  • 1 1/2 pounds ground beef
  • 1 cup quick-cooking oatmeal
  • 1 5 ounce can evaporated milk
  • 1/4 cup chopped onion
  • 1 teaspoon salt
  • 1 teaspoon chili powder
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon black pepper
  • 1 cup ketchup
  • 3/4 cup packed brown sugar
  • 1/4 cup chopped onion
  • 1 teaspoon liquid smoke
  • 1/4 teaspoon garlic powder
Instructions
  1. Preheat oven to 350F.

  2. In a very large bowl combine ground beef, oatmeal, milk, 1/4 cup onion, salt, chili powder, 1/4 teaspoons garlic powder, and pepper.

  3. Shape into 1-inch meatballs. Place on a 15x10x1-inch baking pan.

  4. Bake for 15 minutes or until no longer pink. Drain well.

  5. Meanwhile in a medium bowl combine ketchup, brown sugar, 1/4 cup onion, liquid smoke, and 1/4 teaspoons garlic powder.

  6. Pour over meatballs.

  7. Bake for 10 minutes more or until sauce is heated through.

  8. Stir gently to combine sauce and meatballs.

  9. Serve and enjoy.

These Meatball Bubble Biscuits are FANTASTIC! These little biscuits have meatballs and cheese inside. Dip them in marinara sauce for a yummy snack.

  • 1 16 1/3 ounce can ready-to-bake refrigerated buttermilk flaky biscuits (or other LAYER biscuits)
  • 8 frozen cooked Italian meatballs thawed, each cut in half
  • 3 ounces mozzarella string cheese each cut into 6 pieces
  • 1 tablespoon grated Parmesan cheese
  • 1/2 teaspoon dried Italian seasoning
  • 1/4 teaspoon garlic powder
  • 1 cup marinara sauce heated
Instructions
  1. Heat oven to 375°F.
  2. Separate dough into 8 biscuits. Separate each biscuit into 2 layers. Press each biscuit layer to form a 3-inch round.
  3. Place 1 meatball half, cut side up, and 1 string cheese piece in center of each dough round. Wrap dough around meatball and cheese, pressing edges to seal.
  4. Place seam side down in single layer in ungreased 8 or 9-inch round cake pan.
  5. Sprinkle evenly with Parmesan cheese, Italian seasoning and garlic powder.
  6. Bake at 375°F for 20 to 25 minutes or until golden brown and biscuits are no longer doughy in center.
  7. Serve warm biscuits with warm marinara sauce for dipping.

Barbecue Deviled Eggs are a unique spin on regular Southern Deviled Eggs

  • 12 eggs
  • 3 tablespoons mayonnaise
  • 2 tablespoons barbecue sauce
  • 1 tablespoon yellow mustard
  • 1 teaspoon yellow mustard
  • 1 pinch kosher salt
  • fresh ground black pepper
  • hot sauce a dash or two will do
  • 2 scallions thinly sliced
  • smoked paprika or regular paprika, to garnish
Instructions
  1. Bring a medium pot of water to a boil, then turn down to a simmer.

  2. Using a slotted spoon, gently lower eggs into the water and simmer for 9 minutes. Reduce heat if it simmers too much, you don't want the eggs to crack.

  3. Drain water from the saucepan and run cold water over the eggs until they are cool enough to handle.

  4. Peel the eggs and cut in half.

  5. Remove the yolks and place them in a bowl.

  6. Add the mayonnaise, barbecue sauce, mustard, salt, pepper, and hot sauce to taste; whisk until smooth.

  7. Use a spoon to scoop the yolk mixture into the whites. (If you like, you can use a pastry bag to pipe the yolk mixture into whites).

  8. Garnish the tops with thinly sliced scallions and a dash of paprika.

Instructions
  1. Preheat oven to 325 degrees.

  2. Combine dry Bisquick mix, raw sausage, and cheese in a large mixing bowl. (***mixture will be very dry -- so it's important to allow your sausage and cheese to come to room temperature before combining.).

  3. Spray baking sheet with nonstick cooking spray.

  4. Form small balls (more like loose clumps) out of the mixture, and line balls on baking sheet about 2 inches apart.

  5. Bake for 30 minutes until browned and crispy!

The only caution I would add is to check for taste before adding salt. Sometimes blue cheese is salty enough and additional salt is not needed.

Buffalo Style Stuffed Eggs
Ingredients
  • 6 eggs
  • 1/4 cup blue cheese crumbled
  • 2 tablespoons mayonnaise
  • 1 1/2 teaspoons parsley minced
  • 1/4 teaspoon Tabasco sauce
  • 1/4 teaspoon salt
  • 1/8 teaspoon pepper
  • 1/4 teaspoon celery salt
  • 1 celery rib finely diced
Instructions
  1. Hard cook eggs. Cool, shell, then cut in half.
  2. Mash yolks and mix well all other ingredients except diced celery.
  3. Spoon yolk mixture back into egg white halves.
  4. Garnish with diced celery.

They are fabulous. The result reminds me of a restaurant chain’s cheddar biscuits, and yet different, too.

I used leftover ham from Thanksgiving and served them with ballpark mustard.

Holiday Ham Balls
Ingredients
  • 3 cups buttermilk baking mix
  • 1 1/2 cups smoked ham
  • 4 cups sharp cheddar cheese
  • 1/2 cup Parmesan cheese
  • 2 teaspoons parsley flakes
  • 2 teaspoons spicy brown mustard
  • 3/4 cup milk or as needed to be able to form the mixture
Instructions
  1. Heat oven to 350 Fahrenheit. Lightly grease jelly roll pan, 15 1/2 x 10 1/2 inch.
  2. Mix thoroughly the Bisquick, finely chopped, fully cooked ham, and remaining ingredients. Shape mixture into 1 inch balls.
  3. Place about 2 inches apart in pan.
  4. Bake 20 to 25 minutes or until brown. Immediately remove from pan. Serve warm.

Candied Almonds – A Delicious Treat

These Candied Almonds are deadly, can’t keep my hands off them!! Easy, pretty, and delicious. Glazed almonds are a lovely addition to Christmas baskets or for a hostess gift.

 

I’ve always bought candied almonds at the mall around Christmas time (who can resist that heavenly smell?!) But now I can have them year-round.

There goes my diet!!!

Candied almonds are delicious on their own as a sweet snack, but even better when you use them as an ingredient for other goodies!

You can dip glazed almonds in chocolate for a really good treat. Or chop them up and add them to your favorite chocolate fudge recipe.

You can also use them in almost any type of homemade candy bars. I love mixing them in with bar cookies!

Need something crunchy to top a salad, sundae, or waffle? Candied almonds to the rescue!

One hint that makes cleanup so much easier…use parchment paper to line the baking pan.
