Oven-Roasted Greek Potatoes – Delicious

These Oven-Roasted Greek Potatoes potatoes are a great side to roast beef or chicken, etc… or just on their own. Delicious!!!

The salt, lemon juice, oregano, and garlic all compliment each other beautifully.

These potatoes just soak up the flavors and couldn’t taste any better.

When I was growing up potatoes were a staple in our home. Usually along with pinto beans and cornbread. I know we had that at least 3 times a week! I don’t ever remember potatoes like these though!

They are delicious and the ones that get overly-brown in the pan and stick a bit are the best ones!

Delicious Oven-Roasted Greek Potatoes
Very crispy and delicious potatoes with excellent seasonings that blend together well!
Ingredients
  • 8 large potatoes peeled, cut into large wedges (about 6-7 wedges per potato)
  • 4 garlic cloves minced
  • 1/2 cup olive oil
  • 1 cup water
  • 1 tablespoon dried oregano get the Mediterranean, it's the best!
  • 1 lemon juiced
  • sea salt
  • fresh coarse ground black pepper
Instructions
  1. Preheat oven to 420°F Spray a cooking pan large enough to hold the potatoes with pam.
  2. Put all the ingredients into the baking pan. Season generously with sea salt and black pepper.
  3. Make sure your hands are very clean and put them in the pan and give everything a toss to distribute.
  4. The garlic will drop into the water/oil solution but its flavor will permeate the potatoes, and this way, it won't burn.
  5. Bake for 40 minutes.
  6. When a nice golden-brown crust has formed on the potatoes, give them a stir to bring the white underside up, season lightly with a bit more sea salt and pepper and just a light sprinkling of oregano.
  7. Add 1/2 cup more water if pan appears to be getting dry, and pop back into oven to brown other side of potatoes.
  8. This will take about another 40 minutes.
  9. Do not be afraid of overcooking the potatoes- they will be delicious.

Perfect Scalloped Potatoes
Ingredients
  • 4 cups thinly sliced potatoes
  • 3 tablespoons butter
  • 3 tablespoons flour
  • 1 1/2 cups milk
  • 1 teaspoon salt
  • 1 dash cayenne pepper
  • 1 cup grated sharp cheddar cheese
  • 1/2 cup grated cheese to sprinkle on top
  • paprika
Instructions
  1. In a small sauce pan, melt the butter and blend in flour. Let sit for a minute. Add all of cold milk, stirring with a whisk. Season with salt and cayenne.
  2. Cook the sauce on low until smooth and boiling, stirring occasionally with a whisk.
  3. Reduce the heat and stir in the cheese.
  4. Place a half of the sliced potatoes in a lightly greased one quart casserole dish.
  5. Pour half of the cheese sauce over the potatoes. Repeat with second layer of potatoes and cheese sauce.
  6. Sprinkle the remaining cheese on top. Top with some paprika for color.
  7. Bake uncovered for about 1 hour at 350°F.

Cracker Barrel's Copycat Hash Browns Casserole
Ingredients
  • 2 lbs frozen hash browns thawed
  • 1/2 cup butter melted
  • 1 10 1/4 ounce can cream of chicken soup
  • 1 pint sour cream
  • 1/2 cup onion peeled and chopped
  • 2 cups cheddar cheese grated
  • 1 teaspoon salt
  • 1/4 teaspoon pepper
Instructions
  1. Preheat oven to 350°F and spray an 11 x 14 baking dish with cooking spray.
  2. Mix all of the ingredients together, place in the prepared pan and bake for 20 minutes.
  3. Remove the casserole and stir well. Place back in the oven and bake for 25 more minutes or until brown on top.

These are seriously the World’s Best Twice Baked Potatoes. They do take some time to get prepped but the noises of appreciation coming from your friends and family will make it totally worth it.

I don’t miss an opportunity to serve them to guests and watch their faces as they dig in.

As far as I’m concerned the potato is the main dish. Everything else is the side. I do admit that I like a side of a big ole grilled ribeye steak though. Garlic toast ain’t bad either.

This really is an outstanding recipe and I guess you can tell it’s one of my favorites. The bacon cooked with the wine & garlic is definitely the knockout punch!

World's Best Twice Baked Potatoes
Ingredients
  • 8 baking potatoes
  • olive oil
  • salt
  • 6 -8 slices bacon chopped
  • 1/4 cup red wine
  • 1 teaspoon minced garlic
  • 1 cup butter
  • 1/2 cup half-and-half works well with whole milk
  • 1 cup shredded cheddar cheese
  • 1 tablespoon onion powder
  • 2 tablespoons fresh chives or 2 tsp dried
  • 2 teaspoons dried parsley
  • 1/2 teaspoon black pepper
  • 1 teaspoon salt
  • paprika
Instructions
  1. Preheat oven to 400 degrees. While the oven is preheating rinse the potatoes and vent them with a fork 6-8 times.
  2. Lightly brush the potatoes with olive oil and sprinkle with sea salt. Bake in the oven for 45-60 minutes, until outside is getting crispy and inside feels soft.
  3. Towards the end of the potatoes baking, cook up the bacon on medium heat until lightly crispy. I usually cook the bacon first and chop it after it is crispy, then returning it to the pan. Add the wine and garlic. Feel free to add pepper to taste. Leave on very low heat.
  4. After removing the potatoes from the oven, use a knife to cut an oval in the top of the potato, leaving about 1/4 inch on all sides. Scoop out potato and put into a large bowl. When you are done you should have 8 potato shells.
  5. Combine the potato and butter. Blend with a mixer on low speed until the butter melts.
  6. Add the milk, seasoning, 3/4 cup of the cheese and the bacon mixture. Beat on high speed until smooth. Add more seasoning if necessary to taste.
  7. Spoon the mixture into the shells. Use the remaining cheddar cheese to top each potato and sprinkle with paprika.
  8. Place the potatoes on a baking sheet or dish and bake at 375 degrees for about 30 minutes, or until the potato is warm and the cheese on top is crispy.

This is a very old recipe…… meaning I am very old and my Grandmother made scalloped Potatoes this way.

Very easy and a good dish to start beginning cooks on!

  2. Butter a 1 1/2 quart casserole.
  3. Cover the bottom of the casserole with a single layer of potatoes. Sprinkle generously with salt, pepper, flour and a few dots of butter.
  4. Repeat until all of the potato slices are used.
  5. Pour milk over the potato slices until the top is almost covered. Dot with the remaining butter.
  6. Bake for 1 hour or until the potatoes are soft.

The Cajun seasoning recipe included here is good for all Cajun dishes. I’m thinking Red Beans and Rice is in my near future with this seasoning mix!

Ingredients
  • 3 large russet potatoes
  • 1 1/2 T. olive oil
  • 1 T. Cajun seasoning recipe below
  • a good pinch of salt...
Cajun Seasoning
  • 2 1/2 T. smoked paprika
  • 2 T. garlic powder
  • 2 T. salt
  • 1 T. cayenne pepper
  • 1 T. black pepper
  • 1 T. onion powder
  • 1 T. thyme
  • 1 T. oregano
Instructions
  1. Combine all the spices and store in an airtight container.
  2. Wash and dry the potatoes, leaving the skin on, slice into even strips.
  3. Place the potatoes in a bowl and cover with cold water, allow to sit for 10 minutes.
  4. Drain the potatoes and pat dry. Add 1 T. olive oil, Cajun seasoning, and the salt to the potatoes. Toss to coat well.
  5. Grease the bottom of a large baking sheet with the remaining olive oil. Sprinkle just a little more Cajun seasoning over the bottom of the baking sheet.
  6. Place the potatoes on the baking pan in a single layer. Cover with tinfoil and bake in a 450-degree oven for 10 minutes, remove the tinfoil and continue to bake for an additional 15 minutes, stirring about 1/2 way through the cooking time.

Zucchini Squash is a staple in many Southern gardens.  It’s usually pretty easy to grow and rather prolific.  That means that there is usually some extra around.

These are light and crispy and incredibly easy to make.   If the plain version doesn’t suit your fancy, try adding about 1/2 teaspoon of curry powder to give them a kick.  I love them both ways!

Easy Garlic Roasted Potatoes

These easy garlic roasted potatoes are not only easy to make but are just as crispy and delicious as fried potatoes…but much healthier!

 

The potatoes are combined with some oil and garlic along with some other seasonings and then baked to a golden state.

After they are finished, just let them cool for a few minutes and then toss them with some freshly grated Parmesan cheese and finally garnish them with some chopped parsley to add to their eye appeal.

  3. In a large bowl, toss potatoes with the oil, garlic, salt, and pepper making sure they are fully coated.
  4. Spread potatoes evenly across baking sheet and bake for 35-40 minutes, stirring about halfway through.
  5. Remove potatoes from oven and transfer them to a plate lined with paper towels to blot off any excess oil. Allow to cool for a few minutes.
  6. Toss potatoes with the Parmesan and fresh parsley.
