Combine all the spices and store in an airtight container.

Wash and dry the potatoes, leaving the skin on, slice into even strips.

Place the potatoes in a bowl and cover with cold water, allow to sit for 10 minutes.

Drain the potatoes and pat dry. Add 1 T. olive oil, Cajun seasoning, and the salt to the potatoes. Toss to coat well.

Grease the bottom of a large baking sheet with the remaining olive oil. Sprinkle just a little more Cajun seasoning over the bottom of the baking sheet.

Place the potatoes on the baking pan in a single layer. Cover with tinfoil and bake in a 450-degree oven for 10 minutes, remove the tinfoil and continue to bake for an additional 15 minutes, stirring about 1/2 way through the cooking time.
