The Absolute Best Southern Fried Pork Chops in the World! This is a staple Southern fried pork chop recipe. Super great seasoning!

 

Nothing really fancy but they are always super tasty and so easy to pull together.

Like I said the seasoning is great plus they are not greasy in the littlest bit!

The coating is a basic flour mix given to me by a friend that her former mother-in-law, who grew up in Caruthersville, Missouri, gave to her.

She also filled me in on her trick to frying it. The same trick she used for fried chicken!

Ingredients
  • 1 lb pork chop
  • 1 1/2 cups flour
  • 1 tablespoon garlic powder
  • 1/2 tablespoon salt
  • 1 teaspoon pepper
  • 1 teaspoon seasoning salt
  • water Milk, Buttermilk or Egg Wash can be substituted
  • oil for frying
Instructions
  1. Mix the dry ingredients in a resealable bag (Ziplock).

  2. Rinse the pork chops under running water. Toss them into the ziplock bag and shake, to coat well.

  3. In a cast-iron skillet, cook the chops in enough oil to come 1/2 way up the side of the chops, for example - 1-inch chops need 1/2 an inch of oil, on medium-high heat for approximately 4 minutes each side, until golden brown.

  4. For the last 30 seconds of cooking the second side, increase the heat to high, to “cook the grease out of it” (The mother-in-law secret for Southern-fried!).

  • 1/2 pound elbow macaroni
  • 4 tablespoons butter
  • 2 eggs
  • 6 ounces evaporated milk
  • 1/2 teaspoon hot sauce
  • 1 teaspoon kosher salt
  • fresh black pepper to taste
  • 1/2 teaspoon dry mustard
  • 10 ounces sharp cheddar cheese shredded
Instructions
  1. In a large pot of boiling, salted water cook the pasta to al dente and drain. Return to the pot and melt in the butter. Toss to coat.

  2. Whisk together the eggs, milk, hot sauce, salt, pepper, and mustard. Stir into the pasta and add the cheese. Over low heat continue to stir for 3 minutes or until creamy.

Ingredients
  • 6 large potatoes
  • 3 -4 scallions
  • 3 -4 tablespoons extra virgin olive oil
  • 1 -2 teaspoon white wine vinegar
  • salt & freshly ground black pepper
Instructions
  1. Scrub the potatoes, or peel them if you don't like skins. Cut into 1-inch cubes and cook in boiling water about 15 minutes or until almost starting to fall apart.
  2. While the potatoes are cooking, slice the spring onions very finely, including the green part.
  3. Drain the potatoes and transfer to a bowl. While they're still hot, pour in the olive oil and mix well.
  4. They should start to lose their shape a bit- this is the secret of this salad!
  5. Add the spring onions, vinegar, salt, and black pepper.
  6. Taste as you go along and adjust the amounts of salt, pepper, vinegar, and oil to your taste.
  7. Leave to cool; chill if you wish, and serve.

Crock Pot BBQ Ribs

Ingredients

3⁄4 teaspoon black pepper
3⁄4 teaspoon white pepper
1⁄2 teaspoon cayenne pepper
1 teaspoon ground cumin
1⁄3 cup brown sugar
1 tablespoon paprika
1 1⁄2 teaspoons salt
4 lbs beef ribs
0.75 (16 ounce) bottle barbecue sauce

Directions

Combine the rub ingredients mixing well. Rub on all sides of ribs.

Place ribs meaty side up in the crock pot. Cover; cook on low for 6 hours.

Drain the grease from the crock. Place the ribs back in and cover with bbq sauce.

Cook for another hour.

Ingredients
  • 8 ounces egg noodles
  • 1 10 1/4 ounce can cream of celery soup
  • 1/2 cup mayonnaise
  • 3/4 cup evaporated milk
  • 1 cup grated cheddar cheese divided
  • 1/2 cup finely chopped celery
  • 1/2 small onion finely chopped
  • 4 ounces mushrooms drained (optional)
  • 1 teaspoon black pepper
  • 1 7 ounce can tuna, with juice
Instructions
  1. Preheat oven to 325°F.
  2. Cook the egg noodles to al dente in boiling salted water; drain well.
  3. Mix all of the ingredients together in a large casserole dish, reserving 1/2 cup of cheese.
  4. Sprinkle reserved cheese over the top.
  5. Bake for 30 minutes.

Chocolate Chip Oatmeal Bars
Ingredients
  • 1 1/2 cup brown sugar firmly packed
  • 1 cup Crisco
  • 2 tablespoons molasses
  • 2 teaspoons vanilla
  • 2 large eggs
  • 3 cups quick-cooking rolled oats
  • 1 cup all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 3/4 cup chopped nuts
  • 1 12 ounce package semi-sweet chocolate chips (2 cups)
Instructions
  1. Heat oven to 350°F. Grease 15 x 10 or 13 x 9-inch pan.
  2. In a large bowl, beat the brown sugar and shortening until light and fluffy. Add the molasses, vanilla and eggs; blend well. Stir in the oats, flour, baking soda and salt; blend well. Stir in nuts and chocolate chips.
  3. Spread the mixture in greased pan.
  4. Bake at 350°F. for 20 to 25 minutes or until light golden brown and the center is set.
  5. Cool slightly. Cut into bars.

Ingredients
  • 1 -1 1/2 pounds cubed beef stew meat
  • 1/2 cup flour
  • 1 1/2 teaspoons salt
  • 1/2 teaspoon pepper
  • 1/4 cup vegetable oil
  • 1 onion chopped fine
  • 1 carrot chopped fine
  • 1/4 cup finely chopped celery with a few minced leaves
  • 1 tablespoon dried parsley
  • 1 pinch thyme
  • 3 1/2 cups beef broth
  • 2 medium potatoes diced
  • 2 carrots diced
  • 2 onions diced
Instructions
  1. Put the flour, salt and pepper in a large ziploc bag.
  2. Heat the oil over medium heat in a large dutch oven.
  3. Place the meat in the bag with the flour and shake until well coated. Shake off meat pieces and add them to the oil and stir until slightly browned, Add the remaining flour from the bag and the finely chopped onion. Stir until well browned.
  4. Add the finely chopped carrot and next 4 ingredients. Cover and cook over low heat for 1 1/2 hours (stirring every 15 minutes).
  5. Add the diced potatoes, carrots, and onions, cook for another 45 minutes or until the potatoes are tender.

  • 1 3/4 cups flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup sugar
  • 1/2 cup brown sugar
  • 1 teaspoon vanilla
  • 1/2 cup shortening
  • 1/2 cup peanut butter
  • 1 egg
  • 2 tablespoons milk
  • additional sugar
  • 48 Hershey chocolate kisses unwrapped
Instructions
  1. Combine the shortening, sugars, egg, vanilla and peanut butter. Add the dry ingredients and milk.
  2. Shape the dough into small balls, then roll in sugar. Place on an ungreased cookie sheet.
  3. Bake for 10 minutes at 350.
  4. Place a kiss in middle of each cookie pressing until the edges crack.

  3. In a large non-stick skillet, heat the margarine and oil over medium-high heat. Add the chicken and cook about 4 minutes, until seared. Turn the chicken, cook another 4 minutes until just cooked through.
  4. Pour the honey mixture over the chicken and cook, turning chicken to coat as the sauce begins to thicken, about 2 min.
  5. Serve the chicken breasts with honey-orange glaze spooned over the top.
