You just can't beat pork chops. Great comfort food.

Ingredients
  • 2 pork chops
  • 1/2 medium onion diced
  • 1 -2 slice bacon
  • 2 tablespoons butter
  • 2 tablespoons cornstarch
  • 3/4 cup water
  • salt & pepper
Instructions
  1. In 12" skillet, cook bacon on med hi heat. Remove bacon from skillet, but leave bacon drippings.
  2. Add 1 TBSP butter and diced onion. When transparent, remove from skillet.
  3. Reduce heat to medium, lightly salt and pepper both sides of pork chops and place in skillet. Brown both sides (approx 2-4 minutes each).
  4. Chop up bacon, and add both bacon and cooked onion to skillet.
  5. Add 3/4 cup water (add more if you want more gravy), 1 TBSP butter, cover and simmer until cooked (5-10 minutes - but can simmer for up to 45 minutes easily).
  6. Just before serving, mix 2 TBSP cornstarch with cool tap water (approx 1/4 cup).
  7. Place pork chops on plates, add corn starch/water mixture to gravy/drippings in skillet and bring to quick boil stirring frequently to form thick gravy.

I love recipes that I can throw together in my crockpot and forget about until dinner. This Slow Cooker Ham and Lentil Stew is exactly that.

Very good! Especially with the addition of the spinach. A great idea for those cold winter days!

This recipe is a delightfully pleasant change to the usual ham-and-potato dishes commonly found. The lemon juice is REALLY great in this.

The flavor improves, as do many soups, after a night in the ‘fridge.

  • 3 cups ham diced
  • 2 cups dried lentils
  • 2 cups carrots diced
  • 2 cups celery diced

  • 1 teaspoon dried oregano
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 6-ounce bag baby spinach leaves
  • 2 tablespoons fresh lemon juice
  • lemon slice garnish
Instructions
  1. In a 3 1/2-quart or larger crockpot mix all the ingredients together, except the spinach and lemon juice.

  2. Cover pot and cook on high for 4 to 5 hours or low for 7 to 9 hours or until lentils are tender.
  3. Add spinach and stir, cover, and cook the final 5 minutes or until tender.

  4. Stir in lemon juice, mix well, and serve.

Chicken Lettuce Wraps that are almost identical to P. F. Changs

Ingredients
  • 3 tablespoons oil
  • 2 boneless skinless chicken breasts
  • 1 cup water chestnut
  • 2/3 cup mushrooms
  • 3 tablespoons chopped onions
  • 1 teaspoon minced garlic
  • 4 -5 leaves iceberg lettuce
Special Sauce
  • 1/4 cup sugar
  • 1/2 cup water
  • 2 tablespoons soy sauce
  • 2 tablespoons of rice wine vinegar
  • 2 tablespoons ketchup
  • 1 tablespoon lemon juice
  • 1/8 teaspoon sesame oil
  • 1 tablespoon hot mustard
  • 2 teaspoons water
  • 1 -2 teaspoon garlic and red chile paste
Stir Fry Sauce
  • 2 tablespoons soy sauce
  • 2 tablespoons brown sugar
  • 1/2 teaspoon rice wine vinegar
Instructions
  1. Make the special sauce by dissolving the sugar in water in a small bowl. Add soy sauce, rice wine vinegar, ketchup, lemon juice, and sesame oil. Mix well and refrigerate this sauce until you're ready to serve.
  2. Combine the hot water with the hot mustard and set this aside as well. Eventually, add your desired measurement of mustard and garlic chili sauce to the special sauce mixture to pour over the wraps.
  3. Bring oil to high heat in a wok or large frying pan. Saute chicken breasts for 4 to 5 minutes per side or done. Remove chicken from the pan and cool.
  4. Keep oil in the pan, keep hot.
  5. As chicken cools mince water chestnuts and mushrooms to about the size of small peas. Prepare the stir fry sauce by mixing the soy sauce, brown sugar, and rice vinegar together in a small bowl.
  6. When chicken is cool, mince it as the mushrooms and water chestnuts are. With the pan still on high heat, add another Tbsp of vegetable oil. Add chicken, garlic, onions, water chestnuts and mushrooms to pan.
  7. Add stir fry sauce to the pan, saute mixture a couple of minutes then serve in lettuce leaves.

Fab-u-lous! Wow, this Olive Garden Alfredo Sauce Copycat is a winner. There were no leftovers in my house with this meal. Everyone loved it!

 

I added a bit of fresh nutmeg … perfection!

The best Alfredo sauce ever. This is actually several recipes combined into one. You can also add your choice of meat (chicken, shrimp or even crab).

There’s an OLIVE GARDEN just a few minutes away from me but I’ll never go there for Alfredo sauce again. I promise this is the best sauce ever. Definitely a dish you would want to impress your guest with.

  • 3 tablespoons sweet butter
  • 2 tablespoons olive oil
  • 2 garlic cloves minced
  • 2 cups heavy cream
  • 1/4 teaspoon white pepper
  • 1/2 cup grated Parmesan cheese
  • 3/4 cup mozzarella cheese
  • 1 12 oz box angel hair pasta
Instructions
  1. Melt butter in a medium saucepan with olive oil over medium/low heat. Add the garlic, cream, white pepper and bring mixture to a simmer. Stir often.
  2. Add the Parmesan cheese and simmer the sauce for 8-10 minutes or until the sauce has thickened and is smooth.
  3. When the sauce has thickened add the Mozzarella cheese and stir until smooth. STIR FREQUENTLY.
  4. While the sauce cooks, boil noodles for 3-5 minutes.
  5. Place pasta on serving plates and spoon sauce over pasta.

Ham Hopping John – Down Home Flavor

Ham Hopping John is one of my favorite New Years Day dishes. This is a fabulous version of it. Very good down Home Comfort food. Full of flavor.

 

Some that I have had in the past have been pretty bland…. NOT this one!

It definitely has that Down Home Comfort food quality. So Full of flavor. Sooooo tasty. Very addictive. And oh the smell as it cooks!!!

It’s also a great way to use leftover ham.

  • 2 cups black-eyed peas drained, rinsed
  • 8 cups water
  • 3/4 lb ham 1/2 inch cubed
  • 1/4 lb bacon 1/2 inch strip
  • 1 cup onion diced
  • 1 teaspoon garlic roasted
  • 1 cup long-grain white rice
  • 1/2 teaspoon dried thyme
  • 1 teaspoon red pepper flakes or to taste
  • 1/2 teaspoon sea salt
  • 1/4 teaspoon black pepper fresh ground
Instructions
  1. Put peas in a deep pan cover with 8 cups of water. Bring to a boil on high heat. Lower heat to simmer, cover the pot, cook for 45 minutes. (until peas are tender but not mushy)
  2. Place ham and bacon in frying pan over medium heat and fry for 5- 7 minutes, drain on a paper towel and set aside.
  3. Keep 1 tsp bacon fat, add the onions to the pan and sauté, stirring often until soft, (4 min) set aside.
  4. When beans are ready, drain and save 2 1/2 cups of cooking liquid.
  5. Add rice, ham, bacon, onions, roasted garlic, thyme, red pepper flakes, salt and pepper to beans and reserved cooking liquid. Stir well. Return to high heat and bring to a boil. Lower heat and cover.
  6. Cook 25 minutes (until rice is done and all liquid has evaporated).
  7. Turn off the stove and let sit covered for about 15 minutes.

Green Beans from a Can That Don’t Taste Like It!

As fast as you can heat Green Beans from a Can you can have this special side ready to serve! It’s amazing what a difference two ingredients can make.

 

It’s a super quick and easy fix for canned beans. The thyme is the addition to change the flavor to be better. Good recipe.

Using the shredded Parmesan makes it even better.

Adding fresh diced garlic is a great idea too!

These Garlic Flavored Saltine Crackers are buttery, garlicky goodness! A super-easy way to dress up boring saltine crackers. All my picky eaters love them.

 

I wanted crackers that did not call for Ranch dressing and this is perfect. Sometimes I do use dried parsley and add some red pepper for spice.

I’m sure they would be good with a garlic cheese dip or served on the side of nice tomato soup, or chili, or…

There are so many things they would go with, but they are perfect alone, IMHO.
