Thanksgiving Leftover Turkey Soup! I Make This Every Year And It’s Almost As Big A Hit As The Holiday Dinner Itself!

This is a DELICIOUS recipe, literally BURSTING with flavor. I hate to sound like a commercial, but it’s true.

Excellent soup and the seasonings are spot on. I will use this recipe over and over.

I also added leftover fresh thyme and sage from Thanksgiving.

Turkey Soup

Ingredients

2 cups diced cooked turkey
1 yellow onion, chopped
1 cup celery, diced
1 cup carrot, diced
1 cup fresh sliced mushrooms
1 teaspoon dried basil
1⁄2 teaspoon dried rosemary
1 garlic clove (smashed or finely diced)
2 teaspoons butter
3 cups chicken broth
2 cups diced potatoes
1 cup whole milk
1⁄2 cup sour cream
parsley flakes (to garnish)

Directions

Sauté the vegetables (with the exception of the potatoes), basil, garlic and rosemary in the 2 tsp butter until lightly browned.

Add potatoes, turkey and broth.

Simmer approximately 15 minutes.

Reduce heat; add milk, salt and pepper to taste.

Simmer 20 minutes.

Remove from heat and serve hot with a hearty dab of sour cream and a sprinkle of parsley for garnish.

Ingredients
  • 3 cups leftover turkey
  • 3 garlic cloves Minced
  • 1 onion Chopped
  • 1 pepper Chopped
  • 1 teaspoon garam masala
  • 1 teaspoon paprika
  • 1 teaspoon cumin
  • 1 teaspoon coriander
  • 1/2 teaspoon ginger
  • 1/2 teaspoon curry
  • 1 14 1/2 oz can diced tomatoes
  • 1 cup chicken broth or 1 cup turkey broth
  • 1 10 oz package frozen spinach or 1 (9 ounce) bag fresh spinach
  • 1 cup sour cream
  • 6 ounces egg noodles Cooked
Instructions
  1. Cook up the garlic, onion, and pepper in a tablespoon of oil for 3-4 minutes on medium heat and then add in the turkey.
  2. Next, you'll add in the spices; the garam masala, paprika, cumin, ginger, curry, and coriander. Add in the tomatoes and stir it all together.
  3. Next up you'll add in the stock and let it cook on medium heat for about 5 minutes.
  4. Add in the spinach and give it a whirl or two until it heats up and wilts down into the meal.
  5. Now stir in the cup of sour cream.
  6. The final step is to add in the noodles and serve it up.

Ingredients
  • 5 quarts water
  • 1 cup celery chopped
  • 1/2 cup celery leaves chopped
  • 1 cup onion chopped
  • 7 chicken bouillon cubes
  • 1 tablespoon salt
  • 1/4 teaspoon black pepper ground
  • 1 bay leaf
  • 1/2 cup fresh parsley chopped (see notes)
  • 1 cup fresh peas or 1 cup frozen peas
  • 1 cup carrot sliced
  • 1 cup cut green beans fresh or frozen
  • 4 cups fine egg noodles 8 Oz
  • 1/4 cup butter
  • 1/4 cup flour
  • turkey carcass from a 15-20 pound turkey
Instructions
  1. In an eight quart kettle or Dutch oven place turkey bones, water -- down through to and including the bay leaf.
  2. Heat to boiling; reduce heat, cover and simmer for 1 hour.
  3. Remove the bones to a platter and let cool.
  4. Add the parsley through to green beans. Heat to boiling; reduce heat and simmer for 10 minutes.
  5. Meanwhile, scrape meat from the carcass and return meat to the soup pot. Add liquid if required. Heat to boiling; add noodles and cook uncovered for 10 minutes.
  6. Melt butter in a small frying pan; stir in flour. Cook over low heat, stirring constantly, until the flour browns. Stir into boiling soup.
  7. When the soup returns to a boil; reduce heat and simmer for 5 minutes.
Recipe Notes

Serve hot in large bowls - as if there were any other kind!

Turkey Salad – Easy & Quick To Make

Excellent Turkey Salad…easy…quick to make! It’s a good way to use up leftover turkey at Thanksgiving. Easily made with chicken also.

When I made it everybody devoured it so fast I barely got to try it!

This is very good served over a bed of lettuce or as a sandwich.

I didn’t like chicken salad sandwiches before I made this. Now, I actually find myself craving it from time to time.

  • 2 cups cubed cooked chicken or turkey
  • 1/3 cup sliced celery
  • 1/3 cup salad dressing or mayonnaise

  • 1/8 teaspoon onion salt
  • 1 dash pepper
Instructions
  1. Combine chicken and celery in a bowl.
  2. Mix salad dressing (I used Miracle Whip), salt, poultry seasoning, onion salt, and pepper.
  3. Pour over chicken and celery; toss.
  4. Cover; chill at least 2 hours.
  5. For variation, fold in one of the following: 1 cup chilled fruit (mandarin orange segments, chopped apple, seedless green grapes or pineapple tidbits) or: 1/4 cup chopped sweet pickle or: 4 slices bacon, crisply fried and crumbled or: 1/3 cup chopped nuts.

Quick Turkey Pot Pie
Ingredients
  • 2 cups mixed vegetables
  • 2 cups cooked turkey chopped
  • 1 10 ounce can cream soup, undiluted (chicken or mushroom)
  • 1 cup Bisquick
  • 1 egg
  • 1/2 cup milk
Instructions
  1. Place turkey and vegetables in a 8 inch pie pan. Cover with soup.
  2. Mix egg, milk and Bisquick. Pour over top.
  3. Bake at 400F  30-35 minutes or until golden.
Recipe Notes

Serve with favorite salad.

If you like you can use low fat sour cream instead of yogurt and romaine lettuce instead of red lettuce. The mixture also tastes good rolled in a tortilla.

Turkey Pita Sandwich

Ingredients

1 cup plain nonfat yogurt
1⁄2 cup peeled cucumber, minced
1 teaspoon dry dill weed
1 teaspoon dried mint
1 cup halved green seedless grape
1⁄2 cup diced green bell pepper
1 stalk celery, diced
3 cups cooked turkey (bite size chunks)
1⁄3 cup crumbled feta cheese
6 pita breads (cut in half)
1 head red leaf lettuce

Directions

In bowl stir together yogurt, cucumber, dill and mint. Add grapes, bell peppers, celery, turkey and cheese.

Chill at least 1 hour for flavors to mingle.

Line each pita half with red lettuce leaves. Then spoon turkey mixture into each sandwich.

Turkey Barbecue Sandwich
Ingredients
  • 2 tablespoons butter
  • 1/2 cup chopped onion
  • 1 8 ounce can tomato sauce, unsalted preferred
  • 1 cup ketchup
  • 3 tablespoons Worcestershire sauce
  • 3 tablespoons cider vinegar
  • 1 tablespoon brown sugar
  • 1/2 teaspoon prepared yellow mustard
  • 1/2 cup water or 1⁄2 cup low sodium chicken broth
  • 1/8 teaspoon ground cinnamon
  • 4 cups cooked turkey skin removed, cut into small cubes (white or dark meat or both)
  • 8 soft hamburger buns
Instructions
  1. Heat a medium saucepan over medium-high heat. Melt the butter, then add the onions and saute until softened.
  2. Add the remaining ingredients except the turkey and buns to the pan. Reduce heat to low; cover and simmer about 30 minutes. Taste for seasoning.
  3. Place the turkey in a large skillet over medium-low heat. Add enough of the sauce to generously moisten the meat, but not enough to make it soupy. (Extra sauce may be refrigerated for several days or frozen for later use.) Cover and cook until the turkey is hot, about 10 minutes.
Recipe Notes

Serve hot on hamburger buns.

Cheesy Rosemary Turkey Bake
Ingredients
  • 6 cups cooked turkey chopped
  • 1 cup mayonnaise not fat-free
  • 1/4 cup slivered almonds
  • 3 cups celery sliced 1/2 inch thick
  • 2 cups shredded cheddar cheese
  • 1/2 cup chopped onion
  • 2 tablespoons lemon juice
  • 1 teaspoon dried rosemary crushed (OR 1 Tbsp fresh, snipped)
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
Instructions
  1. Stir together all except 1/2 cup of the cheese.
  2. Spoon into 13x9 inch baking pan.
  3. Cover and bake at 350 degrees F for 45 to 55 minutes.
  4. Remove from oven and sprinkle with remaining cheese.
  5. Bake 5 more minutes, uncovered, or until cheese is melted.

This Best Leftover Turkey Gumbo is my favorite way to use leftover turkey. Must give credit where due….this is my modification to one of Emeril’s recipes – his was to boil a turkey specifically for gumbo – mine is to use up those leftovers!

This is an excellent use of leftover turkey. I’m going to make this from our leftover turkey every Thanksgiving from now on.

It’s so good and I love the smell while it’s cooking. It does take a while but worth it in the end.

The Best Leftover Turkey Gumbo
Ingredients
  • 1 1/2 pounds torn/shredded leftover turkey meat
  • 8 cups turkey broth or 8 cups chicken broth
  • 1 cup water
  • 1 1/2 cups canola oil
  • 1 1/2 cups flour
  • 2 cups chopped yellow onions
  • 1 cup chopped green bell pepper
  • 1 cup chopped celery
  • 1/2 pound smoked sausage finely chopped (I use food processor)
  • 1 lb smoked sausage sliced 1/4 inch thick
  • 1 tablespoon salt
  • 1 teaspoon cayenne pepper or a little more if you like
  • 2 tablespoons chopped green onions green part only
  • 2 tablespoons chopped fresh parsley leaves
Instructions
  1. Make the roux.
  2. In a large Dutch oven, over medium heat, combine the oil and flour. Cook, stirring constantly until dark brown (chocolate colored) for 20-30 minutes.
  3. Add all the chopped veggies to the roux, along with the chopped sausage. Cook, stirring occasionally, until the veggies are very soft, about 10 minutes. Add the salt and cayenne pepper.
  4. Add the broth and water, combining well. Bring to a boil, then reduce heat to medium-low and cook, uncovered, stirring occasionally, for 1 1/2 hrs.
  5. Add the turkey and sliced sausage to the gumbo.
  6. Cook 15 minutes more.
  7. Remove from heat, let sit for 5 minutes, then skim any fat that has risen to the surface.
  8. Stir in green onions and parsley.
Recipe Notes

Serve over rice, with hot french bread!

  • 2 cups original Bisquick baking mix
  • 1/3 cup mayonnaise
  • 1/3 cup milk
  • 2 tablespoons grated Parmesan cheese optional
  • 2 cups cubed cooked turkey or 2 cups cooked chicken
  • 2 medium green onions sliced
  • 7 slices bacon crisply cooked, and crumbled (or more if desired)
  • 1/4 cup mayonnaise
  • 1 large tomatoes chopped
  • 1 cup shredded Monterrey jack cheese or 1 cup similar cheese
Instructions
  1. Preheat oven to 450 degrees F. Grease a cookie sheet.
  2. In a bowl, mix the Bisquick with 1/3 cup mayo and the milk until soft dough forms.
  3. Roll or pat the dough into a 12 x 8-inch rectangle on the cookie sheet.
  4. Sprinkle 2 tablespoons grated Parmesan (if using) cheese over the crust.
  5. Bake for 8-10 minutes or until golden brown.
  6. In another bowl, mix the chopped turkey, onions, bacon and 1/4 cup mayo.
  7. Spoon over the crust to within 1/4-inch of the edge.
  8. Sprinkle with tomatoes and cheese.
  9. Bake for 5-6 minutes, or until the turkey mixture in hot and the cheese is melted.
