Ingredients
  • 2 6 ounce boneless pork chops
  • 1 large onion sliced
  • 1 14 1/2 ounce can stewed tomatoes, we like Italian flavored
  • 2 medium potatoes peeled and quartered
  • 1/2 cup broccoli spear
  • 1/2 cup cauliflower spears
  • salt and pepper
  • vegetable oil cooking spray
Instructions
  1. Spray a 12 1/2 inch cast iron pan with cooking spray and heat to medium-high.

  2. Add the pork chops and sear on all sides, about 5 minutes.

  3. Add the onion slices and cook until transparent and just turning brown, about 5 minutes.

  4. Add the stewed tomatoes; bring to a simmer, cover, and simmer for 30 minutes.

  5. Add the potatoes around the outside of the pan; simmer 15 minutes, add the broccoli and cauliflower and sprinkle with salt and pepper; simmer a further 15 minutes or until the potatoes are cooked through.

  6. Serve hot.

  • 6 cups broad egg noodles uncooked
  • 1 lb extra lean ground beef
  • 1 cup onion sliced
  • 1/2 cup green pepper chopped

  • 1 10 ounce can condensed tomato soup
  • 1/2 cup light cream cheese spread 1/2 a tub
  • 1 tablespoon Worcestershire sauce

Instructions
  1. Cook noodles as directed on package.
  2. Meanwhile brown the meat in a 12 1/2 inch cast iron skillet and drain. Add the onions and peppers; cook and stir until tender. Stir in all the remaining ingredients; cook 5 minutes or until heated through.
  3. Drain the noodles and place on a serving platter. Top with the meat mixture.
  4. Garnish with chopped fresh parsley, if desired.

  3. Add the soup, sherry, and cream cheese and water and stir until smooth. Simmer for 5 minutes.

Cilantro Chicken
Ingredients
  • 4 boneless chicken breasts
  • 2 tablespoons butter
  • 1/2 cup sliced onion
  • 2 cloves fresh garlic crushed
  • 1 cup chopped fresh cilantro
  • 1 1/2 cups salsa verde or 1 1⁄2 cups green tomatillo sauce
  • 3/4 cup chicken broth
  • 1/2 cup fresh tomato chopped
  • 1/2 cup green onion thinly sliced
Instructions
  1. Heat the butter in a saucepan over medium heat. Add the onion and garlic and saute until soft.
  2. Add the chicken breasts and saute until golden brown.
  3. Add the salsa verde, chicken broth and cilantro. Reduce the heat to low and simmer for 3 to 5 minutes.
  4. Serve over rice or couscous and sprinkle with the chopped fresh tomatoes and green onion.

Ingredients
  • 6 cups cooked brown rice
  • 1 15 ounce can black beans, rinsed and drained
  • 1 15 ounce can corn, drained
  • 4 fresh tomatoes diced
  • 1/2 cup red onion chopped
  • 1/2 cup cilantro chopped
  • 1 jalapeno pepper seeded and diced
  • 2 tablespoons fresh lime juice
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon fresh ground pepper
  • 2 dashes hot sauce
Instructions
  1. Cook brown rice.
  2. In a medium bowl, combine black beans, corn, tomatoes, onion, cilantro, jalapeno, lime juice, oil, salt, pepper and hot sauce.
  3. To serve, Place a scoop of hot rice in a bowl or on a plate, top with a generous scoop of the black bean mixture.

  • 8 ounces extra wide egg noodles
  • 1 tablespoon vegetable oil
  • 1 lb cooked ham cubed (about 2 cups)
  • 1/2 cup red onion chopped
  • 1/2 teaspoon dried thyme

  • 1/8 teaspoon white pepper
  • 1 10 3/4 ounce can cream of mushroom soup (Campbell's)
  • 1/4 cup milk
  • 2 cups shredded extra-sharp cheddar cheese
Instructions
  1. Cook the noodles according to the package directions. Drain and slightly butter.

  2. Meanwhile, heat oil in a 4-quart saucepan over medium-high heat. Add onion and saute for 1 minute.

  3. Add ham and cook for about 15 minutes, until the onion is tender. (Stirring occasionally.).

  4. Stir in the soup and the milk. Reduce the heat to medium-low. Cook and stir for 5 more minutes.

  5. Add the cheese and stir until it melts.

  6. Gently mix in the noodles and cook just until heated through.

Ingredients
  • 1 28 ounce can diced tomatoes
  • 1 tablespoon olive oil
  • 1 onion minced
  • salt
  • 3 garlic cloves minced
  • 1/8 teaspoon red pepper flakes
  • 1 lb meatloaf mix ground beef, and 8 ounces ground pork. for spicier flavour increase the amount of red pepper flakes
  • 8 ounces curly-edged lasagna noodles broken into 2-inch lengths (10)
  • 1 8 ounce can tomato sauce
  • 1 ounce parmesan cheese grated (1/2 cup)
  • pepper
  • 8 ounces whole milk ricotta cheese about 1 cup
  • 1/4 cup minced fresh basil
Instructions
  1. Pour the tomatoes with their juice into a quart measuring cup. Add enough water to the tomatoes to measure 4 cups.
  2. Heat the oil in a 12-inch nonstick skillet over medium heat until shimmering. Add the onion and 1/2 teaspoon salt and cook until softened, about 5 minutes.
  3. Stir in the garlic and red pepper flakes and cook until fragrant, about 15 seconds. Add the meatloaf mix and cook, breaking up the meat into small pieces with a wooden spoon, until no longer pink, about 5 minutes.
  4. Sprinkle the noodle pieces evenly over the meat. Pour the diced tomatoes and tomato sauce over the pasta. Cover and bring to a simmer. Reduce the heat to medium-low and continue to simmer, stirring occasionally, until the pasta is tender, about 20 minutes. (The sauce should look watery after 15 minutes of cooking. If dry, add up to 1/4 cup additional water to loosen the sauce.).
  5. Remove the skillet from the heat and stir in 1/2 cup Parmesan. Season with salt and pepper to taste. Dot heaping tablespoons of the ricotta over the noodles. Cover the skillet and let stand off the heat for 5 minutes.
  6. Sprinkle with the basil and serve, passing the extra Parmesan separately.

Ingredients
  • 4 chicken breasts
  • 1 3/4 cups heavy cream
  • 1 3/4 cups salsa
Instructions
  1. Mix the heavy cream and salsa in a casserole.
  2. Wash the chicken breasts and dry them with a paper towel. Lay them into the sauce and cover them with the mixture.
  3. Bake 1 hour at 400° F or until chicken is tender and cooked through.
  4. Serve with white wine, pita bread, rice and fresh garden salad.

4-Minute Spicy Garlic Shrimp
Ingredients
  • 12 shrimp Jumbo sized, peeled, deveined, & tails intact
  • 2 tablespoons olive oil
  • 2 garlic cloves crushed with the side of a knife
  • 1/4 teaspoon red pepper flakes
  • 1 teaspoon steak seasoning Montreal Seasoning by McCormick is recommended
  • 1 teaspoon lemon zest of
  • 2 teaspoons lemon juice
  • 1 tablespoon fresh parsley chopped
Instructions
  1. Heat a large skillet over medium high heat. Add the olive oil, garlic, red pepper flakes, and shrimp. Season with grill seasoning or salt & pepper.
  2. Cook the shrimp 3 minutes or until just pink. Toss with lemon zest, juice, & chopped parsley.
  3. Remove shrimp to a serving platter, leaving the garlic cloves in the pan.

  • 1 cup butter
  • 1 cup dark brown sugar may add up to 1/4 cup more if desired

  • 1 egg

  • 2 cups flour
  • 1 cup uncooked rolled oats
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground cinnamon
  • 1 cup white chocolate chips
  • 1 cup chocolate chips I like dark
Instructions
  1. In a medium saucepan, melt the butter over medium heat until melted. Remove from the heat.
  2. Add the dark brown sugar and granulated sugar and stir until sugars are incorporated and smooth. Chill the mixture for 10 minutes.
  3. Remove from the refrigerator and stir in the egg, egg yolk, and vanilla.
  4. Add the flour, oats, baking soda, 1/2 teaspoon salt, and cinnamon and mix together. Stir in the white chocolate chips and chocolate chips.
  5. Roll by hand into 24 medium-size balls or use a scoop, and place on a light-colored cookie sheet. Chill for at least 30 minutes.
  6. Preheat the oven to 325 degrees F. Remove the cookies from the refrigerator and bake for 12 to 14 minutes.
