I got this recipe from a friend years ago and have been making it ever since. Love it–actually I just made it 3 days ago. This is a must-try recipe!!!!!!

Ingredients
  • 4 8 ounce cans refrigerated biscuits
  • 2/3 cup sugar
  • 3 1/2 teaspoons cinnamon
Mixture
  • 1 cup butter
  • 1 cup brown sugar
  • 1 tablespoon cinnamon
  • 1 cup pecans
Instructions
Mixture:
  1. Heat ingredients and stir in a saucepan till boiling.

Biscuits:
  1. Cut each biscuit into 4 pieces and shake in bag with sugar and cinnamon. Arrange in a bundt pan that has been well buttered (I use butter spray).

  2. Pour dissolved mixture over top evenly.

  3. Bake at 350° for 35 to 40 minutes.

  4. Be careful when you take it out of the oven, if you try to snitch some. IT IS VERY HOT!

Crock Pot Beef Roast
Ingredients
  • 6 potatoes peeled and cut into large chunks
  • 5 carrots peeled and cut into 2-inch slices
  • 1 onion quartered
  • 2 -3 lbs boneless chuck roast
  • 1/2 cup beef broth
  • 1 tablespoon chives chopped
  • 2 tablespoons parsley chopped
  • 1/8 teaspoon pepper
  • 1 1 ounce package onion soup mix
  • 2 tablespoons Worcestershire sauce
  • 1 10 3/4 ounce can cream of mushroom soup
Instructions
  1. Put potatoes, carrots and onion on bottom of crockpot. Place the roast on top, fat side up.
  2. Pour in water or beef broth. Sprinkle chives, parsley, pepper and Onion Soup mix over the meat. Pour Worcestershire sauce and mushroom soup over meat.
  3. Cover and cook on low 8-10 hours.

  • 1 lb spicy bulk sausage breakfast sausage...i use jimmy dean hot

Instructions
  1. Preheat oven to 325 degrees.

  2. Combine dry Bisquick mix, raw sausage, and cheese in a large mixing bowl. (***mixture will be very dry -- so it's important to allow your sausage and cheese to come to room temperature before combining.).

  3. Spray baking sheet with nonstick cooking spray.

  4. Form small balls (more like loose clumps) out of the mixture, and line balls on baking sheet about 2 inches apart.

  5. Bake for 30 minutes until browned and crispy!

Buffalo Style Stuffed Eggs
Ingredients
  • 6 eggs
  • 1/4 cup blue cheese crumbled
  • 2 tablespoons mayonnaise
  • 1 1/2 teaspoons parsley minced
  • 1/4 teaspoon Tabasco sauce
  • 1/4 teaspoon salt
  • 1/8 teaspoon pepper
  • 1/4 teaspoon celery salt
  • 1 celery rib finely diced
Instructions
  1. Hard cook eggs. Cool, shell, then cut in half.
  2. Mash yolks and mix well all other ingredients except diced celery.
  3. Spoon yolk mixture back into egg white halves.
  4. Garnish with diced celery.

Blasted Rapid Roast Whole Chicken

This Blasted Rapid Roast Whole Chicken is fantastic! I made it for dinner at my house and it was SO GOOD. I love the bit of kick from the cayenne pepper.

Roast Whole Chicken

Blasting with high heat will shrink the skin and seal in all the juices to create an extremely moist and tender chicken with lovely crispy skin – and it will be on your table in about an hour.

This method will also work with a larger chicken, or even a turkey, but cooking time will need to be increased. You may adjust all seasonings to taste.

Blasted Rapid Roast Whole Chicken
Ingredients
  • 1 whole chicken about 3 to 3-1/2 pounds
  • 2 tablespoons oil
  • 2 tablespoons melted margarine or 2 tablespoons butter
  • 1 1/2 tablespoons lemon juice
  • 1 1/2 tablespoons seasoning salt
  • 1 teaspoon garlic powder
  • 1/2 teaspoon fresh ground black pepper
  • 1/8 teaspoon cayenne pepper optional
  • 1 whole lemon poked all over with holes using a fork
Instructions
  1. Rinse the chicken inside and out well under cold water, then pat dry using a paper towel.
  2. In a small bowl mix the lemon juice with oil and melted butter until blended, then rub all over the chicken.
  3. Using clean hands rub the inside and outside of the chicken with seasoned salt, garlic powder, black pepper and cayenne (you can season the chicken under the skin also if desired).
  4. Place the lemon/s inside the cavity.
  5. Place the chicken into a baking dish (You may want to add in a little water to the pan to prevent smoking). Using cotton string tie the legs together tightly.
  6. At this point you may cover and refrigerate for up to 6 hours (not more than that or the acid in the lemon juice will start to "cook" the chicken).
  7. Set oven to 450 degrees F.
  8. Roast the chicken at 450 degrees for 20 minutes, then reduce the heat to 400 degrees and continue roasting for about 40 minutes (or until the internal temperature reaches about 175 to 180 degrees F. about 1 hour or a little less).
  9. Cover with foil and let sit for 15 minutes before slicing (do not slice before that time or the juices will flow out!).

Swedish Meatballs are really easy to prepare, and I like that I didn’t have to fry the meatballs. Simple and tasty, nice weeknight meal.

 

They can also be served as an appetizer.

You can make the meatballs the night before, so dinner prep is a snap. I almost always double the recipe so I have enough left over for a second meal down the road!

Great served over noodles, rice, or even potatoes.

For The Meatballs
  • 1 lb ground beef
  • 2/3 cup milk
  • 1/2 cup breadcrumbs
  • 1 egg
  • 1 teaspoon onion powder

For The Sauce
  • 1 10 3/4 ounce can condensed cream of mushroom soup
  • 1/2 cup sour cream
  • 1/2 cup milk
  • Kitchen Bouquet for color
Instructions
To Make The Meatballs:
  1. Preheat oven to 400ºF.
  2. Mix all ingredients for the meatballs together. Shape into balls. Place on cookie sheet. Bake for 10 minutes or until browned.

  3. Remove meatballs from oven and place in a casserole dish.

  4. Turn oven temperature to 350ºF.
To Make The Sauce:
  1. Stir together ingredients for the sauce and combine with the meatballs in the casserole.

  2. Bake, covered, for 1 hour.
  3. Let stand covered for 10 minutes before serving.

These Fruit Nut Slow Cooker Baked Apples are a delicious and different baked apple. These would be a good accompaniment for a pork roast or pork chops instead of apple sauce.

What better combination than apples with brown sugar, cinnamon and nuts. This recipe is a little different from others however, because it calls for dried apricots in the brown sugar mixture.

These would work well with other dried fruits and nuts too. Your house will smell divine when these are cooking!

Fruit Nut Slow Cooker Baked Apples
Ingredients
  • 4 large baking apples Rome or Cortland
  • 1 tablespoon lemon juice
  • 1/3 cup chopped dried apricot
  • 1/3 cup chopped walnuts or 1⁄3 cup pecans
  • 1/4 cup brown sugar packed
  • 1/2 teaspoon ground cinnamon
  • 2 tablespoons butter melted
Instructions
  1. Scoop out the center of each apple, leaving about 1/2 inch of the bottom. Peel top of apple down about 1 inch. Brush peeled edges with lemon juice.
  2. Mix apricots, nuts, brown sugar and cinnamon in a small bowl. Add melted butter and mix well.
  3. Spoon mixture evenly into apple cavities.
  4. Pour 1/2 cup of water into the bottom of slow cooker. Arrange apples in slow cooker.
  5. Cover and cook on LOW 3-4 hours, or until apples are tender.
  6. (optional) Serve warm with caramel ice cream topping.

I used leftover ham from Thanksgiving and served them with ballpark mustard.

Holiday Ham Balls
Ingredients
  • 3 cups buttermilk baking mix
  • 1 1/2 cups smoked ham
  • 4 cups sharp cheddar cheese
  • 1/2 cup Parmesan cheese
  • 2 teaspoons parsley flakes
  • 2 teaspoons spicy brown mustard
  • 3/4 cup milk or as needed to be able to form the mixture
Instructions
  1. Heat oven to 350 Fahrenheit. Lightly grease jelly roll pan, 15 1/2 x 10 1/2 inch.
  2. Mix thoroughly the Bisquick, finely chopped, fully cooked ham, and remaining ingredients. Shape mixture into 1 inch balls.
  3. Place about 2 inches apart in pan.
  4. Bake 20 to 25 minutes or until brown. Immediately remove from pan. Serve warm.

Can you believe Five Minute Microwaved Mashed Potatoes? It’s true!  Micro for 5 minutes, add your favorite toppings or ingredients and you have mashed spuds.

 

Nothing like mashed potatoes in 5-8 minutes without the boiling water. One-pot clean up, easy and quick.

I like to add some butter, maybe a little chicken broth, you can do sour cream, chives, herbs, cheese, bacon, cream, or milk. Pretty much anything you want.

This is just the basic recipe but use your imagination.

  • 8 red potatoes cut into bite size pieces
  • 2 tablespoons water
  • 1/2 cup liquid you can use cream, milk, broth, or a mix of both

  1. Prepare your spuds. Just wash good and cut in bite-size pieces. Place in a microwavable bowl, one that you will be serving in, and add the water and cover with plastic wrap.

Cook
  1. Cook on high for 3-5 minutes, remove plastic wrap and stir. Put the saran wrap back on and cook another 2-3 minutes until the spuds are soft.

Dress
  1. Now, the spuds are done. What do you with them is up to you. Butter is a must to me but you can go lighter if you want. Add some liquid the 1/2 cup -- either broth, cream, milk, and of course salt and pepper. Then use a fork or potato masher to smash them up.

  2. Now they are done -- NOW WHAT? -- Sour Cream? Bacon? Cheese? Scallions? Herbs? Onion? Anything you want.

Finish
  1. After adding all your flavors, you can return to the microwave covered in the plastic wrap for just 1 minute until heated and serve. But many times the potatoes are hot enough and any extras will heat up with any additional cooking time.

  2. Remove dough from both cans. Unroll dough; starting at center, press out each dough rectangle with hands to form a 12x8-inch rectangle. Cut each rectangle into 24 squares.

  3. Top each square with cheese cube and pepperoni slice. Wrap dough around filling to completely cover; firmly press edges to seal. Place seam side down with sides touching in sprayed pie pans.

  4. In a small bowl, combine oil and Italian seasoning; mix well. Drizzle over filled dough in pans. Sprinkle with Parmesan cheese.

  5. Bake at 400°F For 16 to 22 minutes or until golden brown.

  6. Serve warm pizza bites with warm pizza sauce.
