Crockpot Broccoli Cheese Soup

This Crockpot Broccoli Cheese Soup is a great soup to throw in the Crockpot on a busy day and come back later to a bowl of warm, cheesy soup.

The Velveeta thickens the soup just right.

Making the soup couldn’t be easier. Sauteeing the onion and peppers is the only active part of the recipe.

Once that is done just dump everything in the crockpot and four hours later you have crockpot broccoli cheese soup!

This is awesome. Especially since it’s so easy to make… Turn off the crock about 30 minutes before serving, and it thickens up really nice.

The addition of a teaspoon of Tabasco with minced jalapeno instead of green pepper adds some zip!

  3. Add spinach and stir, cover, and cook the final 5 minutes or until tender.

  4. Stir in lemon juice, mix well, and serve.

  • 1 bunch kale
  • 1 bunch greens collards, mustard, turnip
  • 1 large onion sliced
  • 1 tablespoon olive oil

  • 2 jalapeno peppers minced (discard seeds for less heat)
  • 1/2 teaspoon crushed red pepper flakes
  • 1/4 cup cubed ham I used prepackage mini cubes
  • 3 slices bacon
  • 2 1/2 cups water more if needed
  • salt and pepper
  • balsamic vinegar optional
Instructions
  1. Tear greens into large pieces and discard the thick vein. Add greens to a pot of boiling salted water (I use kosher salt). Let boil for about 6 minutes. Drain and Rinse.
  2. While the greens are boiling, preheat a heavy skillet with olive oil, add onion and garlic; saute until onions are lightly brown, add minced jalapeno peppers and cook for an additional minute or two.
  3. Put the sauteed onions in the slow cooker then add the drained greens, ham, bacon, crushed red pepper, and water.
  4. Cook on high for 4 hours or until the greens are tender.
  5. Serve with balsamic vinegar.

I love garlic, and I love chicken cooked in the crock pot (so tender it falls right off of the bones), so this Crock Pot Garlic Chicken is a perfect combo of the two.

The aroma it creates while cooking is amazing. Every time I make this I swear it’s the only way I’ll cook chicken in a crock pot from now on.

It seems like every other time my chicken comes out dry with a weird aftertaste. I also made gravy out of the leftover juices to go over red mashed potatoes, which was great.

Ingredients
  • 6 chicken legs more or less as needed
  • 20 garlic cloves skins left on
  • 1 teaspoon dried rosemary
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/4 teaspoon red pepper flakes
  • 1/3 cup chicken broth
  • 3 tablespoons oil
Instructions
  1. Place garlic cloves in crock pot.
  2. Mix spices together in medium bowl.
  3. Pour oil into separate medium bowl.
  4. Dip the chicken legs in oil, then roll around in spice bowl, until chicken is nicely coated in spices.
  5. Place chicken legs in crock pot with garlic cloves surrounding it.
  6. Pour chicken broth over all ingredients.
  7. Cook on Low for 8 hours.

The Ultimate Slow Cooker Corn Chowder Recipe!
Ingredients
  • 6 slices bacon sliced
  • 1/2 cup onion chopped
  • 2 cups potatoes diced, peeled
  • 20 ounces frozen whole kernel corn broken apart
  • 16 ounces cream-style corn
  • 1 tablespoon sugar
  • 1 teaspoon Worcestershire sauce
  • 1 teaspoon seasoning salt
  • 1/4 teaspoon pepper
  • 2 cups chicken stock
  • 1 cup heavy cream
Instructions
  1. In skillet or microwave, fry bacon until crisp; remove and reserve.
  2. Add onion and potatoes to bacon drippings and saute' for about 5 minutes; drain well.
  3. Combine all ingredients except the heavy cream in Crock pot. Stir well.
  4. Cover and cook on LOW setting for 6 - 7 hours.
  5. Towards the end of the cooking time add the heavy cream.

Ingredients
  • 6 potatoes peeled and cut into large chunks
  • 5 carrots peeled and cut into 2-inch slices
  • 1 onion quartered
  • 2 -3 lbs boneless chuck roast
  • 1/2 cup beef broth
  • 1 tablespoon chives chopped
  • 2 tablespoons parsley chopped
  • 1/8 teaspoon pepper
  • 1 1 ounce package onion soup mix
  • 2 tablespoons Worcestershire sauce
  • 1 10 3/4 ounce can cream of mushroom soup
Instructions
  1. Put potatoes, carrots and onion on bottom of crockpot. Place the roast on top, fat side up.
  2. Pour in water or beef broth. Sprinkle chives, parsley, pepper and Onion Soup mix over the meat. Pour Worcestershire sauce and mushroom soup over meat.
  3. Cover and cook on low 8-10 hours.

Fruit Nut Slow Cooker Baked Apples
Ingredients
  • 4 large baking apples Rome or Cortland
  • 1 tablespoon lemon juice
  • 1/3 cup chopped dried apricot
  • 1/3 cup chopped walnuts or 1⁄3 cup pecans
  • 1/4 cup brown sugar packed
  • 1/2 teaspoon ground cinnamon
  • 2 tablespoons butter melted
Instructions
  1. Scoop out the center of each apple, leaving about 1/2 inch of the bottom. Peel top of apple down about 1 inch. Brush peeled edges with lemon juice.
  2. Mix apricots, nuts, brown sugar and cinnamon in a small bowl. Add melted butter and mix well.
  3. Spoon mixture evenly into apple cavities.
  4. Pour 1/2 cup of water into the bottom of slow cooker. Arrange apples in slow cooker.
  5. Cover and cook on LOW 3-4 hours, or until apples are tender.
  6. (optional) Serve warm with caramel ice cream topping.

A nice chowder for a cool day. Great spices along with the vegetables.

I’m sold on adding the corn! It adds a nice contrast of texture and taste.
