This Cucumber Onion Salad has a perfect balance of cucumber, white onion, sugar and vinegar. The white vinegar is a must — it gives the salad that little bite that just begs you to sneak a few cucumbers right out of the bowl.

It makes for a very easy side salad for a picnic or covered dish event. My mom kept this going in our fridge all summer.

Cucumber Onion Salad
Ingredients
  • 2 -3 large cucumbers
  • 1 medium white onion
  • 1/2 cup sugar
  • 1 cup white vinegar
  • 2 cups water
  • 1 tablespoon pepper
  • salt
Instructions
  1. You will need a 2 quart jar with lid or other 2 quart container.
  2. Cut the ends off the cucumbers and peel along the long edge in 3-4 strips to leave a sort of stripped cucumber. Slice the cucumber in thin rounds.
  3. Peel and slice the onion in thin slices and separate.
  4. Put the cucumber and onion alternately in your jar/container.
  5. Add the rest of the ingredients and cover your jar/container tightly and gently turn so the ingredients are mixed together.
  6. Refrigerate overnight and serve cold.

I love this No-Bake Chocolate Oatmeal Cookies recipe! It has been one of my favorites for when I have a sweet tooth and need something quick!

You can also add a little bit of coconut (1/4 cup) to it if you want, but they are delicious without!

Easy, tasty and great when you need a chocolate fix in a hurry. These are wonderful, quick cookies. Perfection!

No-Bake Chocolate Oatmeal Cookies
Ingredients
  • 1/2 cup butter
  • 1 1/2 cups white sugar
  • 1/2 cup packed brown sugar
  • 1/2 cup milk
  • 4 tablespoons cocoa
  • 1 pinch kosher salt
  • 1/2 cup creamy peanut butter or chunky but is seems to make a more crumbly, dry cookie
  • 2 teaspoons vanilla
  • 3 cups dry quick-cooking oats
Instructions
  1. Add the first six ingredients into a 4-quart sauce pan. Bring to a rolling boil and hold for 1 minute.
  2. Remove from heat. Add peanut butter into the hot mixture and stir until melted.
  3. Add in the vanilla. (almond extract is good also, but I only use 1/2 teaspoon almond extract with 1 1/2 teaspoon vanilla extract). Mix in the dry oats until they are completely coated.
  4. Drop the cookies by tablespoonfuls onto wax paper.
  5. Let cool until set.
Recipe Notes

I have found that the weather makes a difference on the consistency, its best to make them on a nice sunny day. Also, It is very important not to boil them for longer than one minute.

This Fabulous Broccoli Salad truly is fabulous, just fabulous!!! I think it’s the bacon. The bacon and onion flavor is a great compliment to the broccoli.

This can also serve as a good ‘base’ recipe to which you can add many things.

Try adding seedless purple grapes, sliced almonds, raisins, apples or chopped walnuts to it.

Fabulous Broccoli Salad
Ingredients
  • 1 -2 head fresh broccoli do not use frozen!
  • 1/2 cup red onion chopped
  • 1/2 pound bacon
  • 2 1/2 tablespoons vinegar
  • 1 cup Hellmann's mayonnaise
  • 1/2 cup sugar
  • 1 1/2 cups grated mozzarella cheese
Instructions
  1. Cook bacon (I make it easy and buy the already cooked bacon in the refrigerator section) and crumble into pieces.
  2. Chop up the top of the broccoli into bite size pieces. Mix the broccoli, onions, bacon and mozzarella in large bowl.
  3. In separate bowl combine the vinegar, sugar and mayo. Pour over the broccoli mixture and toss to coat.

Julia Child’s Herb Biscuits are fantastic biscuits!!!!! I love this recipe because it includes eggs, which I have never had in a biscuit.

The recipe also includes herbs which really enhance the flavor.

Delicious biscuits! Tender and moist with a beautiful texture and unbelievable taste!

I like using these for a brunch or stuffed with ham & cheese for breakfast on the go.

Instructions
  1. Combine all the dry ingredients in large bowl. Cut in the shortening. Add the minced herbs. Stir in the eggs & buttermilk.
  2. Turn onto a floured surface & knead mixture briefly. Pat or roll out to 1/2" thickness & cut into rounds.
  3. Bake on an ungreased baking pan at 450 degrees for 10-15 minutes.

  • 2 1/2 lbs chicken legs
  • 1 2/2 tablespoons olive oil to help it stop sticking to the pan

  • 2 -3 garlic cloves minced
  • salt and pepper
Instructions
  1. Preheat oven to 350 degrees.
  2. Place the chicken in a 9x13 inch baking dish. Mix together the oil, soy sauce, ketchup, honey, garlic, salt and pepper. Pour over the chicken.
  3. Bake in the preheated oven for one hour, or until sauce is caramelized.

Almost as easy as pudding out of the box but much tastier! This is the perfect grand finale to any summer cookout. Your guests won’t stop raving about it. It is so deliciously creamy and easy to make.

Old-Fashioned Banana Cream Pie
Ingredients
  • 1 9 inch pie crusts, baked
  • 3 cups whole milk
  • 3/4 cup white sugar
  • 1/3 cup all-purpose flour
  • 1/4 teaspoon salt
  • 3 egg yolks slightly beaten
  • 2 tablespoons butter
  • 1 teaspoon vanilla
  • 3 bananas
Instructions
  1. Have baked 9-inch pie shell ready.
  2. In a large saucepan, scald the milk.
  3. In another saucepan, combine the sugar, flour and salt; gradually stir in the scalded milk. Over medium heat, stirring constantly, cook until thickened. Cover and, stirring occasionally, cook for two minutes longer.
  4. In a small bowl, have the 3 egg yolks, slightly beaten, ready; stir a small amount of the hot mixture into beaten yolks; when thoroughly combined, stir yolks into hot mixture. Cook for one minute longer, stirring constantly. Remove from heat and blend in the butter and vanilla. Let sit until lukewarm.
  5. When ready to pour, slice bananas and scatter in pie shell; pour warm mixture over bananas.
  6. If desired, make a meringue (you'll have 3 leftover egg whites) to top the pie, or just let the pie cool until serving.

Richmond Potato Salad – Mom Didn’t Know The Secret To This Potato Salad

Mom’s potato salad was delicious but it wasn’t Richmond Potato Salad. Mom didn’t know the secret to this recipe or she would have used it too.

Richmond Potato Salad

This is the best potato salad I have had or made for that matter. The trick to the entire recipe is the addition of egg yolks into the mayonnaise and mixing will.

So simple but what a difference.

Blissful in my book. Now my go-to recipe!!

Richmond Potato Salad
Ingredients
  • 3 hard cooked egg yolks
  • 3/4 cup mayonnaise
  • 1 teaspoon yellow mustard
  • 3 tablespoons sweet pickle juice
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/8 teaspoon ground celery seed
  • 3 teaspoons sugar
  • 1 small onion chopped
  • 2 celery ribs sliced thinly
  • 5 medium red potatoes boiled, peeled, cubed, slightly mashed
Instructions
  1. In large bowl, mash the egg yolks and incorporate into the mayonnaise. Add the mustard, sweet pickle juice, salt, pepper, ground celery seeds and sugar. Add the onions, celery and potatoes; mix to the desired consistency.

Surprise Coated Crisp Fish Filets

I’m not sure if these Surprise Coated Crisp Fish Filets use a secret fish coating but it’s certainly a surprise to me! I’m from the deep south and cornmeal is always what we use for coating.

But this fish browned up so nice and crispy I may never use cornmeal again!

The secret is potato flakes. You can either use plain potato as in the recipe or try some of the flavored types such as butter and herb.

I’m gonna’ try the Cajun seasoned next.

Surprise Coated Crisp Fish Filets
Ingredients
  • 4 fish fillets enough for 4 servings, I used sea bass
  • 1 cup instant mashed potatoes
  • 1 teaspoon garlic powder
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • salt & pepper
  • 1 egg beaten
Instructions
  1. Mix the potato, garlic, thyme, oregano, salt and pepper together.
  2. Dip the fish in the egg then in the potato, coat well.
  3. Fry on lightly greased pan until golden on both sides approximate time 10 minutes, depending on the thickness of the fish.

This Crock Pot Hamburger Potato Casserole couldn’t be easier. Very few ingredients and very little prep work. But it’s so delicious and so inexpensive it would be worth it at twice the work!

Some people call it Lazy Shepherds Pie. My mother used to make it as well, but she didn’t use a crock pot just an over sized fry pan with a lid on the stove.

It’s versatile too. You can add other ingredients if you like. I almost always add carrots and corn. Just like a regular shepherds pie.

Crock Pot Hamburger Potato Casserole
Ingredients
  • 1 1/2 pounds hamburger browned and drained
  • 1 large onion sliced
  • 4 large potatoes peeled and sliced
  • 1 10 ounce can cream of mushroom soup
  • 1/2 10 ounce can milk (soup can)
Instructions
  1. Spray crock pot with non stick vegetable spray. Layer potatoes, onions and hamburger until all is used, sprinkling each layer very lightly with salt and pepper.
  2. Mix soup and milk together and pour over top.
  3. Cook 3 to 4 hours on high.

I love these Easy Baked Potato Wedges. They are so simple to make and yet they taste so great! They also have a great color from the paprika, and the spices are just right.

I almost always serve these when I have a backyard BBQ. In fact one of my main menus include these potatoes along with Amarillo Grilled Steaks and Special Cucumber Salad. Grilled Stuffed Jalapenos is usually the appetizer.

  • 4 large potatoes
  • 1/4 cupe cooking oil
  • 1 tablespoon parmesan cheese
  • 1 teaspoon salt
  • 1 tablespoon paprika

  1. Wash potatoes and cut into wedges. Place the potatoes skin down in a baking dish.
