Perfect Slow Cooker Pot Roast

This is a quick and easy, but perfect slow cooker pot roast recipe. It’s incredibly good and yet so simple to prepare. It’s the vegetable soup mix!

 

I don’t think I’ve ever enjoyed the taste of potatoes in a pot roast recipe as much as I did with this one.

Thicken the pan juices with cornstarch to make a tasty gravy. The gravy is heavenly. Not too heavy or salty, yet very flavorful.

  • 2 lbs beef roast
  • 4 potatoes peeled and cut into 1-inch cubes
  • 1 1/2 cups baby carrots
  • 1 large onion quartered and pulled apart
  • 1 1/2 cups beef broth
  • 1 1 1/2 oz envelope dry vegetable soup mix (I use Knorr)
Instructions
  1. Place roast into the crockpot and surround with vegetables.

  2. Combine the beef broth and vegetable soup mix and add to the crockpot.

  3. Cover and cook on LOW 6-8 hours or HIGH 3-4 hours.

  3. Add the grated Parmesan cheese on top if desired.

  • 4 -6 boneless skinless chicken breasts halved
  • 1 1 1/4 ounce envelope dried Italian salad dressing mix

  • 1 4 ounce can mushroom stems and pieces, drained

  1. Place the chicken breast halves in the crockpot.

  2. Combine the Italian dressing mix and water until smooth; pour over top of the chicken.
  3. Cover and cook on low for 3 hours.
  4. Combine the cream cheese and soup until smooth and blended. Stir in the mushroom pieces.
  5. Pour the soup mixture over the chicken. Cook 1 hour more or until the chicken is cooked through.

  3. Cover; cook on High heat setting 2 hours to 2 hours 30 minutes.
  4. Stir in cream cheese. Cook on High heat setting 10 minutes longer. Stir well; sprinkle with remaining bacon.
  5. Corn can be kept warm on Low heat setting up to 1 hour.

This Upgraded Kraft Mac N Cheese recipe is very simple. It takes the ‘blue box’ of mac and cheese and kicks it up to make it taste a bit more homemade.

  • 3/4 cup all-purpose flour
  • 1 cup granulated sugar

To prepare the brownies.
  1. Weigh or lightly spoon flour into dry measuring cups, and level with a knife. Combine the flour, and the next 4 ingredients (through baking powder) in a large bowl, stirring well with a whisk.
  2. Combine 6 tablespoons butter, eggs, and 1 teaspoon vanilla extract. Add this mixture to the flour mixture, stir to combine.
  3. Scrape the batter into a 9-inch square metal baking pan lightly coated with cooking spray.
  4. Bake at 350 degrees for 19 minutes, or until a wooden pick inserted comes out with moist crumbs clinging.
  5. Cool in pan on a wire rack.
To prepare the topping:
  1. Melt 1/4 cup butter in a saucepan over medium heat. Add the brown sugar, 1 1/2 tablespoons milk, and cook 2 minutes.
  2. Remove from the heat, and add vanilla and powdered sugar, and stir with a whisk until smooth. Spread this mixture evenly over the cooled brownies and let stand 20 minutes, or until set.
  3. Combine the remaining 2 tablespoons milk, and chocolate in a microwave-safe bowl, and microwave on high for 45 seconds, or until melted, stirring after 20 seconds. Stir just until smooth, and drizzle over the caramel.
  4. Sprinkle with sea salt, let stand until set, and cut into 20 squares.

  3. In mixing bowl, beat the eggs and add sugar. Let stand until sugar dissolves, about 10 minutes. Stir in the oil, carrots, drained pineapple, and nuts. Stir in the dry ingredients and beat until well blended--3 minutes or so with a blender.

  4. Turn into 3 greased and floured 9-inch round cake pans or one 13-x-9 inch pan.

  5. Bake at 350°F for 35 to 40 minutes or until the cake springs back when lightly touched.

  6. Cool in the pans about 10 minutes, then turn onto wire racks to cool completely before frosting.

  7. Frosting: Combine the butter, cream cheese, and vanilla in a large bowl and beat until well blended. Add the powdered sugar gradually, beating vigorously.

  8. If frosting is too thick, thin with a few drops of milk to spreading consistency.

Sometimes I use all ground beef when I find a good sale but half beef/half pork is pretty tasty.
