Confession: This is not Grandma’s Grandma’s Easy Chicken Noodle Soup recipe! It simulates her recipe. It’s much easier and has the same great flavor. I’m sure she would approve.

This soup is wonderful on a cold day or when feeling the need for comfort food. It is quick and easy to make.

It’s really good with this Grown Up Grilled Cheese.

Grandma’s Easy Chicken Noodle Soup Recipe

Grandma's Easy Chicken Noodle Soup
Ingredients
  • 5 cups chicken stock with all visible fat removed or 5 cups low-fat chicken broth
  • 1 large onion
  • 1/2 cup sliced celery
  • 1/2 cup sliced carrot
  • 3 garlic cloves minced
  • 1/2 teaspoon dried thyme
  • pepper
  • 4 boneless chicken breasts cut into 1/2 inch pieces
  • 1 tablespoon fresh parsley
  • 3 ounces wide noodles
Instructions
  1. In a medium sized pot combine the stock, onion, celery, carrots and spices except the parsley. Bring to a boil and cook for 3 minutes.
  2. Add the chicken and cook for 8-10 minutes or until tender. Stir in the parsley.
  3. While the chicken is cooking, cook the noodles in a large pot as per the package directions.
  4. Drain and add to soup. Enjoy!

Serve it up with Grown Up Grilled Cheese and enjoy!

Slow Cooker Smoked Sausage Stew

This Slow Cooker Smoked Sausage Stew is out of the ordinary! I love my slow cooker. It’s so nice to come home to the delicious smells coming from my kitchen.

It’s got the usual potatoes and tomatoes but it also includes smoked sausage and cabbage.

I guess it’s really a basic cabbage soup with smoked sausage. But the ease of throwing it in the slow cooker and walking away is still there.

Absolutely souuuperb!

I served this with a side of cornbread and WOW what a meal!

Ingredients
  • 1 package kielbasa or other smoked sausage
  • 1 small cabbage shredded
  • 3 medium potatoes diced
  • 1/2 package baby carrots diced
  • 1 can chicken broth can use 2 if needs more juice
  • 1 15 oz can diced tomatoes
  • Italian seasoning
Instructions
  1. Slice the smoked sausage and put in the slow cooker. Add the shredded cabbage, potatoes, carrots, chicken broth and diced tomatoes. Add the Italian seasoning.
  2. Cook on high for 3 to 4 hours. It will cook down and make more juice.

Tips and Tidbits

You can mix and match ingredients in this stew as much as you like. Make it yours!

Add onion and garlic. They’re always good additions to any stew.

Use rotel tomatoes with peppers to kick it up a notch.

Use navy or cannellini beans instead of the potatoes. Increase the amount of broth for a soupier stew.

Adding 1/2 a stick of butter really improves the dish considerably!

Fannie Farmer’s Scalloped Potatoes

This is Fannie Farmer’s Scalloped Potatoes recipe from her cookbook that I just recently found and tried. This dish is really simple to make.

 

This is a very old recipe…… meaning I am very old and my Grandmother made scalloped Potatoes this way.

Very easy and a good dish to start beginning cooks on!

My mother made her scalloped potatoes this way also, except she would layer thinly sliced onions and sliced Spam to her layers.

Instructions
  1. Preheat oven to 350 degrees F (180 C).
  2. Butter a 1 1/2 quart casserole.
  3. Cover the bottom of the casserole with a single layer of potatoes. Sprinkle generously with salt, pepper, flour and a few dots of butter.
  4. Repeat until all of the potato slices are used.
  5. Pour milk over the potato slices until the top is almost covered. Dot with the remaining butter.
  6. Bake for 1 hour or until the potatoes are soft.

Creamed Ground Beef SOS Recipe

One of my fondest food memories of my Air Force days was Creamed Ground Beef SOS. I’ve tried many times to duplicate it but have been mostly unsuccessful.

 

This is one recipe I can recommend, however, it’s darned close to the military version but really delicious in its own right.

SOS was originally made with dried chipped beef, however, many folks also refer to the ground beef version by the same name.

It’s a dish that’s not only good but very frugal.

  • 1 lb lean ground beef
  • 1/4 cup chopped onion
  • 1/4 cup flour
  • 1 teaspoon beef bouillon powder
  • 3/4 teaspoon salt to taste
  • fresh ground black pepper to taste
  • 1/4 teaspoon garlic powder or 1/4 teaspoon granulated garlic
  • 1/4 teaspoon onion powder optional or 1/4 teaspoon granulated onion (optional)
  • cayenne powder to taste
  • 1/2 teaspoon Worcestershire sauce
  • 2 1/4 cups milk
Instructions
  1. In a large skillet over medium heat, brown the ground beef and onion.
  2. Stir in the flour, granulated bouillon, salt, pepper, and garlic and onion powders (and cayenne, if using).
  3. Saute all together until flour is absorbed, about 5 minutes.
  4. Gradually stir in the Worcestershire sauce and milk.
  5. Bring it all to a simmer, stirring, and cook until thickened, about 5 to 10 minutes.
  6. Serve over toast, biscuits, noodles, rice, or potatoes.

Slow Cooker French Dip Sandwiches
Ingredients
  • 4 lbs rump roast or bottom round, sirloin, etc.
  • 1 10 1/2 ounce can beef broth
  • 1 beef bouillon crushed
  • 1 1/4 cups water
  • 1 tablespoon soy sauce
  • 1/4 teaspoon black pepper
  • 2 whole garlic cloves
  • 1 green pepper sliced (optional)
  • 1 red bell pepper sliced (optional)
  • 1 small yellow onion sliced
  • 8 French rolls or 2 French baguettes
  • 2 tablespoons olive oil
  • 8 slices provolone cheese
Instructions
  1. Place roast in slow cooker. Cover with broth, bouillon, water, soy sauce, black pepper, garlic, onions and peppers, if using. Salt the roast, if desired.
  2. Cook low for 7-9 hours.
  3. Preheat oven to 350°F.
  4. Split rolls or baguettes and brush with olive oil. Toast in oven until lightly browned. Top with cheese and toast until cheese just begins to melt.
  5. Thinly slice meat against grain and place on buns. Top with peppers and onions and serve with remaining juices for dipping.

If you’ve never had Slow Cooker Beef Short Ribs before then make this recipe and prepare yourself for a delicious beef treat.

You won’t believe how good these ribs are. I think I could have these every other night with no complaints! They’re yummy!!!!

I’ll admit this is the first time I made ribs in the Crock Pot – I did not know what to expect and was a little apprehensive – no need to be!

The ribs where so moist, the meat fell off the bones and the sauce was fabulous! I served it over rice. It was a totally wonderful meal!

  1. Put flour, salt and pepper in a bag. Add ribs and shake to coat.

  4. In same skillet, combine remaining ingredients. Bring to a boil, stirring. Pour over ribs.
  5. Cover and cook on low for 9 hours.

It is a very creamy recipe and one of the best I have ever made. And I have made a lot. No changes need to be made to this recipe. Some of the old ones are the best.

With time on it’s side – this recipe is hands down the best for traditional, homemade baked macaroni & cheese – comfort food.

Fannie Farmer's Classic Baked Macaroni & Cheese Recipe
Ingredients
  • 1 8 ounce package macaroni
  • 4 tablespoons butter
  • 4 tablespoons flour
  • 1 cup milk
  • 1 cup cream
  • 1/2 teaspoon salt
  • fresh ground black pepper to taste
  • 2 cups cheddar cheese shredded good quality
  • 1/2 cup breadcrumbs buttered
Instructions
  1. Preheat oven to 400°F.
  2. Cook and drain macaroni according to package directions; set aside.
  3. In a large saucepan melt butter. Add flour mixed with salt and pepper, using a whisk to stir until well blended.
  4. Pour milk and cream in gradually; stirring constantly. Bring to boiling point and boil 2 minutes (stirring constantly). Reduce heat and cook (stirring constantly) 10 minutes.
  5. Add shredded cheddar little by little and simmer an additional 5 minutes, or until cheese melts. Turn off flame.
  6. Add macaroni to the saucepan and toss to coat with the cheese sauce. Transfer macaroni to a buttered baking dish. Sprinkle with breadcrumbs.
  7. Bake 20 minutes until the top is golden brown.

Tips & Tidbits

You can also freeze this recipe in zip-lock bags for later use – once you have mixed the macaroni along with the cheese sauce allow to cool to room temperature before adding to your freezer.

I generally pull it out the night before and allow macaroni and cheese to reach room temperature; I then add the macaroni and cheese to a buttered baking dish, sprinkle with bread crumbs and then bake for 20 to 30 minutes, until golden brown on top and bubbling.

Tips and Tidbits About This Rich and Moist Banana Bread

This recipe needs no improvement but it’s nice to add a sprinkle of brown sugar on the top before baking… really adds a little extra without being too sweet.

You can change the shape and still use the same recipe. I actually use this recipe to make muffins.

If you want to venture out you can use this recipe and just add in some stuff. I think chocolate chips or dried cranberries are good.

Breakfast Strata – My Choice

This is My Choice Breakfast Strata! I have several recipes for breakfast casseroles that are among my favorites. If I could only have one this would be it.

 

One thing I really like about casseroles is their versatility.

With most, you can add ingredients and not throw off the recipe very much at all. I’ve used breakfast sausage in this instead of ham and bacon. Of course, it changes the flavor but it’s still super!

This recipe does require refrigeration overnight. Not a bad thing really.

Do all the prep work the night before and the next morning all you have to do is pop it in the oven and breakfast is done.

  • 8 -10 slices white bread cubed
  • 2 cups cubed cooked potatoes
  • 3 cups shredded cheddar cheese 12 oz
  • 8 eggs
  • 3 cups milk
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dry mustard
  • salt and pepper
Instructions
  1. In a skillet, cook bacon until done. Remove bacon from skillet, leaving drippings in the pan. Add ham and onion to skillet. Cook and stir until onion is tender. Drain grease from ham and onion.
  2. In a bowl, combine bacon, ham, and onion.
  3. In a greased 13x9x2 baking dish, layer half the bread cubes, potatoes, and cheese, in that order. Top with all of the bacon mixture.
  4. Repeat another layer of bread, potatoes, and cheese.
  5. In a bowl, beat the eggs. Add milk, Worcestershire sauce, mustard, salt, and pepper to the eggs. Pour over all in the baking dish.
  6. Cover and refrigerate overnight.
  7. Remove from the refrigerator 30 minutes before baking.
  8. Bake, uncovered, at 325 degrees for 65-70 minutes or until a knife inserted near the center comes out clean.

Ingredients
  • 1 18 1/4 ounce box yellow cake mix
  • 4 eggs
  • 3/4 cup oil
  • 1 cup sour cream
  • 1 cup brown sugar
  • 1 tablespoon cinnamon
  • 2 cups icing sugar
  • 4 tablespoons milk
Instructions
  1. Preheat oven to 325°F Grease a 9 x 13 inch baking pan.
  2. Mix together cake mix, eggs, oil and sour cream. Pour into prepared baking pan.
  3. In a separate bowl combine brown sugar and cinnamon. Sprinkle evenly over cake batter then swirl into batter with a knife. The more you swirl, the more combined it will be so don't over-swirl otherwise the cinnamon/sugar will not be swirly.
  4. Bake for 40 minutes.
  5. For icing combine milk with icing sugar and mix thoroughly. Pour over slightly cooled (10-15 minutes on cooling rack) cake.
