Ingredients
Dough
  • 1 1/2 cups warm water
  • 2 tablespoons butter softened
  • 1/2 cup honey
  • 2 cups bread flour
  • 1 2/3 cups wheat flour
  • 1 tablespoon cocoa
  • 1 tablespoon granulated sugar
  • 2 teaspoons instant coffee
  • 1 teaspoon salt
  • 2 1/4 teaspoons yeast
Coloring
  • 1/4 cup water
  • 75 drops red food coloring
  • 45 drops blue food coloring
  • 30 drops yellow food coloring
  • cornmeal for dusting
Instructions
  1. Combine the flours, cocoa, sugar, coffee and salt in a large bowl. Make a depression or"well" in the middle of the dry mixture. Pour the warm water into this"well," then add the butter, honey and yeast.
  2. Combine the food coloring drops with ¼ cup of water and add that to the"well".
  3. Slowly mix the ingredients with a spoon, drawing the dry ingredients into the wet.
  4. When you can handle the dough, begin to combine it by hand, kneading the dough thoroughly for at least ten minutes, until it is very smooth and has a consistent color.
  5. Set the dough into a covered bowl in a warm place for an hour, to allow it to rise.
  6. When the dough has risen to about double in size, punch it down and divide it into 8 even portions.
  7. Form the portions into tubular shaped loaves about 8" long and 2" wide.
  8. Sprinkle the entire surface of the loaves with cornmeal and place them on a cookie sheet, or two.
  9. Cover the cookie sheet (s) with plastic wrap and let the dough rise once more for another hour in a warm location.
  10. Preheat the oven to 350° degrees F.
  11. Uncover the dough and bake it for 20-24 minutes in the hot oven. Loaves should begin to darken slightly on top when done.
  12. Serve warm with a sharp bread knife and butter on the side.
  13. If you want whipped butter, as you get at the restaurant, just use an electric mixer on high speed to whip some butter until it's fluffy.

Easy Pizza Muffins – Oh So Good!

These Easy Pizza Muffins are the quickest and easiest pizza to make and oh so good. Even the kids can make them.

 

My favorite snack as a kid and one of my favorite snacks today!

They also make a nice lunch with a side salad.

The toppings are a matter of choice. Pepperoni is more traditional but the ham and pineapple are nice. For a crisper crust toast the English muffins before topping.

A keeper for sure!

Ingredients
  • 2 1/2-3 lbs boneless beef ribs
  • 16 ounces barbecue sauce I use a bottle of Hunt's Original or Hickory Brown Sugar
Instructions
  1. Place the ribs in an 8-quart stockpot. Add enough water to cover ribs. Mix in about 1 cup barbecue sauce to the water. Cover, and bring to a boil. Reduce heat. Simmer covered for 2 hours, until ribs are tender.
  2. Preheat grill to medium.
  3. Remove ribs from water and place in a large bowl. Drench the ribs in additional barbecue sauce.
  4. Transfer ribs to preheated grill. Close grill lid. Grill for 10 to 20 minutes, basting generously with barbecue sauce & turning often (every 2 minutes). (Note: be careful not to overcook the ribs, as they will dry out).
  5. Note: if you prefer, you may finish the ribs in a 350F oven, instead of the grill.
  6. Serve with additional sauce, if desired. Good with corn bread or buttered rolls, beans and slaw.

Classic Flavoring
  • 1 teaspoon garlic powder
Maryland-Style Flavoring
  • 1 tablespoon Old Bay Seasoning
Curry Flavoring
  • 1 tablespoon curry powder
Cumin Flavoring
  • 2 teaspoons ground cumin
  • 2 teaspoons paprika
  • 1 teaspoon garlic powder
Instructions
  1. In a large bowl or shallow baking dish, mix the honey, 1 teaspoon salt, pepper, and flavoring of choice into the buttermilk. Add the chicken and turn to coat.
  2. Preheat oven to 200 degrees. Heat the oil in a large (12-inch) skillet over high heat until it reaches 375 degrees.
  3. Meanwhile, mix the flour and 1 tablespoon salt in a doubled paper bag (I've also used a large Ziploc bag). Drop about 8 chicken strips into the flour, close the bag, and shake to coat the chicken. Place the chicken pieces on a wire rack set over a baking sheet (or newspaper for easy cleanup). Repeat with the remaining chicken.
  4. Working in 4 batches, drop the chicken pieces into the hot oil and fry until golden brown, turning if necessary to ensure even browning, about 3 minutes.

Instructions
  1. Preheat oven to 400 degrees.
  2. Grease and flour a pizza pan or 10 x 15 baking sheet (with sides).
  3. Combine flour, salt, oregano, pepper, eggs, and milk and mix well. Pour batter in pan and tilt pan around until the bottom of the pan is evenly coated. Sprinkle the cooked meat, onions, and mushrooms over the batter.
  4. Bake for 20 minutes.
  5. Remove from oven and drizzle on pizza sauce. Sprinkle evenly with cheese.
  6. Bake for about 5 more minutes, or until cheese is bubbling.
  7. Slice and serve!

  • 1/2 pound ground beef
  • 1 package taco seasoning mix
  • 2 tablespoons water
  • 8 6 inch flour tortillas
  • 1 cup cooking oil
  • 1 16 oz can refried beans

  • 2/3 cup mild Picante sauce
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey jack cheese

Instructions
  1. Cook the ground beef over medium heat until brown, then drain. Return meat to pan and add the taco seasoning mix and water. Let mixture simmer over medium heat for 10 minutes, stirring often.
  2. Heat oil in frying pan over medium-high heat. When oil is hot, fry each tortilla for about 30-45 seconds per side and drain on paper towels. Be sure to pop any bubbles that form when frying so that the tortilla lays flat in the oil.
  3. Tortillas should become golden brown.
  4. Heat refried beans.
  5. Preheat oven to 400 degrees F.
  6. Stack each pizza by first spreading 1/3 C beans on one tortilla. Next, add 1/3 C meat, then another tortilla. Top the second tortilla with 2 T of salsa.
  7. Divide the tomato, cheese, onions, and olives evenly and top in that order.
  8. Bake for 8-12 minutes.

This easy Chicken Tortilla Soup has a distinctive Mexican flair. Very good soup!

  • 8 ounces carrots diced
  • 8 ounces celery
  • 8 ounces onions diced
  • 1/2 teaspoon garlic powder or 1 garlic clove diced
  • 1/8 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 tablespoon corn oil
  • 4 15 oz cans chicken broth
  • 1 15 oz can tomatoes, diced (optional)
  • 1 10 oz can Rotel tomatoes & chilies, diced
  • 1 1 1/2 oz packet taco seasoning (I use McCormicks)
  • 10 8 inch corn tortillas cut into small pieces, about 1-in x1-in
  • 12 ounces chicken meat poached, diced
  • 1 cup milk or 1 cup sour cream
  • 12 ounces Monterrey jack cheese or 12 ounces Mexican blend cheese shredded
  • corn tortilla chips broken into small pieces for garnish
Instructions
  1. Saute carrots, onions, celery in corn oil, garlic, salt, and pepper until tender.
  2. Add chicken broth and bring to boil.
  3. Add tomatoes, Rotel, taco seasoning, and chicken.
  4. Cut Tortillas into small pieces and add to broth mixture.
  5. Let boil for 45 minutes or until tortillas are thoroughly incorporated into soup stirring occasionally to keep from sticking.
  6. Reduce heat and add 8 oz. cheese. Simmer for additional 10 minutes. Add milk and simmer for additional 10 minutes.
  7. If thicker soup is desired, add more diced tortillas and let incorporate into soup.
  8. Garnish with shredded cheese and broken tortilla chips.
  9. NOTE: If you use flour tortillas you will end up with a "tortilla mess", this recipe is for corn tortillas.

This Crescent Roll Casserole Recipe is such a nice, simple, easy to put together casserole recipe. One of my favorite recipes with ground beef.

 

Too easy to be so good.

I love most everything with crescent roll dough and this is no exception.

It makes a satisfying weeknight meal. Will definitely be placed on the “make again” list.

If you do not have Italian Seasoning available you can use 1/4 tsp oregano, 1/4 tsp basil, 1/4 tsp thyme, & 1/4 tsp marjoram.

  • 1 lb ground beef
  • 1 15 ounce can tomato sauce or 1 (15 ounce) can low-sodium tomato sauce
  • 1/2 tablespoon olive oil
  • 1 teaspoon italian seasoning
  • 1/2 teaspoon salt
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon sugar
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon garlic powder
  • 2 tablespoons light sour cream I use the Daisy brand
  • 3 tablespoons parmesan cheese
  • 8 slices provolone cheese
  • 1 tablespoon butter melted
  • 1 8 ounce package Pillsbury Refrigerated Crescent Dinner Rolls
  • cooking spray
Instructions
  1. Brown beef until no longer pink then drain excess grease. Add the tomato sauce, olive oil, spices, & 2 tablespoons of Parmesan cheese to the beef. Simmer on medium heat for 5 minutes.
  2. Remove from heat & stir in the sour cream.
  3. Preheat the oven to 375°F Lightly spray an 8x8 baking dish. Pull the crescent rolls apart but leave them in rectangle shape. (There should be 4 rectangles).
  4. Lay 2 of the rectangles in the bottom of the pan, side by side. Gently spread out to fit the bottom of the pan.
  5. Cover the crescent rolls with 4 slices of provolone cheese. (The cheese on the bottom helps keep the crescent rolls from becoming soggy from the sauce).
  6. Next add the beef mixture & then 4 more slices of cheese. Take the remaining 2 rectangles on top of the last layer of cheese.
  7. Lightly brush the melted butter over the crescent rolls & sprinkle the remaining parmesan cheese on top.
  8. Bake for 25 minutes or until lightly brown.

Easy Enchiladas (Beef or Chicken)

WOW!!! These are incredible! Better than the enchiladas at my favorite Mexican restaurant. I absolutely love this. A favorite enchilada recipe of mine.

Because of the many different options, it is also very versatile.

Frying the tortillas gives them texture and develops the flavor better. I will never skip that again, no matter how tempted I am.

  • 1/4 cup chopped onion
  • 1 teaspoon garlic powder
  • 1 tablespoon Worcestershire sauce
  • 1 8 ounce can tomato sauce
  • 1 teaspoon paprika
  • 1 teaspoon oregano
  • 2 teaspoons chili powder more or less for your taste
  • 1/2 teaspoon cumin
  • 1/2 teaspoon black pepper
  • 3 cups shredded cheese I like the jack or cheddar combos
  • 1 10 oz can enchilada sauce
  • olive optional
  • 12 corn tortillas
  • oil
Instructions
  1. If using chicken, boil the chicken in water. Then rinse and shred with a fork. Add onion and garlic.
  2. If using ground beef, brown with onion and garlic, drain.
  3. Add the next 7 ingredients (Worcestershire sauce through black pepper).
  4. In another skillet, heat oil. Add tortillas, one at a time, for 10 seconds on each side. Drain on paper towel.
  5. In 10x13 baking pan, pour just enough enchilada sauce in the bottom to coat the bottom of the pan.
  6. Fill each tortilla with a spoonful of meat mixture. Cheese, onions, and/or olives can be put inside each enchilada at this time if desired.
  7. Roll tortilla and place seam side down in a pan. Continue with remaining tortillas.
  8. Pour remaining enchilada sauce over tortillas and top with cheese (additional olives may be added if desired). At this time, pan may be refrigerated for several hours or overnight.
  9. Bake in 350 degree oven for 20 minutes (30 minutes if refrigerated).
  10. Top with sour cream.
