garlic shrimp recipe that’s done on the stove top. If your tastes desire spicy & garlic, then this recipe is just for you.

Quick and Easy Spicy Garlic Shrimp
Ingredients
  • 12 shrimp Jumbo sized, peeled, deveined, & tails intact
  • 2 tablespoons olive oil
  • 2 garlic cloves crushed with the side of a knife
  • 1/4 teaspoon red pepper flakes
  • 1 teaspoon steak seasoning Montreal Seasoning by McCormick is recommended
  • 1 teaspoon lemon zest of
  • 2 teaspoons lemon juice
  • 1 tablespoon fresh parsley chopped
Instructions
  1. Heat a large skillet over medium high heat. Add olive oil, garlic, red pepper flakes, and shrimp. Season with grill seasoning or salt & pepper.
  2. Cook the shrimp 3 minutes or until just pink. Toss with lemon zest, juice, & chopped parsley.
  3. Remove shrimp to a serving platter, leaving the garlic cloves in the pan.

Oriental Mushroom Appetizer
Ingredients
  • 1/4 cup extra virgin olive oil
  • 1/4 cup white vinegar
  • 2 tablespoons soy sauce
  • 2 tablespoons chopped garlic
  • 5 cups mushrooms about 1 pound
  • 2 tablespoons thinly sliced green onions or more
Instructions
  1. Combine the oil, vinegar, soy sauce, garlic and mushrooms in a sauce pan.
  2. Bring to a boil then reduce heat and simmer 15 minutes or until liquid is mostly absorbed stirring occasionally.
  3. Cool, strain, add green onions and serve with toothpicks.

  • 2 3 oz packages ramen noodles, cooked according to directions
  • 6 eggs
  • 1 red bell pepper chopped
  • 1 large carrot grated

Instructions
  1. Whisk the eggs together with one of the seasoning sachets from the ramen noodles. Discard the other one.
  2. Mix together the noodles, egg, bell pepper and carrot. You may find you need to chop some of the noodles into smaller pieces with the spoon as you go to make this more managable.
  3. Pour the mixture into a greased muffin tin. Sprinkle the tops with parmesan cheese and bake at 180 degrees Celcius until they are puffed and set - about 15 minutes.
  4. Allow to cool and remove from the tin. Serve as a light lunch with salad or as a snack.
  5. These freeze well.

Breakfast, appetizer, couchgatin’… These Cream Cheese Sausage Balls can be for almost anything. Add a dipping sauce and you’ve got a winner.

  • 1 lb. Sausage uncooked (you can use regular or hot)
  • 8 oz. Cream cheese softened
  • 1 1/4 cups Bisquick baking mix

  1. Preheat oven to 400°.
  2. Mix all ingredients until well combined. Roll into 1 inch balls.

  3. Bake for 20-25 minutes or until golden.

 

Below is the dipping sauce that was given to me along with the Sausage Balls Recipe.

Mustard Dipping Sauce:

1/2 cup Mayonnaise
1/2 cup sour cream
2 Tablespoons Dijon mustard
1 Tablespoon white wine vinegar
2-6 drops hot sauce
1 medium garlic clove, crushed

Combine all ingredients. Chill until serving.

Here is a recipe for a mustard dipping sauce that I have in my files and have used with other things. I find it goes really well with this Cream Cheese Sausage Balls Recipe.

Honey Mustard Dipping Sauce

Ingredients

1 1⁄2 cups mayonnaise
1⁄4 cup Dijon mustard
1⁄2 cup honey

Directions

Combine all ingredients in a bowl and mix well.

Cover and refrigerate for at least two hours; overnight is even better.

Enjoy.

When I was just a little fellow I was playing at a friend’s house. His mother brought us a snack of saltine crackers. But it was more than just plain crackers.

I asked my friend what was on the cracker and he said “butter”. His Mom had spread butter on the crackers and toasted them in the oven.

I never forgot that snack and have made it many times over the years. Now I’ve discovered an even better snack featuring saltines.

  2. Melt sugar and butter until foamy (3 minutes). Pour over crackers and spread to coat.

  3. Bake 10 minutes in 350ºF oven. Remove from the oven.

  4. While hot, sprinkle with chocolate chips, let soften and melt, then spread. Sprinkle with nuts.

  5. Let cool and then refrigerate until hardened.

  6. Break into pieces like peanut brittle.

  2. Form 1-in. balls of dough and place in mini muffin tins. Using your fingers dusted with flour press dough into the bottom and sides of tins.
  3. Fill each mini pie with about 1 tbsp of the cherry pie filling.
  4. Bake uncovered for 18-20 minutes or until lightly browned.
  5. Cool completely before serving. Top each mini pie with a pecan half just before serving.

  • 1 8 ounce package refrigerated crescent roll dough
  • 4 cheese sticks halved

Garlic Butter Glaze:

  • 1/2 teaspoon Italian seasonings
  • 1/4 teaspoon garlic powder
  • 1 Tablespoon grated Parmesan cheese
Instructions
  1. Preheat oven to 350 degrees.
  2. Take each triangle of crescent roll dough and place about 6 pepperoni on the bottom of the triangle. Place half of a cheese stick on top and roll up. Place seam side down on a cookie sheet and bake for 10-14 minutes or until golden brown.
  3. While rolls are cooking, combine the melted butter, Italian seasonings, garlic powder and Parmesan cheese in a small bowl.
  4. When rolls are done remove from the oven and brush with the garlic butter glaze.
  5. Serve with marinara or ranch for dipping.
